Cherry juice without sugar

Composition (per 3 l):

  • cherry – 5–6 kg, depending on juiciness.

Cooking method:

  • Sort through the cherries, removing spoiled fruits, wash and dry. Remove the branches and pit the cherries.
  • Pass the cherry pulp through a juicer or squeeze the juice out of it using a special press.
  • Pour the juice into a suitable container, preferably glass.
  • Place the container with the juice in a cool place so that it does not ferment. Wait for the sediment to settle.
  • Using a straw, drain the juice into sterilized jars without disturbing the sediment.
  • Cover the jars with boiled lids and place them in a saucepan, not forgetting to lay a towel on the bottom.
  • Pour in water and place the pan on low heat. Sterilize for at least 15-30 minutes, depending on the size of the jars. For better preservation of the juice, it is advisable to increase the sterilization time by one and a half times, since the drink is prepared without adding sugar.
  • Roll up the jars of juice, turn them over, cover with a blanket and leave to cool as is for additional preservation.

After the jars have cooled to room temperature, they must be stored in the refrigerator. The juice according to the given recipe is concentrated; it is advisable to pour it into small jars. An opened can of sugar-free cherry juice should not be stored for longer than 3 days.

Cherry juice with pulp

Composition (per 3 l):

  • cherry – 3 kg;
  • water – 1 l;
  • sugar – 0.5 kg.

Cooking method:

  • Prepare the cherries by washing, drying and pitting them.
  • Place the cherries in an enamel bowl or other container suitable for cooking juice. Aluminum cookware is not used for these purposes, since this material forms harmful substances when in contact with acids.
  • Fill with water. Place on low heat. Cook the berries for 5 minutes after the water boils.
  • Rub the cherries through a sieve. It is advisable that the grille is not too dense.
  • Add sugar to cherry juice and stir.
  • Place the container with juice on low heat.
  • Stir until the sugar is completely dissolved.
  • Wait until the juice starts to boil. Boil the juice for 5-10 minutes.
  • Fill sterilized jars with juice. Seal, turn over, cover with a blanket.

After cooling, the cans of cherry juice can be moved to an unheated pantry or any other cool room.

Cherry juice in a juicer

Composition (per 1 l):

  • cherry – 2 kg;
  • sugar – 0.2 kg.

Cooking method:

  • Place the pitted cherries in the top container of the juicer and sprinkle the berries with sugar.
  • Pour water into the lower compartment.
  • Assemble the juice cooker, check that the hose designed to drain the finished juice is directed into a sterilized jar.
  • Turn on the appliance or put the juicer on fire if you do not have an electric one.

Then pour about four liters of water into the lower section of the juicer and place on the stove to boil. When the liquid boils, place a container with berries on the juice cooker, cover with a lid and cook over low heat. After twenty minutes, it is recommended to drain about two hundred milliliters of cherry juice from the collection where the juice flows and pour it back into the juicer. The berry drink should be boiled for sixty minutes. After an hour, turn off the juicer and wait until the juice has completely drained. The resulting product must be distributed into sterilized containers and preserved. Cherry juice for the winter at home is ready for consumption. The berry drink should be stored in a cool room (cellar or pantry), where sunlight will not reach it.

According to the following recipe, preparing cherry juice for the winter includes the use of apple juice. To make apple-cherry juice, you first need to thoroughly wash the berries, remove the seeds from the pulp, and then use a juicer to squeeze the juice out of the cherries (about one kilogram, two hundred grams will be required). Then the resulting cherry juice should be poured into an enamel-coated container, add approximately two liters of freshly squeezed apple juice and boil. Boiled cherry-apple juice must be poured into a sterilized container and sealed. This completes the preparation of apple-cherry juice for the winter.

You can also prepare cherry juice with pits for the winter at home. To do this, you need to wash two kilograms of berries well, dry them and put them in sterilized three-liter glass jars. Next, pour about five liters of water into an enamel-coated pan and boil. Pour about four hundred grams of granulated sugar into the boiling liquid and simmer until the sugar melts. Pour the finished syrup into a container with berries, cover with a lid and set aside for thirty minutes. After the specified period of time, the syrup must be poured back into the pan and boiled. Then pour it again into the jars containing the cherries and preserve. After three days, canned homemade cherry juice can be stored in a fairly cool, dark room.

In addition, cherry juice can be sealed for the winter without cooking. All you need is cherry pulp, a juicer and sterilized containers. So, wash the berries thoroughly, dry them, remove the seeds from the pulp and pass the fruits through a juicer to obtain juice. The resulting berry drink should be poured into a container and taken to a dark, cool room for several days. As soon as you notice the formation of sediment at the bottom of the container, the juice must be carefully poured into another container so that the sediment does not get there. Next, the filtered cherry juice must be boiled, and then distributed into sterilized containers and sealed.

Harm of cherry juice and contraindications

Cherry juice can be harmful to people with individual intolerance to the product. You should give up the drink if you have chronic problems with the lungs, ulcers, or gastritis with increased acidity. Of course, you can choose an easier way to prepare the cherries by simply mashing them with a fork and they will quickly release their juice, but in this case your drink will no longer be crystal clear even after several filtering processes.

Step 3: prepare cherry juice.


Through 35 – 40 minutes your saucepan will be half filled with natural cherry juice and at the same time all the berries will remain almost whole, which will greatly help you in the further preparation of sweet cherry nectar. Now the sour natural cherry juice must be diluted, otherwise it will be too concentrated, and this is very undesirable for people with high acidity or for children, since acid can not only have a positive effect on the human body, but also negatively affect the delicate walls of the human stomach , which can lead to ulcers. Therefore, add the required amount of clean distilled water to the pan.
Stir the resulting mass with a tablespoon and place the pan on the stove, turned on to medium level. When the liquid boils, reduce the stove temperature to the lowest level. Brew the drink 20 minutes, During this time, the cherry will release all the juice, then set the container aside, helping yourself from the stove with a kitchen towel, and let the drink cool slightly.
Now take a two-liter glass carafe and place a sieve with a very fine mesh on its surface. Like any type of compote, it is served in decanters, next to which they place glasses, vases with ice and saucers with fresh fruit so that guests can complement the juice with the fresh aroma and taste of fruit.
