You will need:

  • 6 eggs
  • 240 g sugar
  • 200 g flour

For the caramel sauce:

  • 200 g sugar
  • 150 g butter
  • 125 ml cream 30%

For buttercream:

  • 400 ml cream 30%
  • 2 tbsp. spoons of powdered sugar
  • milk cream thickener packet

Vanilla impregnation:

  • vanilla sugar packet
  • 50 ml warm water

Protein custard:

  • 3 egg whites
  • 200 g sugar
  • 100 g water
  • citric acid on the tip of a knife
  • gel dye green and brown

Preparation:

  1. Beat the eggs with sugar with a mixer until a stable foam is obtained.
  2. Mixing carefully, add flour.
  3. Place the dough in a mold and place it in an oven preheated to 180 degrees. Baking time depends on the oven.
  4. Leave the finished biscuit to cool completely.
  5. Prepare the sauce. Place the saucepan with the sugar over low heat and cook, stirring continuously until a dark caramel color is obtained.
  6. Gradually add butter to the caramel and stir until it is completely dissolved.
  7. Turn off the heat, pour in the cream, stirring vigorously.
  8. Set aside the caramel until it cools completely and thickens.
  9. Whip the cream with powdered sugar; when the mixture becomes dense, add the thickener.
  10. Let's start assembling the cake. Cut the biscuit into three layers.
  11. Dissolve vanilla sugar in warm water and lightly soak the first cake layer.
  12. Using a pastry bag, make a border of cream around the entire perimeter of the cake.
  13. We also place caramel from a pastry bag into the middle of the cake.
  14. Cover the entire surface with cream.
  15. Place the second cake layer and repeat all steps.
  16. Cover the cake with the third layer and place in the refrigerator for 30 minutes.
  17. Prepare protein custard. Pour three egg whites into a bowl, add citric acid, and beat until thick foam is obtained.

Preparation:

  1. We begin to whisk the eggs with sugar and vanilla.
  2. Add flour through a sieve, carefully stirring with a whisk and add baking powder.
  3. Grease the mold with oil and pour half of the dough into it, then do the same with the other half.
  4. The biscuit is baked at 180 degrees for about half an hour.
  5. Let the biscuit cool completely and cut each cake into two layers.
  6. Pour the cream into a container, add sugar and beat with a mixer until strong peaks form.
  7. In a separate bowl, beat the butter, add condensed milk and beat until creamy.
  8. Cut the peaches into small pieces.
  9. Place the first cake layer on the dish, soak it in syrup, cover with butter cream, and place a layer of peaches.

  2. Carefully level over the entire surface, cut off excess, and smooth with a pastry iron.

  • 2 yolks;
  • ½ cup sour cream;
  • 1/2 cup cream 25%.

How to cook:

Combine the yolks with sugar and mash well. Add sour cream, then add flour little by little. Thaw the butter until soft and add to the egg mixture. Add baking powder. The dough should become thick, but not sticky. Transfer the mixture into a bowl or bag and put it in a cool place for 40-50 minutes.

In other countries, there is a tradition of making shoe-shaped sweets for the New Year holidays. It is believed that such a delicacy will bring good luck to those who try it. We suggest making a cake in the shape of a boot for the New Year. Household members will be pleasantly surprised by the surprise and will immediately want to try a piece.

  • 350-400 g sugar;
  • 350-400 g flour;
  • 10 eggs.
  • boiled condensed milk - 300 g;
  • 200 g butter.

To soak the cakes:

  • 200 g granulated sugar;
  • 200 g strawberry jam;
  • 1.5 cups of boiled water.

Cook the mixture briefly for 3-4 minutes until thickened. Then turn off the heat.

Soak rectangular cooled cakes in syrup for a couple of hours. Then spread a thin layer (jam) on them, and place cream impregnation on top. Stack the shortcakes on top of each other. Cut out a boot from the cake: cut a semicircle on the long side, and cut the bottom of the cake a little obliquely. Place the remaining cake in the top part.

Now you need to make a creamy mixture for decoration. Take egg whites, beat them with sugar (150 g) until thick white foam. Set a glass of water to heat, after boiling, dissolve the remaining sugar, cook for 3-4 minutes, then remove from heat. Carefully pour the hot syrup into the protein foam. To prevent it from settling, stir the whites in one direction and add lemon.

