Another collection of recipes, this time it is dedicated to such a wonderful berry as cherry. And we will prepare cherry pies from puff pastry.

Cherry layer pie is a wonderful dessert that has conquered many hearts and stomachs around the world. Its very appearance and subtle sweetish aroma causes profuse salivation! And it is also simple and quick to prepare. Before I knew it, there was already a golden brown, crispy pie waiting in the oven.

Of course, the speed of preparation is due to the fact that all recipes will use ready-made (store-bought) puff pastry. It doesn’t really matter whether it’s yeast-based or yeast-free.

Both fresh and frozen cherries are suitable for these recipes. These pies can be enjoyed any time of the year! You can also replace cherries or mix them with cherries, which are sweeter and larger in size.

The recipes, as always, are as detailed and step-by-step as possible. Some will have photographs, others will not. The appearance of the pie depends rather on your imagination - how you cover the filling with dough. The taste will not change.

Yes, by the way, cherries have seeds in them, and you need to somehow get rid of them. You can buy frozen ones without seeds, or you can take them out yourself. Watch the video below for different methods.

  2. The dough needs to be thawed, rolled out and divided into wide, long strips.
  3. Remove the syrup from the cherries (if they are canned) and mix with sugar.
  4. Sprinkle each strip of dough with starch. Place cherries along the length of the strips, in the center.

Alternative recipe for cherry puff pastry puffs

You can also use the following ingredients:

  • one large jar of sour cherries in light syrup or 500 gr. fresh cherries;
  • table. lie oils;
  • 1/2 cup bread crumbs;
  • egg;
  • puff pastry;
  • spices: sugar.

If you haven't tried tart cherry puffs, you haven't lived life! For this reason it is faster:

  1. Remove the puff pastry and let it thaw a little. It doesn't have to reach room temperature, but you should be able to work with it. While this is happening, preheat the oven to 180 degrees and prepare the other ingredients.
  2. To make this delicious cherry dessert, you'll first want to drain your cherries. Drain off the juice and save it for another purpose. Sprinkle the cherries with about 1-2 tablespoons of sugar and leave them for 30 minutes, pushing out the excess juice with a fork after a while. Also, make sure the cherries are really tart! You don't want any unpleasant surprises.
  3. Meanwhile, in a sauté pan, melt your butter and then add the bread crumbs, stirring until toasted. Remove from flame, stir in a tablespoon of sugar and let come to room temperature.
  4. Roll out the puff pastry into a nice rectangle. If you used your own dough, you only need half. About three centimeters from the edge, begin spreading the bread crumb mixture along the long side of the rectangle. Place the cherries directly on top of the bread crumbs (the crumbs help absorb excess water from the cherries as they cook). Fold the dough over the edge to cover the cherry, and then fold the whole thing over again like a Swiss roll. You need to run your fingers along the edge of the dough to compact it.
  5. Place on a baking sheet and do the last two things before placing them in the oven. First, coat the top with the egg-water mixture. Then make some slits at the top. This will allow steam to escape while everything cooks. Place the puff pastry in the oven for forty minutes or until golden brown. Cut into smaller pieces.
  6. If desired, for these layers you can make the same glaze as in the previous recipe. You'll be amazed how well tart cherry puffs go with flavorful sweet tea. This divine combination of flavors will not leave anyone indifferent, see for yourself, prepare these puff pastries.

Ruddy puff pastry pies with cherries are an excellent option for delicious, simple and unpretentious homemade baked goods, made from a minimum number of ingredients.

Using ready-made puff pastry and pitted frozen cherries saves time and significantly simplifies the cooking process, because, in fact, there is a minimum of work left - combine all the components and send them to the oven. At the same time, the resulting pies are simply a sight for sore eyes! Ruddy, fluffy, airy, with aromatic, bright and very juicy filling. A luxurious addition to your morning cup of coffee or tea, without much hassle! Try it!

Prepare ingredients for puff pastries filled with frozen cherries.

Sprinkle frozen pitted cherries with sugar and defrost completely, leaving them at room temperature for several hours. To speed up the process, you can place a container with cherries in a water bath or use a microwave oven.

If you plan to make puff pastry with cherries for breakfast, you can leave the cherries and sugar at room temperature in the evening and move the puff pastry from the freezer to the refrigerator. By morning the components will be ready for use.

When the cherries are defrosted, separate the fruits from the released juice. Save the juice if desired - you can use it to make a delicious syrup or sauce for pies.

Thaw the puff pastry, place on a floured work surface and roll out to 0.5cm thick.

Cut the dough into desired size pieces. I cut the dough into squares approximately 8cm x 8cm.

Stepping back about 0.5 centimeters from the edge of the dough, place a portion of cherries on each piece of dough.

Add a little starch to the cherries - about 0.5 teaspoon for each serving of cherries. If desired, you can also add a little sugar to make the filling of the pies sweeter. Instead of adding sugar to the filling, I make a sweet cherry sauce from the remaining juice and serve it with the pies.

Divide the egg into white and yolk.

Brush the edges of the dough pieces with egg white.

Fold each dough square in half diagonally to form a triangle. Then dip the tines of a fork into the flour and gently press the edges of the dough to seal them together.

Repeat the procedure with the remaining dough and filling.

Place the prepared pies in the refrigerator for 10-15 minutes, and in the meantime preheat the oven to 180 degrees.

Brush the surface of the cooled pies with egg yolk, then place in the preheated oven and bake for 15-20 minutes until golden brown.

While the pies are baking, you can use the remaining sweet cherry juice to make a simple sauce. To do this, bring the mixture of juice and sugar to a boil over medium heat, and stirring occasionally, cook the mixture for several minutes until the sugar dissolves and large bubbles appear on the surface.

In a separate container, mix 1 tbsp. starch with 1 tbsp. cold water. Stir the mixture so that there are no lumps left, and then pour it into the boiling cherry juice in a thin stream. Stirring, bring the juice to a boil again, simmer for about 1 minute, and then cool.

Thanks to the starch, the juice will thicken as it cools, and you will get a sticky, sweet cherry sauce that can be served with pies, morning porridge or other desserts.

Puff pastry pies with cherries are ready. Bon appetit!
