How to make pp candies. Dietary sweets: recipes at home

06.02.2024 Restaurant notes

Raffaello candies are amazingly tasty and also amazingly high in calories. The combination of creaminess and coconut is delicious! Due to the excess harmful ingredients (for example, sugar), I do not buy these candies, but make healthy Raffaello candies at home.

There are many options for preparing coconut delicacy, this recipe is the fastest and easiest. I won’t lie – they taste a little like the original, but they are also tasty and have the same obvious coconut in both taste and smell.

So, let’s prepare healthy curd coconut candies like “Raffaello”!

Ingredients

  • Cottage cheese in briquettes, dense (low-fat) – 220 g;
  • Grated coconut pulp (fresh) – 3.5 tbsp;
  • Vanillin – 1 g;
  • Sweetener.

Making candy

  1. First you need to prepare the cottage cheese. If the consistency is very thick and there is almost no serum, then you can skip the first step. We need to get rid of the whey in the curd and make it as dry as possible so that the curd mass can then be easily formed into balls. I place the cottage cheese in cheesecloth and under a press (like cottage cheese Easter is made). After 2 hours, the excess serum will drain or simply be absorbed into the fabric. The cottage cheese will be even denser, like plasticine.
  2. Break the coconut and extract the pulp. Three on a fine grater. In this case I used about 3.5 spoons. But if you take more, it will also be delicious. Calorie content will, of course, increase.
  3. Now mix the coconut pulp with vanillin, a sweetener(I have it in tablets, I just crushed it) and cottage cheese. The whole mass must be mixed thoroughly. It will be plastic, homogeneous and smelling delicious.
  4. Form small balls and place on a beautiful plate. Invite the family over for tea and enjoy!

Answer to the question: “Is it possible to use coconut flakes rather than fresh pulp?” Of course it is possible. However, the coconut flavor will not be as pronounced. After all, fresh coconut gives not only a pleasant taste, but also a strong smell. Moreover, over time, the candies will be saturated with the aroma and oils of coconut pulp and will become tastier. Shavings will not give such an effect.

  • You can also roll the balls in dry coconut or cocoa. At that time I had neither one nor the other. However, the candies disappeared very quickly, no one complained, smacking them on both cheeks.
  • I advise you to keep the sweets in the refrigerator for 1 hour before drinking tea. Coconut oil will saturate the cottage cheese, and the candies will be tastier, richer, and “coconutier.” And they will fix their shape.
  • You can also place a nut or raisin inside the candy.
  • I sprinkle the candies with a little dried mint (barely) or cinnamon.

For example, an apple contains only 77 calories, but it contains so many useful minerals and trace elements. Another fruit is banana. Although it is not the lowest in calories, it is also allowed for consumption. Banana satisfies hunger, saturates with potassium and fiber, which cleanses the intestines. Video Diet candy | Quick and easy recipe

Proper nutrition is not a system of strict restrictions and prohibitions, and therefore it is possible and even necessary to eat sweets. If you are watching your daily diet and do not want to overeat, then it is best to give preference to lower-calorie desserts and sweets. Of course, you will have to give up desserts with whipped cream, cakes with rich creams and other empty and completely useless calories, but you still have many other dietary sweets. In addition, there are a lot of healthy desserts that are low in calories, thanks to the right ingredients. What sweets are available at pp? Let's figure it out.

What sweets can you eat while losing weight?

  1. Bitter dark chocolate. Despite the fact that the calorie content of dark chocolate is about 550 calories per 100 grams, nutritionists advise including this dessert in your healthy diet. This chocolate is rich in nutrients and perfectly improves your mood. However, don’t think that you can eat a whole bar of this dessert. 10-15 grams of chocolate will be enough to get your portion of “healthy sugar” and satisfy your hunger for sweets.
  2. Marshmallow. What sweets can you eat at PP? Of course, marshmallows. This light and relatively low-calorie dessert is a real salvation for those with a sweet tooth. 100 grams of marshmallows contain about 300 calories. But one marshmallow weighs only 30 grams, so you can always treat yourself to your favorite dessert without harming your figure!
  3. Marmalade. 100 grams of this dessert contains about 320 calories, but marmalade, thanks to pectin, contains a lot of useful substances. If you have a choice between chocolates and marmalade, be sure to choose the latter! And there are half as many calories and more benefits!
  4. Paste. Marshmallow can also be considered one of the sweets. 100 grams of this product contains about 300 calories. The marshmallow is based on fruit and berry puree, so you can safely eat 30-50 grams of marshmallow per day.
  5. Meringue. This light and airy dessert contains about 270-300 calories per 100 grams. There are only 10 grams in one meringue, so you can safely treat yourself to a couple of meringues.
  6. Ice cream. 100 grams of regular creamy ice cream contains about 200-220 calories. Depending on various additives, the calorie content of this dessert may vary. Popsicles contain only 120-140 calories, while frozen fruit juice contains between 70 and 90 calories.
  7. Fruit mousse. Another great light dessert that contains about 150 -200 calories per 100 grams. Preference, of course, is better to give fruit and berry mousses rather than chocolate and creamy ones.
  8. Fruit pudding. On average, 100 grams of pudding contains about 150-200 calories. Choose puddings with fruit, their calorie content is much lower.
  9. Souffle. Don't forget about another dessert that you can include in your healthy nutrition menu. There are about 170-220 calories per 100 grams of soufflé. Choose fruit or berry soufflé, it contains fewer calories.
  10. Jelly. Another great option if you are eating healthy. 100 grams of ready-made jelly contains only 60-70 calories.