Divide the custard mixture into 3 equal parts. Set aside one part, add coloring to the rest and place in a piping bag. Decorate the cake with red cream, and then use the remaining white cream to draw patterns or make a frill around the boot. Place the finished cake in the refrigerator for a couple of hours, then serve it to your guests.

If you like nuts, you can use them for the filling. Place nuts and cream between the cake layers.

If you don’t have time, or you don’t want to bother with preparing the cakes, then you will definitely like the Raffaello recipe. Buy a ready-made cake from the store, then soak it in cream and decorate. A delicious dessert will be ready to serve in just a few minutes.

  • sponge cake - 1 pc.;
  • 2 cups cream with 30% fat content;
  • thickener - 2 sachets;
  • box of Raffaello chocolates;
  • white chocolate bar;
  • 3 tbsp. coconut flakes.

How to cook:

Remove the cream from the refrigerator so that it is at room temperature. Beat the cream with the thickener using a mixer for 3-5 minutes.

Set aside 7-8 candies from the box, place the remaining candies in a mixer cup and grind until smooth. Place the candy mixture into the whipped cream. You should get a thick cream.

A delicious and light cake can be prepared if you have 3-4 sponge cakes in your kitchen. You can use store-bought ones or bake them yourself, if time permits. It takes no more than half an hour to prepare the cake.

  • 4 sponge cakes;
  • 1.5 cups sour cream;
  • 3 tbsp. powdered sugar;
  • 100 g canned pineapples;
  • 4 egg whites;
  • 1/2 cup granulated sugar;
  • For decoration:
  • tsp red dye;
  • a handful of grapes.

How to cook:

Place sour cream in a cup and beat it well with a mixer. Then add powdered sugar little by little and continue beating for another 4-5 minutes. Drain the juice from the pineapples. If you bought whole fruits in syrup, then divide them into small pieces.

Now you can start assembling. Take a flat plate and apply a little cream mixture to its center, so the cake will not slip. Place the cake layer, brush it with cream, put another one on it, brush it again. Do not grease the top of the cake with cream, we will decorate it differently.

Take a saucepan and pour 50-60 ml of water into it. Put it on fire. When the water boils, add 1 tbsp. sugar and cook for 2-3 minutes, then turn off the heat and cover the syrup with a lid to cool slowly. Beat the egg whites with granulated sugar into a thick foam, slowly pour the syrup into the whites, stirring constantly. Divide the custard into 3 parts, add coloring to one part and set aside for now. Fill a pastry bag with white cream and start creating. First do the beard, then the face. Insert grapes instead of eyes. Next, use red cream to make the nose, mouth and cap. Place the cake in the refrigerator to soak for at least 2 hours. Enjoy your tea!

Take note of the recipe for a New Year's dessert with the winter name Snowman. The cake turns out tender, the sponge cake is well soaked in cream. Coconut shavings or white grated chocolate are suitable for decoration. It takes about 1.5 hours to prepare.

  • 4 chicken eggs;
  • 1/2 cup flour;
  • a glass of granulated sugar;
  • 2 tbsp. starch;
  • 100-150 g butter;
  • a bag of vanilla sugar - 10-15 g;
  • a pinch of salt.

To prepare the cream:

  • 300 g village cottage cheese;
  • 400 g heavy cream;
  • tbsp gelatin;
  • 100 g sugar.
  • for decoration:
  • a couple of grapes;
  • a piece of carrot;
  • 100 g coconut flakes.

How to cook:

Remove the eggs from the refrigerator in advance so that they reach room temperature. Beat the eggs with sugar, gradually adding it to the mixture. Add sifted flour, softened butter and baking powder. Sprinkle vanilla sugar and salt into the dough. You need to bake 4 cakes: 2 with a larger diameter, 2 with a smaller diameter. You can use the same baking pan, just cut the baked cakes onto a plate with a smaller diameter. Remove the finished cakes from the mold and cool.

Mix the cream and cottage cheese in one cup so that there are no lumps in the mixture, take a blender or mixer. Add sugar to the mixture and gelatin.

