So the long May weekend has finally come, do not know what to cook? I offer a step-by-step recipe for cooking delicious burgers at home.

For reference: Hamburger- a type of sandwich, consisting of a chopped fried patty, served inside a cut bun. In addition to meat, a hamburger can have a wide variety of seasonings, for example: ketchup and mayonnaise, a slice of zucchini, lettuce ( Lactuca sativa), pickled cucumber, raw or fried onion, tomato. The name of the hamburger originally comes from the name of the second largest city in Germany - Hamburg, from where many emigrated to America. In German, the word "hamburger" can be a descriptive noun, meaning someone from Hamburg, or an adjective describing something from Hamburg.

So, what do we need for 12 buns (I found the recipe for burger buns a long time ago, unfortunately I can’t indicate the source):

Opara:

315 gr. flour

2 tsp dry yeast

300 ml milk, room temperature

Main dough:

230 gr. flour

1/2 tsp salt

3 tbsp Sahara

1 yolk

60 ml warm melted butter

Besides:

2 tbsp sesame seeds

2 tbsp milk

1) Prepare the dough: In a large bowl, mix milk, yeast and flour. Mix well, cover the bowl with a slightly damp kitchen towel and leave for half an hour at room temperature.

2) After the specified time, prepare the main dough.

Add flour, salt, sugar to the dough. Lightly beat the yolk with melted butter and add to the dough.

Knead the dough well, 8-10 minutes by hand. The dough should be soft and elastic.

3) Cover the dough with a slightly damp kitchen towel and leave for 1.5 hours. The dough should double in volume.

4) Divide the dough into 12 parts (I got 13 :), cover with a slightly damp towel and leave for another 20 minutes.

5) After the specified time has elapsed, form buns from each piece of dough, as if wrapping the edges inward, under the bun. This way you will get neat balls.

6) Place the rolls on a baking sheet lined with parchment paper or a silicone baking mat. Squeeze the buns lightly to give them a more flattened look.

Place in an oven preheated to 40 degrees for 20 minutes. They should increase significantly in size.

7) Preheat the oven to 200 ᵒС. It is important that it warms up well before you insert the baking sheet.

8) Before baking the buns, beat the egg with milk and brush the surface of the buns with a pastry brush, immediately sprinkling the top with sesame seeds.

9) Insert a baking sheet with buns into a well-heated oven and bake for 15-18 minutes. The buns should rise and brown.

10) Remove the hamburger buns from the oven and chill for at least 15 minutes before eating, preferably.

This is what they should look like

For cutlets:

Ground beef (take real ground beef, not "homemade" or some other. Or do it yourself) 800-1000 gr.

Mustard tablespoon

Garlic 3 cloves

Ground pepper (to taste)

Salt 1 tsp

Crackers 50 gr. or a couple of slices of bread

Eggs 2 pcs.

We take the minced meat and mix it well with our hands, gradually adding salt, pepper, eggs, bread, crushed garlic and mustard. When the minced meat becomes homogeneous, we sculpt cutlets from it with a diameter slightly larger than buns and fry them on both sides in a pan with butter or better on the grill

  1. Sift flour, salt and yeast into a large bowl. Make a hole in the center. Gradually pour in 600 ml. warm water and knead the dough.
  2. Knead the dough on a floured surface for 10-15 minutes until smooth. Roll into a ball, place in an oiled bowl and cover with oiled cling film. Leave for 1 hour: during this time the dough should double in size. Punch down the dough so that all large air bubbles burst, and knead for another 5 minutes.
  3. Divide the dough into 12 pieces and roll into balls. Lay out on a floured table at a sufficient distance from each other, lightly cover with cling film and leave for another 20-30 minutes.
  4. Preheat the oven to 230°C and place a greased baking sheet in it. Arrange the buns evenly spaced on the baking sheet. Cut each bun from the center to the edges several times. Lubricate with milk and roll in sesame seeds.
  5. Bake for 10 minutes until the buns begin to brown, then reduce the heat to 190°C and cook for another 30-35 minutes. Tap on the bottom: the sound should be booming. Cool on a wire rack.

I, like many others, love yeast bread. I propose to cook buns with sesame seeds on yeast dough. Buns are obtained with a delicate fibrous crumb. They can be served with any drink or soup. Or you can use it for burgers.

So let's get started. Combine milk with water, add yeast and sugar.

We introduce an egg.

Sprinkle some flour. We knead the dough.

We cover the dough with a napkin and let it "rest" for half an hour at room temperature.

Then stir in the oil and salt.

Knead the dough until smooth for 10-15 minutes. We remove the dough into a cup, cover with a film and place in a warm place for 60-90 minutes.

Then punch down the dough and divide it into 5 pieces of equal weight.

We dust the table a little with flour and roll out each blank with a "sausage" about 40 cm long.

We tie a weak knot to make a small loop.

And wrap the ends around the loop.

We put the blanks on a baking sheet, cover with a towel and leave for half an hour to part at room temperature. Beat the egg a little, brush the buns with a brush and sprinkle with sesame seeds. We bake buns with sesame seeds in an oven preheated to 200-220 degrees for 15-20 minutes.

Each hostess has her own recipe for cutlets, time-tested and more than a dozen guests. And although in European cuisine a piece of meat on a bone is called a cutlet, Russian people are more familiar with cutlets made from minced meat. This version of chicken cutlets is another way to diversify this dish, beloved by most of our compatriots. The use of tender chicken meat makes them light and nutritious, the addition of sour cream to the minced meat gives them juiciness, which can be preserved by breading with the addition of sesame seeds to it. The recipe is very simple, so everyone can master it. And yes, it takes a little time to prepare.

How to cook a recipe for chicken cutlets with sesame seeds:

1) Soak half a city bun or any other white bread in milk. If the crust of the bread is hard, then you can not use it.

5) At the end, add a tablespoon of sour cream. It will give the cutlets a special juiciness, make them more tender. Add salt, pepper and other spices for cutlets, mix everything well.

7) Preheat the pan, lubricating it well with vegetable oil. Fry the cutlets on each side so that a golden crust forms.
