Baked cheesecakes in the oven are suitable for those who love cottage cheese desserts, but due to their diet cannot eat fried foods. If you add nuts, berries or dried fruits, experiment with spices (cinnamon, nutmeg, vanilla) and sauces, you can greatly diversify the dish.
Classic cottage cheese pancakes are suitable for breakfast or afternoon snack. They are baked in the oven without pre-frying.

Often in cheesecakes, flour is replaced with semolina, which makes them more airy. You can diversify the taste by adding finely chopped dried apricots, prunes or nuts.
Cheesecakes are a delicious dish, very easy to prepare, and, most importantly, healthy. Of course, it is generally accepted that the more oil in the frying pan, the tastier and more tender the golden cheesecakes. But today I suggest you try making cottage cheese pancakes in the oven. The recipe with photos was filmed step by step for young housewives who are still just mastering the art of home cooking. You won’t need any oil for these cheesecakes if you take small silicone molds - we’ll just put the curd mass in them. So you don’t have to mold anything (and I know that not everyone likes this process, when you risk ending up up to your ears in flour, and your hands becoming sticky from the sweet “dough”). Our cheesecakes in the oven will turn out in the form of small, neat cupcakes. For me personally, this recipe has literally become a lifesaver. On weekend mornings, it’s unrealistic to stand at the stove for half an hour to keep an eye on the cheesecakes. As soon as you stand at the frying pan with a spatula to fry cheesecakes, your children or husband immediately have business with you. I was distracted once or twice, and now breakfast is ruined - what should have been tender and tasty has turned black on the sides and looks at least unappetizing, and if you were distracted specifically, then it will turn out to be inedible altogether. Therefore, if I can’t get up earlier than everyone else to cook cheesecakes in a frying pan in peace and quiet, then I choose to cook in the oven. Firstly, nothing will burn because you can set a timer. And secondly, the oil consumption when preparing such cheesecakes is simply minimal, so they can easily even be called dietary.
Ingredients for cooking:
The recipe is simply ideal for breakfast; you can prepare such cheesecakes without really thinking about what you are doing. They’ll be baked just in time for waking up, and you can mix all the ingredients according to the list almost automatically.
As for cottage cheese, it doesn’t matter what kind of cottage cheese you take. I took both low-fat and full-fat cottage cheese, and, to be honest, I didn’t feel any difference at all. The most important thing is that the cottage cheese is fresh and not too dry, otherwise it will not be very easy to mix everything as it should. I take Belarusian-made cottage cheese in paper packets - if it’s fresh, it’s incredibly tasty. I put cottage cheese, sugar, the required amount of flour, salt and soda in a bowl in which I will mix it all. I don't extinguish the soda. Cottage cheese is a fermented milk product, and it can easily cope with this task on its own. The dough will be medium thick, as in the photo.
Prepare the molds. They need to be coated with vegetable oil with a brush, after which you can fill the molds, but not to the very top. Keep in mind that cottage cheese and soda react well when heated, which means that the cheesecakes will increase, if not twice, then one and a half times.
While we place the cheesecakes in the molds, preheat the oven to 220 degrees. Then place the baking sheet on the second shelf from above and bake until a beautiful golden color. It takes me about 15 minutes. If you bake at a lower temperature, it may take longer. In the oven, the cheesecakes will look even fluffier, but as soon as you take them out, they will settle a little. It doesn’t matter, they will still be fluffy and tasty.
Now let's prepare a sweet sauce - the most common one, sour cream. Mix thick sour cream with granulated sugar.
After which you need to dip each cheesecake, while it is hot, in sour cream, roll on all sides.
Place the finished cheesecakes on a dish, pour in the rest of the sour cream, and sprinkle with berries - I use frozen blueberries.
If the sauce does not seem sweet enough to you, add sugar to your taste, because cheesecakes are bland, so someone may want a more pronounced sweetness. Or top it with condensed milk - then it will definitely be delicious. Bon appetit!
Sprinkle with powdered sugar and serve with sour cream or yogurt.
Semolina will help give the cheesecakes an airy and delicate consistency. Cottage cheese pancakes with semolina are usually very popular with children.
The flavor palette of the classic recipe can be expanded by adding raisins or apples. To do this, add 50-80 g of filling to the finished dough for classic cheesecakes.
The apples in this recipe are first peeled and chopped into small pieces with a knife.
Instead of raisins and apples, you can add any other fresh or dry fruits, poppy seeds, or chopped nuts.
Fruits can not only be mixed into the dough, but also placed on top of the cheesecakes before baking, which will make them no less tasty. They are first crushed or cut into plastic. If the fruits are sour, sprinkle them with a small amount of sugar or powdered sugar. In addition to fresh fruit, you can use jam or jam.
If you are taking care of your figure, then cheesecakes can be made low-calorie by reducing unwanted ingredients in the recipe to a minimum.
In this recipe for cottage cheese pancakes in the oven, add one of the following ingredients: vanilla, cardamom, cinnamon.
Important: the recipe does not contain flour, so you need to choose cottage cheese with a low moisture content, otherwise the cheesecakes will spread. You can determine the moisture content by eye by density; the denser the pieces of cottage cheese, the less water it contains.
If you want to give the cheesecakes the correct and beautiful shape, bake them in special silicone molds.
The edges of the molds, before putting the cheese mixture into them, are greased with oil to avoid sticking.
Children are allergic to eggs, in this case, or, if you don’t have this product in the house, you can make cheesecakes without using eggs.
Mix the ingredients and bake the cheesecakes, following the above rules.
This recipe is good for those who like fluffy cheesecakes, like pancakes. Adding sour cream and baking powder to the curd mass will help make the cheesecakes fluffy.
You should get fluffy and tender-tasting cheesecakes.
Now you are armed with several tasty, and most importantly healthy, recipes, and you know how to bake cottage cheese pancakes in the oven to suit every taste and please yourself and your loved ones with them.
Bon appetit!!!

