Dietary curd pudding is one of these dishes: minimum calories, maximum benefits. It is light, very pleasant to the taste, and will not hurt your figure. This is why women love such desserts. And preparing it won’t cause any trouble at all - just a few minutes of mixing the ingredients, a few more minutes in the microwave - and now an exciting aroma fills the kitchen, and the golden crust of the dessert tells you to quickly eat a piece.

By the way, this pudding recipe is perfect for a child’s diet. All components in the composition - milk, cottage cheese, a little sugar, eggs - are quite acceptable for children over 1 year old in the absence of allergies and other contraindications.

The ingredients for a dietary dessert based on cottage cheese must be taken only fresh and of high quality, if in the end you want to get a truly healthy dish for the whole family. So, you will need:

  • 200 grams of cottage cheese with 0% fat content, vanilla or without additives;
  • 4 large chicken eggs or about 10-12 quail eggs;
  • 4 tablespoons of semolina;
  • lemon or orange zest – 5 grams;
  • sour cream 10% - 100 milliliters.

Please note that this recipe does not use sugar. This, of course, gives the dish maximum benefit and makes it the most dietary, but due to the lack of sweetness, the pudding turns out bland. If sugar is not contraindicated for you, you can prepare a dish with the addition of 100–120 grams of white sugar.

You can replace sugar, which is harmful for both your figure and your teeth, with natural honey - add 2 tablespoons to the curd base for pudding. This will additionally give a light golden hue and allow a beautiful golden crust to form during baking.

You will also need silicone molds. In this recipe, the pudding is baked in portions, in the form of unique cakes - muffins. It is not advisable to use iron molds, since it will be difficult to remove the curd mass, and besides, they cannot be used in the microwave.

Cooking process

You can prepare pudding in the microwave in just 15 minutes. To do this, you will master the recipe:

  1. Separate the whites, pour them into a dry, clean container, beat until peaks appear on the surface of the mass. Fluffy foam cannot be stored, but must be immediately combined with the rest of the ingredients, otherwise it will settle and will not give the airiness that we are counting on.
  2. We only need one of the yolks; you can leave the rest for the next dish or make scrambled eggs for breakfast.
  3. Pour semolina into the yolk, stir, let stand for a while so that the semolina swells. After this, mix the mixture together with a portion of cottage cheese according to the recipe. Use a regular or immersion mixer.
  4. While whipping, add sour cream; you can add vanilla or zest.
  5. When adding proteins, do not use a mixer, simply transfer a spoonful of foam into a container with a curd base and manually combine all the components using a wide spatula.

The cottage cheese pudding according to the recipe is ready. You can also add some steamed raisins, dried apricots, prunes, slightly fried nuts or other filling to the “dough”. You can also place a circle of apples or pears, some fresh or frozen berries at the bottom of each mold - then when you turn the dessert onto a plate, this additive will appear on top and become an additional decoration for the pudding.

Now all that remains is to prepare the dessert in the microwave:

  1. Silicone molds, in principle, do not need to be greased, but the curd mass turns out to be quite liquid, so it is better to rub the inside of each mold with vegetable or butter.
  2. The pudding practically does not rise like yeast dough, so the molds can be filled with the main mixture almost to the top, leaving only a few millimeters to the edge.
  3. Now we set the baking mode in the microwave - the temperature and baking time depend on the features of your microwave oven. These cakes take approximately 15-17 minutes to bake. The main thing is to pull them out as soon as the crust turns brown.
  4. When baking not in the microwave, but in a regular oven, preheat it to 180 degrees and bake in this mode for no more than 25 minutes.
  5. After you remove the pudding molds from the oven or microwave, let them cool to a temperature of about 40 degrees - this will allow them to come away from the edges and make them easy to remove.

The dessert is completely ready to serve; you can additionally decorate it with powdered sugar, especially if you did not add sugar to the dough, as well as fresh pieces of fruit, berries and mint leaves.

To prepare cottage cheese pudding you will need the following products:
five percent cottage cheese – 360 g;
semolina – 60 g;
granulated sugar – 40 g;
butter – 5 g;
chicken egg – 2 pcs.;
vanilla sugar – 1 g;
salt – 1 pinch.
These products are enough to prepare four to five servings of pudding.
Microwave pudding process
In a deep bowl, mix sugar and eggs until the sugar grains are completely dissolved. Then add semolina, cottage cheese, vanilla sugar, salt. There is no need to beat the mixture with a mixer, it is better to use a spoon.
A mold suitable for cooking in a microwave oven must be greased with oil. The resulting curd mixture is placed in the prepared pan and covered with a lid. A special valve is opened on the mold or the lid is simply opened.
The pudding is cooked in a microwave oven for six and a half minutes at a power of 640 watts. After turning off the microwave, it is recommended to keep the dish in the oven for a couple more minutes. Before drinking tea, the dish must be allowed to cool.
To give the dessert an appetizing look, you should pour it with syrup, chocolate glaze or decorate it with berries. Candied fruits, raisins, and dried fruits also wouldn’t hurt.
An additional advantage of curd dessert prepared in the microwave is its rather professional appearance. The dish really looks like a restaurant dessert from a chef. Guests will get the impression that the hostess spent at least an hour preparing it. Microwave curd pudding has a delicate taste and a pleasant aroma.

Grease a baking dish with butter, place the curd mass in it and bake at 75% power 10-11 minutes. (If the maximum oven power is 750 watts). At higher power, we reduce the time (for example, at a maximum of 900 Watt, the time is 8-9 minutes, but this is conditional, we check the readiness ourselves) you can monitor the process by slightly opening the door during baking. In the oven, the pudding will rise a little, the clanging of the doors, which is certainly not regular, will not harm it, and will not settle in volume.

I use a 1.2 liter glass heat-resistant saucepan. Bottom diameter 15 cm, wall height 8 cm.

After the specified time, remove the Pudding from the Oven and let it cool slightly so that you can remove it from the mold without deforming it. Afterwards, you need to carefully turn it over onto a plate or, if you are making it in a similar diameter and proportion, it is not large, you can put your palm under it, first tip it onto your palm, and then carefully transfer it from your hand.

Attention! The pudding is ready if the top is no longer a curd mass, but as if covered with a film, lags behind the walls and a toothpick is immersed into it with equal density from the edge to the center. If you overcook the pudding, it will be harder at the edges; if you undercook it, it will be very soft in the center, like a cheese mass; when removed from the mold, the pudding in the central part may become deformed.

By doubling or tripling the proportion, the baking time also increases accordingly, but Attention, not proportional, definitely not twice, it will be less, you need to keep an eye on it.
