13.02.2024 Egg dishes

Good day, all my blog readers!

Have you ever eaten crumpets? And such delicacies made with kefir or milk, with sour cream and sugar, or maybe with water? It turns out there are a lot of options for preparing these airy delicacies.

The most important advantage among other baked goods is that they do not go stale for a long time if they are covered with a bowl or plate. I often whip up such delicacies myself, and it doesn’t matter whether I use kefir or milk as a base, or maybe even homemade sour milk, crumpets fried in a frying pan always turn out appetizing and very tasty.

My kids also love this delicacy. Moreover, if you make funny and amusing bears or other characters, geometric figures from the dough, then this pastry will be eaten in a matter of minutes. And to make it sweeter and tastier, I always try to sprinkle these sweets with powdered sugar. It all looks very appetizing and tempting!

Donuts - the easiest recipe to prepare

I present to your attention the simplest and fastest version of this delicious and aromatic pastry. This type of classic kefir buns is fried in a frying pan.

We will need:

  • kefir - 250 ml
  • granulated sugar - 5 tbsp. l
  • baking soda - 1 tsp
  • salt - 0.5 tsp
  • vegetable oil for dough - 2 tbsp. l, and for frying separately
  • egg - 1 pc.
  • flour - 4 tbsp.
  • vanilla sugar - 2 tsp
  • lemon zest - 1 - 2 tsp

Cooking method:

1. Take kefir and pour it into a glass bowl. Add soda to it and mix well. This way the soda will be quenched in the kefir and there will be no unpleasant aftertaste when you eat the finished product. Set the bowl aside for 10-15 minutes just to stand.

2. Meanwhile, break one chicken egg into another bowl. And add sugar, vanilla and salt to it. If you wish, you can take not 5 spoons of sugar, but a little more if you want your buns to taste very sweet :) You don’t have to use lemon zest, but if you do use it, you will definitely get a fragrant taste. It will be very tasty and the smell will be simply amazing.

4. After 10-15 minutes, pour the egg mixture into the kefir. And stir well too.

5. Now add flour gradually, stirring each time with a spoon in the bowl. It is better to take sifted flour so that it is saturated with oxygen.

6. Roll out the dough onto the table; it should be light and slightly sticky.

8. Take molds and make curly buns.

9. Now place the pieces in a hot frying pan with vegetable oil. And fry over low heat until the dough is golden brown. Then turn over to the other side and remove from the pan.

10. The finished buns will need to be placed on a plate, preferably covered with paper napkins, so that excess fat is absorbed into the napkins.

11. The dessert is ready, decorate them by sprinkling with powdered sugar. Serve with jam or preserves. Airy and fragrant donuts are ready for tea! Bon appetit!

By the way, the calorie content of such kefir buns is 325 Kcal per 100 g

Classic recipe for kefir crumpets fried in a frying pan

Donuts, donuts, whatever you want to call them, will not force anyone to stand aside, as they resemble the taste of fragrant, airy buns. But in fact, they prepare quickly. Such a dish made with kefir turns out to be too airy, and if you replace the kefir with yogurt, it will turn out even tastier. Try it, you won’t regret it, my mother always bakes such deliciousness with homemade yogurt.

Nowadays, all sorts of meat, cottage cheese, berries, and even nuts are added to the dough for this dish, but everyone’s favorite type is still the classic recipe for this dessert.

You will see this version of classic kefir crunchies with step-by-step photos later in this article. They are often called chubby babies. Have you ever heard such a name? Sounds really funny kids 😆

Many people write to me and ask what is the best way to cut the dough? It seems to me that the answer to this question is very easy, cut it the way you like, into circles, squares, little animals (using cutters), stars, you can even make it in the form of brushwood. Some even call these baked goods shortcakes and make them in the form of diamonds.

We will need:

  • Flour – 500-600 g
  • Kefir – 350 ml
  • Soda – 1 tsp;
  • Salt, granulated sugar to taste
  • Drinking water - 1 tbsp.
  • Vodka – 1 tbsp. l.
  • Unrefined oil – 3 tbsp. l.

Cooking method:

1. First, sift the flour.

2. Add salt, sugar and, of course, soda to the kefir, which will go out on its own with the interaction of the kefir. When you see bubbles on the surface of the kefir, slowly pour in water.

