We continue the apple theme! We recently baked a delicious cupcake with apple juice, and today I offer you another new apple recipe!

Let's try a very interesting shortbread apple pie, the recipe of which I found on the Zizuminka website called Pyaterochka. Respect to the author for such a delicious cake! I liked the recipe for its unusualness: still, as many as five layers! Sand cake, cottage cheese cream, apples with cinnamon, streusel confectionery crumbs and to top off this “culinary madness” - caramel creamy topping! Here is the pie. Must try!

According to the cooking technology, this recipe seemed to me very similar to my favorite shortbread cakes, which can be made with cottage cheese, jam, or apples. Only there, instead of crumbs and caramel, meringue is on top. I don’t really like caramel - once I made a Sunflower pie with it - there were almost teeth left in the viscous, viscous caramel. So you decide whether to water the cake with it or not. And I will not cook it to viscosity, but pour it with sweet cream!

Ingredients for Shortbread Apple Curd Pie:


  • Flour - 2.5 cups;
  • Sugar - 1 cup;
  • Butter - 350g;
  • Cottage cheese - 0.5 kg;
  • Eggs - 2 pcs.;
  • Homemade cream - 1 glass;
  • Oat flakes "Hercules" - 6-10 tablespoons (in the original 3, I needed more);
  • Semolina - 2 tablespoons;
  • Cinnamon - 1/4 teaspoon;
  • Baking soda - 1/3 teaspoon;
  • Salt - 1/3 teaspoon;
  • 6-7 apples.

How to cook an unusual shortbread apple pie, recipe:

1 layer

Cooking shortbread dough, as for Mikado cake. In 2 and ¼ cups of flour, add 200 g of softened butter, soda, salt and rub with your hands into crumbs.


Add 1 egg and knead a soft dough that does not crumble or stick to your hands.


Lubricate the baking sheet with vegetable oil and form the cake, kneading pieces of dough on the baking sheet with your hands.

2 layer

We wipe all the cottage cheese through a colander to become tender, airy!
Add 1 egg and mix.


Add 0.5 cups of sugar and 2 tablespoons of semolina, mix. It turns out a lush curd cream.


We distribute it over the sand cake. It is more convenient to do this not with a spoon, but with your hands.

3 layer

We clean the apples and three on a coarse grater. Add a pinch of cinnamon for flavor and stir.


We distribute the grated apples on top of the curd cream.

4 layer

Cooking streusel confectionery crumb is a German recipe for topping for decorating pies. Grind 100 g of softened butter with 0.5 cups of sugar.


Add 3 tablespoons of flour and rub again.


Then add oatmeal and stir. According to the recipe, 3 tablespoons, but this seemed not enough to me, because then you need to crumble the streusel onto the cake - and it turned out so soft because of the oil that it didn’t want to crumble. So I added another half cup of oatmeal. Note: it is better not to grind the flakes with your hands, but in a blender, so the oatmeal will turn out smaller and more tender. I did like the big one though.


Sprinkle the cake with crumbs and put in the oven for 40-45 minutes at 180C.

Bake until golden. The aroma is amazing!

5 layer

If you want to cook caramel, mix the cream with 0.5 cups of sugar and 50 g of butter, cook to the desired consistency. But I don’t like caramel, so I just melted the indicated products in a saucepan and poured the pie with this creamy watering. By the way, my watering was not going to freeze ... Or you can try to pour the cake just with cream whipped with powdered sugar. The fifth layer may not be necessary, but it seems to me that it is he, along with the curd, that gives tenderness to the cake, soaking the cereal crumbs.

Cut the pie into serving squares.

Tart dough recipe. Combine powdered sugar, sifted flour and salt in a bowl. Cut cold butter into small cubes and add to dry ingredients. Break into crumbs. Add egg and mix well. Quickly knead shortcrust pastry for tart, wrap in plastic wrap and refrigerate for at least 30 minutes.

Grease a mold (about 23-26 cm) for a tartlet (such a low shape with a split bottom) with butter and sprinkle with flour. Roll out the shortcrust pastry for the tart, spread evenly over the bottom and sides, and poke all over the bottom with a fork. Lay the foil down carefully and top with weights such as beans, rice, etc. Bake in a well-heated oven for 30-40 minutes at 180 degrees. Cool down.


Recipe for a cream based on cottage cheese and cream. Soak gelatin (I use plates) in very cold water (preferably with ice) for 30 minutes.

Cool the cream in advance (place in the freezer for 7 minutes). Beat the cottage cheese well with a blender until smooth. Add powdered sugar, vanilla sugar and beat again. Set aside for now.

Separately, whip the cold cream to stiff peaks. And enter into the curd mass.

Take out the gelatin, squeeze it out. Add 50 ml of water and place on the stove in a small saucepan. Heat until small bubbles appear, but do not boil. Stir until completely dissolved. Add to cream cheese mixture and stir. Cream based on cottage cheese and cream is ready.

