This recipe will focus on making yeast dough. After all, dough is the basis of pizza, and, as you know, a good basis is the key to success in any business. There will be dough, but no dough. He does not need long-term proofing, kneading, molding and other manipulations. Everything is extremely simple - you dissolve the yeast in water, add flour, add butter and knead the dough. Then, while it comes up, you can go about your business or make the pizza toppings. It can be anything - even with delicious ham and cheeses, even lean, only from vegetables. Most often, the pizza filling includes what is left from the previous meal in small quantities - a piece of sausage, meat or chicken, fresh or pickled vegetables, mushrooms, and on top of all this abundance is covered with grated cheese. As they say - simple, but tasteful.
Beef pizza - recipe for yeast dough

Ingredients for the dough for 1 large pizza:

- Wheat flour - 300-320 gr;
- water - 150 ml;
- sugar and salt - 1 tsp;
- fresh yeast (cubed) - 10 gr;
- refined vegetable oil - 3 tbsp. l.

For the filling (example):

- Boiled or baked beef - 250 gr;
- ketchup or homemade adjika, tomato sauce - 3 tbsp. l;
- onions - 1 pc;
- tomatoes - 2 pcs (frozen in the recipe);
- salt, spices - to taste;
- olives or olives - 10-15 pcs;
- hard cheese - 150 gr;

How to cook from a photo step by step





We take fresh baker's yeast (not dry, but in a cube), cut off a plate about 1 cm thick and half a matchbox in size. This will be 10-12 grams, just how much you need for the test. Or we measure the required amount on the scales. Add salt and sugar to the yeast. Rub it with a spoon, turn everything into a liquid gruel.




Pour in warm water, stir with yeast. Sift the flour and pour about two-thirds of the total amount into the water.




Mix flour with liquid with a spoon. Gradually, all the flour will be moistened, the dough will thicken. Add 2 tbsp. l. vegetable oil, mix it into the dough. Sift the rest of the flour on the table, put the loose dough on it.






We knead the dough with our hands, gradually taking flour from the edges. After 7-8 minutes, a smooth, elastic dough, slightly sticky and soft, will begin to turn out from a loose lump. To make it easier to knead, add another spoonful of oil or add flour. But you should not get carried away with flour - excess flour will make the dough dense. A well-kneaded dough will be soft but springy under your hands. We collect it in a lump, return it to the bowl, cover and put it in the heat for 1.5 hours.




After 1.5 hours, the dough will take up about a third of the dishes (it will increase 3-4 times), it will become very soft and airy. It is already ready for cutting, and by this time you should have the pizza filling ready.




Knead the dough and put it on baking paper. Stretch it with our hands, forming a round or square (rectangular) pizza base. Thickness 1-1.5 cm (depends on what kind of pizza you like - fluffy or on a thin crust). Grease the base with ketchup or tomato sauce, homemade adjika.






We spread a layer of onions, cut into thin half rings. To make the onion softer, after cutting, sprinkle it with fine salt and rub it lightly with your hands.




Put pieces of boiled or baked meat on the onion.




Cut fresh tomatoes into slices or slices, spread on the meat. Do not defrost the frozen tomatoes, add them to the filling as they are. Salt, pepper, season with spices. We lay out olives or olives. We send the pizza to a hot oven (temperature 220 degrees), bake for 15 minutes, until almost completely cooked.




We take out the pizza from the oven, sprinkle with grated cheese and keep for another 3-4 minutes, until the cheese becomes soft. Sprinkle the finished pizza with herbs, cut into portions and immediately put on the table. Usually served with pizza

The peculiarity of this pizza is that it is prepared on a "quick" yeast dough and therefore resembles a kind of open pie.

Pizza dough

To make such a pizza, you will need:

Warm water or milk (300 ml);

Sugar (2 tablespoons);

Flour (3 tablespoons + 2 glasses);

Dry yeast (tablespoon);

Vegetable oil (one third of a glass);

Salt (teaspoon).