3. Next, gradually, slowly, add flour in portions. Be sure to stir thoroughly each time to prevent flour balls from forming. When the dough becomes a little like dough, pour in the vegetable oil and then knead the dough with your hands, not with a spoon.

4. The dough should be viscous, slightly sticky, but at the same time soft.

Important! Knead the dough correctly. If you add flour, the baked goods will not rise well during frying! They will look flat and heavy, i.e. not airy.

5. They turn out best when you use the dough not immediately after kneading it, but when it sits for a while and rests. You can, of course, immediately after kneading, roll out the dough and make these charms, nothing bad will happen.

6. So, divide the dough into 4 parts. Roll out each piece into a circle using a rolling pin. And use molds to make round cakes.

7. Fry the babies in a frying pan with vegetable oil until nicely browned. Remove excess fat with a napkin, placing it on a paper napkin.

8. Invite guests to drink tea, because rosy and fragrant babies, like grandma’s in childhood, are ready. Sprinkle with powdered sugar and serve with condensed milk or chocolate spread.

Cooking a sweet dish on water

No one will argue with the fact that nowadays baking is very diverse. Can be prepared to suit any taste and choice. But very often we want to remember the favorite desserts of our grandmothers and mothers, which we remember from childhood. These sweet desserts include our water-based donuts with the addition of soda. I remember as a child I loved to dip them in jam, preserves, or even better, condensed milk (condensed milk).

And if you make such creations unleavened, that is, not sweet, then they can be used in the form of a kind of bread.

We will need:

  • wheat flour - approximately 300 g;
  • water – 300 ml;
  • salt – 10 g;
  • granulated sugar – 20 g;
  • soda – 7 g;
  • vegetable oil for frying

Cooking method:

1. In regular cool water (you can take water from a filter or buy drinking water without gases in the store), add salt, sugar and part of the soda. Stir until everything is well dissolved.

2. Sift the flour and begin to gradually add it to the water. The dough should turn out like pancakes. And it is at this stage that you shake a little soda again. This action will give the baked goods airiness and lightness. Then sprinkle with flour again and roll out a nice soft dough.

3. Make small cakes or circles with a thickness of 0.8-1 cm from the dough using a rolling pin. Make one pierce in the center with a fork to make them fluffy. You can make small cuts along the edges of the circle, and when they are fried in oil they will look like flowers.

4. Pour vegetable oil into a frying pan and fry our babies in it. Serve with hot tea or coffee. It will be incredibly delicious! Bon appetit!

Quick donuts with sour cream or yogurt

It turns out that this version with sour cream is a recipe called “Lyubasha”. These things bake very quickly, and kids and guests eat them in a matter of minutes.

We will need:

  • egg - 1 pc.
  • sugar - 3 tbsp
  • sour cream (yogurt or mayonnaise, whatever you have in the house) - 3 tbsp
  • vanilla sugar -0.5 tbsp
  • salt on the tip of a knife
  • soda - 0.5 tsp and vinegar for extinguishing
  • vodka - 1 tbsp
  • flour vegetable oil for frying
  • powdered sugar

Cooking method:

1. Mix egg, sugar and salt. Beat everything well with a whisk.

2. Add any dairy product (sour cream, yogurt or mayonnaise) and vodka to the resulting mixture. Mix everything.

3. Dissolve the baking soda and vinegar and add it to the resulting dough.

4. Slowly add flour, stirring. Make the dough not too thick, but so that it does not stick to your hands.

6. Now roll out the dough into a thin layer of about 0.5 - 0.8 cm and using different figures, you can take a regular glass, make figures from the dough. This way you will get curly delicacies. I had different types of molds, geometric shapes and animals (animals). It turned out very funny.

7. Pour vegetable oil into a frying pan and heat it well. Fry the delicacies on both sides until golden brown. Don't forget to reduce the heat a little once the pan is hot.

8. Sprinkle the finished donuts with powdered sugar. Bon appetit!

How to make such baked goods in the oven

Everyone is used to making them mainly in a frying pan, that is, frying them in vegetable oil. I decided to experiment and make almost the same dough with sour cream, but just bake this yum in the oven. It also turned out great and incredibly beautiful.

