  • Celery - 200g

  • Avocado - 1pc
  • Lightly salted salmon - 200g
  • Lemon - 0.5 pcs.
  • Sugar - 50 g
  • French mustard - 40 g
  • Raspberry Balsamic Vinegar - 20g

Cooking:

Rinse the arugula and put it on a paper towel to dry. We clean the avocado and chop it into cubes. We clear the fish of bones and skin and cut into slices. Now mix lemon juice, sugar, French mustard and a little raspberry balsamic vinegar. First put the arugula on the salad bowl, then avocado and fish, season with sauce.

Holidays are a serious test for anyone who leads a healthy lifestyle. New Year's Eve always has a variety of dishes, usually high-calorie ones that can make you turn off the path to harmony and health. Since the holiday is strongly associated with delicious food, I suggest not depriving yourself of this pleasure, but I advise you to move away from traditional salads with mayonnaise and fatty meat. I offer you my own version of the right New Year's menu - you will find everything in it: meat, fish, mushrooms, vegetables, as well as a healthy and delicious dessert! The calorie content of a tasty and healthy New Year's dinner of 6 dishes will be only 885 kcal!

Snack:

As a festive but low-calorie snack, I propose to cook baked champignons with quail eggs and cheese. Mushrooms can be served warm or cold, it will be delicious anyway! The calorie content of one portion of champignons will be only 113 kcal.

Salads:

Beautiful puff salad and not a gram of mayonnaise. The salad combines soft avocado, juicy tomatoes and tender tuna. Salad can be prepared both portionwise and in a large salad bowl. The calorie content of one portion is 314 kcal.

In my collection of low-calorie salads, this salad is perhaps the most elegant, I think it will become a real decoration for the New Year's table! Note, again, no mayonnaise, but the taste of the salad is just wonderful. The calorie content of one portion is only 150 kcal.

Main course:

Quail meat is considered a dietary product, but rather unusual, just what you need for a proper New Year's feast! The calorie content of one portion (one quail) is 175 kcal.

Garnish:

You can complement the main course on the New Year's table with an unusual side dish. Couscous is perfect for almost any meat or fish, goes well with vegetables. Rich couscous, but at the same time a dietary side dish, as it consists of durum wheat. The calorie content of one portion is 87 kcal.

Dessert:

It is difficult to imagine the New Year without sweets and sweets, you do not need to deprive yourself of either one or the other. How to cook?

  1. Spread the pita bread on the table and grease the entire surface with curd cheese.
  2. Finely chop the dill and sprinkle the entire surface of the pita bread.
  3. Put the filling on the near edge. The first layer is salmon, cut into thin slices. Put lettuce on the salmon. Then again a layer of salmon.
  4. Roll the pita bread stuffed into a large roll. Try to fold as tight as possible so that after cutting the filling does not fall out.
  5. Cut the roll into portioned slices - rolls.

Salmon Riyet

Ingredients:

  • fresh salmon –300 g
  • smoked or slightly salted salmon –100 g
  • ½ orange juice
  • ½ orange zest
  • dijon mustard - 1 tsp.
  • Butter at room temperature - 20 g (can be replaced with 2 tbsp. Olive oil)
  • sour cream or mascarpone (can be replaced with soft cottage cheese) - 2 tbsp. l
  • chopped chives - 1 tbsp. l
  • chopped tarragon - 1 tbsp. l
  • thyme - 3 branches
  • white wine vinegar – 1 tsp
  • salt, pepper - by vksu.

How to cook?

  1. Steam fresh salmon (10 minutes), remove the skin, mash with a fork. Add oil. Let the salmon-oil mixture cool to room temperature.
  2. Smoked salmon, chop very finely. Add with the remaining ingredients to the cooled salmon. Stir with a spoon and put in the refrigerator for 2 - 3 hours. Serve with whole grain bread.

Quinoa and broccoli salad

Ingredients:

  • broccoli - 5-6 inflorescences
  • quinoa – ¾ cup
  • pomegranate - 1 handful
  • red onion - 1 handful
  • olive oil - 1 tbsp. l
  • lemon juice - 1 tsp.
  • salt, spices to taste

How to cook?

