Take the dough out of the refrigerator and roll it out so that it can be placed on a baking sheet. Use a toothpick to make holes on the surface of the dough. The dough must be sprinkled with nuts and apples. The oven should be preheated to 200 degrees. The pie is baked for approximately 30 minutes.

Quick apple shortbread pie

Ingredients:

  • wheat flour - 500 g
  • powdered sugar - 100 g
  • little butter - 100 g
  • eggs - 2 pcs
  • baking soda and vinegar

For the dough, you first need to mix sugar, eggs, salt and melted butter. Then slaked soda and flour are added. You should get a thick consistency.
Then it is taken out of the bowl and rolled out. It needs to be greased with butter, sprinkled with sugar and put in peeled apples, also sprinkled with sugar.
Afterwards the pie goes into the oven for 20-30 minutes. The temperature in the oven should be within 200 degrees.

Ingredients:

  • butter - 200 g

  • baking powder - 10 g
  • flour - 300 g

How to make this pie

First, knead the shortbread dough for the apple pie. To do this, you need to beat an egg into a cup, add 100 grams of sugar, and melted butter there. Mix everything well. Sift the flour and combine with baking powder, then add it to the liquid base and knead into a homogeneous thick mass, which will be our dough.

Ingredients:

  • Apples – 350 g.
  • Wheat flour – 320 g.
  • Chicken eggs – 2 pcs.
  • Sugar – 200-220 g.
  • Butter (margarine can be used) – 200 g.

Let's start cooking

First you need to separate the whites from the yolks. For now, the whites can be put away, for example, in the refrigerator, but the yolks should be ground with 100 grams of sugar.

Cut the butter into small cubes, mix with flour and baking powder. Then add the beaten yolks here, mix everything until you get a dense, fatty yellow dough.

It needs to be put in a bag and put in the refrigerator for 30-35 minutes. Even better in the freezer.

While you can grate the apples. To prevent them from darkening, you can sprinkle them with half a lemon. Well, or rub them later.

The dough is frozen - take it out, cut off 2/3 of the volume, and put the rest back in the refrigerator.

Line a baking pan with parchment or grease it with butter. Knead a piece of dough and place it in this form.

Beat the egg whites until foamy with the remaining sugar, then mix them with the grated apple mixture. This filling needs to be placed on the dough.

  3. In the meantime, knead the shortbread dough. Separate the whites from the yolks of all eggs. The whites will be used for meringue - put them in the refrigerator for now, and beat the yolks with sugar (70 grams). Add melted margarine, sour cream and flour with baking powder. Knead and knead with your hands until you get a buttery, dense ball of dough.
  4. You don’t have to cool it, but immediately distribute it in a greased mold.
  5. Turn on the oven to 180 degrees and bake the dough for 10 minutes. To prevent the dough from swelling, some people place parchment paper with beans or some similar weight on it. But I don’t have such problems, that’s why I didn’t mention it.
  6. Now let's prepare the meringue. We take out the egg whites and simply beat them with the remaining sugar until fluffy.
  7. The shortbread is baked - take it out. Place the apple caramel mixture in it, and top with whipped egg whites.
  8. Return to the oven and wait about 10 minutes until the whites become a nice creamy or even caramel color.

Ingredients:

  • Flour – 310 g.
  • Butter – 210 g.
  • Sugar – 5 tbsp. spoon;
  • Egg – 1 pc.
  • Baking powder – 1 teaspoon;
  • Cottage cheese – 260 g.
  • Apples – 2-3 pcs.
  • Starch – 1 tbsp. spoon;

  • Vanillin - a pinch;

Cooking the pie

Let's start with the test. Mix flour with baking powder. In a bowl, beat the egg, sugar and butter. Add flour and knead the dough. Divide it into two parts and put it in the freezer for 15-20 minutes.

Mash the cottage cheese to a soft consistency, add sugar, zest, and vanillin. If desired, you can also add a spoon or two of sour cream to the cottage cheese, which will make the filling more juicy. It’s better not to do anything with the apples for now so that they don’t darken while we wait for the dough.

We took out one piece of dough, kneaded it, rolled it out and put it in a baking tray, which must first be greased with any oil. The dough sides still need to be made, as there is a lot of filling.

Wash the apples, peel and grate them. Mix with cottage cheese, and add a spoonful of starch. That’s it – the cottage cheese and apple filling is ready! Place it on the base of the pie.

Grind the second piece of dough over the filling to form a cap of crumbs.

Heat the oven to 180-190 degrees, close the pie and wait 40-45 minutes.

  • 400 gr. flour

  • 1 lemon
  • 3 tbsp. Sahara

How to make shortbread pie with apples:

In a large bowl where we will knead the shortbread dough, pour half the flour (about 200 grams) and grate cold butter.

Rub the butter and flour with your hands to form uniform fine crumbs. If necessary, you can add more flour. The colder the butter, the easier it will be to rub into the flour, so I often use butter from the freezer. Then add baking powder.

In a separate bowl or plate, beat the eggs, add sour cream and sugar.

Beat everything with a mixer until the sugar is completely dissolved.

