When going on a picnic or on a long journey, I always think carefully: what to take with me to eat? Most often these are different snacks that will help satisfy your hunger quickly. I have a lot of recipes in my “piggy bank” that you can cook at home and take with you, one of which I will share today: these are mini pizzas.

To make mini pizza you will need:

For the test:

Butter - 100 g;

Dry yeast - 10 g;

Water - 250 ml;

Salt - 0.5 tsp;

Sugar - 2 tbsp;

Cumin - 1 tsp;

Flour - 500 gr;

For filling:

Sausage - 200 gr;

Cheese - 100 gr;

For the sauce:

Tomatoes - 2 pcs;

Onion - 1 piece;

Olive oil - 5 tbsp;

Garlic - 2 teeth;

Black pepper;

Mini pizza recipe:

1. Add 3 tablespoons of flour, yeast, salt, sugar and caraway seeds to softened butter. Mix thoroughly and add warm water.

2. Gradually add all the flour. The dough should be soft and elastic. This dough does not go stale for a long time.

3. Cover the dough with film and place in a warm place.

While the dough is rising, I'll make the filling and sauce.

4. Cut the sausage into short strips or cubes.

5. Grate the cheese.

6. For the sauce, fry 1 onion in olive oil until golden brown.

7. Grind the tomatoes with a blender and add to the pan with the onions. Simmer until the liquid boils away. Add salt. sugar, black pepper to taste. You can add your favorite herbs: basil, parsley, oregano.

8. Grind 2 cloves of garlic.

9. Before removing the pan from the stove, add garlic.

When the dough has risen, the filling and sauce are ready, you can start making pizzas.

10. Roll out half the dough into a circle 5mm thick or less.

11. Grease the circle with sauce.

12. Sprinkle sausage and cheese on top. The filling must be spread evenly, in a thin layer, since I will be rolling the dough into a roll.

13. Roll the pizza dough into a roll. Cut the roll into “washers” about 2 centimeters wide. These “washers” will be our mini pizzas.

14. Do the same with the second half of the dough.

15. Place the resulting mini pizzas on a baking sheet greased with vegetable or olive oil. Top each pizza with remaining cheese.

16. Bake at 220 degrees for 15-20 minutes.

17. My mini pizzas are ready. These pizzas are very convenient to take on the road or on a picnic in nature. They are delicious even cold.

    Preparation

    1. Take a sieve and sift the wheat flour. Use your fingers to make a small indentation in the middle of the flour.
    2. Add salt to a glass of ice water and mix thoroughly. The water must be ice cold. To do this, you can first place a glass of cold water in a container filled with ice water.
    3. Pour ice water into the well made in the flour. Very carefully, using a knife, combine the liquid with the flour.
    4. Knead the dough.
    5. Transfer the dough into a bowl, cover with a towel. Place the dough in the refrigerator for about 2 hours.
    6. Leave the butter or margarine at room temperature until it becomes soft. Give it an oblong shape. Place the butter in the refrigerator for 1 hour.
    7. Remove the dough and butter from the refrigerator. Roll out the dough and place butter in the center. Seal the dough like an envelope.
    8. Place the resulting dough envelope so that the seam is on the bottom. Roll it out carefully with a rolling pin.
    9. Fold the dough into thirds and roll out again with a rolling pin.
    10. Fold the dough into thirds again, place in a bowl and cover with a towel. Place in the refrigerator for 1 hour. After this, the dough can be used for pizza.

    Recipe for yeast-free mini pizza dough

    Yeast-free dough is quick and easy to prepare. It turns out soft and tasty, but when rolling out the cake you must act very carefully, since the dough is elastic.

    Ingredients

    • Wheat flour – 2 cups
    • Eggs – 2 pcs.
    • Salt – 1 tsp.
    • Olive oil – 1 tsp.
    • Milk (warm) – 100 ml

    Preparation

    1. Mix wheat flour with salt. Take a sieve and sift until you get a mound of flour. Make a small indentation in the center of the slide with your fingers.
    2. Break the eggs into a bowl and mix lightly with a fork. Pour milk into the egg mixture. It should be warm, but not hot. Add olive oil and stir.
    3. Pour the egg-milk mixture in small portions into the well made in the flour.
    4. Knead the dough with your hands. It should be elastic.
    5. Form the dough into a ball.
    6. Take a damp towel and wrap the dough ball in it. Leave the dough for 15 minutes, then you can use it for pizza.

    Yeast dough recipe for mini pizza

    Yeast dough is most often used for pizza. It can be rolled out thinly, as in Italian pizzerias, or thickly for a fluffy crust.

    Ingredients

    • Yeast (dry) – 1 sachet
    • Sugar – 1 tbsp.
    • Wheat flour – 350 g
    • Water (warm) – 250 ml
    • Salt – ½ tsp.
    • Olive oil – 1 tbsp.

