Every time you knead the dough, you expect to get fluffy pancakes, but instead you end up with thin rubbery cakes? Then our information will be useful to you. I am sharing with you the recipes that my mother taught me when I was 10 years old. They can be quickly prepared using sour milk or whey. And also the secrets of airy and tender pancakes that remain airy for a long time and do not fall.

Recipe for fluffy pancakes with sour milk

Kitchen tools: tablespoon, whisk, fork, plate, sieve, frying pan, bowl.

Ingredients

Step-by-step preparation

  1. Beat two chicken eggs into a bowl and add half a glass of sugar.

  2. Take a whisk and beat a little. It is not necessary to achieve foam or wait until all the sugar crystals have dissolved. Simply crack the eggs until smooth. Instead of a whisk, this can be done with a mixer, blender with a suitable attachment, or a regular fork.

  3. Pour in two glasses of sour milk.

    It is important that it is at room temperature. I usually warm it up a little on the stove. Just don't overheat, otherwise it will curdle.

  4. Add a pinch of salt and 1 tsp. baking soda. There is no need to turn off anything. The acid in the milk will do this for you. Mix everything well.

  5. Gradually add sifted flour and stir thoroughly. Immediately, boldly, sift two glasses into a bowl one by one. When all the flour is included, add more if necessary.

  6. The dough should be lump-free and resemble homemade sour cream. Do not knead for too long to prevent it from becoming rubbery.

  7. Cover the container with a towel and set aside for 15-20 minutes. At this time, a reaction of soda with sour milk will occur, which will give splendor.

    If you start frying the pancakes right away, you will notice that the latter will be more fluffy, because time has passed and the dough has infused.

  8. Place a frying pan on the stove, pour in vegetable oil and heat over medium heat.

  9. Scoop up a tablespoon of dough and place it in the pan. The dough will slide off the spoon easier if you dip it in water each time before scooping.

  10. As soon as the bottom of the pancakes is browned, grab one side with a fork and turn it over to the other. Fry until golden brown and transfer the pancakes to a plate. If necessary, add more oil to the pan and prepare the next batch.

It is best served hot with sour cream, honey or jam. Cooled pancakes remain soft for a long time and keep their shape.

In addition to sour milk, you can prepare the same fluffy pancakes with kefir of any fat content. I also tried cooking. It turned out very tasty too. Only if the yogurt is sweet, you will need to reduce the amount of sugar so that it does not turn out to be too cloying.

Recipe: lush pancakes on yogurt with photo

Cooking time: 55 minutes.
Quantity: 10-15 pieces.
Kitchen tools: tablespoon, whisk, cutting board, spatula, plate, knife, sieve, frying pan, bowl.

Ingredients

Step-by-step preparation

  1. Take one chicken egg and beat it into a bowl. Add a pinch of salt and whisk into a light foam. Before breaking the egg, you need to wash it so that harmful microbes do not get into the dough.

  2. Wash the green onions and dry with paper towels. I take 5-7 stems, depending on the size. Cut both the white and green parts into small pieces.

  3. Place in a bowl with the egg and mix with a spoon. It is inconvenient to do this with a whisk, because pieces get clogged into it. Instead of onions, you can use spinach, which will make the buttermilk pancakes super vitamin-rich.

  4. Add 200-250 ml of yogurt to the bowl. Add 0.5 tsp. spoons of baking soda and mix.

    The curdled milk should be at room temperature. You can even warm it up a little to about 30-40°, then the soda will react faster and better. No need to quench or add citric acid.

  5. Sift 1-1.5 cups of flour. This is approximately 160-250 g. Using a dry tablespoon, gradually introduce it into the onion mass and monitor the consistency.

  6. The dough should turn into thick sour cream and slide smoothly off the spoon. Battery dough will produce thin cakes, and very thick dough will produce tight and dense cakes, which will also be poorly baked.

  7. Heat a frying pan and pour vegetable oil into the bottom. When using a multicooker, turn on the “Frying” mode for 40-45 minutes and warm it up well.

  8. Wet a tablespoon in water, scoop out a portion of dough and place it on a heated surface. We wet it so that the mass comes off the spoon easier. We do this every time.

  9. As soon as the bottom edge is browned, pry it with a spatula or fork and turn it over to the other side. We place the finished and golden brown pancakes on plates, and put the next ones in their place. Don't forget to add oil as needed.

