Step-by-step recipe for multi-fruit compote for the winter

Step 1. Wash all the fruits well, remove the seeds from the apples, separate the grapes from the bunch so that there are individual berries, remove the bone from the peach, peel the orange.

Attention! Grapes can be added to a multi-fruit compote either as individual berries or as a whole bunch. There is no need to be afraid that the twig will add bitterness or some kind of aroma to the compote; the taste does not change whether you added grapes with a brush or with berries.

Step 2. Cut apples and peaches into slices (size at your discretion), cut the orange into slices or circles. We recommend mugs. In this case, they look visually beautiful in the compote and make it appetizing.

Step 3. Sterilize the jars in the oven or over boiling water.

On a note! For three-liter jars of assorted fruit compote, 15 minutes of sterilization over steam and 20 minutes in the oven are sufficient. For smaller container volumes, the sterilization time can be reduced accordingly.

Step 4. Boil water. For approximately two three-liter jars of compote you will need about 3 -3.5 liters of water.

Step 5. Place the prepared fruits in jars and pour boiling water over them. Let it stand in this form (without covering) for 15 minutes.

Step 6. After 15 minutes, pour the water from the cans into the pan and put it back on the fire until it boils. While the water is boiling, add sugar and stir well until completely dissolved. Boil water with sugar for no more than 8 minutes (5 after boiling is enough).

Step 7. Pour the already aromatic syrup into the jars of fruit again and roll up.

Attention! Before sealing the compote, not only the jars, but also the lids must be sterilized. To do this, you just need to boil them for 2-3 minutes.

Step 8. Place the jars on the neck, wrap them in a blanket and let them cool completely in this form. Then the fruit compote is put away for the winter in a cooler place, for example, in a home pantry or cellar.

Helpful information! If you are preparing fruit compote according to our recipe, then peaches (nectarines) can be replaced with apricots. The taste will also be very pleasant and rich. For those who like sourness, we recommend adding one slice or a few drops of lemon juice to assorted fruit compote.

1. First of all, you need to prepare all the berries. It will take the most time to process red currants, since the berries are collected with tassels, and the finished drink is much more pleasant to drink without them. Place the branches in a colander and rinse thoroughly. We remove the currants from the branches and remove bad berries, if any. It’s much easier with raspberries and blackberries: place them in a colander and rinse under running water. Leave for a while to drain excess liquid.

2. If you have a large family, three-liter jars are suitable for sealing. If you need small volumes, use liter jars, as in this step-by-step recipe. The amount of ingredients is calculated for two 1 liter jars. We thoroughly wash the containers with soda or laundry soap, then rinse well with running water. We sterilize washed jars and lids in a way convenient for you, for more details about the methods and rules of sterilization, see. The lids can be boiled in water, and the jars can be heated in the microwave, oven or over steam. Divide the washed berries in half into sterile containers.

3. To determine how much water is needed, pour cold water directly from the tap (or filter) into the jars to the very top.

4. Pour the same water into the pan. Place over high heat and bring to a boil.

5. Carefully pour boiling water into the jars of berries and cover with lids. If desired, the jars can be covered with a towel. This way, compote for the winter from different berries will infuse faster and become fragrant. Leave for 10 minutes.

6. Pour the infused berry broth from the jars back into the saucepan. Cover the jars with lids. Add sugar to the broth. It is better to adjust its quantity according to your taste. Place over high heat and, stirring, let it boil. Boil for about 2-3 minutes.

Assorted compote for the winter from gooseberries, currants and cherries with orange - another improvisation, the color and taste turned out to be a wonderful drink. The compote has a bright color and a pleasant citrus note.

You don’t need to add citric acid to this assorted compote, since oranges contain acid, and jars of compote will be stored perfectly in winter.
For a more interesting taste, you can add a small slice of lemon or lime.

Separate the red currants from the branches. Rinse well in running water and dry on a towel.


Wash and dry the cherries. The pit should not be removed. It is best to take sweeter varieties of cherries so that the compote does not turn out too sour. I add cherries mainly for the beautiful color and pleasant aroma.


Wash the orange thoroughly with a brush and place in boiling water for 1 minute. Then dry and cut into thin slices. It is imperative to keep the orange in boiling water, so the compote will definitely be well stored without sterilization. If I add lemon or lime, I also keep them in boiling water for the specified time.


Place prepared berries and 2 orange slices into pre-sterilized and dry jars. You can add more orange, depending on your taste.


Add sugar to the jars. The amount of sugar depends on the acidity of the berries. If the berries are sour, add 150 grams of sugar. If they are not very sour, I put less sugar.


I pour boiling water over the berries and sugar and screw them on with sterilized lids. To do this, fill the lids with water in a saucepan and boil for 1-2 minutes. I immediately put the compote with gooseberries and currants under a warm blanket until it cools completely, for about a day.


I store the finished gooseberry and orange compote in the basement.
