  • For dumplings, it is better to use fresh raspberries. If you fill them with frozen berries containing a lot of juice, the dough will become soggy and the dumplings will burst.

In this case, it is important to ensure that the dumplings do not stick together. To do this, you need a large and wide pan in which the products will not be cramped. You need to put the dumplings into the water one at a time and only after it boils. The products should be removed with a slotted spoon within a couple of minutes after they rise to the surface. You need to understand that as a result of long cooking, the integrity of the products may be compromised, causing the filling to fall out.
  • The dough will be more tender if the flour is sifted before use. And vegetable oil will give it elasticity - it can be added in small quantities, even if it is not indicated in the recipe.
  • The finished dumplings are immediately greased with butter or rolled in sour cream. This is done in order to prevent them from sticking together.

Dumplings with raspberries are served with powdered sugar, syrup, and whipped cream. Somewhat less often, they are supplemented with yogurt or sour cream, although dumplings always go well with fermented milk products.

  • raspberries – 150 g;
  • flour – 0.25-0.3 kg;
  • milk – 0.2 l;
  • chicken egg – 1 pc.;
  • salt - a pinch;
  • vegetable oil – 10 ml;
  • sugar - to taste.

Cooking method:

  • Sort through the raspberries, rinse them and scatter them on a towel to dry quickly.
  • Sift the flour and mix with salt.
  • Make a well in the flour and crack the egg into it.
  • Pour in the milk and stir the dough with a spoon.
  • Add the oil, stir a little more with a spoon, and then knead the dough with your hands until ready. To prevent the dough from sticking to your hands, you need to dust them with flour or moisten them with vegetable oil.
  • Roll the finished dough into a ball, wrap in cling film and set aside for half an hour. This must be done, otherwise the dough may turn out to be tough.
  • After the specified time has passed, roll out the dough into a layer about 2.5-3 mm thick. If you make it thinner, it may break through when boiling the dumplings.
  • Using the neck of the cup, cut out circles from the dough. Their optimal size is 7-8 cm, but a deviation of 1.5-2 cm in any direction is acceptable.
  • Place a few berries in the center of each circle and sprinkle them with a little sugar. Lift the edges of each circle and mold them together to form semicircles. The edges of the dough must be glued carefully so that they do not fall apart during boiling. The dough will hold together better if its edges are brushed with egg white.
  • Connect the dough scraps together, knead a little and roll into a new layer. Cut out the same circles from it, fill it, mold it.
  • Boil water in a wide saucepan, lightly salt it - despite the fact that dumplings with raspberries are a sweet dish, they turn out tastier if boiled in salted water.
  • Drop the dumplings one at a time into the boiling water and wait for them to float.
  • Remove the dumplings with a slotted spoon and place on a plate.

Grease the dumplings with butter and sprinkle with powdered sugar or syrup when serving.

Dumplings with raspberries on kefir

  • kefir – 0.5 l;
  • raspberries – 0.25 kg;
  • flour - how much kefir will take (about 0.5 kg);
  • soda – 5 g;
  • chicken egg – 1 pc.;
  • salt – 2-3 g;
  • sugar - to taste.

Cooking method:

  • Remove the kefir from the refrigerator in advance so that it warms up to room temperature, or warm it slightly in a water bath.
  • Pour salt and soda into a bowl with kefir and stir. Let stand warm for 10 minutes.
  • Break the egg into the kefir and beat with a whisk.
  • Add flour in small portions and knead the dough. First you will have to stir with a spoon, then you will need to knead the dough with your hands. This will take about 20 minutes. The finished dough should be soft but elastic. It shouldn't stick to your hands.
  • Cover the dough with a bowl and let it rest for at least 20 minutes.
  • During this time, prepare the raspberries by sorting, washing and drying.
  • Roll the dough into a sausage, cut a piece and flatten it with the palm of your hand to form a flat cake.
  • Place a few berries on the flatbread and seal the edges.
  • Place the dumplings on a greased multicooker rack. Pour some water into the multicooker bowl. Cook for 10 minutes in steam mode.

Serve the finished dumplings with sour cream or yogurt. You can use sweet yogurt with berry filling.

Dumplings with raspberries and vanilla cream

  • water – 0.25 l;
  • flour – 0.35 kg;
  • chicken egg – 2 pcs.;
  • starch – 10 g;
  • milk – 0.25 l;
  • sugar – 80 g;
  • raspberries – 150 g;
  • vanillin - on the tip of a knife;
  • sour cream – 50 ml;
  • vegetable oil – 50 ml.

Cooking method:

  • Mix 50 ml of milk with starch and a whisked egg.
  • Mix the rest of the milk with sugar and heat in a water bath.
  • Pour the mixture of milk, eggs and starch into the hot milk, whisking the mixture.
  • Cook until the cream thickens. A minute before, add vanilla.
  • After the cream has cooled slightly, put it in the refrigerator for several hours. It is best to prepare this filling component the evening before.
  • Sift the flour, mix it with a pinch of salt.
  • Boil water, mix boiling water with butter and pour into flour. Knead the dough.
  • Cover the dough with cellophane and set it aside for half an hour.
  • Roll out the rested dough into a thin layer. Cut mugs from it with a cup or mold.
  • Place half a teaspoon of cream and two berries on each circle. Form dumplings.
  • Boil the dumplings by steaming or in boiling water.

An ideal addition to these dumplings would be raspberry syrup. You can serve the dish with yogurt or condensed milk.

  • premium wheat flour – 2-3 cups;
  • egg – 1 pc.;
  • milk – 1 glass;
  • warm water – 1/3 cup;
  • vegetable oil – 1 tsp;
  • salt – 1 tsp. (without slide);
  • fresh raspberries – 400-450 g;
  • sugar – 1 glass.

Preparation:

  1. Milk must be diluted with water, add salt, egg and vegetable oil. Whisk this mixture a little until smooth. Then gradually add wheat flour and knead into a tight dough. Leave it for half an hour.
  2. While the dough is resting, let's make the filling. Gently rinse the raspberries in a colander. Transfer to a convenient bowl, stir with sugar and let the juice stand out.
