1. Take a bowl, put in soybeans and cover with water.
2. Soak for 8-24 hours. Do not keep it for more than 24 hours. Otherwise, the fermentation process starts.
3. Heat the oven to 190 degrees.
4. Drain the soy water.
5. Take two sheets or glass baking bowls. Since you will be stirring the soybeans, it is best to have walls on the baking sheet. Arrange the soybeans so that the beans are not stacked on top of each other. 6. Put on for 15 minutes. Watch how the soybeans dry.
7. After 15 minutes, most of the water should have evaporated. Add vegetable oil and salt to taste.
8. Cook for another 10-20 minutes. Stay close to the oven. It is very important to check and stir the soy nuts every five minutes. If you have soaked the nuts for 24 hours, you may need 20 minutes to completely dry the nuts. In other cases, it will likely take less time.

SOY - What is it eaten with?

Soy milk is made from soybeans cooked and mashed. It looks very much like cow's milk, it tastes less expressive. Depending on the additives, it can be sweet, salty, vanilla, chocolate, etc., it is often additionally enriched with calcium and vitamins. Used for making cocktails, added to soups, porridge, muesli and other dishes. On the basis of soy milk and a special ferment, yoghurts and fermented milk drinks are prepared.

Yubu is the foam that forms on the surface of soy milk. We do not like ordinary milk froth and get rid of it in every possible way, but the yuba is carefully dried, rolled into rolls, and soaked before use. It is from it, by the way, that the so-called Korean asparagus is made, which is sold in the departments with oriental salads and snacks.

Tofu is a bean curd, sometimes also called cheese. Low-fat and light, it is made from soy milk, sometimes flavored with herbs, algae, spices. It can be of different consistencies - from soft creamy to hard, dry and porous. An almost universal ingredient - it is found in soups, and in vegetable dishes, and in desserts, it is fried in batter, boiled, stuffed and baked.

Miso is a paste made from fermented soybeans. Used to make the traditional miso soup, it can also be used as a dressing for salads and other vegetable dishes.

Soy sauce is the most popular soy product in our stores. The correct and expensive option is prepared from six months to two years from fermented soybeans, toasted wheat, water and salt, a cheap analogue - in a day from water, salt, soy flour and dye. It is used as a condiment or marinade.

Soybean oil is a vegetable oil made from soybeans, used for frying and dressing salads.

Soy flour - crushed soybeans. Desserts and muesli are prepared from it, added to the first and second courses.

Soy meat is small, dry and light yellowish brown chunks. To obtain them, soybeans are ground into flour, which is defatted and, in the process of special processing, converted into a light porous mass. Before cooking, "meat" is soaked in water or broth. All sorts of analogs of meat dishes are made from it - goulash, cutlets, steaks and meatballs. This "meat" contains up to 70% protein.

In addition to such fully-fledged soy products, you can find soy sausages and sausages, mayonnaise and sweet bars, dry cream in the healthy food departments. These products can hardly be called useful - in addition to soy, they usually contain fat, flavors, food additives and dyes. For example, powdered soy cream, according to the label, is made from corn syrup, soybean oil, sodium caseinate, dipotassium phosphate, mono- and diglycerides, silicon dioxide, color and flavor.

Homemade pate

Dry soybeans must be cooked for a long time - first, the grains are soaked overnight, then washed and boiled for at least 2-3 hours. After that, you can make any dish out of the beans. For example, pate. To prepare it, grind the boiled soybeans in a blender along with nuts (peanuts or walnuts), parsley, basil, salt and pepper. Instead of kernels, you can take fried eggplant, mushrooms, olives - which ingredient you make the main one, you will get such a paste. At the end, add sour cream or cream to the mass.

Tofu dishes

Soy tofu cheese is marinated with dill, in infusion of garlic and wild garlic, in sweet fruit broth, in vodka, beer, vinegar. You can eat it raw, fry it, put it in different dishes. For example, make a delicious and light salad - cut 200 g of tofu into cubes, add 100 g of peeled boiled shrimp, two finely chopped apples and a handful of any chopped nuts. All salt, pepper and season with vegetable oil, sour cream or mayonnaise.

Tofu makes great soups. To prepare the first course, put a handful of any fresh mushrooms, diced one large potato, a carrot in the form of strips, 1/2 teaspoon grated ginger root, 1 teaspoon sugar and 100 g diced tofu in boiling water. Soy stew
If you are fasting or a vegetarian, you can use soy meat instead of pork or beef. To prepare the stew, soak the pieces of dry product for half an hour in warm salted water. Milk
It is made from steamed soybeans. It tastes like a cow, but a little sweeter. In terms of nutritional value, it is not inferior to natural and is absorbed much easier, therefore it is recommended for children and adults if they have problems with digestion or lactose intolerance.

Tofu
This is the name of soy protein cheese. Tofu is usually sold in plastic bags. When buying, check the expiration date and pay attention to the fact that the cheese is in a small amount of liquid, which protects it from drying out.

desserts
Since soy can absorb all tastes and smells, you can even make desserts from it. For example, ice cream, yoghurts, bars, chocolates. Unlike dairy or cream sweets, soy desserts are low in calories and lean.