    Preparation

    1. Take a sieve and sift the wheat flour. Make a small indentation in the center with your hands.
    2. Take half a glass of warm water and dissolve the yeast and sugar in it. Wait for the yeast to start working.
    3. Pour the diluted yeast and the remaining water into the well in the flour. Add salt and olive oil.
    4. Knead the dough.
    5. Place the dough in a warm place for 30-45 minutes to allow the dough to rise. After this, it can be used for its intended purpose.

    Miniature pizzas for 4-5 bites are not only a practical dish, but also easy to make. Sometimes you don’t even need a special dough for baking – mini-pizza can even be made on a loaf. At home, a microwave, an oven, and a frying pan are suitable for culinary experiments. And for the filling, anything that is left in the refrigerator is acceptable: pieces of sausage or boiled meat, mushrooms, vegetables, herbs, eggs, cheese, etc.

    It’s great if the housewife wants to make the pizza dough herself to please her loved ones. If you are short on time, you can use ready-made hot dog loaves or buns. True, the only thing the dish has in common with traditional pizza is the presence of toppings baked under a layer of melted cheese. Be that as it may, the sandwiches turn out delicious, and therefore worth trying to make them!

    • any meat filling - 200 g (sausage, frankfurters, ham, boiled meat, etc.);
    • hard cheese - 150 g;
    • tomato paste or ketchup - 2-3 tbsp. spoons;
    • tomatoes - 1-2 pcs.;

    • milk - 100 ml;
    • salt, fresh herbs, a mixture of dry herbs - to taste.
    1. Cut the loaf into regular slices about 1 cm thick, as for sandwiches.
    2. Cut the tomatoes into cubes or thin slices, cut the meat or sausage filling into short strips, grate the cheese.
    3. Combine the milk with the egg, add salt and herbs, then stir with a whisk or fork.
    4. Dip the loaf slices into the milk-egg mixture and place on a baking sheet covered with parchment paper.
    5. Lubricate each with a thin layer of tomato paste or ketchup.
    6. Place the filling in random order and sprinkle the top with cheese.
    7. Preheat the oven and bake the pieces at 180 degrees for no more than 15 minutes.
    8. Sprinkle the finished dish with fresh herbs.

    Mini pizza in the microwave

    Those who have already encountered cooking pizza in a microwave oven know one small nuance - no matter what dough is used, it is better to first bring it to half-cookedness and then add the toppings so that the baked goods do not end up soggy.

    Mini-pizzas made from puff pastry are best baked in the microwave.

    1. After rolling out the puff pastry into a layer 1 cm thick, cut it into individual portions and form the sides.
    2. Place the pre-cut ingredients in layers in the following order: ham, olives, tomatoes, onion rings.
    3. Melt the butter and pour it over the filling, then sprinkle with grated cheese and ground pepper.
    4. At medium microwave power, bake the pizza for 10 minutes, then finish cooking at maximum power, leaving for another 5 minutes.

    Mini pizza in a frying pan

    The process of preparing mini-pizza in a frying pan is practically no different from preparing an omelet, but has its own sequence:

    1. First, mayonnaise and sour cream are mixed, eggs and flour are added. The consistency should be slightly liquid.
    2. The dough is poured onto a greased frying pan and distributed evenly over the surface.
    3. Then lay out the sausage (preferably in large pieces), put tomato rings on top, sprinkle with grated cheese.
    4. Covering the pan, fry the pizza over very low heat for about 12 minutes (until the bottom of the dough is browned).

    Having placed the finished pizza on a plate, sprinkle it with herbs and serve it to the table.

    DIY pizza base

    If someone is not satisfied with the dough sold in the store or the loaf version is not compatible with the concept of pizza, it is worth having a hand in preparing the dough.

    • water – 2 glasses;
    • yeast (powdered) 3 tsp;
    • vegetable oil - tbsp. 8;
    • sugar – 4 tbsp. and salt - 2 tsp.

    If the household has a bread machine, the dough preparation procedure is simplified. If not, then you need to act according to the following algorithm:

    1. Sugar and yeast are dissolved in warm water, then flour is added (half the norm).
    2. After letting the dough brew for 15 minutes, add the remaining products and let it brew for another 1 hour. During this time, the dough must be kneaded 2-3 times (when it has risen well).
    3. The finished dough is very pliable and rolls out well into small flatbreads for mini-pizza. All that remains is to stuff them and put them in the oven.

    Secrets of making mini pizzas

    The recipes described above are designed for quick cooking. But even the laziest mini-pizza recipe, which uses a loaf, is fraught with certain nuances.

