Classic lazy cottage cheese dumplings

The technology for making lazy dumplings is identical in almost all recipes - knead the dough, form dumplings and boil them in salted water. But with this similarity, the composition of the dough can be very different, so in the classic version, the dough contains butter and a sufficient amount of flour, which makes the dish quite satisfying and easily digestible.

Classic lazy cottage cheese dumplings are made from:

  • 500 g of fatty (better homemade) cottage cheese;
  • 2 table eggs;
  • 150 g flour;
  • 100 g sugar;
  • 60 g butter;
  • 4 g salt;
  • vanilla or cinnamon to taste.

Recipe for individual processes:

  1. Put the cottage cheese into a container for kneading the dough and knead the grains contained in it, so that the mass becomes more homogeneous, and the dumplings turn out to be incredibly tender. The consistency of cottage cheese is of great importance for this dish, so the product should not be too dry and grainy. If this happens, then the situation will be corrected by grinding through a sieve or interrupting with a blender.
  2. After that, melted butter, sugar, egg, salt and vanilla (cinnamon) are sent to the curd. The mass mixes well.
  3. Add the prescribed amount of sifted flour and knead the dough. Do not hammer it heavily with flour, it should remain sticky.
  4. Roll out sausages from the dough on a table dusty with flour, which are cut into small pieces. Making a dent in each of these pieces with your finger is a traditional form of lazy dumplings.
  5. Lazy billets are boiled in slightly salted and sugared water until they emerge for 3-4 minutes.

Unleavened, as it seems to most children, cottage cheese is dearly loved by many from kindergarten in the form of lazy dumplings. Children love them for their taste, and mothers love them for the benefits they bring to the growing body in the form of the necessary calcium, and the speed of preparation. All processes will take no more than half an hour.

To pamper yourself and your children with delicious lazy dumplings like in kindergarten you will need:

  • 440 g of cottage cheese;
  • 140 g wheat flour;
  • 1 egg of category C1;
  • 40 g sugar;
  • 40g melted butter, to serve;
  • 3 g of salt.

How to make dumplings:

  1. Cottage cheese, grated through a sieve or simply mashed with a fork, is mixed with sugar, salt, egg and flour until a tender and very soft curd dough is obtained.
  2. The dough is rolled out into a layer one centimeter thick, then cut into strips of 2.5 cm wide. These blanks are cut into squares, rectangles or rhombuses and dipped in salted boiling water.
  3. After four to six minutes, the finished dumplings are taken out with a slotted spoon, put on a plate and poured with oil so that they do not stick together. They are eaten hot.

With cottage cheese and semolina

Semolina is the closest relative of wheat flour, because it is a product of coarser grinding. Semolina is often used in cooking as a breading, as well as adding to baked goods. Another delicious way to use semolina is lazy dumplings. Due to the ability of cereals to absorb moisture, the dish is very fluffy and tender.

For curd lazy dumplings with semolina, you need to take:

  • 400 g of cottage cheese;
  • 200 g semolina;
  • 100 g flour;
  • 100 g granulated sugar;
  • 2 eggs;
  • salt to taste.

Step-by-step actions:

  1. If the cottage cheese is dry, then for a more uniform consistency it should first be squeezed through a sieve. A wetter product can be immediately mixed with eggs and sugar, ground into a homogeneous mass
  2. Next comes the turn of adding decoys. Simultaneously with its kneading, the mass needs to be slightly salted. Cottage cheese with semolina and eggs are removed for 30 minutes in the cold so that the cereals swell and take in excess moisture.

  • 700-800 g raw potatoes;
  • 1 chicken egg;
  • 180 g flour;
  • salt and spices to taste.

  1. Remove the peel from the potato tubers, rinse them in cold water and, cutting large specimens into several pieces, boil them until cooked in salted water.
  2. You need to drain water from boiled potatoes, and knead the tubers with a crush until a smooth puree;
  3. When the potatoes are at room temperature, beat in a chicken egg and sift the flour. At the same stage, if desired, you can add your favorite spices. Knead the mixture diligently to make a light airy potato dough.

How much to cook dumplings, if we are not talking about a store-bought frozen semi-finished product? Cooking them, of course, is not difficult, but still it will take a lot of time to sculpt, so lazy cottage cheese dumplings have become a favorite among the dishes in the category of delicious, quick and healthy breakfast.

To feed your family with lazy dumplings for breakfast, you need to take:

  • 500 g of cottage cheese;
  • 75 g granulated sugar;
  • 1 egg;
  • 50 g flour for dough and for boning;
  • salt and vanillin to taste.

Progress:

  1. Combine the cottage cheese with the rest of the ingredients until you get a slightly sticky dough, which will have the same consistency as cottage cheese.
  2. Well dusting the working surface of the table with flour, roll a sausage with a diameter of 2 cm from the dough, cut it into centimeter pieces, which are boiled until tender in boiling water with a small amount of salt or sugar.

Formed lazy dumplings can be turned into homemade convenience foods by freezing them on a floured board. Then all that remains is to get them out of the freezer and boil them.

No added eggs

Lazy cottage cheese dumplings can be made without adding eggs. Ready-made dumplings will not creep, since the cottage cheese contains casein (the protein from which glue is made), and gluten is in the flour.   • 500 g of cottage cheese;
  • 90 g sugar;
  • 45 g starch;
  • 70 g flour;
  • 5 g of salt.

Cooking sequence:

  1. You should immediately put a pot of cooking water on the fire, so that by the time the dough is kneaded and dumplings are formed from it, the water has boiled.
  2. Grind cottage cheese with a fork or potato grinder along with sugar, salt and starch. Then add sifted flour to this mass and knead the tender curd dough.
  3. Roll small (two to three centimeters in diameter) balls out of the dough and boil them in salted water for about two minutes after they emerge.

During berry season, or if you have frozen strawberries or raspberries in the fridge, you can make a delicious berry sauce. Mash the berries and strain through a sieve to get rid of seeds.