Pour the sour cream and egg mixture into the butter and flour.

Add the rest of the flour and mix thoroughly.

A larger ball (about 2/3 of the total dough) will be the bottom and sides of our shortbread pie. The smaller ball is the top of the pie.

Cover the finished dough with a towel or cling film and put it in the refrigerator so that the butter in the dough does not begin to melt while we make the filling.

Peel the apples for the filling and grate them on a coarse grater. Grate the lemon zest into a bowl of grated apples and squeeze out the juice of half a lemon.

Grease the baking dish with vegetable oil and sprinkle with flour. For the recipe I used a mold with a diameter of 28 cm.

We take the dough out of the refrigerator and roll out the larger ball using a rolling pin into a circle with a diameter of about 30 cm so that it fits into the mold. We transfer the dough into the mold and level the bottom and sides of our future pie.

Spread the apple filling onto the dough.

Sprinkle apples with sugar.

Next, roll out the remaining dough to the diameter of the mold and cover the pie. Carefully distribute the dough over the entire pie with your hands, you can trim off the excess with a knife and add where there is not enough. The dough is very soft and elastic, so it is quite easy to handle.

Now we will create the “grated pie effect”. We take a sharp fork and “draw” a square along the top of the pie, then draw grooves diagonally. As a result, we get very small crumbs on the dough.

Try this wonderful apple pie! Thin, crumbly shortbread dough, and in the middle, between two thin layers of golden crust, there is a lot of juicy, tender, aromatic apple filling!


The pie is very, very apple: there is much less dough than filling, a thin layer on top and bottom, and what a filling!.. During baking, pieces of apples turn into the most delicate applesauce, fragrant throughout the kitchen with cinnamon, rum and citrus. You have to smell and try this!

  • 600-700 g of sour apples (I baked with Snow Calvin, took a little more than 800 g of unpeeled apples, after peeling I got the right amount. You can take less - 50-600 grams, since 700 g of apples, even instead of the 750 indicated in the original recipe, - end to end, they need to be compacted well. But after baking, the filling decreases in volume);
  • 3 tablespoons sugar;
  • 1 teaspoon cinnamon (without top);
  • 2 tablespoons of rum (or cognac, it adds flavor);
  • Juice and zest of half a lemon;
  • 1 heaping tablespoon of semolina.

How to bake:

First, let's prepare the dough, since it needs to be cooled in the refrigerator for half an hour. Sift the flour into a bowl, cut the soft butter into pieces, add sugar and yolk, add salt, and knead the soft dough. If the dough does not stick together or crumbles, add cold milk 1 spoon at a time and continue kneading until it reaches an elastic consistency.



You don’t need to knead the shortbread dough for a long time; if it sticks together, it’s enough for it to turn out not hard, but crumbly.


Roll it into a bun, put it in a bag and put it in the refrigerator for 30 minutes. This is necessary so that the dough rolls out easily: when the oil included in its composition cools, the dough sticks less to the table and rolling pin.

While the dough is in the refrigerator, let's make the apple filling. Wash the apples, cut them into halves or quarters, peel them down to the cores and peel them, and then cut them into one and a half to two centimeter cubes.


Pour lemon juice over the apples, add cinnamon, sugar, semolina (it is needed to absorb moisture from the filling), cognac, lemon zest and mix. The filling is ready.




Place a circle of parchment on the bottom of the mold and grease the walls with vegetable oil. Turn on the oven to warm up to 200C. And it’s just time to take the dough out of the refrigerator. We divide it into two parts, approximately 2/3 and 1/3.


Sprinkle the table with flour and roll most of it into a circle, 2-3 mm thick, 2-3 cm larger in diameter than the mold.


We cut the cake to size, it is convenient to do this by placing the mold on it.


Carefully wrap the cake around the rolling pin and transfer it to the pan.


Unwind and lay flat, forming a bottom cake with high (2-3 cm) sides.


Pour the filling onto it and distribute evenly. And don’t think that there are a lot of apples :)


Roll out a smaller part of the dough and cut out a circle from it equal to the diameter of the mold. Also, using a rocking chair, transfer it to the pie and cover it on top. Lightly brushing the edges of the bottom cake with water, we mold the top and bottom together - this turned out to be the most difficult moment, I used the handle of a spoon to pry up the bottom edge :) But the difficulties are over, and we can move on to the most exciting part - decorating the pie!


From scraps of dough we make leaves, apples, flowers and, brushing with water, place them on the top crust. Be sure to make several holes for steam to escape - from wet apples, but during the heat in the oven a lot of steam is formed, and you need to give it a way out, otherwise the cake may crack.


Place the pie in the oven and bake for 50 minutes to 1 hour, at 200-180C, this varies for different ovens. For example, I baked it for 1 hour, first at 200C, then I reduced it to 170-180C and moved it from the middle level to the top, and placed a ladle of water on the bottom of the oven so that the bottom did not burn, then I greased the pie with milk and sprinkled with sugar, and increased the heat again to 200C-220C until it browned.

What a golden, beautiful pie! And how fragrant!


Let it cool a little in the mold so that the delicate cakes do not crumble, and transfer it to a plate.