The recipe for cottage cheese pancakes is brilliantly simple, but you can add new colors and notes to it.

Prepared in just a couple of minutes. Required:
Tip: for cheesecakes, it is best to use fine-grained cottage cheese with little moisture or curd paste. If the grains are large, they need to be mashed with a fork and added sugar. If the product is very wet, you can squeeze it through cheesecloth.
This is another option that has long become a classic. The instructions are almost the same as for regular ones. We take:
These cheesecakes made from cottage cheese with semolina have a pleasant grainy texture and a juicier taste than regular flour ones.

You can develop such a recipe in the oven yourself by adding fruits or berries in the proportion of 1/2 the mass of cottage cheese and adding a little flour so that the dough can be formed into flat cakes. What can you add:
In a word, just add your favorite fruit ingredient, add a little more flour (the amount depends on the moisture in the fruit/berries) and increase the baking time by 5 minutes. It will be very tasty!
Recommendation: to absolutely any cottage cheese pancakes you can add washed dried fruits cut into small pieces - dried apricots, prunes, white and black raisins, dates. You can also use crushed nuts, both for dough and for sprinkling.

Such fluffy, airy cheesecakes are more likely to be classified as soufflés. After some cooling, they will go well with ice cream, fruits, berries, and cream sauces.
Secret: to make cheesecakes in the oven, it is not necessary to use eggs if, for example, they are not available or are contraindicated. Add a little sour cream, whey, milk, yogurt or kefir to the dough (about 50 grams instead of 1 egg) and get an excellent dish.
For those with a sweet tooth, there is no such thing as too much sugar. For chocolate lovers, all other ingredients are just an addition, and chocolate is the most important part of the dish. We will not discuss the detailed recipe (see options 1 or 2), we will only discuss the chocolate component.
A chocolate treat with cottage cheese is not suitable for regular breakfasts, but for Sunday breakfasts it is just right. Pamper your children to the extent that this is not prohibited by the laws of dietetics.
There are many options, but the most popular are carrot and pumpkin pancakes. If you have a young sweet carrot or a sweet September pumpkin, then you can get by with frying it in a frying pan.