Mix milk (or water), sugar, three tablespoons of flour and dry yeast in a bowl. We put in a very warm place for fifteen minutes. After this time, add vegetable oil, salt and add two glasses of flour in small portions. Knead the dough until it stops sticking to your hands. We put it in a warm place again. After fifteen minutes, roll out the dough, put it in a greased form, turn on the oven (to warm it up) and prepare the filling.

Pizza filling

It will require:

Onions (1 medium onion);

Beef (300 g);

Bulgarian pepper (200 g);

Small tomatoes (100 g);

Hard cheese (100 g);

Bay leaf;

Butter (20 g);

Pepper, salt (to taste).

We wash the meat, put it in a saucepan with water and add bay leaf, pepper, salt and finely chopped onion here. Cook until tender. Then cool the meat a little and cut into small pieces.

Thoroughly wash the bell pepper and remove the leg with seeds. Then we cut it into oblong strips. Cut the tomatoes into slices. We spread the meat, peppers and tomatoes on the dough greased with butter. Salt and pepper the filling a little. Sprinkle with grated cheese and put in the oven. We bake at an average temperature of about 200 degrees. After 20-30 minutes, a delicious pizza with meat, tomatoes and peppers is ready!

This dish is ideally combined with mayonnaise, sour cream, garlic and herbs, so before serving, the pizza can be cooled a little, cut into pieces and sprinkled with white sauce.

1. Pizza with meat, tomatoes and garlic

For the base : 500 g flour, 150 g butter, salt, 100-200 ml water, 1 egg.

For filling : 300 g of meat, 3 tomatoes, onion, salt, pepper.

Preparation

Combine flour, softened butter, salt, water and egg. Knead the dough and place on a greased and floured baking sheet. Roll it into a cake. Grease it with tomato sauce and spread the finely chopped meat, on top - onion rings and tomato slices. Sprinkle everything with parsley.
Bake the pizza in the oven for 7-10 minutes at a temperature of 300 ° C.

4. Pizza with meat and onions

For the base : 600 g flour, 20 g yeast, 250 ml water, 15 ml vegetable oil, salt, 40 g sugar.

For filling : 300 g beef, 2 onions, 1 bunch of green onions, 3 eggs.

For baking sheet : 1 tbsp. spoon of fat.

Preparation

Mix yeast, sugar and 100 ml warm water. The temperature of the mixture should be no more than 40 ° C. Put the yeast in a warm place for 15-20 minutes - so that it "disperses". Then add flour, salt, butter and knead the dough. Roll it on a baking sheet into a thin cake.
Pass the meat through a meat grinder and fry in a pan. Finely chop the onions, add to the beef and stir. Spread the meat mass on a flat cake, pour over it with tomato sauce and sprinkle with finely chopped green onions. Put the pizza in a cool place for 30 minutes. After this time, bake it in the oven at medium temperature.
Sprinkle the finished dish with chopped eggs.

5. Florentine pizza

For the base : 280 g flour, egg, 30 ml vegetable oil, 1.5 cups warm water, salt.

For filling : 450 g of meat, 200 g each of rice and mayonnaise, large onion, 2 eggs, 3-5 tomatoes.

For baking sheet : 1 tbsp. spoon of fat.

Preparation

Knead the dough from flour, eggs, butter, water and salt and put it in a cool dark place for 30-40 minutes. After this time, put it on a baking sheet, roll it into a cake and bake in the oven for 20 minutes. Remove from oven and let cool.
Lay out the filling as follows: the lowest layer - boiled and mixed with 2 tbsp. with tablespoons of mayonnaise, rice, on it - meat cut into thin slices and smeared with mayonnaise, then - onion rings and tomato slices. Then mix the chopped eggs with mayonnaise and spread the mixture on top.
Place the pizza in the oven for 2-3 minutes. Once the dish has cooled, you can garnish it with olives.

6. Pizza with ground beef

For the base : 300 g ready-made yeast dough.

16. Pizza with beef fillet and liver

For the base : 400 g ready-made yeast dough.