You can serve with sour cream and tea or instead of bread. These sandwiches make a great snack at work or school.

Delicious whey pancakes

Cooking time: 40-45 minutes.
Quantity: 10-15 pieces.
Kitchen tools: tablespoon, whisk, spatula, plate, sieve, frying pan, bowl.

Ingredients

Step-by-step preparation

  1. Heat a glass of whey on the stove or in the microwave until warm.

    It is very important that it is sour. This acid will extinguish the soda. Fresh whey can be left overnight at room temperature, and in the morning you can fry it into lush pancakes for breakfast.

  2. Pour the whey into a bowl. Add a pinch of salt, 2-3 tbsp. l. regular sugar and 1 tsp. vanilla. Take a whisk and stir until the grains dissolve. Please note that we do not add eggs at all. The pancakes will turn out fluffy and soft without them. I didn’t forget about soda either. We'll add it at the very end.

  3. Sift 1.5 cups of wheat flour. First pour 2/3 into the bowl and mix thoroughly so that there are no lumps. Then gradually introduce the rest. The mixture should fall from the spoon, not run off. If you have a sieve mug, then pour all the flour into it and gradually sift it directly into the bowl, bringing the dough to the desired state.

  4. Now add 0.5 teaspoon of baking soda and stir well.

  5. Heat a frying pan and generously pour oil into the bottom, even if it has a non-stick coating.

  6. Wet a tablespoon in water. We take the required amount of dough and put it in the pan. In order not to wait for it to slide off, we help with a second spoon. Leave a space between the pancakes, otherwise they will stick together and it will be awkward to turn over.

  7. Cover with a lid and fry over medium heat until the pancakes are browned on the bottom and covered with holes on top. The top will become completely matte.

  8. Turn the pancakes over, cover and brown on the other side.

Transfer the finished fluffy whey pancakes to a dish and serve immediately with sour cream, honey or jam.

Video recipe for making whey pancakes

A minimum of simple ingredients, and you have fluffy whey-based pancakes, without eggs. How to do this, see the recipe video.

  • Flour must be sifted to saturate it with oxygen.. It cakes in bags and packages, loses its airiness and gathers into lumps.
  • The correct dough should look like thick sour cream, it’s hard to slide off the spoon and not spread across the pan.
  • All ingredients should be at room temperature. It’s even better to warm up the fermented milk components a little.
  • The dough should be allowed to rest for 15-20 minutes. so that a reaction begins in it.
  • Do not stir the dough after resting. This makes the pancakes lose their fluffiness.

Cooking options

If you are not afraid to experiment, you can prepare different pancakes almost every day. The following are used as additives:

  • raisins and various candied fruits;
  • sausages or ham;
  • vegetables and fruits;

Such a simple dish as pancakes is liked by both adults and children.. Tell us how and with what you cook them. And also about whether they always turn out fluffy and airy.

So, in our new master class we look at how to make fluffy pancakes with sour milk. The recipe with photos step by step, without yeast or additives, will show you how to prepare this wonderful and simple dish.

Lyrical introduction

It's hard to find a person who doesn't like pancakes. Simple, tasty, different (depending on the presentation) - this delicacy has been familiar to us since childhood and can easily compete with the famous pancakes, which it is still its closest relative.

What’s interesting is that not everyone can learn how to cook pancakes deliciously, but almost any, even a novice housewife, can handle pancakes by following the right recipe.

There are even more recipes for pancakes than pancakes. We bring to your attention the “grandmother’s” version - fluffy pancakes with sour milk, the recipe with step-by-step photos you can see on this page.

Despite all the economy (sour milk will save you, again), pancakes prepared according to this recipe turn out to be especially fluffy and tender.

But it’s worth considering that they taste best “hot and hot” and are best served immediately after cooking.

However, according to the same recipe, you can prepare pancakes with kefir or plain milk, and if you need to take about the same amount of kefir, slightly less fresh milk will be needed. However, the most delicious option is still the proposed option - sour milk.

Ingredients for sour milk pancakes

So, to make fluffy sour milk pancakes, a recipe with step-by-step photos of which you will see below, you will need:

  • 2 cups each of flour and sour milk,
  • a pair of eggs,
  • a couple of tablespoons of sugar,
  • one tablespoon (but not heaped) of baking powder or half a teaspoon of soda,
  • slaked with vinegar,
  • a pinch of salt
  • and vegetable oil in which the pancakes will be fried.

