04.04.2024 Bakery

The king of pies is, of course, the yeast pie. With meat and fish, rice with mushrooms and cabbage, sweet, cheesy. But yeast dough is a labor-intensive thing. So want a pie, but don't have time? You can bake a great cabbage pie with kefir! The dough will not be sour, but fresh, but no less tasty and soft. Kefir allows you to prepare different types of dough - with soda and yeast, aspic and shortbread.

It doesn’t take much time to prepare, but the dish will be tasty, satisfying, and can be served to unexpected guests or prepared for a family dinner.

Jellied cabbage pie with kefir is prepared very quickly. Its essence is that the dough turns out to be quite liquid; the filling is poured with it. By the way, you can use anything to fill the jellied pie. For example, canned fish with boiled rice, fried chicken, stewed or fried vegetables, etc. are perfect. But cabbage is a classic of the genre.

Since the dough cooks and bakes quite quickly, prepare the filling first.

Procedure:

  1. Melt a tablespoon of butter in a frying pan.
  2. Place the shredded half of a head of cabbage in oil and simmer openly.
  3. In principle, such cabbage can already be used as a filling. If you want to further refine and soften the taste of the vegetable, do not regret a couple of boiled and chopped eggs and young fresh dill. Mix everything and add salt to taste. Add black pepper or a little grated nutmeg.

Important: When preparing fresh cabbage (for frying or stewing in a frying pan), it is not recommended to cover the dish with a lid. Otherwise, the cabbage will acquire a bitter taste.

For the test you will need:

  • kefir - one and a half glasses. Instead, you can use any fermented milk product;
  • a pair of eggs;
  • 1.5-2 cups premium flour;
  • a pinch of salt and the same amount of soda.

Progress:

  1. Pour kefir into a deep container and add eggs to it.
  2. Add salt and soda.
  3. Mix everything well.
  4. Add flour in portions, focusing on the thickness of the dough. It shouldn't be too dense.
  5. Place the cabbage in a greased frying pan with high sides, smooth it out and pour the dough on top.
  6. By this time you should already have the oven preheated to about 180 degrees. Continue baking the pie at this temperature until done.

Recipe with sauerkraut on kefir

Sauerkraut is suitable for kefir jellied pie. This is probably the fastest cabbage pie because you don't have to chop vegetables for frying. The filling is sour-spicy, salty, it goes well with the jellied dough.

Squeeze the cabbage; if it is very sour, rinse with cold water.

Next, fry the finely chopped onion in a frying pan with vegetable oil until the onion becomes transparent. Place the squeezed cabbage into the frying pan with the onions and simmer until soft. Once all the excess water has come out, you can sprinkle with ground black pepper and add a little sugar to the filling if it is too sour.

Lazy cabbage pie

The dough for this pie is made from the following products:

  • a glass of kefir (200 grams);
  • a pinch of salt;
  • a small spoon of soda;
  • 3 small spoons of sugar;
  • three eggs;
  • 7 tablespoons of flour (take as much as a spoonful, heaped).

For filling:

  • cabbage forks weighing about a kilogram;
  • parsley, dill, you can add spinach leaves;
  • salt to taste;
  • butter.

Progress:

  1. Put the oven to heat up.
  2. Prepare the filling by chopping the cabbage and simmering it in oil in a frying pan. Add salt. You can limit yourself to this at this stage, but to combine the main component, we recommend adding one raw egg to the cabbage filling. Mix all ingredients for the dough.
  3. Place half of the dough in a well-greased pan, then place the cabbage on top of the dough. Next, cover the filling with the second part of the dough.
  4. Place the mold in a hot oven and leave to bake at 180 degrees. Readiness to determine as usual - by inserting a dry toothpick into the pie.

Cabbage pie with kefir - a classic recipe

Very quickly, literally quickly, you can make a yeast-free pie with cabbage. It will require a couple of eggs, beaten with a glass of kefir, half a teaspoon of salt, three tablespoons of butter - butter or vegetable. After stirring, add two cups of flour, mixed in advance with half a teaspoon of soda. The result is a simple dough that will rise due to the reaction of kefir acid with soda.

You can make any filling for such a pie - cabbage or rice.

On kefir with yeast

With kefir you get an excellent fluffy yeast dough. A little more troublesome preparation will be rewarded with an appetizing appearance of the product and the excellent spirit of a real yeast pie. You can prepare the dough either using sponge or using a straight method. The difference is that with the sponge method, the dough is first prepared in a small amount of liquid in water with the addition of flour. With the non-pair method, all components are connected at the same time. But kefir gives ordinary yeast dough even more lightness and airiness.

Here's how to prepare classic yeast dough with kefir.

