Curd casserole without flour, without eggs

Cottage cheese casserole without flour and without eggs, the recipe is perfect for vegetarians, or rather lacto-vegetarians, since there are no eggs in it. It uses agar-agar (extract from seaweed) instead of gelatin, you can use pectin.

This casserole is very similar to souffle jelly.

Ingredients:

  • Cottage cheese - 1 kg
  • Yogurt (or sour cream) - 200 g
  • Butter - for lubricating the mold
  • Oranges - 2-3 pcs.
  • Condensed milk (sugar possible) - 2 tbsp. spoons (to taste)
  • Agar-agar (pectin, gelatin) - 2 tbsp. tablespoons with a hill (12-15 g), plus 1 teaspoon for orange filling

Cooking casseroles:

1. Pour yogurt into the cottage cheese, mix.

2. Also add the orange zest.

3. Pour the condensed milk - a couple of spoons, if desired - it can be replaced with sugar.

Agar-agar is a natural product derived from seaweed. Gelatin - of animal origin, is already synthetic, which is very harmful to health, in my opinion ...

4. Add agar-agar, and beat our curd mixture. It can be dissolved in hot liquid, pour into cottage cheese and stir. But, so that there are no lumps - it is better to warm it in the oven, then the curd dough will turn out more uniform.

If agar-agar is not used, then the casserole will not hold its shape. It can be replaced with pectin, cake jelly or gelatin (but this is not a vegetarian product).

When the concentration of agar 1200 - you will need 8 g, and if it is less concentrated, then maybe all 20 g. So for starters, you can experiment 🙂

Agar agar can be replaced with gelatin, cake jelly or pectin

5. Our dough is poured into the prepared form. To do this, lubricate it with vegetable or butter.

6. Oranges and orange peels (optional) cut. Put in a pan.

7. In oranges, if they are acidic, you can add a little sugar. We put them on fire. When our oranges make juice, add 1 tsp agar-agar.

8. Boil for a few minutes. Leave to cool completely.

9. Take out our cottage cheese casserole from the oven. She baked for 15 minutes.

10. The casserole is perfectly separated from the edges of the form.

When using gelatin:

We look at proportions on gelatin packaging. We dilute gelatin in a small amount of liquid, heat, pour into the cottage cheese, put in the oven. After cooling, we send it to the refrigerator and only then take it out of shape

11. We remove our cottage cheese casserole. It turned out rather a curd souffle.

12. Top with cooled oranges.

If we use pectin:

We mix it with a small amount of liquid (water or juice), heat it to dissolve, and pour it into the curd mass, whisking immediately. We shift into the form and put in the refrigerator. No need to bake

Our dessert is ready!

Cut, serve.

Such a casserole can be prepared portionwise using small muffin tins.

9. Carefully decompose and level the curd mass.

10. On top of the casserole, grease sour cream (2-3 tbsp. Tablespoons) with yolk so that during the baking process a thick crust does not form and the casserole does not settle after it has been pulled out of the oven.

11. Sprinkle with vegetable oil.

12. We put in the oven preheated to 180 degrees. Baking time depends on the thickness (height) of our dough, on the form in which we bake. On average, it is 40-50 minutes. Readiness check with a toothpick.

The casserole turned out to be very tender, very airy, very homemade.

If the curd is grainy, then the casserole will be more dense. If the cottage cheese is soft, then the casserole is tender and airy

Cottage cheese casserole is much more useful than cheesecakes, because it is cooked without frying in vegetable oil. At the same time, even not too tasty cottage cheese can be put in a casserole - due to various additives, the dish will turn out to be very tasty.

  Essential products for the easiest casserole

You will need:

  • cottage cheese - 500 g;
  • semolina - 0.5 cups;
  • raw egg - 2 pcs;
  • salt - on the tip of a knife;
  • sugar to taste;
  • vanilla sugar - 1 sachet.

In addition, prepare a handful of dried fruits: raisins or dried apricots. You can take both. It is advisable to soak the raisins in warm water - it will take 10 minutes.

  How to cook a simple cottage cheese casserole

Cooking a casserole is not at all difficult:

  1. Grease a small baking dish with melted butter and sprinkle with semolina. Set her aside. Turn on the oven to heat up to 180 degrees.
  2. Grind the cottage cheese through a metal sieve or beat with an immersion blender.
  3. In the curd, enter two yolks and the whole semolina. Salt the filling, put sugar and vanilla sugar in it. Mix everything.
  4. Cut dried apricots into small pieces and, together with raisins, add them to the curd mass.
  5. Beat two squirrels until fluffy. To prevent the squirrels from falling, add 2–3 drops of fresh lemon juice in them or whisk them with a pinch of powdered sugar.
  6. Insert the proteins very carefully into the curd base. Mixing is carried out with a silicone spatula and only from the bottom up.
  7. Put the curd into the prepared form and smooth the surface with a spatula.
  8. Bake the casserole until it is lightly browned on top.

Serve a tasty and healthy curd dish with sour cream or any liquid jam. Cottage cheese casserole is good both hot and cold. If you cooked it a lot and did not have time to eat it, then put the leftovers in an airtight container and freeze it. After its natural thawing and heating in a microwave oven (time - 2 minutes, power - medium), the casserole will be as just cooked.