Daniil Kharms "Very, very tasty pie"

On December 24, 1925, the Yuvachev family moved from Mirgorodskaya Street to Nadezhdinskaya Street, to apartment 9 of building 11. This happened a few days before the 20th birthday of the son of the family, Daniil Yuvachev, who even then preferred the pseudonym Kharms.

The new apartment immediately became popular among young poets. There they read poetry and drank draft port wine. Sometimes it happened two or three times a week. And with what grandiosity young talents drink, one can imagine. Kharms's father did not interfere in his son's life and only noted in his diary “Dani has a feast until the morning. A lot of people, noise, din, squealing of a female voice, radio ... I didn’t sleep much because of this.

Kharms had fun, but he understood the danger of spree. From time to time, he tried to “start a new life”, writing to himself in the “rules” something like “reduce the number of overnight stays and spend the night mostly at home”, but he did not succeed well.

At the same time, Kharms was a well-known freak and loved to play an eccentric: defiantly greeted every lamp on the street, walked with a painted face, “because a clean face is disgusting,” and gathered a crowd of onlookers around, waving a red flag on top of a tree.

It is clear that such a person could not live in an ordinary cozy room with floral wallpaper. There were legends about his house. People who first came to Kharms, first of all, tried to understand what they heard was true and what was not. They talked, for example, about the fantastic "machine" that Harms himself built and demonstrated to his guests. The poet's room, indeed, was filled with wires and springs for some time. Why - no one knows, rather for mystification.

The walls were covered with aphorisms from floor to ceiling, and a lamp with a wide cardboard shade hung from the ceiling. On it, Harms drew caricature portraits of friends and a house with the inscription "Children are killed here." Yes, the famous children's poet, as his wife said, “I could not stand children all my life. I just couldn't stand them. For him, they were - ugh, some kind of rubbish.

Harms did not care much what to treat the guests: a glass jar of butter, cheese, jam and hot tea. This is how the poet's friends recalled the table set for them. Even by the time the invited guests arrived, he did not fry cutlets or bake desserts.

Compound:

Cottage cheese 9% - 400 gr.
Wheat flour - 2 cups
Butter - 100 gr. (and a little more for greasing the mold)
Egg - 2 pieces
Sugar - 1.5 cups
Vanilla sugar - 10 gr.
Baking powder - 1 teaspoon
Berries (fresh or frozen) - optional
Hazelnuts or almonds - optional

Cooking:

1. For the dough, mix the butter with flour, baking powder and 0.5 cup of sugar (you can add another 1 tbsp of lemon juice if you wish). Rub with your hands until a crumbly mixture is formed. Put the dough in the refrigerator.

2. For the curd cream, beat the eggs with the remaining sugar (plus vanilla sugar) until creamy, add the curd and beat again.

4. Lubricate the baking dish with butter and lay out half the dough, lightly crush the crumbs with your hands. Put the curd filling on the dough, distribute the berries on top (optional, you can also without berries).

5. The rest of the dough can be mixed with chopped nuts. Sprinkle the filling with crumbs - preferably so that the curd cream is not visible.

6. Cover the form with foil and bake for 30-40 minutes at a temperature of 180 degrees. Remove foil and bake for another ten minutes.

Shortbread dough is loved by many housewives. In culinary recipes, it is found in three different variations: shortcrust, false puff pastry made from chilled butter, and soft butter with baking powder. Each of these types can become the basis for baking. A shortbread pie with cottage cheese at first glance seems rustic, but the flight of fantasy of confectioners turned it into an exquisite delicacy, which is often called a cake.

A shortbread cake can be closed, but more often such a dough is formed into an open pastry, since two baked shortbread layers are difficult to cut into neat pieces. In the case of the cottage cheese filling, another problem arises: how to make sure that the pastry does not look like a dried cheesecake? The solution to such a difficult task is a classic shortbread pie with a delicate curd filling, reminiscent of a soufflé.

For cooking you will need:

  • 3 eggs;
  • 180 g of sugar;
  • 100 g butter;
  • 400 g of cottage cheese;
  • 5 g of soda or baking powder;
  • 250 g flour;
  • 100 ml of kefir;
  • 50 g of starch;
  • vanillin;
  • salt.

