I take one big salmon. By the way, this recipe is suitable for the case when you want to eat delicious food, but there is no time to cook. And so, we take a fish, if necessary, defrost. We clean from scales and take out the insides, cut off the head. We cut into fairly wide pieces - 3-4 cm. Put them in a bowl, salt and mix with our hands so that the salt is evenly distributed over all the pieces. Next, put a frying pan on the fire, pour a little vegetable oil and lay out the pieces of fish. We cover with a lid. The fire I make under the pan is minimal, but on the largest burner. Since the pieces of fish are thick, frying over low heat with the lid closed will allow you to fry inside, but not burn. Fry on one side for at least 10 minutes, until the top edge of the piece begins to turn white. Then, flip over to the other side. Put a hat of vegetables and cheese on top of the fish.

How to prepare a "hat":

  • clean onions and carrots. Three carrots on a coarse grater, and cut the onion into half rings and fry until cooked in a separate pan with the addition of vegetable oil. We spread the fish on top;
  • Wash the tomatoes and cut into rings. Spread on top of the onion with carrots in an even layer;
  • Top everything with cheese.

We cover the pan and fry, also, over low heat with the lid closed for at least 10 minutes. The tomato should be soft and the cheese should be completely melted. Notice we open the lid, add a little fire and fry for another three minutes. This is necessary so that the cheese dries out a little and excess moisture leaves.

    To prepare this dish for 2 servings, we need half a pink salmon carcass weighing 300-400 grams. The head and tail parts are used to make fish soup. The carcass must be washed and cut across in half. One half can be removed, and the second cut across into 4 steaks. Skin and scales may not be removed (at the discretion of the cook). Salt and pepper the steaks with black pepper. In this form, they should marinate for 10-15 minutes.

    Take one carrot and a quarter (or half) of a large onion. Vegetables should be washed and cleaned.

    We rub the carrots on a grater in the form of straws, and cut the onion into half rings.

    Pour some vegetable oil into a frying pan and heat it up. We put our cut there.

    Stirring constantly, simmer the chopped vegetables over low heat until almost cooked. Onions acquire a characteristic "carrot" shade. The vegetable base should not be overcooked.

    Directly on a pillow of fried onions and carrots, lay out our pink salmon steaks.

    Pour one glass of boiling water into the pan and add the bay leaf. We begin to stew the fish on low heat. You can cover the pan with a lid. The fish is cooked for about 10 minutes. There is no need to turn over the pieces of pink salmon. Gradually, the water boils away, and the fish comes to readiness.

    Let's prepare the gravy. In a separate bowl, mix one tablespoon of flour, a teaspoon of Achim soy sauce, two tablespoons of any ketchup and add a little water. Stir the gravy until the lumps of flour disappear. Pour the contents of the pan with the resulting watering and let it boil.

    The gravy solidifies before our eyes, taking on a jelly-like state. Remove the pan from the heat and let the dish stand for 7-8 minutes to soak the pieces of fish with the resulting gravy.

    Pink salmon stewed with vegetables in gravy is ready. Pour gravy generously onto plates. Lay two pieces of fish directly on the gravy. Boiled rice or potatoes are ideal as a side dish for this dish. We spread the slices of potatoes and slices of spicy pickled tomatoes (you can take fresh tomatoes). 2. Put a layer of pink salmon on the onion and pour 150 grams of thick sour cream diluted with 50 grams of water and seasoned with spices for fish, freshly ground black pepper and salt to taste. Simmer, uncovered, over moderate heat for about 15 minutes. Sprinkle the finished dish with chopped dill and parsley, serve with boiled potatoes.

3. To prepare pink salmon with potatoes, peel one huge fish from scales, gut, remove the tail, head and fins. Cut into portions, season with spices for fish, salt and pepper. Spread a thin layer of mustard on all sides. Lay 4 leaves of parsley on the bottom of the pan.
