Recipe based on fruit and berry puree

For our experiment we will need:

  • 0.5 liters of water
  • 250 g juice or puree of fruits and berries
  • 1 cup of sugar
  • 5 g gelatin
  • 1 tablespoon freshly squeezed lemon juice

The base puree can be made in a blender by chopping tangerines or oranges, soft apples, currants, cranberries, strawberries - any fruits and berries you have on hand.

Soak the prepared gelatin in water (you need 5 tablespoons). Dissolve sugar in water and let the water boil. Now you need to add gelatin, mix thoroughly and boil the composition for two minutes. Slowly add juice (or puree). You can remove the dishes from the heat - all that remains is to strain the mixture through cheesecloth. When the mixture has cooled, combine it with lemon juice.

Now pour the resulting mixture into plastic cups or special molds. Fill almost to the edge of the dish (not reaching it by about half a centimeter). After a while, when the ice cream begins to harden, insert wooden sticks and canape forks into each dish. Fruit ice cream prepared under such conditions will turn out very similar to the factory one, and it will be convenient to eat. The molds will most likely have sticks included.

Place the molds in the freezer for 7-8 hours, or better yet, overnight or even a day.

Recipe with natural yogurt

For this recipe you will need natural yogurt. You can get it at your nearest store. It can be a drink like Activia, without fillers or colorings.

So, the ingredients:

  • 0.5 l yogurt
  • 0.5 kg of fruits, berries
  • half a glass of sugar
  • 2 mint leaves
  • lemon juice - to taste

You can take any fruits and berries. Puree them in a blender, add yogurt to the same bowl and mix well until the mixture becomes smooth. Then pour the mixture into molds and wait for the ice cream to harden.

Recipe based on lemons, oranges and watermelon

To implement this idea, you will need a juicer and the following ingredients:

  • 3 lemons
  • 4 oranges
  • 250 g watermelon pulp
  • 1 cup of sugar

Boil 400 ml of water, add sugar and cook until it is completely dissolved. Cool the resulting syrup.

Extract the juice from lemons and oranges separately. Cut the watermelon pulp, remove the seeds and puree it with a blender.

Add 100 ml of syrup to orange juice and watermelon puree, and 200 ml to lemon juice, since it is more acidic. Pour the mixture into molds. You will have ice cream in at least 4 hours.

Naturally, we will not prepare dessert from store-bought juice, which often isn’t even juice, but from homemade juice. Wash the oranges thoroughly under hot water, cut them and squeeze out the juice. Dip the peaches in boiling water for a few seconds, immediately transfer them to a container with cold water, remove the skin, separate the pulp from the pit and puree with a blender. Dissolve sugar in water. You can warm it up a little for this, or just wait a little. Mix orange juice, syrup and peach pulp. Pour into molds. You can use cups from store-bought ice cream, yogurt, cottage cheese, or just silicone molds. We put it in the freezer. The hardening time depends on the size of the molds and the power of the freezer.

You can get a powerful dose of vitamin C (and the body needs it even in summer) by making kiwi fruit ice; at home it turns out tender and very healthy.

Kiwi fruit ice

Ingredients:

  • kiwi – 0.7 kg;
  • unsweetened yogurt without preservatives – 0.3 l;
  • – 2 tbsp. spoons.

Preparation

We prepare the delicacy in ordinary plastic cups with a capacity of 70 g. In addition to them, you will need chopsticks. Carefully peel the kiwi and cut into slices. We put the largest circles - from the middle of the fruit - aside, and use a blender to turn the rest into puree. Add yogurt and honey to this mixture. If you don't have yogurt on hand, you can use whipped cream. But sour cream won’t work - no experiment! Mix everything until smooth, put it in cups, cover with kiwi circles, into which we stick sticks. In this way, the stick will freeze properly into the bowl, and during the eating process, drops of the melting dessert will not stain your clothes. Place the cups in the freezer and wait a couple of hours. A tasty and healthy treat is ready.

