Today I invite you to try a very tasty semolina pie for dessert - this is mannik. Delicate, crumbly, with a light vanilla aroma and a crispy crust. It is prepared simply, from readily available and very inexpensive ingredients. This recipe is classic and uses only basic ingredients. Their proportions should not be changed, since the recipe has been proven over the years and you can only ruin everything. But you can experiment with additional ingredients as you wish. For example, you can add dried fruits, raisins and nuts, or you can make chocolate manna with cocoa. What I also like about this recipe is that manna can be given to young children (from 2 years old). I won’t say that the product turns out to be very dietary, but it also doesn’t contain anything harmful. If you are preparing manna for children, you can remove the baking powder from the ingredients and halve the amount of butter - these products are not very healthy. The mannik will, of course, not be as fluffy, but for kids it’s what you need. And you can serve a simple classic manna with jam or fresh berries and fruits.
Ingredients:
1. Pour kefir into the dough bowl and add semolina. To begin with, it is better to use 1.5 cups. From my own experience, I noticed that semolina swells differently. For a glass of cereal from one manufacturer you need 1 glass of kefir, and from another you may need 1.5-2 glasses of kefir. Of course, the thickness of the kefir itself also plays a role here. Mix.
2. Leave for 5-10 minutes while we work on other ingredients. The semolina should absorb some of the liquid and our “porridge” will thicken. The step-by-step photo shows the mass as it should be: it is not liquid, but not dry either. If the porridge has thickened, but it mixes easily, that’s it, move on to the next step. If the mass turns out to be very thick, dry and dense, add a little more kefir.
3. Transfer the butter to another bowl and rub it with sugar using a fork. It is very important that the oil is at room temperature, this makes it much easier to work with.
I also want to say a little about butter. It is better to take oil that is not very fatty, about 72%, so that the manna does not turn out to be too fatty. And don’t be afraid if during the baking process you see a thin layer of oil “bubbling” on top. It will boil away, and a delicious and slightly crispy golden crust will remain on top of the manna.
4. Break eggs into a bowl with butter and sugar. Add 3 tsp. baking powder for dough, add 2 small pinches of vanillin.
5. Mix everything thoroughly with a fork.
6. Pour the egg-butter mixture into the semolina with kefir.
7. Mix with a whisk so that there are no lumps. Please note: the mass should be liquid, its consistency resembles biscuit dough.
8. Lightly grease the baking dish with vegetable oil. I use a springform pan with a diameter of 20 cm and a height of 6.5 cm. It is just perfect for the given amount of ingredients.
9. Pour the dough into the mold and place it in an oven preheated to 180 degrees for 35-45 minutes (depending on the height of the mold). The mannik rises just a little. Therefore, you don’t have to be especially afraid that he will run away from the form.
10. Take the finished manna out of the oven, let it cool a little, then remove it from the mold. Despite its delicate structure, manna springs out of shape remarkably well.

Pour the egg mixture into the semolina. Everything is carefully mixed until smooth.
Mix flour with soda and citric acid. Add all these components to the dough. Flour is necessary to ensure that the soda is evenly distributed throughout the dough.
Stir the dough until bubbles appear - kefir-soda reaction.
Line a baking pan with parchment, which is well greased with butter. Pour the dough evenly into the mold.
The manna is baked in the oven for about 20 minutes. Then reduce the degrees to 175°C and continue baking for another 20-30 minutes.
Transfer the cooled manna to a plate and serve.

Recently it has become fashionable to argue that all generations of Soviet children who grew up on semolina porridge grew up incorrectly. Is it really an “empty” cereal that brings nothing good to those who love it? It is customary to grumble about its high calorie content, a huge amount of gluten, which is unloved by everyone, and “extra” phosphorus compounds.
However, there are also advantages. In addition to the invaluable benefits in the form of the special nutritional value of semolina, there are other points that are worth mentioning. Firstly, one cannot ignore the fact that this cereal cleanses the intestines quite well, “working” as an absorbent and sandpaper at the same time. Secondly, you should love it for its phytin - a substance that normalizes the functioning of the stomach and improves the digestion process. According to recent studies, phytin also prevents the appearance of cancer cells in the human body. Thirdly, the presence of vitamins and minerals is also important - even if there are not many of them compared to other cereals, they are there, and it is completely unfair to simply discount them for the sake of newfangled trends.

