And although at first glance, it seems that cheese cakes are quite simple to prepare, in fact they are considered a capricious dish. Either they creep in a skillet, then they are fried outside, they remain moist inside, they come out too dry, sometimes they are sour or tough.
After all, cottage cheese, undergoing heat treatment, can behave unpredictably. However, if you know certain subtleties, then unpleasant surprises when preparing cheesecakes will bypass you.

So the correct cottage cheese pancakes or curds- the perfect combination of cottage cheese with flour. If the cottage cheese is too wet, then it must be thrown onto a sieve (gauze) so that all the whey and moisture will drain out. Otherwise, you will have to add a lot of flour to the dough so that it absorbs all the moisture.

And then the cottage cheese pancakes will turn into pancakes with cottage cheese. But you cannot add too little dry ingredients, because they are necessary in the dough to bind moisture.

Cottage cheese - 500 grams
Flour - 3 tablespoons (wheat)
Egg - 1 pc. (chicken) or 2 quail
Salt - a pinch
Butter - 20 grams
Sugar to taste
Apple - 1 pc.
Refined vegetable oil - for frying

How to cook delicious cottage cheese pancakes with apple and cottage cheese in a pan:

1. Peel the apple, remove the seeds with the core and grate. Apples can be replaced with any other fruit and berries to your liking. For example: pears, bananas, strawberries, raspberries.
Chopped chocolate, nuts, coconut, and many other flavors will also work. Alternatively, you can make salty cottage cheese pancakes with herbs, garlic, zucchini, beets, carrots, etc.

2. In a deep bowl, combine all the ingredients for the curd cakes: cottage cheese, sugar, flour, egg, softened butter, a pinch of salt and grated apple. For greater tenderness of curd cakes, you can grind the cottage cheese through a sieve or beat with a blender.
You can replace flour with semolina or oatmeal, and grind the oatmeal in a coffee grinder. But in this case, the dough should be given a little time to stand for these products to swell.
I repeat, if the cottage cheese is especially moist, then first remove the moisture from it. This can be done with a sieve or cheesecloth.

3. Knead the curd dough thoroughly so that all food is evenly distributed.

4. Moisten your hands with water and form round cheese pancakes, which are put on a hot frying pan with butter. Fry them on one side for about 2 minutes until they have a characteristic sunny color. Then, turn over to the other side and fry in a pan for the same time.

Put prepared cheesecakes on a serving dish and serve with sour cream, honey, condensed milk, jam, ice cream, cream or with a cup of freshly brewed coffee or tea.

The resulting cheesecakes with apples are appetizing, tender, lush and ruddy.