For filling : 300 g beef fillet, 100 g beef liver, 1 carrot, salt, spices, 10 g butter.

For baking sheet : 1 tbsp. a spoonful of vegetable oil.

Preparation

Boil the meat until half cooked with spices and separately the liver: with spices and carrots. Cut the fillets into large thin slices and place them on the dough, molded into a tortilla and greased with butter. From milk, eggs, yeast, two types of butter and flour, knead the yeast dough, spread it on a baking sheet, roll it into a thin cake and grease with mustard. Put on it tomatoes and peppers, rubbed through a sieve, then finely chopped and well-cooked pork. Sprinkle with cheese.
Place in a hot oven for 20 minutes. When it cools down, you can sprinkle it with dill and parsley.

27. Pizza with boiled meat and bell peppers

For the base : 500 g wheat flour, 1 tbsp. a spoonful of sugar, 2 tbsp. tablespoons of margarine or vegetable oil, 1 egg, 20 g of yeast, 1/2 teaspoon of salt, 100 ml of milk or water.

For filling : 150 g veal fillet, 50 g champignons, 10 g raw ham, 2 cloves of garlic, 100 g fresh spinach, salt, pepper, hard cheese, ketchup, pieces of vegetables.

For baking sheet : 1 tbsp. spoon of fat.

Preparation

Knead the dough with a mixer until smooth and let rise for 30 minutes at room temperature, protecting from drafts.
Peel the fillet of films and fat, salt and sprinkle with pepper. Dissolve the oil in a pan, fry the fillets in it on all sides and cool.
Peel the onion and garlic, chop them together with the washed mushrooms very finely and fry in a pan in hot fat for 3 minutes - until golden brown. You can add cream for flavor. Cool the mushroom mass. Rinse the spinach, dry and fry for 5 minutes.
Shape the dough into a tortilla and spread the ham slices (in the shape of a triangle) on it, minced mushroom on it, and then spinach. Put the veal fillet on top. Pour all this with ketchup, pepper and sprinkle with grated cheese.
Bake the pizza in a hot oven for about 20 minutes.

Roman pizza

Ingredients

For the test: 300 g flour, 70 g margarine, 20-25 g yeast, 230 ml milk or water.

For filling:

300 g of beef, 200 g of cheese (any), 70 g of tomato paste, 30 g of bread crumbs, 3 eggs, parsley, vegetable oil, black pepper, salt.

Cooking method

Make yeast dough. Leave the dough until it rises. Then roll out and place in a greased dish.

Chop the beef finely or mince it, mix with eggs, add tomato paste, pepper and salt to taste. Place the filling over the dough. Cut the cheese into cubes and spread over the minced meat, lightly pressing it into the filling. Sprinkle vegetable oil over the pizza.

Bake for about 30 minutes in an oven preheated to 180-200 ° C.

Pizza with beef and pickled cucumbers

Ingredients

For the test: 200 g flour, 25 g yeast, 100 ml milk, 2 eggs, 4 tablespoons of butter, 1 tablespoon of sugar.

For filling: 400 g of beef, 3 cucumbers (pickled), 3 carrots, 3 onions, 1 bunch of greens (any), 5 tablespoons of sour cream, ½ tablespoons of wine vinegar.

Cooking method

Mix all the ingredients for the dough, knead the dough. Prepare the filling. Cut the beef, cucumbers into small cubes. Peel the carrots, grate. Peel the onion and chop finely. Wash greens and chop finely. Mix vegetables and season with vinegar.

Roll out the dough into a thin layer, place on a baking sheet, previously oiled. Put beef with cucumbers, vegetables on the dough, brush everything with sour cream.

Place the baking sheet in an oven preheated to 180 ° C for 30 minutes. Decorate the finished pizza with herbs.

Pizza with lamb and cheese

Ingredients

For the test: 400 g flour, 10 g yeast (dry), 1 ½ tablespoons of olive oil, 1 tablespoon of sugar, 250 ml of water, salt.