How to replace sweets when losing weight

If you are determined to lose weight and want to significantly reduce the calorie content of your food intake, and are also ready to give up regular sweets, then we can offer you a lot of healthy and tasty ideas.

  1. Dried fruits. Make it a habit to eat two dates with your tea or coffee instead of two sweets. This fruit is famous not only for its beneficial substances, but also for its rather sweet taste, which can satisfy the wishes of even the most avid sweet lover. Two dates contain only about 50 calories. Great substitute for sweets! In addition to dates, do not forget about prunes, dried apricots, figs, raisins and dried bananas.
  2. Fruits. The sweetest fruits that can replace sweets are banana, grapes and peach. These fruits are rich in fructose and sucrose and are ideal as a dietary dessert. In summer, a great substitute for sweets is melon and watermelon!
  3. Baked apples or pears. The best dietary sweets for tea are baked apples or pears. This low-calorie dessert is a great alternative to cakes and candy, with only about 50 calories! For sweetness, use cinnamon or a little honey! And if you add a little low-fat cottage cheese to the apples, then our dietary dessert can turn into a real dinner.
  4. Natural yogurt with cinnamon and fruit. Craving a creamy dessert? Replace it with natural yogurt with fruits or berries. For sweetness, you can add a little honey or cinnamon. And if you freeze yogurt with fruit, you get diet ice cream!
  5. Natural cocoa. If you really want a chocolate dessert, you can replace it with a cup of cocoa. Only here we are talking about natural cocoa without added sugar and other ingredients. To prepare healthy sweets, a wide variety of ingredients are used: dried fruits, dried fruits, nuts, seeds, candied fruits, honey. The recipe provides enormous possibilities for imagination.

Several variants:

  • figs, dried apricots, peanuts;
  • prunes, sunflower seeds, candied papaya and mango;

  • dried apricots, prunes, hazelnuts;
  • dried orange, almonds, dogwood.

  • For a harmonious taste, one of the ingredients should be slightly sour: dried apples, cherries or cranberries, etc. Citruses can be added dried or fresh, along with the peel.
  • Nuts and seeds must be dried in the oven or in a frying pan. There is no need to fry, just heat until the first smell and cool.

It is better to buy walnuts in shell and shell them before cooking, as they quickly oxidize when exposed to light and begin to taste bitter.

  • Soak very hard or overdried dried fruits in warm water, drain it and dry the products on a towel.
  • All components are ground in a meat grinder or blender into a dense, sticky mass.
  • You need to try the preparation to check how harmonious the mixture is. The taste can always be balanced by adding a pinch of salt to a fatty paste, lemon juice to a cloying one, honey to a thick paste, and so on.
  • With slightly moistened hands, the resulting paste is used to form candies in the shape of a truffle or a ball.
  • The candies are rolled in poppy seeds, cocoa, sesame seeds, ground nuts or coconut flakes so that they do not stick together and do not get your hands dirty. In addition, after decoration, the dessert takes on a more attractive appearance.

Successful companion ingredients:

  • banana (dried or fresh), added 1:1;
  • sunflower seed;
  • peanut;
  • orange and almond.

Homemade sweets with dates will be very sticky. It is better to roll them in chopped nuts, sesame seeds or coconut flakes. Cooking with honey

Honey not only adds sweetness and flavor to candies, but also serves as a binding agent in recipes containing lots of nuts and seeds.

If you are allergic to honey, you can soften the consistency of the paste with maple or rosehip syrup instead of liquid honey.

It is easy to thicken a mixture that is too soft by adding any dried fruits or nuts if the honey is not thick enough.