Well, what a miracle this semolina is! If you want, cook porridge, if you want, bake a pie. However, not everyone loves porridge, but the pie will certainly be appreciated by everyone who has tried it. After all, manna with kefir is a simple and beloved pie made from semolina, which is made from wheat and serves as an excellent base for baking. Manna with kefir is simply an irreplaceable thing for us, modern women who are always suffering from lack of time. The main ingredients of manna are, of course, semolina itself, as well as sugar, eggs, butter or vegetable oil, baking powder, sometimes flour is added, as well as other ingredients that add flavor and aroma - nuts, poppy seeds, raisins, apples, berries, etc. ..
It is very simple to prepare such a pie, but first you need to decide what kind of manna you want to prepare, you need, so to speak, to choose the basic component of the manna, because, as you know, it is prepared with different dairy products: milk, sour cream, kefir, yogurt or yogurt. Mannik can be baked according to dozens of recipes, and each housewife adds her own ingredients during the cooking process to give her favorite pie a new taste. The most popular among other recipes is manna with kefir, it is also called classic, and is used by most housewives. It is kefir that allows you to get tall, fluffy, porous and tasty manna. Therefore, if you want to practice preparing all kinds of manna, prepare manna with kefir. The main secret to obtaining this tender and tasty pie is to always soak the semolina in kefir so that it is saturated with moisture and swells well. It is left in the liquid for 30-60 minutes, or even longer (otherwise the semolina will not disperse well, and the grains in the finished pie will crunch unpleasantly on your teeth). Then all other ingredients are added and mixed thoroughly. The finished dough is sent to a baking dish, pre-greased with butter and sprinkled with semolina, and placed in the oven for 40 minutes, preheated to 180-200°C. That's all, actually. And now from theory to practice.
Mannik with kefir “Classic”

200 g semolina (glass),
500 ml kefir,
3 eggs,
100 g sugar,
a pinch of salt,
1 packet of vanilla sugar,
10 g baking powder (or ½ tsp soda),
butter for greasing the mold.
Preparation:
Add semolina to kefir and leave to swell for 1 hour. Beat the eggs, adding salt and sugar, using a mixer. Then add vanilla sugar and baking powder (or soda) to the mixture. Combine the egg mass and kefir with semolina and mix thoroughly. Pour the finished dough into a greased pan and bake at 190°C for 40 minutes. To check if the cake is ready, pierce it with a match or toothpick. If the match (toothpick) is dry, the manna is ready.
To give the cake a beautiful appearance, you can sprinkle it with powdered sugar, brush it with fondant, or pour icing over it.
Mannik on kefir with flour
This interesting manna turns out to be very tender. The whole secret is that the baking powder enters into a fermentation reaction with kefir not while kneading the dough, but in the oven.

1 stack semolina,
2 stacks kefir,
2 eggs,
100 g wheat flour,
200 g granulated sugar,

vanillin or cardamom - to taste and desire.

After this, melt the butter on the stove, cool it, add baking powder and pour into the dough. Place the baking dish in an oven preheated to 180°C for 1 minute, then remove it and grease it with butter. Sprinkle with semolina to prevent the cake from burning. Pour the dough into the mold and place in the oven for 40 minutes. Then remove the finished manna from the oven, let it cool slightly and enjoy the delicious dessert.

Pour the dough into the mold, smooth it out slightly. If you wish, place walnut kernels or almonds on the dough; if not, prepare manna without decoration, omitting this point. Place the dough in an oven preheated to 180°C and bake for 35-40 minutes. While the manna is baking, prepare the syrup for soaking. Pour ½ cup of water into the pan, squeeze out lemon juice and add sugar. Cook over low heat for 10 minutes, stirring. Remove the finished manna from the oven and leave it in the mold. Pour the prepared syrup over it and wait until the pie has cooled completely.
Mannik on kefir with sour cream
Ingredients:
1 stack semolina,
1 stack kefir,
½ cup wheat flour,
3 eggs,
1 stack Sahara,
100 g butter,
1 packet of vanilla sugar,
½ tsp. baking powder,
a pinch of salt.
For cream:
500 g thick sour cream,
200 g powdered sugar,
1 tbsp. lemon zest,
powdered sugar - to taste.
Preparation:
Break the eggs into a bowl, add sugar and beat well with a whisk. Continuing to beat, add kefir and flour mixed with baking powder, salt and vanilla sugar to the mixture. Then add semolina, butter and leave for 30 minutes for the semolina to swell. Pour the finished dough into a greased baking dish and bake at 180°C for 35-40 minutes. For the cream, whisk the sour cream with powdered sugar and lemon zest. Cut the finished manna into 2 or 3 cakes and brush the cakes with cream. Instead of sour cream, you can make chocolate cream. For it you will need: 100-150 g of softened butter and the same amount of condensed milk with sugar, 1 tbsp. l. cocoa. Whisk all ingredients into a homogeneous mass. Instead of cocoa, you can melt a bar of dark chocolate in a water bath, cool to room temperature and beat it with cream - it will turn out even tastier.