Required:

  • half a kilo of sifted wheat flour;
  • 200 g kefir;
  • 100 g purified sunflower oil;
  • a teaspoon of sugar and salt;
  • a small packet of dry yeast;
  • cabbage and carrots for preparing the filling.

Sequencing:

  1. Heat the kefir in a small saucepan until it curdles a little.
  2. Add vegetable oil to the warm whey and cottage cheese and mix. Add sugar and salt.
  3. Pour yeast into the sifted flour, mix the dry mixture and add it to the oil-kefir base. Knead the dough. It should not be too steep, otherwise the product will turn out tough.
  4. Leave the dough in the form of a bun in the bag to rise.
  5. When the dough has risen, divide it in half.
  6. Place a rolled out piece of one piece of dough on oiled parchment or baking mat.
  7. Place cabbage, fried with carrots, on top of the dough.
  8. Roll out the same piece from the second part and cover the cabbage filling with it. Pinch the edges.
  9. After half an hour, when the dough in the pie has risen, grease the surface with any mixture to form a beautiful crust when baking. You can moisten it with milk, sugar water, grease with a loose egg.
  10. Bake with the oven heated to 180 degrees until done, this is about half an hour.

Option 1: Classic lazy cabbage pie on kefir with egg

A variation of the lazy jellied pie. The filling for it is made from cabbage with egg. You don’t even need to boil it separately, everything is much simpler and faster. We take the average fat content of kefir from 2 to 3%. Vegetable oil is used for frying the filling; you can replace it with any other fat to your taste.

Ingredients

  • 400 g cabbage;
  • 300 g kefir;
  • three eggs;
  • 300 g flour;
  • 50 g butter;
  • 12 g soda;
  • 100 g onion;
  • 0.5 tsp. Sahara;

salt pepper.

Step-by-step recipe for lazy cabbage pie with kefir

Thinly slice a large onion or take a couple of small pieces. Pour 40 g of oil into the frying pan and grease the pie pan with the rest. Fry the chopped onion for a minute over high heat.

Shred the cabbage, add to the onion, fry, pepper and salt. Beat two eggs with a fork, add to the cabbage, stir and you can turn off the stove. The filling for the lazy pie is ready.

Making a quick dough. Salt the egg, put sugar in it, pour a glass of kefir and add baking soda. Whisk the base. Add wheat flour. At the first stage, add 200 grams, then adjust the thickness yourself. The dough should be fluid, but not completely liquid.

Pour half of the prepared kefir dough into the previously greased mold and place the cabbage on it. Just lay it out, don’t pour it all out at once, the filling shouldn’t fall through.

Pour the remaining dough over the cabbage and egg filling and place the lazy pie in the oven for 35 minutes. It will be cooked at 180 degrees.

If you wish, you can omit the egg from the filling or replace it with boiled rice or canned fish. Often, in addition to onions, carrots are added to cabbage, and a spoonful of tomato paste is added for taste.

Option 2: Quick recipe for lazy cabbage pie

This is the laziest cabbage pie recipe that doesn't even require flour. You just need to go to the store and buy puff pastry. But many practical housewives always have it in the freezer and help out at the right time. You can immediately turn on the oven for baking the pie, let it warm up to 210 degrees.

Ingredients

  • 500 g dough;
  • 400 g cabbage;
  • 150 g onion;
  • 30 g butter;
  • salt pepper;
  • egg.

How to quickly make lazy pie

Pour oil into a frying pan, add chopped onion, and then shredded cabbage. Fry over fairly high heat for about ten minutes. Don't forget about spices that will improve the taste of the filling.

The dough needs to be divided either in half or one part made a little larger. If initially there are two plates, then we leave it that way. Roll out each piece a little. We cut the layer that will go up right on the table, making through holes. Transfer the whole layer to a baking sheet.

Lay out the fried cabbage and cover with the dough with holes. The edges of the layers should match, twist them together and press well so that nothing comes unglued during baking.

Cover the top of the cabbage pie with the egg. Bake the dough until golden brown.

A layer cake doesn't have to be boring; it can be decorated with scraps of pastry. It turns out very beautifully if, after brushing with egg, you sprinkle the top with sesame seeds or nuts. The holes in the dough themselves can become a decoration for the pie if they are arranged beautifully.

Option 3: Lazy cabbage pie with kefir and mayonnaise

Mayonnaise consists of eggs and butter, is excellent for different types of dough and goes well with kefir. Another version of cabbage pie, the filling is poured only on top. The amount of flour may vary slightly depending on the thickness of the main ingredients.