In the same way, you can make strawberry popsicles at home. The proportions are the same, and the process is no different, but there will be nothing to cover the cups with. Therefore, to insert sticks into the ice cream, you will have to wait about half an hour for it to harden a little.

Then mix the puree with syrup and lemon juice and pour the finished mixture into molds. You can even insert popsicle sticks. We put it in the freezer and wait. When it hardens, take it out and enjoy!

Fruit ice "Strawberry"

0.5 kg strawberries;
200 grams of sugar;
400 ml water;
20 grams of starch (optional).

Add sugar to boiling water and dissolve. Boil the strawberries in this syrup for 15 minutes. Then use a blender to beat the mixture until pureed. We dilute the starch in a small amount of water and add it to our mass in a thin stream, with vigorous stirring. Pour into molds and freeze.

Fruit ice "Limonchik"

3 lemons;

150-200 grams of sugar;
100 ml water;
5 grams of gelatin.

First of all, soak the gelatin. Using a grater, remove and chop the zest from one of the lemons. Prepare syrup from sugar and water, add zest to it and simmer for 5 minutes over low heat.

After cooling the syrup a little, strain it. Squeeze the juice from the lemons and combine it with the syrup. We also introduce dissolved gelatin there. Mix everything thoroughly, pour into molds and into the freezer.

Fruit ice "Cherry"

750 ml cherry juice;
1.5 cups sugar;
1 glass of water.

Prepare syrup from sugar and water. After cooling it a little, mix it with cherry juice. Then put into molds and freeze.

Fruit ice "Grushka"

0.5 kg of pears;

200 ml water;
150 grams of sugar;
2 tbsp. spoons of lemon juice;
a little vanilla.

We prepare syrup from water and sugar. Add vanillin to it, add pears cut into pieces and cook until they become soft. After cooling, use a blender to beat the resulting mass, add lemon juice, and mix. Fill the molds and put them in the freezer.

  1. With juice. Nothing could be simpler. Pour any juice you have at home (preferably freshly squeezed) into an elongated form and place in the freezer. After 20 minutes, take out the frozen product and insert a wooden stick into it.
    If there are no special forms, you can use any cups. And then the sticks can be inserted in advance, fixing them with pieces of foil, in the center of which a hole is made, and the edges are pressed towards the edge. After freezing, place the glasses in a pan with warm water - there the walls will thaw a little, and the finished ice cream can be pulled out.
  2. With fruit puree. The washed fruits are thoroughly squeezed out of the remaining water. Then, using a blender, they are whipped until smooth. For sour fruits, you can add powdered sugar to the mixture. Next, the puree is sent to molds and frozen. It is in this version of making fruit ice that you can best experiment with layers. To do this, you need to pour the first layer into the mold to the required level, freeze it to a semi-solid consistency and then pour in the second layer, the third, and so on. Final freezing occurs after all layers have been poured in.

  1. With sugar syrup. Of course, you can’t get by with berries alone. Prepare 0.5 kg of any berries, 100 g of sugar and water. The latter is mixed in a small amount with sugar and heated in a saucepan until it is completely dissolved. Leave to cool. At this time, the berries should be chopped in any way: with a blender, fork, or meat grinder. Pour sugar syrup into them and stir. For those who like it, you can add a little cinnamon, mint or lemon juice - or all at once. Now distribute the resulting mixture into molds and freeze.
  2. With whole pieces of fruit. The above sugar syrup should be poured into a plate with fruits cut into pieces. After cooling, pour the resulting mixture into molds and leave in the freezer for 2 hours.

  1. Is it with milk or yogurt? As a base for fruit ice, use homemade yogurt or natural yogurt without additives from those sold in stores. The yogurt is whipped with a whisk or fork, and warm fruit juice is added to it if desired. The mixture is then frozen in molds for several hours.