Place 2 shortcakes of different diameters on a large plate and brush with cream mixture. Then place the remaining cakes in accordance with the size of the previous ones and go over the cream again. I suggest you prepare the “Snowman” cake for the New Year. It turns out very funny, the design is not complicated, so you can safely start cooking with me.


The taste of the cake is soft, since the cake layers are biscuit and the cream is made from sour cream. If for some reason you cannot use sour cream, then replace it with confectionery cream. You can also safely add your favorite fruits to the cake: kiwi, pineapples, bananas, strawberries and other berries.

Ingredients needed to prepare the dough:

  • eggs – 5 pieces;
  • sugar – 150 grams;
  • flour – 1 glass;
  • cocoa – 2-3 tablespoons.

Necessary ingredients for making cream:

  • sour cream – 1 pack (weight – 450 grams, fat content – ​​20-25%);
  • sugar – 150 grams.

Beat the indicated number of eggs into the mixer bowl. There is no need to separate the whites from the yolks. Beat the egg mixture for 3 minutes. During this time, it will become fluffy and increase slightly in volume. Add sugar to the beaten eggs. The mixer, if you have a stationary one, do not turn it off. Beat everything for 3-5 minutes.


Now add flour and immediately cocoa. Stir the dough.



Place the dough in a round metal baking pan lined with parchment paper. Place the pan in the oven for 30 minutes. Remove the finished chocolate sponge cake from the mold.




Place the sour cream in a mixing bowl. Add sugar immediately. Turn on the mixer and beat the cream for at least 5 minutes. During this time, the sour cream will become significantly thicker, and the resulting cream will be convenient for lubricating the cakes.


Cut the finished chocolate cake into three parts. Let them cool completely, otherwise the cream will “melt” and drip off them.

Grease all the cakes (the top one too) with sour cream.

Mix sour cream with cream, beat the mixture with a mixer for at least 5 minutes. According to tbsp. add powdered sugar. Melt white chocolate in a water bath and add to the cream.

Grease the shortbreads with the cream mixture and combine. Apply the remaining cream mixture to the top layer and sides of the cake and sprinkle the cake with coconut flakes. Leave the Snowflake in the refrigerator for 5-6 hours, then you can try the cake with tea.

“Zebra” - a simple cake for the New Year’s table


An unusual treat is easy to prepare using this recipe. It is simple, so even an inexperienced housewife can handle it. Therefore, stock up on food and start cooking without any delay.

To prepare the dough:

  • 150 g granulated sugar;
  • 150 g butter;
  • 4 eggs;
  • 300 g sour cream with a fat content of at least 20%;
  • 1.5 cups flour;

  • 1.5 cups sour cream 20%;

How to cook:

Remove the butter from the refrigerator and wait until it melts. Combine soft butter with sugar and grind until white. Add eggs, baking powder, mix. Add sour cream and sprinkle flour at the very end. The dough should be runny. Divide it into 2 parts. Add cocoa to one part.

Pour a ladle of white batter into the center of the baking dish, and pour the cocoa batter into the center. You should get a combination of 2 colors, you can take a needle and draw lines straight along the dough from the center to the edges, it will also be beautiful. Thus you need to bake 2 cakes.

Beat sour cream with granulated sugar to form a white thick cream. Add vanilla, stir. Grease the cooled cakes with sour cream and sugar. There is no need to grease the top cake; we will make glaze for it.

  • 3 eggs;

  • a pinch of vanilla sugar.

For cream:

How to cook:

The secret of this famous cake is its elastic, creamy soufflé and plenty of sugar.

For the biscuit:

  • 150 g flour;
  • 100 g butter;
  • 100 g sugar;
  • two eggs;
  • vanillin.

For the soufflé:

  • 450 g sugar;
  • 200 g butter;
  • 100 g condensed milk;
  • 150 ml water;
  • two proteins;
  • a teaspoon of agar-agar;
  • half a teaspoon of citric acid

The glaze is prepared from chocolate and butter taken in a 2:1 ratio.

  1. Add vanillin and sugar to the softened butter.
  2. Beat in the eggs.
  3. Sift the flour.
  4. Combine everything into a homogeneous dough, thick like sour cream.
  5. Bake two separate cakes for 10 minutes at 200ºC.

