As a rule, we all prepare for the New Year what we are used to. But sometimes you really want to get off the beaten path and do something new, without spending a lot of time and effort.

Mexican salsa

Salsa is a spicy sauce that is very similar to salad. The tangy dressing makes this tomato sauce a great addition to meat.

  1. Mix the ingredients for the spread. Spread half of it onto the pita bread, keeping in mind that our sandwich will end up square and the edges of the pita bread will be cut off.
  2. Place half of the salmon on top.
  3. Take another pita bread and brush it with a thin layer of oil - this will help the salmon “stick” to the pita bread. Cover the salmon layer with oil side down. Spread the spread on top, place the salmon and another pita bread spread with butter (butter inside).
  4. Wrap everything in film, press it down with a flat heavy object, put it in the refrigerator for 4 hours, or overnight.
  5. Use a serrated knife to trim off any excess pita bread and shape the resulting piece into a square shape.
  6. Cut the resulting square into 6-7 strips, make them into squares. Before serving, pierce each mini-sandwich with a toothpick and garnish with dill.

Unusual presentation of sausage

Slicing salami or other sausage is a familiar part of the New Year's table. You can use this appetizer differently if you make rolls or tartlets out of it.

  • 200 g apricots

  • about 150–250 g apricot jam
  • 2 tbsp. l. honey
  • 700 g dry red wine
  1. Apricot-honey glaze: Blend apricot jam and honey in a blender until smooth.
  2. Place the goose in a large saucepan with boiling water and cook for half an hour with any spices and a little salt. This will soften the goose and speed up the roasting process.
  3. Dry the goose with paper towels. It is advisable to place it in the refrigerator to dry overnight. But it’s not necessary - you can fry it right away.
  4. Season the bird with salt and pepper, inside and out.
  5. Push dried fruits and small sour apples into the belly (leave the remaining apples and dried fruits for the end of frying).
  6. Place in an oven preheated to 200 degrees.
  7. Pour half a bottle of red wine and fry the goose, basting with juice from time to time.
  8. After about an hour, add the rest of the fruit to the tray and add more wine.
  9. 15 minutes before the end of frying, brush the goose with the apricot-honey glaze.

Jamie Oliver's Fried Chicken

Jamie Oliver is one of the most famous chefs and television personalities in the world. He offered his recipe for oven-baked chicken.

Ingredients (for 8 servings):

  • 2 chickens
  • sea ​​salt and ground black pepper
  • 4 kg potatoes
  • 2 lemons or 3 limes
  • 2 heads of garlic
  • thyme, rosemary
  • olive oil
  1. Season the chicken with salt and black pepper, wrap in cling film and put in the refrigerator.
  2. Cut the potatoes into 4 parts. Separate the garlic into cloves.
  3. Preheat the oven to 190 degrees.
  4. Place the potatoes, lemon and garlic in a pan with plenty of boiling salted water and cook for 12 minutes.
  5. Drain the water and let the potatoes dry for 1 minute over the heat, shaking the pan. Remove lemon and garlic. Cover the pan to keep the potatoes hot.
  6. While the lemon is hot, pierce it about 10 times. Remove the chicken from the refrigerator, pat dry with paper towel and rub with olive oil.
  7. Toss the chicken with lemon, garlic and thyme, then place it in a deep baking tray and cook in the preheated oven for 45 minutes.
  8. Transfer chicken to a plate. Place the potatoes and rosemary leaves on a baking sheet and toss to combine. Make a well in the center and place the chicken in it. Cook for another 45 minutes or until the chicken is cooked through and the potatoes are lightly browned.
  9. When the chicken is done, remove the lemon and garlic. Peel the garlic, mash and rub the chicken with it, remove the rosemary leaves.

Ham with honey and mustard

Pork prepared in this way is a real homemade ham, which can be served either cold as a snack or hot, adding a side dish of vegetables and mustard sauce.

