As for cottage cheese, it doesn’t matter what kind of cottage cheese you take. I took both low-fat and full-fat cottage cheese, and, to be honest, I didn’t feel any difference at all. The most important thing is that the cottage cheese is fresh and not too dry, otherwise it will not be very easy to mix everything as it should. I take Belarusian-made cottage cheese in paper packets - if it’s fresh, it’s incredibly tasty. I put cottage cheese, sugar, the required amount of flour, salt and soda in a bowl in which I will mix it all. I don't extinguish the soda. Cottage cheese is a fermented milk product, and it can easily cope with this task on its own. The dough will be medium thick, as in the photo.


Prepare the molds. They need to be coated with vegetable oil with a brush, after which you can fill the molds, but not to the very top. Keep in mind that cottage cheese and soda react well when heated, which means that the cheesecakes will increase, if not twice, then one and a half times.

While we place the cheesecakes in the molds, preheat the oven to 220 degrees. Then place the baking sheet on the second shelf from above and bake until a beautiful golden color. It takes me about 15 minutes. If you bake at a lower temperature, it may take longer. In the oven, the cheesecakes will look even fluffier, but as soon as you take them out, they will settle a little. It doesn’t matter, they will still be fluffy and tasty.

Now let's prepare a sweet sauce - the most common one, sour cream. Mix thick sour cream with granulated sugar.

After which you need to dip each cheesecake, while it is hot, in sour cream, roll on all sides.

Place the finished cheesecakes on a dish, pour in the rest of the sour cream, and sprinkle with berries - I use frozen blueberries.

If the sauce does not seem sweet enough to you, add sugar to your taste, because cheesecakes are bland, so someone may want a more pronounced sweetness. Or top it with condensed milk - then it will definitely be delicious. Bon appetit!

This is another option that has long become a classic. The instructions are almost the same as for regular ones. We take:

  • cottage cheese - 1 pack
  • fresh eggs - 1 pc.
  • sugar - 50 gr.
  • flour - 60 gr. (3 tablespoons)
  • semolina - 20 gr. (1 tbsp)
  1. Mix all ingredients except flour thoroughly and let sit for 20 minutes until the cereal swells.
  2. Add flour and mix thoroughly again.

  • cottage cheese - 1 pack (250 gr.);
  • flour - approximately 1 heaped glass (200 gr.);
  • sugar - 3 tbsp. spoons;
  • milk - 100 gr.;
  • dry yeast - 6 gr. (1 tsp);
  • fresh eggs - 2 pcs.;
  • salt - a little bit.
  1. Mix cottage cheese, eggs, 100 gr. flour, 2 tablespoons of sugar and salt until completely smooth.
  2. Mix warm (+25°C) milk with a spoonful of sugar and yeast. We wait until there is a lot of foaming (10-15 minutes maximum) and pour the mixture into the main dough. Mix thoroughly.
  3. Add the rest of the flour, quickly knead the dough, cover and leave it to proof for 1 hour in a warm place.
  4. Preheat the oven to 200°C, “bottom heat” mode. We form cheesecakes; for variety, you can make triangular ones. Place in a pan lined with parchment paper. You can grease the top of the pancakes with egg white, white beaten with sugar, or sour cream. Let stand for 10 minutes for the kneaded dough to rise.
  5. Bake for about 20 minutes. Then turn on the “top heat” to get a golden brown crust. It is not recommended to stir yeast dishes.

This recipe for cottage cheese pancakes is especially good with liquid sauces: like a sponge, it perfectly absorbs confitures, jam, and condensed milk.

Fruit cheesecakes - a special conversation

You can develop such a recipe in the oven yourself by adding fruits or berries in the proportion of 1/2 the mass of cottage cheese and adding a little flour so that the dough can be formed into flat cakes. What can you add:

You will get excellent cheesecakes in the oven. You won’t even need flour, and the dish will turn out fantastically tasty, somewhat similar to a soufflé. Let's take:

  • cottage cheese - 1 pack (250 gr.)
  • ricotta - 1 package (200 gr.)
  • fresh eggs - 2 pcs. (quality is very important!)
  • sugar - 100 gr.
  1. We separate the whites from the yolks very carefully so that both parts are well beaten.
  2. Beat the yolks with half the sugar until the crystals dissolve, add the cottage cheese and make a fluffy mass.
  3. Cool the whites, beat at medium speed, gradually add the remaining sugar. We increase the speed and achieve the formation of “protein peaks”, that is, a very stable foam.
  4. Carefully mix both masses so that they do not fall off.
  5. Grease the molds with oil and place the dough into them, forming some pattern on the surface.
  6. Place our cheesecakes in an oven preheated to 180°C and set to “bottom heat” for 15 minutes. Turn on the top heat and let the dish brown for 5 minutes.

Such fluffy, airy cheesecakes are more likely to be classified as soufflés. After some cooling, they will go well with ice cream, fruits, berries, and cream sauces.

Secret: to make cheesecakes in the oven, it is not necessary to use eggs if, for example, they are not available or are contraindicated. Add a little sour cream, whey, milk, yogurt or kefir to the dough (about 50 grams instead of 1 egg) and get an excellent dish.

Chocolate cheesecakes

For those with a sweet tooth, there is no such thing as too much sugar. For chocolate lovers, all other ingredients are just an addition, and chocolate is the most important part of the dish.
