Waldorf salad is a classic of American cuisine. Waldorf salad - the most delicious recipes The process of forming a dish

23.04.2024 Restaurant notes

Waldorf salad (Waldorf) is gaining increasing popularity and prevalence in the world. It was first made in 1893 in the New York hotel of the same name, from where it took its name. Initially, it was an extremely simple dish in terms of ingredients, it was just a mixture of apple and celery with a dressing of mayonnaise and lemon juice.

Over time, this treat moved to other continents and was “overgrown” with local ingredients. A huge mass of all kinds of preparations has appeared, sometimes dissimilar to the original and to each other. The only thing that remains unchanged is the mayonnaise dressing with a drop of lemon juice.

Especially for you, we have collected on this page the best, affordable and original cooking methods. Choose your Waldorf salad, learn the recipe and begin the culinary magic.

Recipe one: “Classic Waldorf” with celery and fennel

We will need:

  • Petiole celery – 2 stalks;
  • Fennel – 1 small;
  • Greener apple – 1 pc.;
  • Homemade or regular mayonnaise – 2 tbsp;
  • Walnuts – 4 pcs.;
  • Heavy cream – 4 tbsp. l.;
  • Lime (lemon) – 1 pc.;
  • White pepper (powder) – 1 pc.;
  • Salt.

Preparation:

  1. If you purchased nuts in shells for the salad, carefully clean them so as not to get hurt. Then we roast them in a dry frying pan to add a pleasant aroma to the salad. The recipe calls for chopped nuts, so we chop each half into 4 parts;
  2. Wash the celery, peel the stems, then chop into strips. The leaves can be left to garnish the dish;
    Wash the lime (you can use lemon) thoroughly and wipe with a clean cloth. Use a grater to scrape the zest from its skin. We will also squeeze out the juice, but separately;
  3. Wash the apples, cut them, get rid of the core and seeds. Cut into thin long rectangles. Lubricate them with a drop of citrus juice so that they do not have time to darken;
  4. Rinse and dry the crispy fennel. Then cut it in the same way as apples and celery;
  5. Now let's prepare a delicate dressing with a slight sourness for our salad. Here is her recipe: take and then mix cream, mayonnaise, a few drops of lime juice, and zest. Season everything with white pepper powder and salt.
  6. Let's put the ingredients of the treat together: fresh celery, sour apple. And also crispy fennel. Pour in the dressing and mix. Ready! Start your meal.

Tip: Ice water can restore fennel's original crunch and freshness. Just drop it in there for a few minutes and then slice.

Recipe two: “American Waldorf” with grapes and chicken

We will need:

  • Chicken – 320 grams;
  • Lemon – 1 pc.;
  • Pine nuts – 50 grams;
  • Green apple – 1 pc.;
  • Small grapes (red or yellow) – 110 grams;
  • Celery stalks – 2 pcs.;
  • Walnuts (shelled) – 50 grams;
  • Curly lettuce - 60 grams;
  • Natural yogurt (light mayonnaise) – 50 grams.

Preparation:

  1. Let's start with poultry meat. Defrost, rinse, dry a little. At this time, boil water, salt it, and then throw in the whole piece of chicken. Let it boil again, be sure to remove the protein foam that will soon form. When the product is completely cooked, remove it and place it on a plate to cool. Then we will get rid of the seeds and skins. Cut the meat into beautiful cubes or tear into petals;
  2. Now comes the turn of other products from the list. Wash the lemon thoroughly and wipe it with a dry cloth. Grate the zest from it and put it in a small cup. Then we cut the fruit and squeeze out all the juice;
  3. Wash the green apple and remove the skin if it is too hard (and for large fruits it is just like that). Chop the pulp into thin rectangles, and remove the core with seeds;
  4. We also treat the celery with water and remove the top layer. Cut the juicy pulp in the same way as an apple;
  5. Now let's bring our nuts to mind a little. Throw them into a hot frying pan and fry them a little without any fat. Then transfer it to a plate. Walnuts will also need to be chopped into pieces, and pine nuts will be left as is;
  6. Rinse and dry the crispy green salad. Then we tear it into uneven pieces;
  7. Let's prepare a dressing sauce for our miracle salad. Here is his recipe: mix natural yogurt with salt, add lemon juice and zest to your taste. Beat everything with a fork;
  8. Now it’s the turn of the most juicy, sweet and aromatic of the ingredients – grapes. We separate the small berries from the branch and wash each one well. Then we scatter them on a towel to dry a little. All that remains is to cut each berry into halves, after which you can begin assembling the salad;
  9. So, we form our Waldorf salad in the American version, as the recipe suggests: put celery, apple, green salad, chicken in a deep transparent salad bowl, add chopped grapes, and also add fried nuts;
  10. Season everything with pre-prepared sauce, our tender but satisfying treat is ready!

