  • 500 g eggplant
  • 2 chicken eggs
  • 1 medium onion
  • 2-4 cloves of garlic
  • 1 small bunch of cilantro
  • 1/2 sweet pepper
  • 3 tablespoons sour cream
  • black pepper, vegetable oil
  • dried mushrooms or a cube of mushroom broth

Cooking

Peel the eggplant and cut into 1x1 cm cubes.

Put eggplant in a bowl, break 2 eggs in the same bowl, mix well and leave for about half an hour. Do not salt! Eggplant will absorb the egg and become shiny, as if glossy.

If you use dried mushrooms, you need to grind them (you need 1 tablespoon of ground) and soak in water. Dice onion and bell pepper in small cubes. Finely chop the cilantro and garlic.

Fry eggplant soaked in eggs in well-heated vegetable oil until golden brown.

Add onions, bell peppers, mushrooms or crushed mushroom cube, mix and simmer over low heat under a lid for 10-15 minutes. Now add sour cream and simmer for a couple of minutes,

pour greens and garlic, mix well again and remove from heat. Leave for 10 minutes to infuse under the lid.

You can eat hot and cold.

Note

You can roll such eggplants in jars and please yourself in the winter. Instead of sour cream in this case, you need to use mayonnaise or not add it at all. Arrange the hot eggplants in clean scalded jars, sterilize the floor jars in boiling wills for 15 minutes for 15 minutes, roll up the lids and wrap until completely cooled.