Ingredients

  • 200 ml kefir;
  • 50 g mayonnaise;
  • 3 tablespoons of oil;
  • 500 g cabbage;
  • onion head;
  • two eggs;
  • 1.5-2 tbsp. flour;
  • 1 tsp. soda;

How to cook

Heat oil in a frying pan, add onion and fry a little. Add cabbage and chop it in the usual way. Fry together for 5-7 minutes, this will be enough, season with spices. It’s convenient to immediately use the frying pan in which the cake will be baked, then you don’t need to transfer anything.

Mix eggs with mayonnaise, add salt, and whisk with a fork. Add kefir, add soda and add one and a half cups of flour. Usually this is enough if the kefir is not very liquid, but if necessary, you can add a couple more spoons. Mix.

Pour the prepared dough over the cabbage. We often pierce it with a spoon or knife so that it penetrates downwards.

Put the pie in the oven. Cook at two hundred degrees for about half an hour.

If you don’t like the fact that there is no bottom at the bottom of the pie, you can pour a little dough onto the bottom of the pan, spread it, and only then lay out the cabbage.

Option 4: Lazy pie with sauerkraut and kefir

A very tasty version of lazy cabbage pie with kefir. The dough is the simplest aspic, it kneads quickly. It’s better to start with the filling, since it’s better to fry the sauerkraut a little; it’s not advisable to add it raw.

Ingredients

  • 800 g cabbage;
  • a glass of kefir;
  • 35 g butter;
  • seven tablespoons of flour;
  • three eggs;
  • spices;
  • 0.5 sachet of ripper.

Step by step recipe

Squeeze the cabbage, place in a frying pan with oil and fry for about fifteen minutes. Remove from heat.

Add salt to the eggs, add a couple of pinches of sugar, shake, pour in kefir and add baking soda. Stir and the dough is already prepared.

Pour half of the prepared dough into the bottom of the mold, lay out the cabbage and pour the dough over again. Be sure to stretch it to hide all the filling.

All that remains is to bake the lazy cabbage pie until done. The optimal temperature is 180-190 degrees.

You can also add any other ingredients to the sauerkraut filling. If it is very acidic, then before sending it to the frying pan, you can rinse the product in cold water, then squeeze it well with your hands.

Option 5: Lazy pie with cabbage and fish with milk and sour cream

Another recipe for a pie made from liquid lazy dough, but the filling will be made from stewed cabbage and canned fish. One jar of saury, pink salmon, sardinella in its juice or oil is enough.

Ingredients

  • 100 g sour cream;
  • 150 ml milk;
  • 500 g cabbage;
  • three eggs;
  • can of fish;
  • 230 g flour;
  • bulb;
  • a bag of ripper;
  • spices and oil.

How to cook

Chop the onion, shred the cabbage and fry in oil for a few minutes. Remove the filling from the heat, add canned fish, broken into pieces. Stir and let it cool a little.

Mix milk with eggs, add sour cream, add flour with baking powder. Make the dough. If the sour cream is thick, then less flour may be needed.

Pour the dough into the bottom of the mold, lay out the cabbage and fish, and fill with the rest of the dough. Bake the lazy pie at 180 until done.

If there is little liquid in canned fish, then you don’t have to drain it, just mash the pieces, they will absorb everything. If there is a lot of marinade, then some of it needs to be removed.

Option 6: Lazy cabbage pie with kefir without frying

This pie recipe is only suitable for young cabbage. In this case, the vegetable does not even need to be fried; it is used raw, which simplifies the cooking process. This recipe can also be classified as a dietary option; practically no fats are added here, they are only used for shape.

Ingredients

  • three eggs;
  • 1 tsp. ripper;
  • a glass of kefir;
  • 0.5 kg of young cabbage;
  • salt, a pinch of sugar;
  • 0.5 tablespoons of oil;
  • spoon of sesame seeds;
  • 3/4 tbsp. flour.

How to cook

Grease the mold. Chop the cabbage into large strips, add spices to it, you can limit yourself to just salt or add garlic, different types of pepper, and herbs. Then knead it with your hands and place it on the bottom of the prepared form, but there is no need to compact it, let it be a loose mass.

Salt the eggs, add a pinch of sugar, pour kefir into them and beat. Add flour and ripper. Now just mix everything.

Pour in the shredded cabbage, smooth the dough and sprinkle it with white sesame seeds.

Send the pie with young cabbage to bake. At 180 degrees it will cook in about 40 minutes. The time largely depends on the diameter of the mold and the thickness of the filling.

Cabbage goes well with meat products. If you have some minced meat, meat or lard, you can safely add them to the filling. Sausages and smoked meats, boiled rice, and mushrooms will also fit perfectly here.