Recipe three “Waldorf a la Royal” with shrimp

We will need:

  • Green apples – 2 pcs.;
  • Celery – 2 stalks;
  • Shrimp – 350 grams;
  • Pepper powder (any) – ½ tsp;
  • Walnuts – 50 grams;
  • Heavy cream – 140 grams;
  • Parmesan – 40 grams;
  • Lemon - 1 pc.

Preparation:

  1. Let's deal with the lemon first. Let's wash it and dry it with dry cloths. Using a special or just a fine grater, rub off the zest, and then squeeze out the juice separately;
  2. Let's prepare the sauce, here's the recipe: whip the heavy cream, add the zest and lemon juice. Place in the refrigerator to infuse;
  3. While our dressing “reaches” the desired state, let’s start with the shrimp. Let's defrost them, as expected, in cold water or just like that. Boil water, add salt. You can also throw in some spices, for example, bay leaf, dried herbs or peppercorns. When the brine boils, add the washed shrimp and cook for 4 minutes. Remove with a slotted spoon and let cool. After this, they can be cleaned (remove heads, shells, intestines). Pour a drop of lemon juice over the seafood;
  4. Now it’s time to turn to the classic components of the salad, where the whole story began. Wash the apple, cut it into cubes (except for the core);
  5. Rinse the celery stalks and peel off the top layer. We chop the rest in the same way as apples;
  6. Peel the nuts and chop each halves into 4 parts. They can also be fried a little to add amazing flavor to the salad;
  7. Now let's get to the cheese. Here we have 2 options - tinker with it and serve it beautifully, or just add it to the salad. In the second case, it will be enough to simply grate the Parmesan into the chips. And for a slightly more complicated method, we do this: grate the cheese, put it in small portions in a frying pan without oil. We wait until it melts, then remove it with a spatula and roll it out a little with a rolling pin to make a thin cheese cake or chips;
  8. Now let's assemble our original royal salad. Add shrimp and walnuts to the main ingredients (apple, celery), pour sauce over everything, and season with pepper. Mix – almost ready!
  9. Let's design the final appearance of our treat. If you used a simple method of cutting cheese, then simply place the salad on a plate, sprinkle with cheese shavings, and decorate as you please. If you have prepared thin “chips” from Parmesan, then place them in a serving plate on the bottom - this will be the base. We distribute the prepared, already seasoned food on top and decorate.

Tip: To prevent the sliced apples from browning before mixing the salad ingredients, spray them with citrus juice and then toss evenly.

Waldorf salad with chicken and celery - a light appetizer of chicken with fruits and vegetables. The birthplace of this dish is America, or rather New York. The classic Waldorf salad was prepared back in the last century from sweet and sour apples, thinly sliced celery stalks, walnuts and mayonnaise. Over time, the recipe changed and new versions appeared. Nowadays, it is prepared not only from stalked celery, but also from root celery, and a variety of nuts are also added. Grapes, raisins, and strawberries are also found in some recipes. In my opinion, the apple-celery-chicken combination is the most delicious, despite its simplicity. I advise you not to be lazy and prepare homemade mayonnaise without vinegar (vinegar is replaced with lemon juice) for this classic recipe. With homemade mayonnaise you will get a completely dietary mayonnaise that can be prepared for both lunch and dinner.
It will take 10 minutes to prepare. The ingredients listed in the recipe make 2 servings.

Ingredients:

- boiled chicken breast – 250 gr.;
- apple – 2 pcs.;
- lemon – 1\2 pcs.;
- celery stalks – 6 pcs.;
- walnuts – 40 gr.;
- mayonnaise to taste.

Step-by-step recipe with photos:

We cut out the cores of two green, sweet and sour apples of medium size. Then cut the fruit into very thin, translucent slices and place in a bowl. Immediately squeeze the juice from half a lemon into a bowl to prevent the fruit from oxidizing in the air.

We cut off the lower part of the celery stalks - it is tough. Cut the petioles into small slices and add to the bowl with the apple. If you cook with root celery, then the root must be peeled and cut into strips.

Cut the boiled chicken breast into small slices across the grain and add to the rest of the ingredients.

Season the salad with mayonnaise to taste and mix gently.

Place the seasoned salad in a heap on a plate.

Wash the walnuts and dry them in a dry frying pan until a subtle nutty aroma appears. Sprinkle the finished salad with nut halves, garnish with a celery leaf and serve immediately. Try this one too