Step by step baking a pie:

  1. The kneading of the dough takes place in three stages. The first step is to get an oily crumb. Flour, salt and soda, into the resulting mixture, rub the butter through a coarse grater, quickly knead everything with your hands until crumbs.
  2. The second process will be beating the chicken egg along with sugar. First, one egg is beaten with a mixer, and after turning it into foam, 80 g of granulated sugar is gradually introduced. You should get a gentle sweet foam.
  3. After that, the crumbs and egg foam must be combined together to make an elastic dough that does not stick to the hands. It must be wrapped in foil and sent for thirty minutes in the cold.
  4. Preparation of the filling will take a minimum of effort, subject to the use of a mixer. Put cottage cheese, two eggs, the remaining 100 g of sugar, starch, vanillin into a deep bowl (bowl or pan), pour in kefir. Mix all the ingredients until smooth at the minimum speed of the mixer.
  5. Roll out the dough that has stabilized in the cold into a circle of a slightly larger diameter than the size of the bottom of the mold and carefully transfer it to the prepared mold with a rolling pin, form sides of 5-6 cm. inventory, then in the usual form at the bottom you need to lay out two strips of parchment crosswise so that they hang slightly from the sides. Then by pulling on them, it will be very easy to remove the finished cake.
  6. Carefully shift the curd filling onto the base of the pie, smooth it and send it to the oven, in which the temperature is 180 degrees.
  7. Bake for 45 minutes at the middle level, then move to the top, and cook for another quarter of an hour. You can transfer it to the dish after it has cooled down a bit, and the already completely cooled pastries should be decorated and cut.

This shortcake with cottage cheese and apples can compete with cakes. It consists of five (!) delicious layers: brittle shortcrust pastry, fluffy curd cream, cinnamon-flavored apple layer, sprinkled with confectionery crumbs and poured with viscous caramel.

To create a confectionery masterpiece you will need:

  • 350 g butter;
  • 2 eggs;
  • 250 g sugar;
  • 500 g of cottage cheese;
  • 400 g flour;
  • 200 ml homemade heavy cream;
  • 100 g of oatmeal;
  • 50 g semolina;
  • cinnamon;
  • salt;
  • soda;
  • half a kilo of apples.

Sequence of steps:

  1. For a sand cake, you need to knead the dough by mixing 200 g of creamy butter with 360 g of flour, salt and soda to the state of butter crumbs. Then drive one egg into it, collect all the soft mass that will not crumble, and stick to your hands. Spread the shortbread dough evenly over the baking sheet and you can proceed to the next layer.
  2. For a tender curd layer, rub the curd through a sieve. This will give lightness and airiness to the cream. Mix cottage cheese with egg, 100 g of sugar and semolina. This should be done without involving kitchen appliances with a regular fork or spoon. Spread the resulting mass evenly over the shortcrust pastry.
  3. For the third layer, peeled apples need to be passed through a grater with large holes, mixed with cinnamon and evenly distributed over the curd cream.
  4. For confectionery crumbs, you need to mix 100 g of soft butter with 100 g of sugar, 40 g of flour and oatmeal, crushed in a blender into large crumbs. By rubbing the butter with dry ingredients with your hands, you need to get a crumb, which should evenly lie down with the third layer of the pie.
  5. After that, the workpiece can be sent to the oven, where it should spend 40-45 minutes at 180 degrees.
  6. Next, we will prepare the final fifth layer. For caramel in a saucepan with a thick bottom, mix cream, 50 g of sugar and 50 g of butter. Boil the resulting mass to a beautiful caramel color and a viscous caramel consistency;
  7. Cut the finished hot cake into portioned pieces (rectangles or squares) and pour over the cooked caramel.

With jam

Shortcrust pastry curd pie has three features: a beautiful zebra pie-like serving, nutty crumble, and a cream cheese-and-jam filling that doesn't run even if the ingredients are watery for an open pie. Jam for baking is suitable from any berries and fruits, the main thing is that it be of a more uniform consistency, without large pieces. The finished dessert turns out to be fragrant and delicious at home in a summery way.

Product proportions:

  • 100-120 g butter;
  • 100 g of granulated sugar:
  • 2 table eggs;
  • 120 g flour;
  • 250 g of tender homemade cottage cheese;
  • 40 g of starch;
  • 100 g of any jam (for example, blackcurrant);
  • 100 g of any nuts.

The sequence of confectionery processes:

  1. Grind soft butter with half the prescription amount of sugar, add one yolk, crushed nuts and flour into medium crumbs. Knead everything well, until a mass that practically does not stick to your hands is obtained.
  2. Spread the batter immediately over the bottom and sides of the baking dish. After that, put it in the refrigerator for 40 minutes.
  3. Now you need to prepare the filling. To do this, separately grind the cottage cheese with the remaining sugar, 20 g of starch, protein and a whole chicken egg. In another bowl, mix the jam or jam with the remaining starch. If the jam (jam) is too thick, then it must first be heated in the microwave.
  4. We form a pie: in the center of the base, lay out a small circle of curd filling, and around it two more curd rings not a short distance from each other. Fill the gaps between the curd rings with jam, you should get two rings.

Shortbread dough needs to be stabilized in the cold, and this makes the baking process longer, but not in this case. This version of the banana pie is made from crumb dough, which is absolutely optional to send in the cold. The filling of bananas and nuts will give the finished baking a very pleasant taste.