Recipe for cabbage pie with kefir and mayonnaise

This pie is made according to the same principle as the previous two, so I will briefly describe the method of preparing it. The difference is that boiled eggs and herbs are added to the filling, and mayonnaise is added to the dough. The pie is made in a hurry, but it turns out very tender, delicious, and just melts in your mouth.

Preparation

How to serve this pie correctly and with what?

The poured pie is eaten both warm, “piping hot,” and cold. It’s delicious this way and that. And if you also serve it with a cup of aromatic tea or coffee, you will most likely hear many tender and affectionate adjectives addressed to you.

This pie is very convenient to take with you on a trip, to work or school as a snack. Alternatively, you can serve with a glass of kefir or unsweetened yogurt.

Options for preparing cabbage pie with kefir

The kefir-based dough for cabbage pie turns out tender and fluffy. If you add more mayonnaise, the taste becomes richer, but as a result the pie becomes more caloric.

The filling is laid out in different ways: you can first put the filling on the bottom of the mold, then fill it with dough. Another option is to mix the dough with the filling and place it in the mold. In both cases, the pie is more like a cabbage casserole. It is preferable to use the third filling option: first lay out part of the dough, then the filling and cover with the remaining dough.

An appetizing jellied pie with cabbage on kefir is a dish with a golden-brown crispy crust, airy dough and a fragrant, juicy filling with a slight sourness. Even those who are cool about home-baked goods will enjoy it. A tasty, satisfying and beautiful pie is made from affordable, healthy ingredients that can be found in any refrigerator. Its main advantages are the batter, which does not need to be kneaded and rolled out for a long time, as well as the ability to experiment with filling, spices, and decoration.

How to make bulk pie with cabbage using kefir

A classic jellied pie with cabbage filling is prepared in several stages. The cabbage is chopped, seasoned with spices, and fried until golden brown in vegetable or butter. Separately mix kefir, eggs, salt, soda, flour. Place the filling in a pan lined with parchment paper or greased with butter. Distribute the dough on top and level it with a spoon or silicone spatula. Bake until golden brown. Check readiness with a wooden skewer or toothpick.

In a slow cooker

The recipe for making jellied cabbage pie in a slow cooker is practically no different from the traditional one. The ingredients are laid out in layers in a greased bowl and cooked in the “Baking” mode for an hour. After the program completes, turn on the multicooker for another 20 minutes without lifting the lid. The finished pie is removed from the bowl and transferred to a serving dish while hot.

In the oven

Homemade cabbage pie is baked at a temperature of 180-200 degrees for 25-45 minutes - the time depends on the thickness of each layer and the diameter of the dish. The oven should be well heated unless the recipe states otherwise. Another exception is cooking in a ceramic or glass baking dish, which can crack in a hot oven due to a sudden temperature change. If the oven heats up slowly, the dough may sag; it is recommended to cover it with parchment paper.

In a frying pan

Cooking a jellied pie in a frying pan requires special skill. It is important to follow the recipe exactly so that you don’t end up with a banal vegetable omelette. The dough and filling are laid out in layers and simmered under the lid for about half an hour. The lid should fit snugly on the pan. The slightly hardened pie is carefully turned over to the other side and cooked for another 20 minutes.

Cabbage pie recipe with kefir

There are many original variations of “cabbage charlotte”, which is not a shame to put even on the holiday table. It is prepared from white, cauliflower and sauerkraut. Boiled eggs, potatoes, onions, mushrooms, chopped herbs, carrots, minced meat and other ingredients are added to the filling. Place the filling in a greased springform pan and cover it evenly with dough on one or both sides. It all depends on the number of vegetables, the diameter of the dishes, the imagination of the housewife and the complexity of the recipe.

Delicious kefir dough for cabbage pie - cooking secrets

The consistency, taste and appearance of jellied pie with cabbage on kefir largely depend on the quality of the dough. Every little detail matters - the temperature of the products, the proportions, the sequence of processes, so it is important to follow the recipe exactly. A few simple secrets will help you avoid common mistakes and prepare beautiful, smooth, tasty pie dough:

  1. Do not add a lot of flour - the dough will turn out thick, clogged, and will unevenly cover the filling, which is why voids will form in the pie.
  2. Kefir should be at room temperature; remove it from the refrigerator in advance.
  3. The consistency of the dough should resemble thick sour cream or flour mixture for pancakes.
  4. Do not extinguish soda with lemon juice or vinegar - it will react with the acid contained in fermented milk products.
  5. Sift the flour 2-3 times and add it gradually, by tablespoons, to regulate the thickness of the dough.
  6. Do not knead the dough for a long time.
  7. Before kneading, mix all dry and liquid ingredients separately.