Before preparing the soufflé, you need to prepare the agar-agar according to the instructions on the package.

  1. Heat it until completely dissolved.
  2. Boil the syrup for 5 – 10 minutes over very low heat. Quality control: from a drop of finished syrup you can roll an elastic ball.

  2. Combine the eggs and yolks with the remaining ingredients and some of the milk to equalize the temperature. No need to beat.
  3. Pour the egg mixture into the milk.
  4. As soon as it starts to thicken and stretch behind the whisk, immediately remove it from the stove.
  5. To prevent the cream from winding, cling film should be pressed close to its surface.

Before rolling out the cakes, you need to preheat the oven. Then:

  1. Roll out the chilled dough portions to the size of the pan.

  1. Sift together flour, cocoa, salt, soda.
  2. Beat softened margarine and powdered sugar.
  3. Add eggs, vanilla extract and beat the mixture thoroughly again.
  4. Alternately add the flour mixture and kefir in parts. You need to mix the dough quickly so that it does not “drag on.”
  5. Add vinegar to the last portion of kefir.

  2. Add the cheese little by little without stopping the mixer.

  • 200 g ground hazelnuts;
  • 200 g dark chocolate;
  • 500 g candied cranberries or currants.

Spread a little cream on a serving plate to seal the bottom layer of the cake. Then:

  1. Lay out in layers: marshmallow halves/nuts/berries/marshmallows again and so on.
  2. Cover all layers with whipped cream. The top layer should be marshmallow.
  3. Pour melted chocolate over the cake and decorate with berries. Cool.

Jelly fruit cake for New Year

For filling:

  • 1 kg of oranges or tangerines;
  • 150 g canned pineapples;
  • 150 g canned peaches;
  • 100 g Savoyardi cookies or any biscuit.

For cream:

  • 50 g gelatin;
  • 100 ml water;
  • 1 packet of vanillin;
  • 800 g sour cream or thick yogurt;
  • 180 g sugar.

If using a metal baking dish, simply submerge it in hot water for a minute and invert it onto a serving plate.

  1. Dilute gelatin with water according to the instructions on the package.
  2. Dissolve sugar in this liquid.
  3. Combine the composition with sour cream. It is better to mix with a regular spoon, not a mixer, so that air bubbles do not form.
  4. Peel citrus fruits and remove white films. Place a beautiful pattern on the bottom of the pan.
  • 350 ml heavy cream;
  • 400 g dark chocolate;
  • 50 g white chocolate;
  • 100 g powdered sugar;
  • 80 ml Baileys liqueur;
  • 100 g ground nuts;
  • 50 g biscuit crumbs.

The crumble can be made from stale sponge cake or butter cookies.

  1. Melt dark chocolate in hot cream. Add liqueur and cool slightly.
  2. Mix nuts and biscuit crumbs and divide in half.
  3. Place one part on the bottom of the greased mold and pour in the warm mixture.
  4. Cover with the other half of the crumbs, gently pressing them into the chocolate.
  5. Cool.
  6. Before serving, invert the dessert onto a plate and decorate with white chocolate snowflakes.

Ideas on how to decorate a New Year's cake

Any cake can be turned into a Special New Year's Treat with a capital “S” using themed decor.

From colored mastic you can make three-dimensional or flat figures of Santa Claus, snowmen and deer, garlands of colored lanterns, mistletoe wreaths, gift boxes, decorative socks, etc.

For plastic mass:

  • powdered milk,
  • powdered sugar,
  • condensed milk,
  • a pinch of citric acid,
  • food colorings.

Using melted chocolate, you can make inscriptions and patterns directly on the cake. If you apply drawings to cling film and cool them, you will get original figures: snowflakes, stars or Christmas trees.

You can also create a drawing or pattern using a stencil.

  • Cut a snowflake from a napkin.
  • Trace it on a second napkin and cut out the “negative”.
  • Place a stencil on the cake covered with chocolate glaze and dust it with powdered sugar.
  • The stencil should be removed very carefully so as not to disturb the design.

You can make any applique from colored slices of fruit or marmalade: kiwi for a green Christmas tree, cranberries for balls, strawberries for red caps, banana for round gnome faces.