Vegetable oil
It is obtained by pressing soybeans. The quality oil has a bright amber color and a pleasant nutty taste. It is usually clear, but if cold pressed it may have a little sediment on the bottom of the bottle. They fry in soybean oil, season salads with it, add to baked goods and other dishes.

Soy meat
It is produced industrially from soy flour. In stores, they are sold dried. Therefore, before cooking, small pieces are soaked in water so that they take the original shape of a steak, goulash or chops. When choosing soy meat, see if it has crumbled.

Sauce
Soy sauce is made by the natural fermentation of steamed soybeans and roasted milled wheat, a process that takes almost six months. To buy a natural product and not a chemical surrogate, read its composition. There are only 4 ingredients on the label: soybeans, wheat, water and salt. If you find other ingredients, and even more so dyes, flavor enhancers, preservatives and flavors, you should know that chemistry is in front of you.

Soy pate
Pass the boiled soy through a food processor or meat grinder, while you can add any nuts. Add salt, spices, herbs to the resulting mass, mix everything. To make the pate more tender, you can add a little soy milk to it.

Soy cutlets
Add onion, salt, spices, garlic and a little semolina or mashed potatoes to the soy mass, prepared as for a pate, mix everything. Bake the cutlets in the oven on a baking sheet sprinkled with rye flour or lightly greased with vegetable oil.

Soy milk
Pass three glasses of beans soaked overnight through a food processor or meat grinder several times. Pour 6 liters of cold boiled water over the mass, stir and bring to a boil. Cook for 5-6 minutes over low heat, then strain through cheesecloth. The milk is ready.

Tofu cheese
Squeeze lemon into a container with soy milk. The milk is curdled. Let stand for 10-15 minutes under the lid, then put the resulting soy flakes in a colander lined with a piece of gauze and press down with a load. An hour later, together with cheesecloth, carefully, so as not to break, transfer to a bowl with cold water. The cheese will be ready within an hour.
You can store tofu cheese for 1 week in the refrigerator, in cold water, which must be changed every day.

Soy sour cream
Squeeze a small lemon into 2 liters of soy milk. Sour cream is formed from milk, from which whey rebounds. Remove the sour cream with a spoon and put it in the refrigerator, and you can knead the dough for pies and pancakes on soy whey.

Soy meat
It is sold as a dry semi-finished product. It is soaked in salted hot water. When the water is absorbed, the meat must be fried in a Teflon pan until golden brown. Then add grated carrots and onions, a little water and simmer until vegetables are tender. Add soy sour cream and herbs before serving. You can stew meat with peppers and tomatoes.

Soy pancakes
Mix 1 cup of soy flour, 1 cup of wheat flour, chopped additive (apples or pumpkin, squash, squash, sweet pepper), a little ginger or other spices to taste, 1 teaspoon of baking powder. Knead with the addition of water so as to obtain a dough with the consistency of thick sour cream. Fry in hot fat, pouring over the dough with a spoon.

Fried soy sprouts
Pour soybeans with warm water, wash, drain the water and cover the beans with a cloth. Rinse 2 times a day with cold water. On the 5th day, the beans are ready to eat both raw and as part of various dishes.
For frying, cut soy sprouts, scald with boiling water, sprinkle with salt, sugar and fry in soybean oil until golden brown. Serve with soy sauce.

Soy cabbage soup
Pour 100 g of dry soy mince, 300 g of chopped fresh cabbage, 3-4 chopped potatoes into a saucepan with boiling water. Saute chopped carrots, parsley and celery root, onion in vegetable oil. When the potatoes are almost cooked, add the prepared vegetables and season with salt. Put greens and sour cream in the finished dish to taste.

Soy minced pasta
Cook 200 g of pasta in salted water, drain. Pour the minced soy with boiling salted water or beef bone broth. Let it brew for at least 4 hours. Then fry the minced meat in a pan.
Stew finely chopped onions in butter, add to the cooked soy mince, then salt, pepper, tomato puree and finely chopped parsley. Mix everything and combine with pasta. Sprinkle with parsley before serving.

Soy mayonnaise
Mix 2 tablespoons of soy flour, 0.5 tablespoons of mustard, 1 tablespoon of sugar, 2 tablespoons of lemon juice or apple cider vinegar, salt and pepper to taste. Beat, adding a little butter, so that the mixture does not stratify. All you need is 4 tablespoons of oil.

Soybean cakes
Beat 0.5 cups butter, add 2 cups sugar, 4 well-beaten eggs. Stir in 3 cups of soy flour, 450 g of pitted raisins, 1/2 teaspoon of baking soda and 2 teaspoons of various spices, 0.5 cups of wine.
Form cakes and bake over low heat.

Whole soybean seeds can be used for nutritional purposes. The common way to prepare soybean seeds is by frying and boiling. This method of using soy is not very common, but it is used quite often in home cooking, especially in rural areas. It is necessary to fry soybean seeds in the oven or conventional oven, sprinkling soybeans on a steel sheet or baking sheet. At the same time, they constantly monitor that the seeds do not burn. Yellow-grained soybeans quickly change color and darken when roasted. At the same time, they acquire a pleasant smell reminiscent of the smell of coffee. Depending on the purpose for which the soybeans are fried, they are given a light or dark color (depending on the processing time).
