How to pickle cucumber slices

Thoroughly wash the fruits and cut them into 4 parts.

We get from one cucumber - 4 particles. We put them in a convenient bowl and add 1 cup of sugar, 1 cup of sunflower oil, 100 grams of vinegar, 2 tablespoons of salt, bay leaf, ground black pepper. We take the garlic and three it on a coarse grater. Thoroughly mix everything with cucumbers and leave it like that for the whole night.

In the morning we put in jars. We stack and ram them without fanaticism, but so that more can fit.

Then, we take a saucepan and put pickled cucumbers in slices for 15-20 minutes from the moment of boiling. Roll up. This is how everything is done quickly and tasty.

With 4 kg of cucumbers, 9 half-liter cans come out.

Pickled cucumber slices according to this recipe are a very tasty snack in winter. You can eat them in winter just like that, and with fried potatoes, and with strong drinks they go perfectly. We put the banks in the cellar, but I think that they will not stay there for a long time. 🙂

Cucumbers are closed with tarragon, which gives them a special taste. This herb can be bought in the market and used in preparations.

Ingredients for 1 jar 720 ml:

  • a mixture of different peppers (whole) - 1 teaspoon,
  • bay leaf - 1-2 pcs.,
  • tarragon - 1 branch,
  • cucumbers - 2-3 pcs. depending on size,
  • sugar - 3 teaspoons,
  • salt - 1 teaspoon,
  • vinegar 9% - 1 tbsp. spoon,
  • boiling water - 500 ml.

Cooking:

Banks must first be sterilized. This can be done in any way convenient for you. Pour the marinating mixture, which includes herbs and mustard seeds, into a jar, put a bay leaf.


After that, put in a jar and tarragon.


Wash fresh cucumbers prepared for seaming under running water, remove the tails. Cut them into pieces as you like. Add cucumbers to the jar.


Pour the required amount of granulated sugar and coarse salt.


Boil water and pour it into a jar. Pour in the vinegar at the end. Cover the jar with a lid and place in a pot of boiling water to sterilize. Do not forget to put a cloth or towel on the bottom of the pan and only after that put a jar of preservation there.


Sterilize 20 minutes. After that, take out the jar and tighten the lid well. Turn it over and leave it to infuse until it cools down. Then put it in the pantry until winter.


Pickled sliced ​​cucumber halves for the winter


If you want to cook fragrant crispy cucumbers in jars, then this 1 liter recipe will be just right. Thanks to the large number of herbs and greens, everything is very fragrant. Cucumbers pickled in halves are good to serve at the table in winter, when there are practically no fresh vegetables or their quality leaves much to be desired. The recipe is simple in that it includes a minimum of ingredients. The main focus is on vegetables and herbs.

Ingredients for 1 liter jar:

  • dill seeds - 1 sprig,
  • tarragon - 2 branches,
  • bay leaf - 1 pc.,
  • whole pepper (mixture) - 1 teaspoon,
  • sugar - 3 teaspoons,

Cooking:

First of all, you need to sterilize all the jars so that the cucumbers are well preserved until winter and do not explode. In a clean, sterilized jar, place dried garlic seeds, tarragon sprigs, and cherry or other tree leaves.


Wash small fresh cucumbers, remove stems and cut in half lengthwise. Carefully place the halves in the jars.


Add a mixture of various peppers and bay leaves for aroma and taste.


In order for cucumbers to be better preserved until the very winter and have a pleasant taste, add granulated sugar. Then add coarse table salt.


Put a few cloves of dried or fresh garlic. You can also add some dried vegetables.


Place chopped onion on top.


Pour boiling water over and add vinegar.


Now you need to sterilize the jars. This can be done in a large saucepan with a towel on the bottom. Place jars there and boil for 20-30 minutes. Water should cover half of the jar. When the right time has passed, remove the jars from the pan and screw on the lids.


Cucumbers cut into quarters for the winter with onions


Cucumbers, with sweet peppers and onions can be easily made at home. It will take a little time, but in winter it will be nice to open a jar to the table.

Ingredients:

  • dill - 1-2 sprigs,
  • parsley - 1-2 sprigs,
  • green onions - 2 pcs.,
  • bay leaf - 1-2 pcs.,
  • granulated sugar - 3 teaspoons,
  • coarse salt - 1 teaspoon,
  • pickling mixture (mustard, herbs) - 1 teaspoon,
  • dill seeds (dried) - 1 sprig,
  • onions - ¼ pcs.,
  • sweet pepper - ¼ pcs.,
  • fresh cucumbers - 3-5 pcs. depending on size,
  • boiling water - 0.5 liters,
  • vinegar 9% - 2 teaspoons.

Cooking:

First you need to pre-sterilize the jars in any way convenient for you. Put any greens that you have in a sterilized jar. It can be dill, parsley, green onions, basil.