Recipe for making fluffy pancakes with sour milk

So how are fluffy sour milk pancakes prepared? You can see the recipe with photos step by step without yeast below:

Test preparation

In a bowl, mix eggs with salt and sugar and mix. There is no need to be zealous here, achieving any special foam or other indicators of “overrun”. Simply use a whisk to mix until the sugar and salt are combined with the egg mixture.

Pour one and a half glasses of sour milk into the bowl, mix well again. Add flour and stir until all the lumps are gone and the mixture becomes smooth.

Then add the remaining half a glass of milk and mix again. This method allows you to reduce the number of problematic lumps of flour, which is one of the most difficult tasks in preparing dough for pancakes and pancakes.

If you cannot overcome the lumps, you can pass the resulting dough through a sieve. But all these manipulations must be done before the baking powder is added.

In general, the dough should not be too thick or too thin and this problem must be solved before adding baking powder. If it is too liquid you need to add flour, if it is too thick you need to add milk.

Now it’s the turn of baking powder (or soda slaked with vinegar). Add and mix quickly and intensively. After adding, the dough should have a consistency similar to sour cream and become more airy.

There is no need to stir for a very long time; this process will release air bubbles from the dough, which add “airiness” and make fluffy pancakes made with sour milk.

Pan frying process

Let's get straight to baking. Pour enough vegetable oil into the pan to completely cover the bottom.

Heat it well over high heat. The oil should be really hot so that it is minimally absorbed into the dough and the finished pancakes do not become too greasy.

When the oil is hot, spoon the dough into the pan. For frying, as a rule, a couple of minutes on one side is enough - a golden crust should appear.

Then turn it over with a spatula and fry the other side to the same crust.

If the pancakes still turn out to be very greasy, after frying, you can first transfer them to a dish lined with napkins or a paper towel, which will absorb the fat, and then when serving, transfer them to another dish.

From time immemorial, pancakes have been baked in Rus', because you can’t imagine a simpler dish. Moreover, when the milk soured in a few hours without refrigeration or chemical additives, it was used in cooking with great success.

  1. Sour milk – 0.5 l.
  2. Egg – 2 pcs.
  3. Flour – 3 tbsp.
  4. Sugar – 3 tbsp. l.
  5. Soda (optional) - on the tip of a spoon.
  6. Salt – 0.5 tsp.

It’s difficult to find someone who doesn’t like pancakes, because they are associated with childhood, the Russian stove, a hospitable housewife and an appetizing aroma in the house.

Even for those who count calories but really love pancakes, there is a way out. Prepare them by replacing wheat flour with oatmeal or any other flakes.

However, pancakes were not always what we cook today. Over the course of its history, this dish has undergone many changes, from its name to its cooking recipe.

Delicious sour milk pancakes based on oatmeal remain quite popular today.

The history of making pancakes goes back to the distant 16th century. Translated from ancient Greek, “eladion” means cooked “in oil.” Pagan Rus' is known for the worship of the main god - Yaril, the god of the Sun. As a sign of respect for him, people baked small, palm-sized, golden-colored pancakes that were associated with the Sun. Eating such “suns” should only be done with one’s hands, so as not to anger God.

One of the most famous holidays in Rus', Maslenitsa, would not be complete without pancakes, various flatbreads and pancakes. They were baked in special cast iron frying pans called “oladnitsy”. Mothers-in-law invited their sons-in-law to visit them and treated them to the most delicious dish - pancakes, which were served exclusively with sour cream.

It is noteworthy that initially pancakes had different names in different villages, they were called:

Only in the 20th century did they acquire their usual name. Moreover, in different cities this name meant different dishes. In St. Petersburg it was a flatbread with a sweet filling and served hot. In Moscow, pancakes were baked from butter dough with a high content of eggs and milk. They were large and thick in size. Today, every housewife prepares pancakes in her own way, adding different fillings and serving them with sour cream, condensed milk, jam or any other sweets. What could be better than getting the whole family together in the evening in a cozy kitchen, drinking tea with pancakes and sharing the news of the day.

  3. It is better to mix the dough by hand and add flour with a fork or whisk.
  4. Pancakes can be prepared with wheat, buckwheat or corn flour, and for those who are watching their figure, the flour can be replaced with oatmeal. In this case, the flakes should be divided into 2 parts: grind one part into coarse crumbs using a blender, and add the second part later in order to give the pancakes viscosity.
  5. As for soda, it must be added when the milk has been standing for a very long time in order to fight off the bitterness. And the effect of bubbles from the fermented milk mixture will appear without adding soda and baking powder.

