Strawberry Jam Recipes

Each housewife has her own recipes for making this delicious and healthy dessert. However, in order for this product to be as high-quality and valuable as possible, it is necessary to follow some rules when preparing it:

  1. Berries should be picked before cooking, no more than a day before making the jam. It is good if the collection takes place in dry and sunny weather.
  2. It is recommended to store them in a dark and dry place with temperature conditions not exceeding twelve degrees Celsius.
  3. Medium-sized strawberries are best for jam, so that the cooking process takes less time, since larger berries require a long preparation. And this leads to the loss of valuable and useful properties of the product, because they are significantly reduced during heat treatment.
  4. In order to avoid sugaring of the finished product at the end of cooking, it is recommended to add a little citric acid there.
  5. Strawberry jam should be boiled for an average of half an hour.
  6. Sugar balance is important. The ideal ratio is considered to be half a kilogram per kilogram of wild berries.
  7. Before cooking, you must remove the sepals and other possible greens, otherwise the product will acquire a tart aftertaste.

After this time, put the saucepan on low heat and bring to a boil. Cook for five minutes, then cool and repeat this procedure two or three more times.

After the end of the last cooking, pour the finished product into pre-sterilized jars and roll up.

  • garden strawberries - 1 kilogram;
  • sugar - 800 grams;
  • or citric acid - a quarter teaspoon.

The berry must be sorted out, the low-quality must be separated and cleaned of greens. Then rinse well with cold water and spread on a towel in an even layer to dry.

Put the garden strawberries in a prepared saucepan, sprinkle with sugar and let it brew for six to twelve hours.

After separating the juice, send the pan to the fire, bring to a boil and simmer for five minutes, periodically removing the foam. Then remove from heat and cool.

After cooling, reheat the berry syrup and boil for five minutes after boiling, stirring constantly. Then cool again. Repeat the process until cooked, add lemon juice or citric acid for the last cooking.

Bring the syrup to a boil and boil for a couple of minutes.

Then add the peeled, washed and dried berries to the resulting syrup and infuse the mass for five to eight hours.

After the time has elapsed, put the resulting mass on the fire, boil for five minutes and cool again. Repeat the procedure three times. By the last stage, the strawberries will be saturated with sugar syrup, the unnecessary water will evaporate and the product will thicken.

Features of making strawberry jam

How to make strawberry jam?

If you compare with other berries, then for strawberries you do not need to boil sugar syrup in advance. Cooking is much easier, you just need to fill it with sugar, cover the container with baking paper or a towel and leave for ten hours. The berry itself will start up the required amount of juice.

So that the finished product has an equal amount of berries and syrup, add the same amount of sugar per kilogram of fruit. If you want more syrup, use one and a half kilograms of sugar per kilogram of berries.

If you want to cook a large amount of jam, do not put the berries in one pan. This will damage the fruit. The ideal proportion for a saucepan is two kilograms of berries, excluding sugar. In this case, the fruits will cook evenly, the strawberries will retain their shape.

It is necessary to cook over low heat, stirring constantly, so that the berries are evenly cooked and not burnt. You cannot leave the product unattended, during the boil, foam rises with lightning speed, and if you hesitate, it will be difficult to wash the heated stove from the syrup.

Many housewives believe that it is impossible to stir the berries during cooking, so as not to damage the fruits. It's a delusion. It is necessary to stir, but correctly. Use only a wooden spatula or spoon. There should be no sudden movements. Stir only along the walls and gently along the bottom, touching the fruit as little as possible.

The berries, covered with sugar, must let the juice go, this takes time. You cannot cook right away, the strawberries will lose their shape, and undissolved dry sugar will burn.

It is better to cook in an enamel bowl. This material heats up evenly. Strawberries will not creep, remain strong and retain their original shape.

How much to cook strawberry jam?

Being a delicate berry, strawberries do not need to be cooked for a long time. Putting on the fire, you need to boil, boil for five minutes, stirring with a wooden spoon very carefully and removing the resulting foam in the process. After removing from heat, leave to cool for ten hours. So repeat three times. With this approach to cooking, the fruits remain strong, the syrup is transparent, the aroma is pleasant. With a longer cooking option, if you decide to cook more, the berry will lose its original appearance, the syrup will become thick. Store in a dark place between preparations without a refrigerator, out of direct sunlight.

How to choose the right berries?

When choosing strawberries, you should pay attention to the size and level of ripeness. It is important to choose the right time for harvesting. Optimally collected in dry weather, preferably during the day. If picked in the morning, the dew will be absorbed into the strawberries and the berries will become soft and watery.

