This Bacon Wrapped Stuffed Pork Loin recipe is incredibly easy to make. Use strips of bacon instead of twine for the roll. It will provide incredible flavor and prevent the meat from drying out while baking in the oven. This roll will brightly decorate any holiday table.

1 Heat the olive oil in a medium frying pan and sauté the diced apple, chopped onion, rosemary and thyme for 7-9 minutes. At the same time, grind the stale bread slices into crumbs in a blender. Remove the pan from the heat and add crackers, mustard, salt and pepper to taste to the fried apples and onions. Stir and set aside.

2 Wash the meat and dry it with a paper towel. Using a sharp knife, make a deep, but not through, cut along the entire piece, and unfold the cut pork like a book. Cover it with cling film and carefully beat it on both sides, obtaining an even layer of equal thickness.

3 Place the prepared and cooled filling in the center of the chopped piece of pork, fold the meat in half and roll, securing the edges with toothpicks.

4 Lay the halved bacon slices overlapping each other on a cutting board. Place the pork roll on top of the slices, stuffed and secured with toothpicks, side up. Start wrapping the bacon around one side of the meatloaf, removing the toothpicks. Place the bacon-wrapped roll on a baking sheet lined with parchment, seam side down.

5 Bake the roll in an oven preheated to 230 C for 20-25 minutes until the bacon is golden brown and crispy. Cool the finished roll for 10 minutes, cut into small slices and serve. Bon appetit!

  • bacon - 12 slices;
  • finely ground salt.

Preparation:

  1. Thaw the pork tenderloin and rinse thoroughly.
  2. We soak up excess moisture with a napkin.
  3. Grind the pork tenderloin in a meat grinder until it reaches the consistency of minced meat.
  4. Peel the onion and prepare the rest of the ingredients specified in the recipe.



  5. Season the minced meat with spices and dried Provençal herbs.
  6. Salt. For this amount of minced meat you will need approximately 2-3 teaspoons.
  7. We clean the pine nut kernels. Grind them with a rolling pin.

— Minced meat (pork plus beef);

To prepare the meatloaf, we will use minced beef and pork as a basis. This can be ready-made minced meat, which we will buy in the store if we are confident in its quality. But, it’s better to take a fresh piece of beef fillet and pork fillet and twist this thing, getting a guaranteed good minced meat.

Take 3 medium onions, peel and chop them finely. Add about 700-800g of minced meat to the bowl with onions. And also, add a tablespoon of classic Russian mustard.

Add to the bowl 3-4 cloves of garlic, squeezed through a press, a level teaspoon of red pepper, half a teaspoon of black pepper, and add a little salt. Pour in two tablespoons of soy sauce. Break one chicken egg. And mix it all until completely homogeneous.

Take 100g of salted crackers, lightly knead them with your hands, break them and pour them into a bowl with the resulting minced meat.

And again, mix everything thoroughly.

Let's prepare our meatloaf for baking in the oven. Let's take a spacious roasting pan. Cover its bottom with food foil.

On the bottom of the roasting pan, starting from the middle, place strips of bacon, one by one. So that they hang over one side. Then, we will wrap these hanging ends around our meatloaf. From all the minced meat, form a hefty sausage and place it on the bottom of the roasting pan, pressing the ends of the bacon strips.

Carefully wrap the strips of bacon, covering our future meatloaf with them.

Before we put our meatloaf in the oven, we need to coat it with BBQ sauce. If this is not available, then you can make a mixture of ketchup, soy sauce and dry garlic - and smear it with it.

Place our homemade meatloaf in the preheated oven. After 25-30 minutes, take it out and coat the entire surface with sauce again. And we send it further to bake. In total, such a large roll will take at least an hour to twenty or even an hour and a half to bake.