Ingredients (for 8 servings):

  • 5–5.5 kg pork ham
  • 2–2.5 onions
  • 2 carrots
  • 2.5 egg yolks
  • 2.5 tbsp. l. honey
  • 1.5 tbsp. l. espresso
  • 6.5 tbsp. l. Dijon mustard
  • cloves and salt to taste
  1. Place the ham overnight in a large saucepan with salted water (150 g per 4 liters of water).
  2. Preheat the oven to 120–150 degrees. Peel the bulbs and stick a few cloves into each. Place the ham in the pan, place the onion and whole peeled carrots next to it.
  3. Pour water so that it covers the vegetables. Bake at 120 degrees for about 2 hours. Or, if you have a food thermometer, until the internal temperature of the meat reaches 75 degrees. Remove from oven and cool.
  4. Separate the whites from the yolks. Whisk the yolks with honey, chilled espresso and mustard. Increase the oven temperature to 230 degrees. Transfer the ham from the broth to a baking sheet with a wire rack and coat the ham with the glaze.
  5. Bake for 8 minutes until golden brown.

  2. The next day, place all the meat parts in a saucepan with a thick bottom and cover with water. The water above the meat should be 6 cm high. Bring to a boil, skim off the foam.
  3. Add peeled onion, carrots and parsley root to the broth.
  4. Place the pan over very low heat and cook for about 8 hours. Add water as it boils. The water should remain at the same level (6 cm above the meat). At the end of cooking, add salt to taste.
  5. At the end of the eighth hour, remove all meat parts from the broth. Separate the meat from the bones and chop finely. Strain the broth through cheesecloth.

If the broth becomes cloudy, at the end of cooking, break a raw egg into it to collect small particles. And then remove the egg with a slotted spoon.

6. Finely chop the peeled garlic and herbs, mix with the chopped meat.

7. Place meat and garlic in an enamel tray with high sides. Pour in the broth. Cool, then refrigerate until completely set.

Mushroom caps stuffed with caviar

The presence of a dish with mushrooms is mandatory on the New Year's table - because they grow in the forest along with the Christmas tree.

Required for 4 servings:

  • large champignons - 400 g
  • sour cream - 200 g
  • bacon - 50 g
  • garlic - 2 cloves
  • bulb
  • thyme - 5 sprigs
  • ground crackers - 2 tbsp. l.
  • red caviar - 2 tbsp. l.
  • vegetable oil, salt, pepper

Preparation:

  1. Peel the mushrooms, rinse, cut off the stems and set aside. Place the caps in a heatproof tray lined with parchment.
  2. Finely chop the mushroom stems along with the garlic, onion and bacon. Fry in a well-heated frying pan in vegetable oil, stirring, for 5-7 minutes until soft.
  3. Add thyme leaves, sour cream and 1/2 tbsp. l. crackers. Add salt, pepper, stir and keep on fire, stirring, for another 1 minute.
  4. Stuff the champignon caps with the resulting mass and sprinkle with the remaining breadcrumbs. Place in the oven at 200 degrees C for 20 minutes. Turn on the function that coats the products with a golden brown crust.
  5. Remove the mushrooms from the oven and place red caviar on top of the filled caps. Ready.

Olivier salad with crab meat

Ingredients for 4 servings:

  2. Boil the potatoes in salted water for 15-20 minutes. Then drain the water and set aside for now.
  3. Bring water to a boil in a small saucepan and cook beans for 10 minutes. Then cool.
  4. Arrange lettuce leaves on a serving plate. Top with potatoes, beans, paprika, tomatoes and olives.
  5. For seasoning, mix the remaining orange juice and mustard with half the olive oil.
  6. Remove the steaks from the marinade and fry thoroughly in a frying pan. Cut them into wide strips. Place the meat on the salad, pour seasoning on top and serve.

Chicken salad with lychee, oranges, kiwi and avocado

Ingredients:

  • smoked chicken breast - 300 g
  • radishes - 3 pcs.
  • large orange - 1 pc.
  • lemon - 1 pc.
  • kiwi - 2 pcs.

  • can of canned lychee - 280 g

  • mayonnaise - 150 g

Products:
– pork 400 grams;
– pickled cucumbers 2 pcs.;
– red onion 1 pc.;
– mustard beans 2 tbsp. spoons;
- salt pepper;
– flour for breading.

Preparation:
Cut the meat into thin slices, cover with film and beat well, add salt and pepper. Cut the cucumbers and red onion into strips. Place grain mustard, slices of cucumber and onion on each piece of meat.

Products:

– herring – 1 pc.;
– potatoes – 4 pcs.;
– carrots – 1 pc.;
– beets – 1 pc.;
– mayonnaise – 200 g;
– onion – 1 pc.;
– vinegar for pickling onions.

Preparation:
Pre-cut the onion randomly and marinate in vinegar for 2-3 hours. But you can put it raw, at your discretion.