For filling: 400 g of lamb (boiled), 150 g of cheese (any, hard varieties), 100 g of rice (boiled), 3 tomatoes, 3 carrots, 3 cloves of garlic, salt.

Cooking method

Pour flour into a bowl, make a small indentation in it, add sugar and a pinch of salt, pour in olive oil and most of the water. Dissolve yeast in 50 ml of warm water, pour it into flour. Mix everything.

Place the dough on the floured table and knead the dough for another 5-10 minutes. Leave the resulting dough in a bowl for 30 minutes to rise.

For the filling, cut the lamb into thin strips. Peel the garlic and pass through a garlic press. Finely chop the tomatoes. Grate carrots and cheese. Roll out the dough into a thin layer, place on a baking sheet, previously oiled. Put rice, lamb, garlic on the dough, salt a little.

Place tomatoes, sprinkle with cheese. Place the baking sheet in an oven preheated to 180 ° C for 30 minutes.

Pizza "Lamacoon"

Ingredients

For the test: 300 g of bread flour, 200 g of plain flour, 2 tablespoons of olive oil, 2 teaspoons of yeast (dry), 1 teaspoon of salt, 350 ml of water.

For filling: 500 g lamb, 2 onions, 2 cloves of garlic, 4 tablespoons of tomato sauce, 4 tablespoons of chopped parsley, 4 tablespoons of melted butter, 2 tablespoons of lemon juice, 1 teaspoon of cumin, cayenne or Jamaican pepper.

Cooking method

Salt flour, mash with yeast. Add water and olive oil, knead the dough. It should be smooth and elastic. Transfer the dough to a greased dish and place in a warm place for 1 hour. The dough should double in volume.

Pass the lamb through a meat grinder. Finely chop the onion, chop or grate the garlic.

Saute the onions and garlic in oil until tender. Add minced lamb and tomato sauce. Salt, season with spices.

Cook for 10 minutes, then add parsley and lemon juice.

Pound the finished dough again, divide into five small pieces and roll each into a circle 6-7 cm in diameter. Transfer to greased baking sheets, cover with a towel and let sit for 10 minutes.

Brush the dough with melted butter. Then put the filling in the middle of each circle and spread it evenly over the entire surface. Place the trays in an oven preheated to 200 ° C and bake for 8-10 minutes. Make sure the dough is not hard or burnt.

Remove the baking trays and cover them with a towel to keep the dough soft and pliable.

When the pastries have cooled slightly, roll each tortilla into a roll, sprinkle with parsley and serve.

Pizza "Iceberg"

Cooking method

Place the flour in a heap on the table and make a depression. Dissolve salt and yeast in warm water and pour into flour. Add vegetable oil. Knead the dough until it stops sticking to your hands. Roll the dough into a ball, place in a large floured bowl, cover and place in a warm place. After 2 hours, roll out the dough and place in a greased mold.

Chop the onion finely, put it in a skillet, add a few teaspoons of oil and sauté over low heat. Periodically during frying, you need to add a few tablespoons of hot water or broth to the onion. Cut the brisket into pieces, mix with fried onions, salt and pepper to taste. Place the filling over the dough and drizzle with butter. Place the pizza in the oven for 45 minutes, preheat the oven to 180–200 ° C.

Pizza with meat and tomatoes

Ingredients

For the test: 3 ½ cups flour, 30 g yeast, 2 tablespoons sugar, 2 tablespoons margarine, 1 egg, 2 cups water, salt.

For filling: 200 g of meat (any, boiled), 200 g of tomatoes, 150 g of cheese (any), 100 g of mushrooms (any), 100 g of bell pepper, 2 eggs, 1 onion, 2 tablespoons of vegetable oil, 5 teaspoons of mayonnaise, tomato sauce.

Cooking method

Sift the flour into a deep bowl. Melt margarine, cool.

Beat the egg and salt. Chop the yeast, dissolve in water. Combine everything with flour, knead the dough.

Cover and let stand 1 ½ to 2 hours.

