Remember that really delicious potato pancakes can only be made with good potatoes. It is best to choose root vegetables with a yellowish pulp, which boils well after heat treatment. The so-called "soapy", watery white potatoes are not good - ready-made potato pancakes will not only darken quickly, but also the taste will be so-so.

  • potatoes - 2 kg
  • pork - 700 gr
  • onions - 400 gr
  • chicken eggs - 2 pcs.

  • vegetable oil - 150 ml
  • salt - 1 tsp
  • black pepper - 1 pinch

The first step is to prepare the minced meat, as the potato shingles darken quickly. To do this, cut the pork into pieces and pass through a meat grinder. To make the meat scroll faster and easier, first hold it in the freezer for half an hour.

Next, we pass the peeled onions through a meat grinder (one large onion - half the norm of the indicated ingredients).

Salt and pepper the minced pork with onions. Mix with your hands and taste for salt. If necessary, add more seasonings.

To make the filling of potato pancakes juicy and tender, you can additionally beat off the minced meat (a couple of minutes). To do this, simply throw the minced meat into a bowl with effort or put it in a bag and beat it on the table. That is, we just throw from a small height. For now, put the prepared minced meat in the refrigerator.

Let's take a dough for potato pancakes. To do this, peel the potatoes and onions (the second half of the ingredients). I will say right away that there is definitely not a lot of bow in a shingle. Moreover, onions give not only flavor to ready-made potato pancakes, but also protect grated potatoes from browning longer.

Grind vegetables on the finest shingle grater. I have this attachment in my food processor, but I used to use a hand grater before.

Add a couple of chicken eggs, sour cream, salt and wheat flour to the potatoes and onions. Take sour cream of any fat content - it's not at all important. By the way, sometimes I even use kefir instead. The main thing is that it is a fermented milk product that will prevent the potatoes from darkening and make the pancakes more tender. Wheat flour does not have to be of the highest grade either - the first will do. It is clear that some may say, they say, why all these additives ... Potato pancakes are purely potatoes and onions ... But I cook this way and we like it this way.

Mix everything thoroughly (I do it right with my hand, it's more convenient), try it with salt, add it if necessary. By the way, do you know what the beauty of stirring with your hand is? You can easily find pieces of potatoes or onions that could slip through and not chop.

Now we will fry potato pancakes with minced meat. Pour part of the refined vegetable oil into the pan, heat it well and spread and level the potato mass with a tablespoon so that you get a rather thin pancake.

Then put the minced pork, giving it the shape of a flat cutlet. It is most convenient to make such blanks in advance so that they are already at hand.

We cover the meat filling with a potato mass so that the minced meat is not visible. We also level it with a spoon.

Fry potato pancakes with minced meat over medium heat until the bottom is browned. Then turn them over with a spatula and continue to fry under the lid until tender. We do the same with the rest of the potato dough and minced meat, adding vegetable oil if necessary.

Put the finished pancakes on a paper napkin so that excess fat is absorbed into it.

It is not known exactly why these potato pancakes are called sorcerers, but the name itself, you see, is rather unusual.

In Transcarpathia, a pancake cake made from green pancakes with spinach and meat filling is also called sorcerers, although these are two completely different dishes. Potato wizards with minced meat are an excellent and very tasty option for pancakes, with which you can diversify your daily menu.

And even the minced meat itself, which plays the role of the main violin in this recipe, can also be varied. For example, adding to it a small amount of fried mushrooms, cut into small pieces, ham, bell pepper. We will now consider how to cook potato pancakes with meat.

Now you need to prepare the potato dough for the pancakes. Peel the onion. Rub it on a fine grater and puree. Peel the potatoes. Now it should be grated. I prefer a medium hole grater, although a fine or coarse grater can be used, depending on how you want the finished pancakes to look. In any case, the potatoes need to be grated fast enough so that they do not have time to darken.

Place the onion puree in a bowl of grated potatoes.

Beat in an egg.

Stir. Add black pepper and salt.

Take the amount of these ingredients at your discretion. Add flour.

Stir the potato pancake base with minced meat.

Heat a skillet with sunflower oil. After the oil is hot, spoon up the potato mass with a tablespoon and spread it out in the form of tortillas.

Take a small amount of minced meat (about 30 gr.,). Roll a ball out of it. Flatten with your hands. Place on top of the potatoes. So fill all the potato pancakes with minced meat.

This should be done quickly enough, while their bottom has not yet had time to burn. Next, cover the meat with potato mass.

Use a spatula to flip them over to the other side. Reduce heat. Add sunflower oil, if necessary, and fry until tender.

Potato pancakes with minced meat or sorcerers are traditionally served with sour cream. You can make a delicious garlic sauce based on sour cream in a hurry. To do this, add a little salt to the sour cream, garlic passed through a press, a couple of sprigs of finely chopped dill. After adding all the ingredients, stir the sauce and serve with hot and delicious potato wizards.

As with any other meat-containing dishes, tomato sauce, ketchup, spicy adjika or barbecue sauce are also good for them. Enjoy your meal.

First of all, I'll do the minced meat. This time I have it from the store, which I basically do not accept. But, firstly, it turned out to be surprisingly high-quality, and, secondly, this is a quick recipe, so you can deviate a little from the principles and make yourself a favor.

Minced pork, but absolutely lean, tender and juicy. I will nevertheless add a tablespoon of mayonnaise and mustard to it to make it even tastier, salt, respectively, and pepper:

Now it's time for the potatoes themselves. I clean the required amount and one large onion. I will grate on a coarse grater one by one, one potato, a little onion, etc. Thus, the potatoes will not darken, and the onions will be evenly distributed in it.
