Quick whey cookies without eggs

Ingredients:

  • wheat flour – 2-2.5 cups;
  • medium-sized lemon – 0.5 pcs.;
  • – 100 ml;
  • sunflower oil, always refined – 100 ml;
  • sugar – 150 g;
  • soda – 0.5 teaspoon;
  • vegetable oil - for greasing the baking sheet.

Preparation

Pour the whey into a deep bowl. Add soda, vegetable oil, the zest of half a lemon and little by little add a mixture of sifted flour and granulated sugar, knead a fairly thick dough. Line a baking sheet with parchment paper and coat with vegetable oil. Using a teaspoon, add a little of the prepared dough and form cookies, which are then placed in an oven preheated to 180 degrees and baked until cooked and golden brown.

If desired, you can add any chopped nuts, raisins or dried fruits to the dough, after finely chopping them.

Ingredients:

  • wheat flour – 2 cups;
  • whey – 0.5 cups;
  • vegetable oil – 0.5 cups;

Preparation

I had whey left over from making cream cheese, so I needed to use it up. So I decided to try making economical cookies. With extensive life experience, I know food combinations and decided to experiment.
So, I named my future product simply: “Cookies with whey.”
Wheat flour (of course you’re supposed to sift it, but I don’t) pour it into a bowl

add granulated sugar

and baking soda.

I mix all the ingredients.

There is no need to quench the soda, because whey will then perform this role.
I add vanilla

Here I already decided to save money again, so I added vegetable oil.
I mix everything thoroughly and get an elastic dough.

I put it on a surface sprinkled with flour and press it with my hands, making a layer about 1-1.5 cm thick and start cutting out the cookies (today I used a regular tea cup).

The future livers are already turning out to be large and plump, so I pierce them with a fork for better baking.

I place the cookie dough on a baking sheet. I’m used to brushing everything I bake with plain water with a brush (it removes unnecessary flour and later adds a rosy color).

I place the baking sheet in an oven preheated to 180-190 degrees.
After 10-15 minutes, when the color appears, I take out the cookies. It jumps out of the baking sheet very quickly (I didn’t sprinkle or cover it with anything).

Such a large, simple-shaped cookie may look a bit rough, but to my surprise, it tastes like it melts in your mouth.
This is how you can prepare a delicious product from the simplest cheap products that goes perfectly with coffee, tea, and milk.
And, mind you, there is no margarine, no butter, no eggs.

Homemade cookies made with whey (store-bought or leftover from cottage cheese) resemble weightless crackers with a layered structure. In my recipe - only with sea salt, but flavoring with dried herbs and ground pepper is possible. It is delicious served with puree soups, broth, other first courses, salads and appetizers, replacing bread products, and as a snack with sweet tea.

Let's prepare the products according to the list - there are only four of them: wheat flour, salt, whey and refined oil of any kind.

Mix flour, vegetable oil and whey at room temperature, throw in a large pinch of sea salt.

Knead a soft, slightly sticky dough - add flour if necessary.

Roll out a layer about 3 mm thick, cut out small cookies (for example, 2x2 cm), place the blanks on a baking sheet with oiled parchment. Sprinkle some with water and sprinkle with additional salt crystals. Place the whey cookies in a hot oven and bake for about 15 minutes at 200 degrees.