Boil potatoes, carrots and beets, cool, peel and grate or cut into small cubes.

Peel the herring, separate from the bones, cut into small pieces.

It is better to squeeze the beets through cheesecloth to remove excess moisture. If your carrots are also juicy, then it is better to squeeze them.

To make a roll, spread cling film, a cut plastic bag or foil on the table, whoever has what. Mix beets with mayonnaise and spread evenly onto film. Cover again with film and compact the layer thoroughly. Remove this top film. You can salt the beets a little. Try to make each subsequent layer slightly narrower in width than the previous one. We do the same with carrots, only now we spread them on the beets. The third layer is potatoes with mayonnaise, spread on the carrots. Don't forget to salt it. Next we put the onion, if you pickled it, you need to let it drain so that it is not too wet. And the last layer is herring. It is better to lay it not over the entire surface of the roll, but as a long log in the middle. We compact all layers in the same way using cling film.

Carefully roll the roll around the herring log. We compact the edges well. Wrap it in the same film. We put the appetizer in the refrigerator until guests arrive. Before serving, remove the film and cut into portions.

Products:
– 100-200 gr. ham or any boiled sausage;
– 100 gr. any cheese or fatty cottage cheese, it must be salted;
– 1 carrot;

  • salt about half a teaspoon;

Preparation:

Steam the prunes with boiling water. Dry.

Wash the meat and dry with a napkin. Make deep cuts not completely at a distance of 1-1.5 cm.

Mix all the ingredients for the marinade well, squeeze the garlic through a press.

It is good to coat the meat with marinade, not forgetting about the pockets.

Place all the prunes in each pocket. Carefully transfer the meat into a roasting bag. The sleeve should be 2 times longer than the piece. Secure the sleeve on both sides and put it in the refrigerator for a day or a little less.

When you need to cook, take the potatoes and cut off the bottom on one side.

Mix the oil, salt and seasoning well and pour the potatoes on top, not forgetting to get into the holes. Now place the finished potatoes along with the mold into a baking sleeve and secure it on both sides.

Remove rack from oven to keep cool. Preheat the oven itself to 200 degrees. Now place the form with potatoes and the form with meat on the grill. Bake for an hour.

  1. Rinse the pork heart thoroughly under running water and clean it, removing all veins and vessels. Cut into small pieces and cook in salted water.
  2. Boil the eggs hard.
  3. During the process of boiling the heart, the first cloudy water will need to be drained, and instead, pour the same volume of clean water and cook the offal for 30 minutes.
  4. Cut the onion into half rings and marinate.
  5. When the heart has been boiled for half an hour, drain the water again and add new water, continue cooking for another hour until it becomes soft. 30 minutes before the end of the process, add 4-5 black peppercorns and a few bay leaves to the water.
  6. Peel the carrots, grate them on a coarse grater, and saute in vegetable oil.
  7. Cut the cooled heart into neat cubes, dice the eggs, chop the greens with a knife, finely chop the garlic.
  8. Open the can of peas and drain the excess liquid.
  9. Place all the chopped ingredients in a salad bowl, season with mayonnaise and set aside for 1-1.5 hours. That's all, the delicious meat salad is ready for the New Year's table!

Meat salad with champignons and ripe pomegranate seeds

- beef or veal 200 gr.,

— pomegranate 1 pc.,

- champignons 150 gr.,

- walnuts 50 gr.,

— lettuce leaves 3 pcs.,

– purple onion 1 pc.,

- mayonnaise,

- 1 clove garlic,

- vegetable oil for frying,

- spices.

Cooking process:

  1. Rinse the meat well, dry and chop coarsely. Then place it in a heated frying pan, greased with vegetable oil, fry on both sides until cooked.
  2. In another pan, fry the champignons.
  3. Place the finished fried ingredients on a paper napkin so that all excess fat is absorbed.
  4. Peel the onion, cut into half rings and pour over boiling water.
  5. Tear the lettuce leaves with your hands.
  6. Chop the walnut kernels with a knife.
  7. Prepare the dressing: add chopped garlic and ground black pepper to the mayonnaise.
  8. Peel the pomegranate and select whole seeds.
  9. Lay out the lettuce leaves, then the meat, mushrooms, sprinkle everything with nuts and onions, make a few large drops of sauce and add pomegranate seeds.