Example recipe with honey:

  • walnuts – 150 g;
  • coconut flakes – 50 g;
  • dates – 50 g;
  • thick honey – 100 g;
  • cocoa powder – 50 g;
  • salt – 5 g.

For decoration, it is better to use coconut shavings.

PP candies made from dried fruits and nuts

Adherents of proper nutrition will prefer to make natural sweets less sweet and fatty. To do this, a neutral-tasting binder rich in protein and amino acids – boiled chickpeas – is added to the mixture. This is a variety of peas, popular in the East and already appreciated in our cuisine.

For 250 g of boiled chickpeas:

  • peanuts - 50 g;
  • hazelnuts – 100 g;
  • dark chocolate – 200 g;
  • vanilla extract.

It is suggested to use powdered stevia as a sweetener in this recipe. This is another healthy product, with almost zero calories and a rich phytochemical composition.

With oatmeal

Oddly enough, one of the most delicate and delicious types of candies is made from simple oatmeal. It doesn't even need to be boiled.

For 200 g of dry Hercules:

  • 200 g walnuts;
  • 200 g of any sweet dried fruits: raisins, dates, dried apricots;
  • 100 g honey;
  • 10 g cinnamon;
  • 30 g odorless vegetable oil.

You can use a little more cinnamon for decoration.

  1. Grind the oatmeal into coarse flour.
  2. Mix the rest of the ingredients with a blender and mix the mixture thoroughly.
  3. Form candies and roll them in cinnamon.

As an option, you can make rectangular sweets: smooth the sweet mass on the bottom of a greased mold, cool in the freezer and cut into portioned diamonds.

Recipe for children

Sweets with cottage cheese are soft, not at all cloying, and inside there is a pleasant surprise - a whole nut or grape. This is the perfect treat for little ones with a sweet tooth.

You will need:

  • 100 g cottage cheese;
  • 50 g walnuts;
  • 100 g prunes;
  • 100 g figs;
  • 100 g raisins;
  • half a lemon with peel.

In addition, you need to prepare whole roasted nuts or seedless grapes according to the amount of candy.

  1. All components, except cottage cheese, are crushed and combined into a thick sticky mass. Wide cakes are molded from it, 1.5 times wider in size than candy.
  2. The cottage cheese should also be thick and sticky; if it is too dry, you can add a little yogurt or a fresh banana.
  3. Using two teaspoons, form a ball of cottage cheese.
  4. Press the nut inside.
  5. Place the curd filling on a dried fruit cake, carefully roll it up and form into a ball.
  6. Roll in sesame seeds, ground corn flakes or cocoa.
  7. Refrigerate until completely set and serve. It is not recommended to store sweets with cottage cheese.

Useful properties and contraindications of dessert

A lot of scientific and popular literature has been written about the benefits of dried fruits and nuts. There is no point in analyzing in detail the content of vitamins, healthy fats and acids in a culinary article, especially since the content of one or another product in each candy is not high.

However, what comes to mind is the vitamin paste of Academician Amosov, developed by him for the recovery of patients in the postoperative period. It is still used in this capacity, and is also recommended for healthy people to maintain immunity.

Compound:

  • black and white raisins;
  • dried apricots;
  • figs;
  • prunes;
  • walnuts;
  • natural honey;
  • lemon with peel.

All ingredients are taken in 1:1 proportions (one fresh lemon per three kilograms of paste), crushed and used daily, one spoon three times a day before meals. By the way, you can also form round candies from it.

This nut-fruit mixture activates general and local immunity, has an antioxidant effect, restores the nervous and digestive systems, and has a beneficial effect on the functioning of the heart and other organs.

Despite the fact that the fruits are used in dried and dried form, they still contain enough useful substances to create a therapeutic effect when used regularly.

Another undoubted advantage of natural sweets is the absence of flavor enhancers and other food chemicals. There will never be a euphoric desire to eat a kilogram of such sweets at once; even the biggest sweet tooth will be able to control themselves.

Despite all the positive qualities, sweets made from dried fruits and nuts have a number of contraindications for use:

  • The calorie content of one candy, on average, is more than 30 kcal, so people suffering from excess weight should eat this dessert, like any other, in limited quantities.
  • High glucose levels can be dangerous for people with diabetes.
  • Nuts, dried fruits and honey can be strong allergens, so allergy sufferers, pregnant women, nursing mothers and children under three years of age can eat these products within a reasonable daily allowance.
  • The most serious contraindication relates to various diseases of the digestive system: various ulcers, gastritis, cholelithiasis and urolithiasis.

It remains to add that the process of making homemade sweets itself brings a lot of pleasure. It can become a wonderful pre-holiday tradition or a fun attraction for a family, children's or adult party.