You can call such donuts either cookies or buns. In principle, it’s not that important to me, the main thing is that it’s appetizing. These buns rose just amazing in the oven, I’m delighted, because the dough is yeast-free. How do you like this idea, try baking such culinary creations.

We will need:

  • flour - 200 g
  • sour cream - 0.5 tbsp.
  • egg - 1 pc.
  • sugar - 3-4 tbsp.
  • soda - 0.3 tsp.
  • salt - a little
  • egg yolk - 1 pc.

Cooking method:

1. Quench soda in sour cream. Mix egg, salt and sugar. Then pour the egg mixture into the sour cream. Mix with a whisk

2. Gradually add flour to the mixture.

3. No vegetable oil is added to this option; at a certain moment, when you knead the dough, it will stop sticking to your hands and you will understand that the dough is ready.

4. After kneading, let the dough rest, cover it with a cup, and let it stand for a while.

5. Now divide the dough into 2 parts. Roll out each part with a rolling pin until the dough is about 1 cm thick. Cut it into small rectangular pieces. Something like this:

5. Make curls; to do this, in the center of the rectangle, make a transverse cut with a knife, puncture it and turn the rectangle inside out.

6. Place on a greased baking sheet. Brush the top with egg wash. You can add a spoonful of water to the egg yolk to create more lubricant if you are baking a large volume. Sprinkle poppy seeds or cinnamon on top.

7. Bake in the oven at 180-200 degrees until a beautiful crust. Dessert is ready. Cook with pleasure.

By the way, you can still make such beauties in the oven garlic. To do this, you just need to anoint them with garlic oil.

How to make, prepare garlic butter?

Take cloves of garlic, 3-4 pieces are enough. Grate it on a fine grater or pass it through a garlic press. Add this garlic pulp to vegetable oil (5 tbsp) and let it brew. After the delicacies are baked in the oven, spread them with this garlic butter.

I think that during cold and flu season this baking sauce (butter) can be used as a means of fighting viruses. Both tasty and healthy!

Cottage cheese dumplings in a frying pan

This cottage cheese dish tastes wonderful; it personally reminds me of some pleasant cottage cheese product.

To diversify today’s post, I made these curd delicacies in the form of balls. You can also call this dessert cottage cheese donuts. But a completely different article will be devoted to donuts. Probably, it’s just that someone who is used to it calls this sweet pastry that way. For me, cottage cheese donuts are the cousins of donuts.

The ingredients are very simple and are always on hand, so frying this dessert is a pleasure. There is no need to invent and make a huge list of products.

We will need:

  • egg – 1 pc.
  • flour - approximately 1 tbsp.
  • cottage cheese - 150 g
  • sugar – 1 tbsp;
  • soda – 1 tsp (and vinegar to repay)
  • powdered sugar

Cooking method:

1. Take a special dish in which you knead the dough. Add cottage cheese, egg and sugar to it. Use a fork to mash the curd to a smooth consistency so that there are no lumps or balls.

2. Take baking soda and vinegar. Please note this is the first type in which we must quench the soda, because neither sour cream nor kefir is used here, which means that if the soda is not quenched in vinegar, the finished flour product will have an unpleasant taste and taste like soda. Quench the soda in vinegar.

3. Add slaked soda to the curd mixture. Add more flour and knead the dough. The dough should not stick to your hands. It should turn out soft and tender.

4. Make curd rings from the dough.

5. Fry cottage cheese rings in a hot frying pan with vegetable oil on both sides.

Enjoy your tea. Sprinkle powdered sugar on top.

Options with and without yeast

It's no secret that this dish can be prepared and baked with or without yeast.

All previous versions were without yeast, or yeast-free.

The video shows a version made with yeast, it is light and simple, the delicacies come out like grandma’s, very tender and airy. Cook this way and you will really like it!

Leningrad crumpets - recipe with margarine

Recently, a friend of mine returned from St. Petersburg and boasted that she I ate such buns that I had never tried anywhere. As it turned out, she was in that very cafe on Pyshechnaya on Zhelubova Street, now it is actually called Bolshaya Konyushennaya Street.

Therefore, when I was writing this note for you, the idea came to me to publish Leningrad (St. Petersburg) buns in this article. I hope you don't mind?! 🙄 This option will be GOST, that is, according to GOST.

