  2. Use non-stick or double-bottomed heavy-walled pots for cooking. Do not despair if there is no such utensil in your kitchen arsenal; you can replace it with an ordinary saucepan, substituting a flame divider or a thick cast-iron disc under the bottom.
  3. Be sure to wash the rice to remove not only debris and dirt from it, but also excess starch.

Procedure:

  • Measure out the required amount of cereal. One 250 ml faceted glass contains 275 g of raw rice.

  • Pour cold water over the groats and stir gently. The liquid will instantly change its color from transparent to cloudy white. Strain out the dirty water and repeat the procedure 4 to 5 more times.

You should not stir the rice too vigorously, trying to get rid of excess starch as quickly as possible. Inaccurate movements can lead to a violation of the integrity of the grains.

  • Pour the washed rice with water or broth at the rate of 1 part rice 1.5 parts water.

  • Cover and cook over the fire. After boiling the liquid, reduce the flame to a minimum and cook for 10 to 12 minutes.
  • Make sure all the liquid is absorbed into the rice. Turn off the heat and leave the cooked cereal for 10-15 minutes, tightly covering the pan with a lid and additionally wrapping it with a towel.

  • Stir the cooked rice with a spatula and cool.

Rice with egg

Required products (2 servings):

  • rice - 150 g;
  • chicken eggs - 3 pcs.;
  • green onions - 20 g;
  • soy sauce - 3 tbsp l .;
  • spices for Chinese dishes - to taste;

vegetable oil - 30 ml;

  • garlic - 3 cloves;
  • green peas - 100 g.

Step by step recipe.

  • Cook the cereal.

  • Beat the eggs until smooth. Pour a little oil into a saucepan, and then the egg mixture. Put on low heat, and stirring constantly, cook until the mixture sets.
  • Peel and chop the garlic. Fry in a little vegetable oil.

  • Add rice, peas, green onions, and prepared eggs.

  • Add soy sauce and spices and sauté well.

  • rice - 150 g;
  • soy sauce - 3 tbsp l .;
  • seasoning for seafood to taste;
  • garlic - 3 cloves;
  • dill - 30 g;
  • ginger - 40 g;
  • butter - 60 g;
  • chicken eggs - 3 pcs.;
  • lemon - ¼ pcs.

Cooking method:

  1. Boil the rice.
  2. Remove the scales from the shrimp.
  3. Melt the butter in a skillet. Add finely chopped garlic, dill, soy sauce and ginger, simmer slightly. Pour in the juice squeezed from the lemon.

3 raw eggs;
1 tablespoon soy sauce

wok.

You need to cook such a dish in stages:

3 chicken breasts;
2 eggs;
50 grams of fresh (possibly frozen) green peas;
15-20 grams of sesame oil;
225 grams of rice (always long-grain);
3 tablespoons of soy sauce
1 bunch of chives

Cooking method:

1. First of all, boil in salted water, and then strain and cool the rice.
2. Cut the chicken fillet into large cubes.
3. Beat raw eggs lightly.
4. Put the wok (or deep frying pan) on fire. Pour sesame oil into it and heat vigorously.
5. Put the meat in the boiling fat and fry it for 6 minutes, turning constantly.

Chinese style egg fried rice

There is another original version, when fried rice with an egg in Chinese is cooked with the addition of mushrooms. The taste of such a dish is simply excellent.

For its preparation, the following initial components are required:

0.3 kilograms of rice (round grain);
1 raw egg;
50 grams of green onions;
¼ glasses of sesame oil;
200 grams of zucchini;
1 carrot;
2 cloves of garlic;
1 chili pepper pod;
0.5 teaspoon grated ginger;
6 pieces of shiitake mushrooms.

The whole process consists of several stages:

1. Boil rice and strain. Transfer the finished product to a plate and refrigerate. This can be done in the evening.
2. Cut the mushrooms into slices, chop the carrots into thin strips, and the pepper into slices. Grind the peeled ginger root. Cut the courgettes into cubes. Finely chop the onion and garlic.
3. Pour the oil into the wok and heat well.
4. First, fry the garlic with ginger and pepper in it for 60 seconds.
5. Add carrots. Continue browning for one more minute.
6. Add zucchini with mushrooms and mix it all thoroughly. Continue cooking for no more than two minutes.
7. Transfer the cooled rice to the wok. Fry for a couple of minutes, stirring constantly. Longer processing may cause the rice to dry out.
8. Beat the egg in a separate bowl with a table fork and add soy sauce.
9. Pour the prepared mixture over the food, stir and immediately remove the wok from the stove.
Sprinkle the finished dish with chopped green onions. If desired, it can be additionally poured with sauce and aromatic oil.

