Very unusual and original

Pancakes are a wonderful versatile dish! After all, it’s no secret that pancakes can be eaten both as an independent dish and with different fillings. Today we are preparing pancakes with cottage cheese and strawberries. The delicacy comes out delicious, tender, and melts in your mouth!

My strawberry puree is homemade: I simply puree frozen strawberries (defrost first) with sugar using an immersion blender. If you don’t have such puree, it doesn’t matter - you can not add it at all, but limit yourself to cottage cheese and fresh strawberries.

As for the cottage cheese: mine is soft, quite moist, but viscous. It can be spread on. If you have regular cottage cheese, rub it through a sieve.

You need to add enough cream so that the consistency of the filling suits you! My filling turned out to be quite liquid, but did not flow out of the pancakes.

So, to prepare pancakes with cottage cheese and strawberries, we will prepare the products according to the list.

Mix cottage cheese, powdered sugar, vanillin and cream in a bowl.

Mix well with a whisk.

Cut the strawberries into small pieces and add to the bowl with the cottage cheese. Mix.

Then turn the strawberry puree and mix everything well again.

The mass will turn out fluffy and very tasty.

Place 1-2 tbsp on the pancake. curd filling.

We wrap the pancake in a way convenient for you.

Here's a stack of pancakes with cottage cheese and strawberries. Not all pancakes are here, because along the way they “went away”.

In total I got 10 of these rolls.

It is advisable to keep the pancakes in the refrigerator for an hour and a half. Then the curd mass will stabilize, become more airy and hold its shape better.

But I risked being left without a final photo, so I cut the pancakes right there.

Enjoy your meal!

- 1.5 cups flour;
- half a liter of low-fat kefir or even yogurt;
- 60 ml vegetable oil;
- two eggs;
- a pinch of salt (without it, the pancakes will come out a bit bland);
- 90-100 g of sugar.

Preparation:

Make pancake dough. Pour the dairy product into a small cup, break the eggs, add salt and sugar and whisk.

Sift the flour into a bowl convenient for kneading dough; by the way, this step is important and it is better not to ignore it. Add the milk-egg mixture and stir thoroughly. If the dough turns out to be very thick, dilute it with kefir, and if it’s completely liquid, add sifted flour. When the dough is almost ready, pour in the oil and stir again so that it is absorbed into the mixture.

Let the finished pancake dough stand for a quarter of an hour and then bake the pancakes. Grease the pan once before baking the very first pancake, and then you won’t need it anymore. Here, in fact, is one recipe for baking pancakes.

Now the step-by-step preparation for the second option.

For the pancakes themselves we will need:

- three glasses of milk;
- a teaspoon of soda;
- three eggs;
- 1 tbsp. spoon of lemon juice;
- two glasses of flour;
- 3 tbsp. spoons of sugar;
- a little salt;
- 60 ml vegetable oil.

For the curd and strawberry filling:

- half a kilo of cottage cheese;
- strawberry;
- 5 tbsp. spoons of sour cream 20%, if you decide to assemble the cake, you will need more sour cream;
- sugar - optional.

How to cook pancakes with strawberries and cottage cheese:

Break eggs into a bowl, add sugar and salt.

Beat with a mixer or a regular whisk until foamy.

Next, start adding flour, just sift it in advance and don’t pour it all into the egg mixture at once :), but add it gradually.

The result will be a thick mass and, naturally, with lumps.

But don't worry, we will dilute it with milk. Pour it in gradually as well.

You can make the dough like this - add half a glass of flour and stir, then pour in half a glass of milk and stir again, and so on until you have added all the ingredients completely. If there are any lumps in the dough, break them up with a mixer. Then add baking soda and lemon juice. The soda will definitely bubble. Mix the dough with a spoon or whisk.

At the last stage of mixing the dough for pancakes with strawberries, pour in the oil and thoroughly stir the mixture again.

That's it, now start baking. The frying pan must first be heated, lightly greased with vegetable oil. Grease the entire area of the pan and the sides as well. With further baking, you will no longer need oil, since there is enough of it in the dough. Pancakes bake quickly, so I don’t recommend moving too far from the stove.

Place the finished ones in a stack on a flat dish. If desired, grease lightly with butter; I skipped this step.

Next, prepare the filling for the strawberry pancakes. Mix cottage cheese with sugar and season with sour cream...

...and cut the berries into slices.

Now it’s even easier - put a little cottage cheese on the edge of the pancake, and place strawberries on top.

I didn’t have enough cottage cheese, so I put chopped berries on the last pancakes and sprinkled them with a little sugar.

Roll it up.

That's all, the delicious and aromatic pancakes with cottage cheese and strawberries, the recipe for which I showed you, are ready. Set the table and invite the family to take a sample.
No, not all! If you have guests coming over, put together the most gorgeous cake, I assure you, everyone will just gasp!

So, place pancakes with strawberries on a plate for serving the cake, and grease the first row with sour cream or sour cream.

So stack all the pancakes in a heap, greasing the rows each time. Grease the sides as well.

Decorate the pancake cake as you see fit and put it in the refrigerator until your guests arrive.

That's it now. During tea drinking, cut the strawberry cake with a sharp knife into slices 3-4 cm wide and serve additional sour cream.

Strawberry appetite to you and good summer days!
