INGREDIENTS:

  • 400 g cottage cheese 5 - 9%
  • 200 g softened butter
  • 325 g flour
  • 150 g sugar

  • 1 pack baking powder

  • 2 medium sweet and sour apples (300 g)
  • 1 - 2 tbsp. l. brown sugar

COOKING METHOD:

1. To prepare envelopes with apples from cottage cheese dough, place softened butter, sugar and vanilla sugar in a deep bowl or food processor bowl. Beat the butter and sugar into a homogeneous creamy mass.

2. Add cottage cheese and the zest of one small orange and mix everything again. If the cottage cheese has grains, it should first be rubbed through a sieve.

3. In 2 - 3 additions, add flour, sifted with salt and baking powder, and knead the dough with your hands or using the hook attachment.

4. The result should be a very thick, dense dough that does not stick to your hands at all.

5. Roll out the curd dough on a floured surface into a rectangular layer 4 - 5 mm thick and cut it into squares with a side of 8 - 9 mm.

6. Place 2-3 apple slices in the center of each square and sprinkle them with regular or more flavorful brown sugar. You can also sprinkle them with additional cinnamon for a spicy taste and aroma. Connect the opposite ends of the dough and seal the products in the form of envelopes with filling inside.
7. Place the curd envelopes with apples on a baking sheet covered with parchment or a silicone mat. You can place them quite close to each other, since they do not increase in size during baking. From this amount of ingredients I got 28 cookies on two large baking sheets.

8. Bake in an oven preheated to 180°C for 25 minutes until browned.

If necessary, simply remove the frozen filled puff pastries and place in the oven for 25 minutes. 1. If you are using frozen puff pastry, remove it from the freezer approximately 30 minutes before working with it. It should not melt to the point of softness, but at the same time it should be easy to work with. Cottage cheese must be fresh, of any fat content. If it is sour, it can be easily corrected by adding a little more sugar. It is advisable to take sweet or sweet and sour apples.

2. Place the softened puff pastry on a table or board, roll out into a layer 3-4 mm thick. If necessary, lightly dust your work surface with wheat flour.

3. Divide the dough layer into several pieces, having previously determined for yourself the desired shape of the finished puffs.

4. Wash the apples, cut off the peel in a thin layer - then the filling will be more tender. Remove the core and cut the fruit into small cubes.

5. Pour cottage cheese into a bowl with apples, add sugar and spices if desired. If the cottage cheese is too dry, add a spoonful of low-fat sour cream and mix everything.

- 150 grams cottage cheese,
- 250 grams of flour,
- 100 grams of granulated sugar,
- 100 grams of vegetable oil,
- 1 chicken egg in the dough + 1 yolk for greasing,
- 1 large apple,
- 1 pinch of vanillin,
- 7 grams of baking powder,
- 1 pinch of salt.

Grind the cottage cheese with sugar so that the mass is more or less homogeneous.




Beat in one egg, the cottage cheese will gradually disperse into the liquid mass and there will no longer be large lumps.




Pour in the oil and get a liquid base for the dough.






Add flour mixed with baking powder. Don't forget about a pinch of salt.




Roll into an elastic ball, leave it to sit, rest and brew.




After 5-7 minutes, divide the ball into 2 equal parts, roll out thinly, about 3-4 mm thick, no more. Cut into sectors, into triangles. This is convenient to do with a pizza cutter. Now we make three more notches in each triangle.






Place slices and blocks on the wide edge of each triangle and lightly sprinkle with granulated sugar to make the filling tasty.




Carefully transfer the envelopes onto a baking sheet. It’s better to play it safe and place a sheet of good baking paper on the baking sheet.




Before baking, grease the envelopes with beaten yolk, bake for 20 minutes, set the oven at 180-190 degrees.

Mash the cottage cheese in a bowl with 2 tbsp. sugar and half an egg. Remove the core from the apple, you can peel it, we didn’t do that. Cut the apple into thin slices, place in a bowl and mix with the remaining sugar, cinnamon and lemon juice.

Roll out each layer of dough a little and cut into 6 squares.

Place a little cottage cheese on each square and carefully place a few apple slices on top.

Connect the corners and mold them together.

Transfer the puff pastries to a baking sheet and brush with the remaining egg.

Place in the oven, preheated to 200 degrees, for about 10 minutes (it may take you less time), you need them to brown.
