For the salad we need fried mushrooms, so we wash the champignons, cut them into strips and fry them with the addition of onions. Fry the mushrooms in vegetable oil; you only need a little bit of it. Salt the mushrooms to make their taste richer.




You also need to work with the chicken. We boil it and lightly salt it. Then cut into small squares.




There is no special preparation for fresh cucumber. Just chop it into small cubes.




Prunes, if they are very dry, can be soaked in warm water. If the prunes are soft on their own, then immediately chop them into long strips.






Now lay out the salad in layers, covering each layer with a mesh of mayonnaise. First there is a chicken layer, then prunes, fried mushrooms and a fresh cucumber completes the composition. We also coat the top of the salad with mayonnaise. This one is very tasty too.

Peel the onion and cut into cubes. Rinse the champignons, dry with a napkin, and peel off the skin. Cut the caps and stems into small pieces.

Fry the chopped mushrooms and onions in sunflower oil over medium heat. Fry, stirring, until the resulting juice evaporates. Season lightly with salt and pepper and cool.

Place the prunes on a paper towel. Blot away excess moisture on all sides.

Grind hard cheese (it is better to take one with a milky smell).

Now let's move on to the most interesting stage - the presentation. Place the meat on the bottom of the dish and coat it with sauce (it’s best if it’s homemade mayonnaise.

Then lay out the mushrooms fried with onions and distribute evenly over the entire surface of the dish.

Place pieces of prunes on top of the mushrooms and coat with a little sauce.

  • mushrooms – 400 g;
  • cucumbers – 200 g;
  • prunes – 150 g;
  • nuts – 60 g;
  • eggs – 3 pcs.;
  • onion – 150 g;
  • refined sunflower oil – 30 ml.

For the sauce

  • mayonnaise – 150 g;
  • kefir – 100 ml;
  • curry seasoning – 0.5 teaspoon. spoons.

The chicken fillet must be washed and then boiled until tender. After boiling, the water needs to be salted. If desired, you can also add bay leaf. Mushrooms need to be peeled, washed and finely chopped. Peel the onion and finely chop.

Place the onion in heated sunflower oil and fry it until golden brown. Then add the mushrooms and simmer them under a closed lid for about 15 minutes. Then you need to salt the mushrooms and, stirring, fry them without a lid for another 10 minutes.


In parallel with cooking meat and mushrooms, you need to boil the eggs. When they are cooked and cooled, you need to separate the yolks from the whites. Grate the yolks onto a fine grater.

Grate the whites too on a fine grater. Cool the chicken fillet, then cut into small cubes. Finely chop or grate the nuts. Cut the cucumbers into thin strips. Wash the prunes with hot water and, if they are hard, then soak them in boiled water for about 20 minutes. If the prunes are soft enough, you can immediately cut them into cubes, setting aside 2-3 pieces to decorate the White Birch salad with chicken and prunes.

To prepare the sauce, you need to add kefir and spices to the mayonnaise. Then mix everything well.

For the salad, it is best to take a rectangular or oval dish of a suitable size. Place a layer of prunes on the bottom of the dish and sprinkle with nuts.

Coat this layer with sauce and evenly spread the fried mushrooms and onions over it.

After frying, the mushrooms turn out to be quite fatty, so they don’t need to be coated with sauce. Place chicken meat on top of the mushrooms.

Brush the meat with sauce and place the cucumbers on top.

Place egg whites on the cucumbers, which should be covered with a continuous layer of sauce.

Sprinkle the top of the salad with yolks. All that remains is to decorate the dish.