Helpful tips can improve the taste of pancakes.

If you want to make sour milk pancakes more flavorful, then you should add a little vanillin to the dough

  1. To make the pancakes fragrant, you can add vanillin to them, and finely chopped dill to the salted ones.
  2. Another secret to fragrant and tender pancakes is yogurt, which should be added to the dough during kneading. You should take thick yogurt (5-8%), for example strawberry or peach, you can make it yourself, or you can take a bottle of Agushi.
  3. During the frying process, it is easy to understand when it is time to turn the pancakes. As soon as they start to brown on the bottom and holes appear on top, it’s time to turn them over.
  4. Baking soda can make pancakes flat and rubbery. Instead of soda, add a little baking powder to the dough, the pancakes will turn out more fluffy.
  5. Pancakes can also be prepared with yeast, however, they may not turn out as soft and juicy as with sour milk or kefir.
  6. Pancakes absorb oil very well, so for those who don’t like it too greasy, it’s better to add a little vegetable oil during frying so that the pancakes don’t float in it. Also, vegetable oil can be added directly to the dough (2-3 tbsp), then it is enough to add oil to the frying pan only before the first batch, then there will be enough oil in the dough.

To prevent the pancakes from burning and sticking, you should reduce the amount of sugar and keep it to a minimum, especially if the dish is served with jam or condensed milk.

And in conclusion, I suggest you watch the video recipe

If for some reason there is sour or expired milk in your refrigerator, do not panic or get upset, and do not throw it away under any circumstances. After all, there is an excellent reason to please your family for breakfast or dinner with delicious homemade cakes by preparing fluffy pancakes with sour milk.

Be sure to use these simple tips. In order for the pancakes to turn out not flat, like a thick pancake, but truly airy, the dough must be thick. If you add flour strictly according to the recipe, and the dough is runny, then add a little more. It should not spread over the pan, but should at least hold its shape a little.

Some recipes suggest frying pancakes in butter. We do not advise you to do this; the pancakes turn out softer and fluffier with vegetable oil.

And most importantly, do not forget to sift the flour before use. Due to this procedure, it not only gets rid of excess debris, but is also saturated with oxygen, which gives the finished baked goods airiness and tenderness.

In the above recipes, whey or kefir is also suitable instead of sour milk.

Lush pancakes with sour milk and soda

In this recipe, soda will add fluffiness to the pancakes; there is no need to extinguish it, this will happen due to the sour milky environment. But do not add too much soda, do not violate the recipe, otherwise the finished baked goods will have an unpleasant aftertaste.

Ingredients

  • milk (sour) – 250 ml;
  • flour – 1.5 cups;
  • soda – 0.5 tsp;
  • salt - a pinch;
  • egg – 1 pc.;
  • sugar – 0.25 cups;
  • oil - for frying.

How to make fluffy pancakes from sour milk

Pour milk into a bowl and warm it up a little, add soda.

Mix well, small bubbles should appear on the surface.

Beat the egg into the milk mixture, add sugar and a pinch of salt. Adjust the amount of granulated sugar based on your taste preferences - if you like sweet baked goods, add more, and vice versa. Mix all ingredients together until smooth.

Pour sifted flour in small portions and knead the dough with a fork or kitchen whisk, do this carefully and thoroughly so that no flour lumps remain.

The dough for pancakes with sour milk should have the consistency of thick sour cream; the thicker it is, the more magnificent the baked goods will be. Let it sit for 10-15 minutes.

Heat vegetable oil in a frying pan. Soak a tablespoon in water, scoop out a portion of the dough and place it in the hot oil.

Fry one side until nicely browned, then turn over and fry the other.

Transfer the finished delicious and fluffy pancakes from the frying pan to a plate, serve hot with tea and raspberry jam.

Fluffy pancakes made with sour milk and yeast

Still, yeast baked goods are yeast baked goods, you can’t argue with that. Pancakes made from sour milk with yeast turn out so airy, tender, fluffy that they will simply melt in your mouth.

Ingredients

  • sour milk – 1 glass;
  • flour – 7-8 tbsp. l.;
  • pressed yeast – 10 g;
