1 tsp baking soda.

Cooking:
Break eggs into a deep bowl, add sugar and beat with a mixer. Then pour in kefir, add flour, add soda and beat again until smooth. Spoon the batter into the silicone molds, filling the molds less than half way. Then add pieces of prunes and send the cupcakes to the oven preheated to 190ºС for 20-30 minutes.

Ingredients:
1 stack kefir,
2 stack flour,
2 eggs,
100-120 g of any jam,
2 tbsp Sahara,
2 tbsp breadcrumbs,
1 sachet of baking powder.

Cooking:
Mix kefir with sugar and jam, add eggs to this mixture, then flour with baking powder and mix until smooth. Sprinkle the form or molds with breadcrumbs and pour in the dough. Put the molds with the dough in the oven, preheated to 190ºС, and bake until done. Garnish the finished cupcakes with nuts and honey or lemon balm leaves.

Ingredients:
2 stack flour,
1 stack kefir,
1 stack Sahara,
3 eggs,
100 g butter,
1 tbsp honey,
1 tbsp vanilla,
2 tsp dough baking powder.

Cooking:
Whisk eggs with sugar and vanilla. Melt the butter and add it together with kefir to beaten eggs, mix and add flour with baking powder. Knead the dough of the density of sour cream. Add honey, mix and pour (about ⅔ molds) the finished dough into greased molds. Send the cupcakes to the oven preheated to 190ºС for 15-20 minutes.

Ingredients:
2 stack flour,
1 stack kefir,
1 stack Sahara,
3 eggs,
100 g butter,
10 g baking powder
3 tbsp candied fruits.

Cooking:
Whisk eggs together with sugar. Pour kefir into the egg-sugar mass and mix. Melt the butter and let it cool down. Then pour the cooled butter into the kefir-egg mass and mix. Then add flour mixed with baking powder. Lastly, stir in the candied fruits. Mix well and pour the dough into greased molds. Bake cupcakes in the oven at 180ºC for 50-60 minutes. Check the readiness of cupcakes with a toothpick or match.

Lemon kefir cupcakes

Ingredients:
For cupcakes:
350 g flour
200 ml of kefir,
200 g sugar
180 g butter,
2 eggs,
1.5 large lemons (zest and 3 tbsp juice),
⅓ tsp soda,
½ tsp salt.
For impregnation:
6 tbsp sour cream 20% fat,
5 tbsp Sahara,
3 tbsp lemon juice and some lemon zest
citric acid - on the tip of a knife.

Cooking:
Beat soft butter until white foam, gradually adding sugar. Continue beating for about 8 minutes. Remove the zest from the lemons and squeeze out the juice, strain it through a fine sieve. Add 1 egg at a time to the beaten butter and sugar, beating thoroughly for 3 minutes after each. Then add lemon zest and beat for 1 minute. Add soda to flour and sift through a sieve into another bowl. Add salt to the sifted flour and stir with a spoon. In the dough with eggs, add 2 tbsp. flour, 2 tbsp. kefir, 1 tsp lemon juice and start mixing, gradually adding these products in the same proportions until everything is over. Knead the dough from bottom to top until smooth. Grease a mold or molds generously with butter and fill them ¾ full. Place in the oven, preheated to 180ºС, for 50 minutes for a large cake and for 20-30 minutes for small ones. Carefully remove the finished cupcakes from the mold and leave to cool if your molds are made of silicone. If the cupcakes are metal, be sure to let the cupcakes rest under a towel for about 15 minutes. While the cupcakes are cooling, prepare the lemon curd. To do this, beat all the ingredients for impregnation into a lush foam and put the whipped mass in the refrigerator for 30 minutes. Then dip each cupcake with the top in the impregnation, hold in it for 30 seconds, turn over and carefully place on a plate. Sprinkle the finished cupcakes with lemon zest.
