I will not talk now about the nutritional value of asparagus beans, I will only say that this is an excellent snack for the winter. It is believed that legumes are difficult to preserve: they do not stand well, deteriorate, and there is a lot of fuss with them. I want to convince you and offer a simple proven recipe, which has passed more than one year of testing in my family. 😉

How to pickle green beans for the winter

We put a pot of water on the fire, add salt and bring to a boil. We throw the prepared beans into a saucepan and boil for 10-15 minutes.

While the beans are cooking, and spices. Here everything must be done in the same way as when pickling cucumbers. Wash the jars well. From spices we need: a leaf of horseradish, a couple of sprigs of dill, garlic.

If desired, you can add peppercorns, bay leaves, cloves, or any other spices that you usually use to pickle vegetables. Decided? Put everything in a bank.

Throw the boiled beans in a colander, let the water drain, and cool slightly. As experience shows, putting beans into jars with a spoon is not convenient, here we work with our golden pens. Do not fill the jars tightly, otherwise there will be little marinade and the beans will not marinate properly.

We make the first filling. We boil water and pour it into a jar of beans, let it stand for 10-15 minutes, drain the water into a saucepan and put it on fire again.

One such procedure is enough and, now, on the basis of the drained water, we prepare the marinade. For 1 liter jar of the workpiece, put one tablespoon (without a slide) of salt, the same amount of sugar, and 0.5 teaspoon of citric acid. This is an amateur, citric acid can be replaced with vinegar.

And so, boil sugar and salt until they dissolve in water and only then add citric acid / vinegar. The marinade is ready, carefully pour it into jars. If this is a blank for the winter, then close it with an iron lid. If you first want to try what you got, then a plastic lid is enough.

You can try the finished beans the very next day. Open the jar, drain the marinade. We cut the onion into thin rings, add it a little, and press it with our fingers, sprinkle the beans with it, flavor it with vegetable oil on top and enjoy the amazing taste of pickled asparagus beans.

Concluding, I want to say that this is the easiest recipe for marinating asparagus beans, the basis, so to speak. But for a good hostess, this is all that is needed - the foundation, and she will come up with everything else herself. 😉