    • Whatever fillings are used, two main ingredients must remain the same - cheese (hard or soft) and tomatoes (ketchup, tomato paste).
    • It is better to place soft varieties of cheese in pieces directly on the sauce under the filling, but hard ones are rubbed with the top layer.
    • Herbs – oregano and basil – will improve the taste of pizza.
    • Wherever the pizza is prepared - in the oven, microwave or in a frying pan, the meat (or fish) toppings should not be raw.
    • The taste of pizza largely depends on the dough. If the housewife decides to knead it herself, it is better to opt for the yeast version. At the same time, it is worth using olive oil in the recipe - it will add a piquant note.

    • a teaspoon of baking powder;
    • 250 g flour.

    Pour melted butter into a bowl, add egg and mayonnaise (or sour cream). Beat the mixture well with a fork. Add baking powder and sifted flour. Mix the dough. Roll out the dough mass into a layer 2-3 mm thick and cut out circles with a wide glass or cup.

    For the filling we take:

    • 100 g hard cheese;
    • one pickled cucumber;
    • two tomatoes;
    • 100 g ham;
    • a tablespoon of mayonnaise;
    • fresh herbs (to taste).

    Line a baking sheet with baking parchment, place mini bases on it and grease them with mayonnaise. Distribute the ham cut into strips over the dough, sprinkle with finely grated cheese, add a slice of tomato and a slice of pickled cucumber.     Mini pizzas with sausage and mushrooms

    This recipe makes 24 miniature pizzas. Therefore, if necessary, the components of the dough and filling can be proportionally reduced.

    We create the dough from:

    • 0.5 l of milk;
    • a packet of dry yeast;
    • 80 g sugar;
    • 0.5 l of water;
    • 300 g margarine;
    • 2.1 kg flour;
    • three eggs;
    • vanilla (on the tip of a knife).

    Mix slightly warmed milk, sugar and yeast. Leave in a warm place until foam appears. Then add margarine (melted, but not hot), eggs (one white and two whole), warm water and vanilla. Pour in the flour, knead the dough and leave it warm to rise. Divide the increased volume into small balls, place them on a baking sheet greased with vegetable oil, and let them rest for 10-15 minutes.

    In the meantime, we are making the filling, consisting of:

    • 700 g boiled sausage;
    • six onions;
    • 0.5 kg of mushrooms;
    • 470 g hard cheese;
    • 400 ml mayonnaise;
    • 400 ml ketchup.

    Cut the onion into half rings, grate the hard cheese onto a coarse grater. Cut the sausage into cubes, mushrooms into thin slices. To fill, mix mayonnaise and ketchup.

    Use a glass to make a hole in the dough balls. Using your hands, flatten and stretch the pizza bases a little, leaving small edges. Place the filling in the following order: onions, mushrooms, sausage. Fill each mini-pizza with a tablespoon of filling. Sprinkle grated cheese on top. Beat the remaining yolk with cold water and brush each pizza with this mixture.

    Place the baking sheet in an oven preheated to 200 degrees for 15 minutes. Ready-made mini-pizzas can be eaten immediately. But they are just as tasty cold as they are hot.

    Vegetarian mini pizzas

    In this recipe, the filling is nothing more than a convention. Its constituent components can be changed, supplemented and combined with other products of plant origin to suit your taste.

    For the test you need to take:

    • flour (two glasses);
    • olive oil (2 tbsp);
    • warm water (200 ml);
    • dry yeast (2 tsp);
    • salt (2 tsp).

    Mix dry yeast with salt and warm water. Pour a glass of flour here. Mix well. Add the remaining flour in small portions and knead the dough. If it turns out too sticky, then add more flour. At the very end of kneading, pour olive oil into the dough and knead for a few more minutes. Cover with cling film and place in a warm place for two hours.

    In the meantime, prepare a delicious sauce from:

    • a tablespoon of olive oil;
    • teaspoon oregano (fresh or dry);
    • garlic clove;
    • 1.5 cups already diced tomatoes;
    • bulbs;
    • spices (salt, red pepper, black pepper, etc.).

    Sauté finely chopped garlic and onion in a hot frying pan in olive oil. Add tomatoes, spices and simmer it all for 10 minutes over fairly high heat. After this, cover with a lid, reduce the heat and simmer for another half hour. The sauce is ready.

    For the filling we take (in any quantity):

    • tofu cheese (soy);
    • Cherry tomatoes;
    • mushrooms;
    • arugula;
    • boiled potatoes;
    • green pea;
    • small carrots;
    • green beans;
    • small onions;
    • greenery;
    • pepper, salt, a mixture of Italian herbs.

    The birthplace of pizza is Italy. Translated from Italian, the name means a spicy open pie with filling. Since Italy is the birthplace of cheese and tomatoes, every pizza recipe contains ingredients. The rest of the products can be arranged according to taste and possibilities: from king prawns to regular sausage.

