Lazy cabbage rolls are a wonderful dish of Ukrainian cuisine, which is also loved outside this country. The name itself may suggest that this recipe is intended for lazy housewives who do not want to bother preparing the next dish, but this is not the case. Lazy cabbage rolls retain all the taste and aroma of classic cabbage rolls, but in this recipe you absolutely do not need to waste time on tedious and scrupulous wrapping of minced meat in cabbage leaves. Thus, you will save your time by preparing the same delicious dish much faster!

Getting started cooking stuffed cabbage

First step

  1. The first step is to prepare the meat, it must be rinsed well in water and, if possible, get rid of various films and fatty streaks.
  2. We install the meat grinder and drive the beef meat through it.

    If you use ready-made minced meat, then we set it to defrost at room temperature for about an hour and a half. But in any case, do not reheat it in the microwave, so put the minced meat for defrosting in advance.

  3. We clean both onions, rinse them in water and chop them into small cubes on a cutting board. We transfer the chopped onion to a separate plate.
  4. Peel off the peel from the carrots and rub the vegetable on a coarse grater, then transfer to a plate with onions.

  5. Pour refined vegetable or olive oil into the pan. We put it on a strong fire and wait for a sufficient glow.

  6. As soon as the pan is well heated, put the chopped onions and carrots in it. Reduce heat to medium and fry the vegetables until the onions are golden brown. The main thing is not to overcook, since in the future they will still be stewed under a closed lid with minced meat.

  7. It is advisable to add a little chopped greens to the minced meat. Dill is perfect for this recipe. Chop it finely on a cutting board, then add it to the minced minced meat at room temperature and mix it with clean hands in order to evenly mix the greens with the minced meat.
  8. Place the ground beef in a skillet with sauteed onions and carrots. Fry for about 10-15 minutes over medium heat, stirring all the ingredients in a frying pan with a wooden spatula.

  9. Pepper and salt the meat with vegetables and turn off the heat, letting the minced meat cool slightly.

Second phase

  1. Remove the top leaves from the cabbage, which may be a little sluggish and unsuitable for cooking. But do not throw them away, they will still be useful to us.

  2. We wash the cabbage under running water and chop it into thin straws using a sharp knife.

  3. We arm ourselves with the second frying pan and pour vegetable or olive oil into it. Put the pan on the stove and simmer chopped cabbage over medium heat until soft. Do not forget to periodically stir the cabbage with a wooden spatula.

  4. Let's start preparing the tomatoes. They must be crushed to a liquid state, but it must also be borne in mind that we do not need the tomato peel.

    There are a couple of ways to help you get rid of the peel. You can simply grate the tomatoes on a coarse grater so that the peel remains in your hands. Or leave the tomatoes in boiling water for five minutes, after which it will be very easy to separate the peel and then grind the tomatoes in a blender, meat grinder or on the same grater.

  5. Put whole cabbage leaves in a deep saucepan. This should be done so that they completely cover the bottom of the pan, thus creating a little protection against burning.

    Before this manipulation, you can additionally grease the bottom and sides of the pan with butter.

  6. On top of whole cabbage leaves, put half of the stewed cabbage from the pan into a saucepan.
  7. With the second layer, we will lay out the ground beef, level it over the cabbage layer with a wooden spatula.

  8. Put the remaining half of the stewed cabbage on top of the ground beef.

  9. Pour chopped tomato puree into a saucepan on top of stewed cabbage. Cover the pan with a lid and leave to simmer for about half an hour.

  10. During cooking, you can periodically stir cabbage rolls in a saucepan, and you can also add a little water if there is very little liquid.
  11. Serve hot with sour cream, mayonnaise, or minced garlic. Bon Appetit!

  • If you decide to cook lazy cabbage rolls in winter and you do not have fresh tomatoes, then their can be easily replaced with tomato paste or tomato juice.
  • You should not get hung up on minced meat exclusively from one type of meat.... You can use half ground beef and half pork, or use ground chicken or fish.
  • Choose white cabbage carefully, pay attention to its color and condition of the leaves of the upper layer. They should not be lethargic and slightly whitish in color.
  • If you are going to cook cabbage rolls from young cabbage, then you should remember that its leaves are quite tender, and it is not at all necessary to stew them first. Shredded cabbage can be immediately placed in a saucepan and cooked, at the same time shortening the cooking time a little.
