Zrazy are cutlets or rolls with a surprise - various fillings inside. Zrazy made from minced turkey turns out tender and light, and with mushroom filling inside it is simply delicious. Such almost dietary cutlets are quite suitable for children. Cooking them is not at all difficult.

Zrazy is common in Lithuanian, Belarusian, Polish and Ukrainian cuisine.

The filling for them is very different - in addition to mushrooms, these are various vegetables, boiled eggs, cereals in the form of porridge. Children are usually offered mushrooms only after a certain age, but zrazy made from minced turkey with vegetable filling can be given very early. Often served with broth, mashed potatoes, and pasta.

Note: for such dishes it is better to use coarse minced meat, and it does not matter what type of turkey meat - white, red or mixed.

We will take products from the list. Choose chilled ground turkey. Chicken eggs need to be boiled. Wash and dry the green onions. Add ground peppercorns to the minced meat. It is better to take sliced ​​bread or loaf.

Transfer the ground turkey to a bowl. Add salt, ground black pepper and sliced ​​bread softened in water.

Mix the minced meat until smooth. For convenience, we use an immersion blender.

Visually divide the minced meat into three parts. Take 1/3 of the minced meat with wet hands. Let's form a round cake. Dust the bottom of the cake with flour.

  • soy sauce - 1 tsp,
  • flour - 2-3 tbsp. l.,
  • breadcrumbs - 3-4 tbsp. l.,
  • vegetable oil for frying.

Preparation:

  1. Pass the turkey fillet through a meat grinder or chop it in a food processor (pulse mode). Salt and pepper the meat.
  2. Cut the chilled butter into small cubes.
  3. Pour cream over slices of bread without crust, and when the bread is well soaked in cream, place it in a colander without squeezing.
  4. Add the bread soaked in cream to the bowl with the meat and stir until smooth. Continuing to knead the minced meat, add pieces of butter in portions. When the minced meat becomes smooth and homogeneous, cover the bowl with the minced meat with cling film and put it in the refrigerator while we prepare the filling and breading.
  5. For the filling, finely chop the boiled eggs and herbs and mix. For breading, beat the egg with a fork in a small bowl, add vegetable oil, milk, and soy sauce.
  6. Season with salt and ground black pepper. Place flour and breadcrumbs into flat plates.
  7. After wetting your hands under cold water or lubricating them with vegetable oil, divide the minced meat into portions, form each piece into a flat cake about 1 cm thick, and place a little filling in the center in a heap. Connect the edges of the cake and shape it into zrazy shapes. Place the molded zrazy in a flat container, cover with film and put in the freezer for about 1 hour. Do not freeze the zrazy, but only cool it well so that they keep their shape.
  8. Dip the zrazy in flour, then dip into the egg mixture and roll in breadcrumbs.
  9. Fry the zrazy on all sides in well-heated oil until cooked (until golden brown). Side dish to taste - mashed potatoes, vegetable salad, rice, etc.

Preparation

Take the turkey meat from the leg or breast, remove the bones, fat and skin. You can take ready-made turkey fillet. Let's pass the meat along with two peeled onions and three cloves of garlic through a meat grinder with a medium rack or grind everything in a blender. Add two raw chicken eggs, a quarter glass of warm boiled water, salt to the minced meat, and mix it well.

I do not recommend using ready-made minced turkey for cooking.

As practice has shown, the finished minced meat contains too much fat, skin and hard veins, which will not improve the taste of our food and will not benefit our health.

Before forming each zraz, be sure to wet your hands with cold water, otherwise the minced meat will stick to your hands.

Place the prepared zrazy on a hot baking sheet greased with vegetable oil and place in the oven preheated to 180 degrees for 20 minutes. After 20 minutes, take out the baking sheet, sprinkle the zrazy with grated cheese and put it in the oven for another 10 minutes.

If you want to prepare a dietary dish that will have a minimum of calories and maximum benefits, then you don’t need zrazy. You can cover them with tomato slices before putting them in the oven.