    Mini-pizza in yeast dough molds with mushrooms

    Making yeast dough takes time and a little culinary skill, but the results are worth it. No fast food restaurant will serve you such aromatic homemade pizza.

    For the test:

    • wheat flour – 650 gr;
    • alcoholic yeast – 40 g;
    • water – 300-350 ml;
    • vegetable oil – 3 tbsp;
    • salt – 0.5 tsp;
    • granulated sugar – 1-2 tbsp.

    For filling:

    • fresh champignons – 200 g;
    • onion – 1 piece;
    • butter – 35 g;
    • tomato sauce – 150 ml;
    • bell pepper – 1-2 pcs;
    • eggs – 2 pcs;
    • hard cheese – 150 g;
    • set of Provencal spices – 1-2 tsp;
    • vegetable oil for greasing molds – 1-2 tbsp;
    • salt - to taste.

    Cooking method:

    1. Dissolve the yeast in half a glass of warm water, add sugar, stir and leave for 10 minutes for the yeast to begin fermentation.
    2. In a deep bowl, mix flour with salt, pour in yeast, remaining water and oil. Knead the soft dough, cover with a linen napkin and put in a warm place to rise. The fermentation time will be 2-2.5 hours; during this period, knead the dough 2 times.
    3. Meanwhile, fry the chopped onion in butter, add mushroom slices, salt, sprinkle with spices and simmer for 10 minutes.
    4. Grate the cheese on a fine grater and beat with eggs, a pinch of salt and 0.5 tsp of spices. Cut the bell pepper into cubes.
    5. Knead the risen dough thoroughly again and divide into 10-12 parts. Roll out each piece to a slightly larger diameter than the baking pan.
    6. Place portioned flatbreads in greased pans, slightly raise the sides of the dough, and pour tomato sauce on the bottom of each. Spread the mushroom filling over all the flatbreads, pour in the beaten eggs and garnish with brightly diced sweet bell peppers.
    7. Bake in the oven at 220-230°C for 20-25 minutes.

    Mini pizza in the oven from a loaf

    This is one of the simplest pizza recipes in which you do not need to knead the dough and cook it for a long time. Instead of loaf slices, try stuffing unleavened buns, cut lengthwise into two pieces.

    Ingredients:

    • loaf – 1 piece or 750 g;
    • garlic – 3-5 cloves;
    • fresh basil – 2-3 sprigs;
    • tomatoes – 3-4 pcs;
    • ham or smoked sausage – 150-200 g;
    • butter – 50-75 g;
    • processed cheese, cut into portions – 13-15 pcs;
    • freshly ground black pepper – 1 tsp.

    Cooking method:

    1. Cut the loaf into skewers and spread a thin ball of butter on top of each.
    2. Chop the garlic and basil, mix and add a little salt.
    3. Cut the ham into strips, place on the loaf skewers, sprinkle with a mixture of garlic and basil. Top with a slice of tomato and a slice of cheese, sprinkle with pepper.
    4. Place the mini-pizzas on a baking sheet with parchment paper, place in a preheated oven and bake for 15 minutes at 220°C.

    Mini snail pizza made from puff pastry with tuna and cheese

    Prepare similar “snails” from yeast-free puff pastry or sheet pita bread.

    Ingredients:

    • ready-made puff yeast dough – 750 g;
    • canned tuna in oil – 1 ban;
    • hard cream cheese – 250 g;
    • ketchup – 50 ml;
    • mayonnaise – 50 ml;
    • onions – 2 pcs;
    • tomatoes - 2 pcs;
    • pitted olives – 20 pcs;
    • ground basil, coriander, cumin - 0.5 tsp each;
    • garlic powder – 0.5 tsp;
    • flour for dusting – 100 g;
    • dill greens – 0.5 bunch.

    Cooking method:

    1. Thaw the finished puff pastry in the evening on the top shelf of the refrigerator.
    2. First sprinkle the table with flour, lay out the dough and roll out two rectangles 0.5 cm thick.
    3. Cut the olives into rings, grate the cheese on a coarse grater, finely chop the onion.
    4. Cut the tomatoes into cubes, add salt and mix with garlic powder, drain the gravy from the canned food and mash the fish with a fork. Divide the filling ingredients into two parts.
    5. Mix ketchup with mayonnaise and coat each sheet of dough.
    6. Place a layer of onions on the rectangle, place tuna pulp, a mixture of tomatoes and a little grated cheese on top.
    7. Roll the rectangle into a roll and cut crosswise into slices 2-3 cm thick. Dip the bottom of each snail in flour, sprinkle cheese on top, place olive rings and sprinkle with a mixture of spices.
    8. Line a baking sheet with parchment paper, grease with vegetable oil or lard and lay out the “snails”.
    9. Feel free to place the pizza in an oven preheated to 230°C for 20-30 minutes.
    10. Sprinkle the finished dish with chopped dill and serve.