  1. Pour quinoa with water 2: 1, bring to a boil and cook for 10-12 minutes until the water is almost completely absorbed. Turn off the fire.
  2. Cut the broccoli into small pieces. Add to quinoa, cover and let stand for at least 5 minutes.
  3. Then cool slightly, add onions, pomegranate, lemon juice, olive oil and season with salt and spices.

Arugula Salad


Ingredients:

  • tomatoes - 2 pcs.
  • mozzarella - 2 balls
  • arugula - 1 bunch
  • salt to taste
  • olive oil to taste
  • balsamic (creamy) - optional
  • capers - optional

How to cook?

  1. Slice the tomatoes and cheese. Lay the cheese and tomatoes on the plate one at a time.
  2. Put arugula on top of the slide. Season with spices and salt, pour olive oil and balsamic. Garnish with capers.

Diet lasagna

Ingredients:

  • lasagna sheets - 110 g
  • chicken fillet –300 g
  • champignons - 170 g
  • carrots - 70 g
  • onion - 1 pc.
  • kefir - 300 ml
  • sour cream - 1 tbsp. l
  • garlic - 2 cloves
  • tomatoes - 3 pcs.
  • cheese - 30 g
  • ground black pepper - 3 g
  • salt - 4 g

How to cook?

  1. Stew chopped and sprinkled with salt and pepper fillet.
  2. Spasserut carrots, mushrooms, onions and tomatoes. Salt and mix.
  3. Add chicken to vegetables and let cool.
  4. Prepare the sauce: mix kefir, sour cream, garlic squeezed through a press, salt.
  5. Collect the lasagna. Put in the form 2 sheets, then filet and vegetables with mushrooms. Pour the sauce at the end.
  6. Repeat layers 2-3 times.
  7. Sprinkle with grated cheese and put in the oven for 30 minutes.

Chicken with oranges

Ingredients:

  • chicken (thighs or breast) –550 g
  • small oranges - 2 pcs.
  • lemon - 1 pc.
  • olive oil - 1 tsp.
  • a few twigs of thyme
  • sahzam
  • salt pepper

How to cook?

  1. Mix in a cup the juice of one orange, lemon juice, oil, sahzam, salt and pepper.
  2. Cut the onions large enough, orange slices and put them together with the chicken in a bowl. Pour the resulting dressing on top, drop a few twigs of thyme and leave to marinate for several hours.
  3. Put everything on a baking sheet, wrap it in foil and send to bake for about 30 minutes at 180 degrees. Then remove the foil from above and bake for another 10-15 minutes.

Dessert

Gingerbread cookies

Ingredients:

  • almonds, ground in a coffee grinder –100 g (you can take any whole grain flour)
  • oatmeal, ground into flour - 80 g
  • banana - 40 g
  • Honey –1/2 tsp
  • additional sweetener (honey, syrup) - to taste
  • cocoa powder - 10 g
  • baking powder or soda –1/2 tsp
  • nut paste – 1 tbsp. l
  • spices (ground cinnamon, ground ginger, ground cloves and nutmeg) - to taste

How to cook?

  1. Mix all the ingredients, roll the dough into a bowl and set aside for 10 minutes.
  2. Roll out the dough with a thickness of 7 mm, cut the gingerbread molds.
  3. Bake in an oven preheated to 180 degrees for about 12 minutes.
  4. Top can be decorated with glaze.

Tangerine pp pancakes

Ingredients:

  • average apple - 1 pc.
  • water –50 ml
  • cinnamon, cardamom, ginger - to taste
  • 1 tangerine juice
  • honey to taste
  • eggs - 2 pcs.
  • 1 tangerine zest
  • milk - 100 ml
  • warm water - 50 ml
  • cornmeal - 50 g
  • psyllium - 1 tsp (can be removed, but then replace the cornmeal with 60 g of oat or whole wheat flour)
  • coconut oil - 1 tsp.
  • salt - on the tip of a knife

How to cook?

  1. Add the eggs, milk, flour, psyllium, warm water, butter and salt to the grated zest. Wait 10 minutes and bake in a non-stick frying pan without oil over medium heat.
  2. Dice the apple. Pour water into the stewpan, add tangerine juice, spices and an apple. Put a plate and boil, stirring, until the liquid evaporates.
  3. Put a little spicy apple in each pancake, add honey on top. Also, if desired, you can add natural yogurt and roll pancakes in bags.
  4. Tie the zest tangerine bags.