Buns “Funny Dogs”

- flour 450 gr. + 100 gr. for adding,

- milk 150 ml,

- dry yeast 8 gr.,

- eggs 2 pcs.,

- butter 70 gr.,

- sugar 2 tbsp,

- salt 1 tsp,

- yolk 1,

— sausages 2-3 pcs.,

- raisins 50 gr.

Cooking process:

  1. Sift the flour and pour warm milk into it, add yeast, sugar, salt, eggs, melted butter. Knead the dough and leave it for an hour in a warm place.
  2. When the time is up, divide the dough into 15 small pieces, round them and leave for 15 minutes.
  3. Cut the sausages diagonally.
  4. Roll each ball into an oval cake, make a small cut on top, place a piece of sausage on the bottom and roll the dough so that the top cut is on the sausage. Make cuts on the sides and move them slightly apart - these will be the “ears”.
  5. Use raisins as eyes and spouts. Brush the yeast buns with egg. Place the baking sheet in an oven preheated to 180 degrees for 20-25 minutes.

So all the yeast buns are ready for the New Year 2018.

Stuffed chicken drumsticks

- chicken drumsticks 5 pcs.,

— tomatoes 2 pcs.,

- hard cheese 5 slices,

- mayonnaise,

- vegetable oil,

- mustard 1 tsp,

- fresh parsley,

- 1 clove garlic,

- salt, pepper, tsp.

Cooking process:

  1. Wash the drumsticks, remove any remaining feathers, place on a paper towel and dry. Using a knife, cut the skin and meat into a “pocket”, being careful not to damage the skin. Chop the meat that is left without skin with the bone.
  2. In a bowl, mix chopped garlic, mayonnaise, mustard and spices. Rub the resulting mixture onto the shins on all sides.
  3. Cut the meat into small pieces; we don't need bones.
  4. Add chopped tomatoes, cheese, herbs and 1 tsp to the meat. mayonnaise.
  5. Stuff the drumsticks with the filling.
  6. Fry the resulting legs until golden brown.
  7. Transfer the drumsticks to a baking dish and place in the oven for 15 minutes at 180-190 degrees.

Pork medallions in oranges

- pork 500 gr.,

- vegetable oil,

– large orange 1 pc.,

- shallot,

- purified water,

- turmeric,

- salt, pepper, tsp.,

Cooking process:

  1. Cut the pork into medallions 0.5 cm thick, season with salt and pepper and place in a preheated frying pan greased with vegetable oil.
  2. Fry the pork on both sides until golden brown.
  3. Add the juice squeezed from one orange and a little chopped zest. Also add shallots cut into half rings, a couple of spoons of honey, a little water and sprinkle everything with turmeric.
  4. Cover the pan with a lid and leave the meat to simmer over low heat for 20 minutes. Look under the lid from time to time and stir the medallions.

That's all! Delicious, soft and aromatic pork is ready!

“Dog” salad with smoked chicken breast and champignons

— 1 smoked chicken breast,

— marinated champignons 150 gr.,

- potatoes 5-6 pcs.,

— carrots 4 pcs.,

- eggs 3-4 pcs.,

— processed cheese 1 pc.,

- mayonnaise,

- spices,

- cloves, dill and a small piece of meat or sausage for decoration.

Cooking process:

  1. Boil potatoes, carrots and eggs until fully cooked. Clean.
  2. Finely chop the smoked chicken breast and mushrooms. Leave a couple of whole mushrooms for decoration.
  3. Grate potatoes, carrots, egg whites and yolks on a fine grater.
  4. Take a flat plate and lay out the first layer of grated potatoes, form the ears and future face of the dog. Lubricate the layer with mayonnaise.
  5. Place chopped breast, egg whites, a layer of champignons, processed cheese on top and spread mayonnaise on top.
  6. Now it's time to lay out the carrots.
  7. Start laying the potatoes on top, so that all previous layers are hidden under them. As a result, you should get a white muzzle of a dog, which still needs to be coated with mayonnaise on top.
  8. Use grated yolk to mark the dog’s face, leaving the ears white.
  9. Cover the dog's nose and cheeks with egg white.
  10. Cut out the eyes and nose from mushroom caps, the mustache from cloves, and the tongue from a piece of meat or sausage.
  11. You can put a sprig of dill around the muzzle. Carefully wrap the salad in cling film and place in the refrigerator to soak.