This option is simple, but it takes a certain period of time, because the dough is yeast, it must stand. So, how to prepare Leningrad pampushki at home?

We will need:

  • first grade flour - 270 g
  • yeast - 8 g
  • salt - 1 tsp
  • sugar - 3 tbsp
  • water -190 g (according to GOST, for our Russian flour, 155 g is required)
  • egg - 1 pc.
  • margarine - 15 g

Cooking method:

1. Add hot water (50 g) to the margarine and it will melt on its own. Add salt and sugar, stir.

5. After the time has passed, roll out the dough onto the table. Knead the dough well on the table. And then make little buns out of it. And leave these bells for another 20-30 minutes so that they rise.

6. Make any shape from kolobok-balls, for example in the form of rings.

7. Fry the buns in a frying pan with vegetable oil on both sides until brown. And then sprinkle the finished delicacies with powdered sugar.

Video recipe for puff pastries

I never thought that they could be made into puff pastry. Imagine, but it turns out it’s possible and not even difficult at all. For those who like to watch and listen, I suggest this video:

& It’s best to roll out the dough 1cm thick, then they will definitely be airy and not flat. Do not roll out the dough thinner than one centimeter; they will turn out flat and unappetizing.

& Do not skimp on oil in the frying pan; if it becomes low, add more. Don't be afraid, it won't harm the donuts!

& A mandatory ingredient in this dish is sugar, it is what gives it that golden hue, but don’t overdo it.

& The vegetable oil in the frying pan should be hot, this will help you avoid moisture inside, that is, the baked goods will not be baked.

& To make the dough more fluffy, you can add a little semolina. But I honestly never added it :) I’ll have to try it.

& The secret ingredient to the softness and fluffiness of these sweet, rosy treats is vodka. Butter baked goods will certainly be softer from this drink.

& You can grease the baby’s ready-made treats with butter or sweet syrup, and sprinkle with powdered sugar. And you can even grease it, oddly enough, with plain water, which will help maintain the softness of the baked goods.

& When frying, always be close to the frying pan, because they fry very quickly, one might say instantly, and if you are a little distracted, the culinary masterpiece can be ruined.

& Serve with tea, jam, preserves or honey. Can be with condensed milk or sweet syrup. Or you can sprinkle it and cook it with cheese, just sprinkle grated cheese on top. In general, a flight of fancy))) and it will be awesome!

P.S.Imagine, I was about to finish writing an article, and then my husband brought me a newspaper, in which I came across English recipe. I'm publishing it.

I’ll say right away that English crumpets are made using yeast, but this option may not be useful for some. Due to the fact that he is interested in instant baking. This option takes a little time, since the English ones are yeast-based.

These beauties can be used and used as a base for sandwiches or burgers. They look quite appetizing. When I tried them, I wanted to dip them in honey. It turned out very cool.

We will need:

  • Milk - 3/4 tbsp.
  • Butter - 3 tbsp. l
  • Salt - 1.5 tsp
  • Sugar - 2 tbsp
  • Egg - 1 pc.
  • Flour - 4.5 tbsp.
  • Yeast - 2 tsp;
  • Semolina, used for sprinkling

Cooking method:

1. Dissolve yeast in warm milk. Let them stand until the cap rises. Next, beat in one egg and melted butter.

2. Then add salt, sugar and flour to the ingredients. Mix everything well.

3. Knead the dough until it becomes elastic. Next, cover the dough and place in a warm place for an hour. Let it rise.

4. Once the dough has doubled in size, make a lot of balls out of it. And then flatten these balls with your hand. You will get small beautiful cakes. Place them on the surface of a frying pan greased with vegetable oil and sprinkled with semolina; semolina will prevent the dough from sticking to the pan. After these steps, you need to let the cakes soften, that is, let them sit for some more time. Cover the pan with a napkin.

5. Now turn on the stove and fry the tortillas on low heat. Don't forget to turn them over to the other side when frying. Have a nice experience!

With this I will say goodbye to you. I hope your tea will be even sweeter now with such a selection of culinary creations. Invite friends, guests and treat each other. All the best and wonderful. Have a nice day my beloved guests and blog subscribers.