For baking muffins prepare:

  • 250 g butter;
  • 200 g of sugar;
  • a little soda;
  • 3-4 g of fine table salt;
  • 500 g flour;
  • 350 g of cottage cheese, fat content of at least 5%;
  • 1 table egg;
  • 200 g of ripe bananas;
  • 100 g of walnut kernels crushed into large crumbs;
  • vegetable oil for lubrication.

Baking steps:

  1. Finely cut cold butter with a knife or with a coarse grater, mix it with flour, soda, salt and half the amount of sugar. Grind everything into crumbs.
  2. Lubricate the form or baking sheet well with vegetable oil over the entire surface that will be in contact with the dough. After that, send it to warm up in the oven at 180 degrees.
  3. For the filling, use a blender to beat the cottage cheese with sugar and chicken egg. If there is no blender, you can push the fermented milk product through a sieve, and then mix with the rest of the ingredients. Separately, cut the bananas into thin circles.
  4. Pour half of the sand crumbs on a heated baking sheet in an even layer, spread the curd mass over it, cover everything with the remaining crumbs, on which spread the banana circles in a small overlap. Sprinkle nut crumbs on top of all layers.
  5. Before reaching the state of full readiness, the cake should spend 40-50 minutes in the oven. After cooling, it should be cut into portioned pieces and can be served at the table.

Cooking in a slow cooker - a step by step recipe

The peculiarity of the temperature treatment of the pie dough in the oven makes shortcrust pastry more tender, and the layer of curd filling remains not overdried. Therefore, this cooking method may become more preferable for many housewives, although it will take a little longer than baking in the oven.

To bake a pie with cottage cheese filling from shortcrust pastry, the following products are needed:

  • 180 g of creamy margarine;
  • 170 g of sugar;
  • 3 chicken eggs;
  • 200 g flour or a little more, a little less;
  • 200 g of cottage cheese;
  • 50 g sour cream;
  • 5 g soda slaked with vinegar;
  • salt.

Bakery products:

  1. Mix the melted margarine with a hand whisk with 70 g of sugar and two yolks until smooth. Add slaked soda, salt and flour. Knead a soft dough from these ingredients, which is sent to stabilize for half an hour in the cold. Butter, cream margarine or spread can be used to knead the shortcrust pastry. If the shortbread base is prepared with one of the last two products, then salting the dough is not necessary - salt is present in sufficient quantities both in margarine and in the spread.
  2. To make the filling homogeneous, rub the cottage cheese through a fine sieve, add granulated sugar, sour cream, two proteins and one whole egg. Knead everything.
  3. Roll out the cooled dough into a circle on a sheet of parchment. Together with paper, put the dough into the multicooker bowl to form the base of the pie with sides 4-5 cm high. Put the cottage cheese on top.
  4. A shortbread pie with cottage cheese is prepared in a slow cooker using the “Baking” option for 90 minutes, after which the baking should be kept for another 20 minutes on heating. Then, gently pulling the edges of the paper, remove the cake from the bowl, remove the parchment and place on a dish.

Muffin with cottage cheese and berries

Perhaps, after reading the title of the subtitle, many will think: there will be nothing new in this recipe, again fruits and berries and another recipe for pouring cottage cheese. But no, everything will be much tastier and more interesting. To keep the intrigue, before starting the description of the baking recipe itself, one only has to say that it is better to use several types of different berries (strawberries, currants, gooseberries, and others) fresh or frozen in the recipe.

What you need for the berry-curd shortbread pie:

  • 150 g butter;
  • 200 g of sugar;
  • 250 g flour;
  • 50 ml of milk;
  • 600 g soft non-grained cottage cheese;
  • 100 ml cream;
  • 300 g of assorted berries;
  • 100 ml apricot jam (can be replaced with sugar syrup);
  • 10 g of agar-agar;
  • 200 ml of water.

Bakery products:

  1. From frozen oil shavings, 100 g of sugar and flour, make crumbs. Then, adding a little milk, collect it in a dense lump of shortcrust pastry, which is removed for 20-30 minutes in the cold.
  2. Beat cottage cheese with cream, sugar and 30 g of flour. Next, form a base with high sides from the dough, move and level the filling. It will be slightly lower than the height of the walls of the sand base. That's the way it should be.
  3. Bake until cooked, leave to cool in the oven for an hour so that the curd filling does not crack due to a sharp temperature drop. Mix water, agar-agar and jam (syrup), heat this mixture to a boil and remove from heat after half a minute.
  4. On the surface of the finished cake, spread the berries in a beautiful and even layer and pour liquid jelly on agar-agar. Place in the refrigerator for about one hour until completely set. After that, you can remove the cake from the mold and serve, carefully transferring it to a dish or cake stand.