Cut the tomatoes into slices. Chop mushrooms and onion and fry in vegetable oil for 2 minutes.

Cut the meat into thin strips, grate the cheese on a coarse grater.

Cut the bell pepper into cubes. Beat eggs, season with mayonnaise.

Roll out the dough into a layer. Its thickness should not exceed 5 mm.

Transfer the base to a greased baking sheet. Spread the tomato sauce evenly over the dough. Layer meat, mushrooms, peppers, tomatoes. Pour the egg mixture over the filling, sprinkle with the cheese.

Bake for 20-25 minutes in an oven preheated to 180-200 ° C.

Ingredients (for one standard pizza 30 cm in diameter): 175 grams of flour, 125 ml of warm water, a large spoonful of olive oil, a small spoonful of dry fast yeast, salt on the tip of a knife.

Mix flour with yeast and salt, and water with butter. Gradually pour the resulting liquid into the dry mixture. Knead the dough, which should be homogeneous. When it is thick, spread on a floured surface and knead for a few minutes. Grease the bowl with oil and put the product there. Cover, leave warm for 30-40 minutes (to fit). After that, knead a little more and roll out the dough in a circle. We spread the circle on a baking sheet. You can put the filling on top.

Note: pizza dough can be made with kefir, beer, and sour cream. Use fresh, puff, yeast - as you like. The above example is one of many options.

With beef (or veal)

With beef and pickled cucumbers - an excellent and satisfying meat pizza. Its recipe is simple to prepare. We need (the ingredients are indicated for making one pizza, if we cook several, multiply by the amount): 300 grams of boiled soft beef, 3-4 medium-sized pickled cucumbers, 1 bell pepper, 1 large tomato, 1 onion, cheese (mozzarella or whatever something else) - 150 grams.

  1. Put the prepared and rolled dough on a baking sheet.
  2. Cut the beef into strips. Pepper, onion - in half rings. Cucumbers and tomatoes - in thin circles.
  3. We spread: first the beef, then the vegetable mixture. Top with grated cheese.
  4. We put the baking sheet in the oven at medium temperatures. We bake for 20 minutes.

With ham

Meat pizza with ham and egg is a real hearty delight! We take 200 grams of smoked ham, not too fatty, 150 grams of hard cheese, 100 grams of milk, 2 eggs, 2-3 tomatoes, spices, salt.

  1. Cut the ham into cubes and fry a little in a pan.
  2. Cut the tomatoes and cheese into cubes. Mix with ham. We spread it on a dough base.
  3. Beat the eggs and mix them with milk, adding salt and spices (herbs can be used) to taste.
  4. Fill the filling laid out on the dough with this mass.
  5. Place the baking sheet in a medium-temperature oven and bake for 20 minutes.

With lamb and rice

Meat pizza with lamb and rice, seasoned with spices and cheese, seems to combine Asian and European cuisine. It is very satisfying and will surely please your family as a great alternative to a birthday cake.

We take 250 grams of boiled or (the main thing is that it is not tough), 200 grams of boiled friable rice, 3 cloves of garlic, 3-5 fresh tomatoes, 1 egg, 1 onion, seasonings.

  1. Cut the lamb into strips. Onions - in half rings.
  2. Press the garlic. Boil the egg and cut into cubes.
  3. Peel the tomatoes and mash them in a blender (well, or grate them coarsely).
  4. Combine all products (plus boiled rice) on a prepared basis laid out on a baking sheet.
  5. Cover the filling with tomato puree.
  6. Rub the cheese and sprinkle it on top of the entire structure.
  7. We put in the oven for 20 minutes.

With minced meat: little tricks

Homemade meat pizza can be prepared with minced meat: beef, veal, pork, chicken. Here we propose to use a little trick and take Georgian lavash - puri (round and fluffy, not thin) for the basis of our dish. With it, any pizza can be prepared very quickly: you don't need to make the dough.

  1. Put the minced meat fried with onions on a round pita bread - 200 grams.