Cooking with shrimps

Seafood lovers can cook Chinese rice with egg and shrimp.

This requires a minimum set of products:

100 grams of rice;
1 onion;
2 eggs;
a handful of shrimp;
soy sauce;
any vegetable oil.
The cooking method is not much different from the previous options. In this case, you need:
1. Cook rice in salt water. So that the grains do not stick together during frying, they should be washed, preferably with cold water, thrown in a colander and cooled.
2. Pour the defrosted shrimps with soy sauce and leave them in this position for literally 2-3 minutes.
3. Heat the oil in a skillet.

1. Rinse the rice well, and then fill it with water in a ratio of 1: 2.5. Cook over medium heat. After 3-5 minutes, add salt and spices to the boiling rice to taste.

Step-by-step cooking recipe:

  • Remove the pre-cooked rice from the refrigerator. Long-grain jasmine or indica is used in classical Chinese cooking, but can be substituted for basmati, any Thai or other favorite varieties. The main thing is resistance to cooking. Rice should be crumbly, not sticky, with as little starch as possible.
  • Whisk the egg and sesame oil in a small glass bowl.
  • Cut vegetables into cubes, fry until golden brown in a highly heated pan with the addition of oil. They must retain the crispy aldente quality. Therefore, fry on maximum heat for no more than 2-3 minutes.
  • Add rice to the pan to the vegetable mixture. Continue to fry over high heat, stirring continuously for another 3-4 minutes.
  • Use a spatula to push the rice and vegetables to one side of the pan. Pour the egg-oil mixture over the free space and beat with a whisk for 10-15 seconds. Mix the finished egg with rice and vegetables.
  • Pour the soy sauce over the dish and fry for another 2-3 minutes.

Chinese style fried rice with egg is served hot, sprinkled with herbs and black pepper (to taste).

  • Peanut butter (any vegetable) - 1 tsp
  • Onion - ½ part of a large head
  • Green beans - 100 grams

Step-by-step cooking:

  • Pour water, salt and soy sauce into a saucepan and bring to a boil. Add instant rice and stir well so that the liquid is completely absorbed into the bag. After boiling, remove the pan from the heat, cover and let it brew for 5-10 minutes (depending on the type of rice). Then drain the water, cool and dry the rice.
  • Heat the pan well over high heat, add oil. Drive the egg directly into the pan and shake well with a whisk for 1-2 minutes. Put the finished "omelet" on a plate.
  • Change or wash the pan well. Heat over high heat until a haze appears. Grease the surface with oil and fry the vegetables (green beans, onions). Fry until golden brown over maximum heat, stirring constantly, for 2-3 minutes.
  • Add the egg and rice to the fried vegetables and pour over the soy sauce over the mixture. Fry for 2 minutes.

The aromatic, rich, bright taste of this recipe will be appreciated by lovers of Asian cuisine. For those who like the spice in a minimal amount, it is recommended to cut the soy sauce, vinegar, hot sauce in half.

For cooking, you will need the following set of products:

  • Egg - 2 pcs.
  • Rice, ready-made, cold - 200 grams
  • Peanut butter - 3 tablespoons spoons
  • Bulb onion - 1 pc. (large head)
  • Garlic - 2 large cloves
  • Finely chopped celery - 1 tbsp. spoon
  • Soy sauce - 1 tsp
  • Apple cider vinegar - 1 tsp (10-15 ml)
  • Any hot sauce - 1 tsp
  • Cumin, salt, black pepper, herbs - to taste

How to cook Chinese rice with spices:

  • 12-24 hours before cooking, cook Chinese rice (jasmine, basmati, brown) for the base.
  • Remove the rice from the refrigerator and place in a dish filled with oil. Mix the grains and oil for 5 minutes to coat each grain evenly. Throw the resulting workpiece into a colander to remove excess moisture. Leave to drain while cooking egg-spice mixture.
  • Salt the eggs. Beat gently until smooth (no foam). Add cumin seeds to the mixture (to taste).
  • Heat a frying pan and grease with oil. After the haze appears, pour the eggs with the caraway seeds and fry until firm, but very tender, soft consistency. Remove the resulting omelet from the pan and put in rice.
  • Fry the onion and garlic in the remaining oil for 3-5 minutes. Add rice, eggs, soy sauce, hot sauce, vinegar and celery to the pan. Mix well and continue to fry for 1-2 minutes, stirring continuously.

Serve the dish hot, sprinkle with herbs to taste and black with ground pepper.