Add bay leaf. For an average jar, a few leaves are enough.


To preserve vegetables for a long time, add sugar and coarse table salt.


Now add special spices for canning cucumbers. You can collect such a mixture yourself: mustard seeds, various herbs.


If you have, then add a sprig of dill seeds.


Peel the onion, cut into half rings and add to the jar.


Cut some sweet pepper into strips and add to the jar.


Wash the cucumbers, cut off the tails, cut them into 4 parts. Add along to the jar. You can also put halves on top.


Pour boiling water over and add vinegar to the jar. Put the lid on top, but do not screw it on.

Mustard seeds give vegetables a delicate, spicy flavor. In crushed form, they are used as a natural preservative. Rolls are perfectly stored, cucumbers retain their crispy properties.

Ingredients:

  • 2 kilograms of cucumbers,
  • 50 grams of table salt,

Cooking:

Peel the garlic and chop very finely. Place cucumber wheels in a convenient container, add chopped garlic mass, add ordinary coarse salt and sugar. Add mustard powder, ground pepper, pour in odorless sunflower oil and vinegar.

  • cucumbers;

Cooking:

1. Wash and soak the cucumbers in salted cold water for 2-5 hours.


2. Wash jars and lids with baking soda. As well as spices: leaves of laurel, horseradish, currant or cherry; and dill.

Currant or cherry leaves are required (or you can take oak and cherry leaves), and horseradish (or horseradish root).

3. Put spices in prepared jars: all leaves, garlic, pepper, dill umbrellas.


4. Take out the ready-made washed and standing cucumbers and cut off their bottoms.


5. Place large cucumbers on the bottom and small cucumbers on top neatly in a jar so that the distance between them is minimal.


6. Pour preferably clean (without chlorine) water into a saucepan and boil. As soon as the water boils, carefully pour into the jars in portions, trying to pour into the center so that the jar does not burst. Cover with lids and let warm. And put the second portion of water to boil in a saucepan.


7. As soon as the water begins to boil on the stove, drain the water from the cans into another pan. And repeat the process of pouring boiling water a second time (this time you can safely pour, as the jars and cucumbers have already warmed up). Then cover again and wrap until the third boil of water.


8. Before the water boils 3 times, drain the water from the cans. Then put salt, sugar and vinegar in them directly on the cucumbers. Then quickly pour boiling water to the very top (3 times the water should boil). Even if the water spills a little, so that there is definitely no air left in the jar.


9. Then dip the lid into boiling water, remove and close the jar. Take it to a prepared warm dark room, turning it up and down on the go so that the salt and sugar dissolve, put the lid down until it cools. Then take it to the cellar for storage.


Crispy pickled cucumbers without vinegar with citric acid

Many people try to use as little or no vinegar in their dishes as possible. In the preservation or pickling of cucumbers, vinegar can be replaced with citric acid, it turns out very tasty.

Ingredients:

  • cucumbers;
  • currant leaf - 1 pc.;
  • cherry leaf - 2 pcs.;
  • bay leaf - 1 pc.;
  • 1-2 umbrellas of dill;
  • 2 cloves of garlic;
  • capsicum hot pepper
  • black peppercorns - 8 pcs.;
  • sweet peas - 2 pcs.;
  • citric acid - 1 partial tsp
  • salt - 2 tablespoons;
  • sugar - 2 tablespoons;

Cooking:

1. Put in clean sterilized jars: dill; cherry leaves, currants; a small piece of red pepper; 2 cloves of garlic; Bay leaf; black and allspice peas.


2. Fill jars with cucumbers. And then gently pour boiling water in the center. Cover with lids, after dousing them with boiling water. Leave for 10 minutes.


3. Drain the water from the jars into the sink. And 2 times pour boiling water. Close the lids and leave again for 10 minutes.

From the 2nd drained water we will prepare the marinade.

4. Pour the water from the jars into the pot. Add 2 tablespoons to it. salt and sugar. And put it on the stove until it boils.


5. Pour an incomplete teaspoon of citric acid into the jar. And pour hot marinade from the pan. Cover with a lid and roll well.


6. Take and shake to better dissolve the citric acid; turn over and place lid down. Cover with a towel until cool, and then put in a dark place (for example, in a cellar) for storage.


Pickled cucumbers with lemon for the winter

5. Fill the jars with boiled water and leave for 10 minutes under the lid. And we put clean water to boil again (as much as it took and was used in the first pour).


6. Once 10 minutes have passed, drain the water from the jars into the sink.


7. Now add spices to them: black pepper and allspice, 2 tbsp. salt, sugar, citric acid on the tip of a knife and 2 aspirin tablets.


8. Fill the jars with new boiled water and roll up. Turn over and wrap as usual.
