1. Naturally, we start by preparing the pork: soak the meat for 15-20 minutes in regular cold water, then rinse it and dry it with a paper towel/napkin. Next, cut the pork into medium-sized portions (about a finger thick), trimming off excess fat, veins, etc. Gently beat each piece of meat with the ribbed side of a kitchen hammer on each side, covering the pieces with cling film so that the juice of the meat does not splash on the sides while beating.
2. Now the chops need to be thoroughly rubbed with salt, black (preferably freshly ground) pepper and, if desired, other favorite spices and seasonings. Peel a few cloves of garlic and grate them on a fine grater (you can simply pass them through a press). Rub each piece of meat with garlic, which we then put in a bowl, cover with the same cling film on top and put the meat in the refrigerator for a while.
We continue to prepare the remaining products. We take the butter out of the refrigerator, transfer it to a convenient container and cut it into small cubes so that it softens faster. Leave the oil as is in a warm place. In the meantime, boil 2 hard-boiled eggs (about 12-15 minutes), and then immediately fill them with cold water. Peel the cooled eggs and grate them on a fine grater.
3. We peel the walnuts, then grind them using a blender or the old-fashioned way by hand: place them in a thick plastic bag, cover the table with a thick towel, on which we place a tied bag of nuts (without air!), cover the top with another towel and We beat them off with the same kitchen hammer. Please note that you should not grind the nuts into fine crumbs; they should be felt in the dish. Now add the nuts to the boiled eggs and mix well. Add softened butter and mix again. We thoroughly wash the greens, dry them and finely chop them with a knife. Add the greens to the creamy sauce with nuts and eggs, mixing everything thoroughly.
5. Take the meat out of the refrigerator. In a convenient container, beat the remaining 2 eggs with a pinch of salt. Pour flour into a separate bowl. Heat a little vegetable oil in a frying pan. As soon as it is hot, dip each piece of pork in the egg, then roll in flour and place in a frying pan. Fry the chops on each side until a beautiful golden brown crust appears. Remove the half-finished chops from the frying pan and immediately place them on a baking sheet (in one layer). If necessary, grease the baking sheet with oil.
4. Now let’s take care of the vegetables (mushrooms, tomatoes, onions): peel them, rinse them thoroughly under running water, then dry them from excess moisture on a towel. Next, cut the onion into half rings (or rings, as you prefer), the tomatoes into thin slices (0.5 cm thick), and the champignons into flat slices. Fry the onion in the same frying pan with oil in which the meat was cooked until translucent and slightly browned.
5. Preheat the oven to 180-200 degrees. Place the egg-nut mixture in the form of a slide on top of the fried chops (lightly compact it with a spoon), then lay out the fried onions, tomato rings, and mushrooms on top of everything. We grate our favorite cheese on a coarse grater and sprinkle it over the contents of the baking sheet, while carefully “raking” the cheese that spilled past the meat under the chops.