Medium berry jam is best. They do not fall apart during the preparation process, they look good in finished form. If you put it in the refrigerator for a while, the berries will lose their sweet taste and aroma.

All harvested or purchased berries should be placed on the table and sorted. Large or very small berries are not ideal for jam. Fruits that are damaged, rotten and overripe are not left for cooking. The stalks are removed from good berries, then washed.

Some housewives do not rinse the fruits before cooking. It is not right. Be sure to wash the berries so as not to spoil the taste of the jam with contaminants. Do not wash in a colander under running water. Water pressure will damage the appearance of the berries. Pour cold water into a large basin and rinse one by one while picking berries for jam. This will not damage the berries. The washed fruits are taken out by a handful and laid out on a towel. It is impossible to keep in liquid for a long time, so that they do not absorb water, do not become watery. It is recommended to dry it completely so that excess moisture does not get into the jam. This process will take about six hours.

How to cook strawberry jam so that the berries remain intact, many hostesses know, right? But how to make strawberry jam without boiling berries, I will tell and show you today. This simple recipe will create fragrant, whole berries in a sweet and thick syrup - a fabulous treat for the whole family!

A prerequisite for any delicious strawberry jam can be safely called high-quality raw materials, that is, berries. In this case, try to choose a fragrant strawberry that is small (closer to small), whole, dense and elastic. Crumpled or very large berries will not work - they will not keep their shape and will even fall apart in mashed potatoes. Spoiled ones will completely cause fermentation in the jar - the sweet preparation will have to be thrown away.

I would not recommend reducing the amount of granulated sugar for strawberry jam without cooking, since this is a preservative. In addition, various spices (cinnamon, cardamom and others) for our family personally do not go well with this dessert: my family members love, so to speak, the pure taste and aroma of this fragrant berry.

In total, from the specified amount of the necessary ingredients, about 1 liter of strawberry jam is obtained without cooking. You can choose the jars of the volume that suits you best. I used 3 jars with a capacity of 200 milliliters each and 1 half-liter jar, in which I separately closed the thick strawberry syrup.

Ingredients:

Cooking a dish step by step with a photo:

Berries for this particular recipe are suitable for medium-sized, elastic and excellent quality. We sort out the strawberries (substandard, that is, crumpled, can be used to make strawberry jam or marshmallow, and we safely throw away the spoiled ones) and mine. To do this, we collect cold water in a large container, put berries in it and let them literally swim for a minute - this way the sand will sink to the bottom. Gently mix the strawberries with your hands, then remove and transfer to a colander. It is important not to remove the stalks until the berries are clean. Otherwise, the strawberries will absorb a lot of water and become limp.

We remove the stalks and put the clean berries in a bowl of a suitable size. The weight of strawberries (1 kilogram) is indicated already prepared.

Now let's start preparing sugar syrup, which we will subsequently pour over strawberries. To do this, pour 800 grams of sugar into a small saucepan with a thick bottom or a saucepan and pour 150 milliliters of water there (cold, hot, whatever you like).

We put the dishes on high heat and, while stirring, bring the contents to a boil. When all the sugar has dissolved and the syrup has boiled, make a medium heat and cook for about 5-6 minutes. Don't forget to remove the foam!

Pour strawberries with boiling syrup, lightly melting the berries with a spoon or spatula. You don't need to stir the strawberries!

In this position, we leave the strawberries in syrup at room temperature until they cool completely - this can take a couple of hours. In the process of cooling, the strawberry will give its juice, color and aroma to the syrup. The berries themselves will become a little lighter and thicker.

Gently pour the syrup back into the saucepan, bring to a boil and cook over medium heat for 5-6 minutes (remove the foam). During this time, the sugar syrup thickens slightly due to the evaporation of moisture.

A similar procedure should be carried out another 1-2 times (in total, 3-4 fillings are obtained). In the photo, already cooled strawberries in syrup after 3 syrup fillings.

Now it remains to close the strawberry jam without cooking for the winter. To do this, you need to carefully prepare the jar and lids in advance in any way convenient for you. My favorite thing is to do it in the microwave - for this piece I use 3 jars, each with a capacity of 200 milliliters and 1 can, with a capacity of 500 milliliters. Thoroughly wash the cans of soda or detergent, then rinse in cold water and pour 2 fingers into the bottom of each water. We put it in the microwave and steam it all together at the highest power for about 6-7 minutes. I just wash the lids, put them in a saucepan, pour water (to completely cover the lids) and boil for about 5 minutes. Put the berries in three prepared 200-ml jars. A half-liter can will be needed a little later.
