I want to note right away that it is better to take minced chicken, it makes the broth beautiful and takes less time to cook. But, if necessary, you can easily replace it with any other.

While the water is boiling, prepare the minced meat. Salt / pepper to taste, add a little onion (the amount depends on your desire). The meatballs are usually made purely meatballs, they are small in size and will not dry out in the broth.

Before the water boils, we have time to prepare the potatoes by cutting them into cubes as in the photo.

Dip the formed chicken meatballs into boiling water. We sculpt small meat balls with wet palms. Reduce heat to minimum to obtain a beautiful, transparent, clean broth. We are waiting for it to boil.

Now that our hands are free and time has appeared, we are preparing the frying. Chop the onion, three carrots on a grater.

Onions and carrots are medium-small. If large, then halves are enough, otherwise, the soup will be too vegetable, and the sweetness of the carrots will affect its taste.

The basic recipe does not imply such restrictions and, for greater calorie content, is prepared in steep meat and bone broth. For him, not only the ribs recommended below are suitable, a good rich broth comes out of pork knuckles or chopped back bones.

Ingredients:

  • beef or pork ribs - 400 gr.;
  • small parsley root;
  • small onion and large carrot;
  • two tablespoons of unscented vegetable oil;
  • 200 gr. potatoes;
  • three small leaves of lavrushka;
  • 120 grams of noodles.

For the meatballs:

  • half a cup of large rice;
  • 400 gr. pork or ground beef, it is better to take mixed.

Step-by-step meatball and noodle soup recipe

Washed ribs, cut into pieces and put in a three-liter saucepan. Underfilling by about a liter, fill with cool water, put on an intense fire. Removing the foam, bring to a boil, after which, lowering the heat, cook the broth under the lid for an hour and a half.

Simultaneously with the broth, cook rice in a large volume of hot water. When half cooked, pour the entire contents of the pan into a colander and leave the rice in it.

We clean the parsley root. We cut it very finely, dip it in the meat broth and cook for another half hour.

Chop the onion into small slices, sauté in a frying pan with butter until transparent. After adding coarsely grated carrots, we continue to cook until the vegetable slices acquire a delicious golden color. Stir the roasting frequently, otherwise the vegetables will burn. If necessary, you can add a little broth, but not oil.

Put the minced meat in a bowl convenient for mixing. Season with pepper, lightly add some salt and add dried cooked rice. Mix the meat mass thoroughly. With moistened hands, scooping the minced meat with a dessert spoon, roll up small balls - meatballs.

We spread all the bones from the finished broth, we will not need them in the future.

Immediately season the minced chicken with pepper, add a little fine salt and slowly, thoroughly mix. Laying out on a cutting board, sculpt meatballs with wet hands.

Chop the onion finely. After peeling large carrots, rub the root vegetable through a fine grater. Cut the potatoes finely, into cubes or cubes.

  2. Pork meat, even fillet, has a high percentage of fat. But the meatballs with its addition will be juicy and soft.

Mixed minced meat is not for everyone. Children, sick or elderly people and those who are losing weight are better off cooking.
Choose fresh meat. Better - from a familiar seller in the market. There, the turnover of meat is faster than in the store, and the risk of buying a stale product is less. The meat should be:

In fact, it is not the soup that is fried, but the vermicelli. Thanks to this processing, the products do not sour, they become beautiful in color, and the dish itself has a pleasant aroma. You can cook noodles in a dry frying pan or in butter (ghee), this is a matter of personal taste.

Ingredients

We put a couple of liters of water for the broth or a little less, depending on the desired thickness of the soup. We lay the chopped potatoes, salt. We timed five minutes, after which we introduce the formed meatballs. We just sculpt small balls of minced meat with spices. You can buy them at the store.

Pass the onions and carrots. We shift the dressing into the soup, boil for three minutes, look at the potatoes.

Put the vermicelli in a skillet after vegetables. Add a little more oil if desired. Fry until brown, stir, no tan marks should form.

As soon as all the vegetables are cooked, put the noodles in the soup. Let the dish boil well, pour herbs and spices into it.

The same soup can be made with melted cheese. As a result, we will get a very tasty and incredibly aromatic dish.

Option 6: Mushroom soup with meatballs and noodles

For mushroom soup with meatballs and noodles, you need regular mushrooms. The amount is indicated in grams, as the size of the caps can vary greatly. Since they are fried, it is best to use fresh rather than frozen mushrooms.

Ingredients

  • 250 g champignons;
  • 2 potatoes;
  • 1 onion;
  • 350 g minced meat;
  • a handful of vermicelli;
  • spices;
  • 30 g dill;
  • butter (about 50 grams).

How to cook

Boil two liters of water in a small saucepan, add potatoes, wait for a boil, then add salt and cook for three minutes. Add salt to the minced meat, pepper, form balls, put into the soup.

Champignons can be added to soup in large pieces, but it is better to make plates - slices, they look good in a dish. Pour into a wide frying pan, fry, pour into a saucepan after the meatballs. Cook all ingredients until tender.

Add a little more oil to the pan, fry the onion. Transfer the sautéed sauce to a saucepan, stir.

At the end of cooking, we throw a handful of noodles into the soup, taste it for salt, add any spices to our liking, throw in chopped greens.

If dry mushrooms are to be used for the soup, then they must be soaked well in cold water before cooking.

Option 7: Soup with meatballs and noodles for a child (turkey)

The meatballs will be smooth and neat if rolled with hands soaked in cold water.

Option 8: Soup with meatballs, noodles and potatoes in a slow cooker

In a slow cooker, very tasty and satisfying soups are obtained, while they are quite simple to cook, many ingredients are not required. We use minced meat any to your taste, as well as spices.

  • 20 ml of oil;
  • carrot;
  • 300 g minced meat.

How to cook

Chop an onion and one small carrot. We send in oil, fry a little on the appropriate program.

We make small balls from minced meat, add to vegetables. We cook with them for a few more minutes. After that, we throw in the chopped potatoes and fill the contents of the multicooker with hot water until the desired thickness of the soup, salt.

Close, cook in soup mode for 35 minutes. But it is better to look at the capabilities of your device, the time depends on its power.

At the end, we lift the lid, throw in a couple of spoons of vermicelli, spices, stir. We leave on heating mode (10 minutes) so that the soup reaches its final readiness.

Since soups are prepared with noodles, it is undesirable to add boiled rice to the minced meat, but you can throw in some chopped vegetables. Beautiful meatballs are obtained with carrots and bell peppers, they need to be chopped very finely.
