12.12.2023 Restaurant notes

There is bright sun outside the window. The calendar says summer. At such a time, it is simply impossible to refuse delicious pies with berry or fruit fillings! The most important thing is that all the recipes presented below are also suitable for the cold season. Pie with frozen cherries or strawberries is a hello from summer.

Time to bake pies

It’s not for nothing that they say that a delicious pie is an indicator of the culinary skills and professionalism of any housewife. Not everyone can bake a confectionery product the first time. Only the strictest adherence to technology and the proper combination of all ingredients will allow you to enjoy a truly lush, aromatic and tasty pie with frozen cherries, strawberries and other fillings.

Where should I start? The most important thing is to decide what type of dough will be used to prepare the confectionery delicacy. You can bake a delicious layer cake with frozen cherries, or make a dessert from yeast or shortbread dough. It is the latter that determines what ingredients will be used.

Making a pie from yeast dough

The main components for the dough are yeast, flour and water. You can add eggs, kefir, and butter or vegetable oil. Experienced confectioners recommend using fresh or compressed yeast. They are produced in convenient packaging and are easily divided into portions. In addition, such a product is very convenient to store and use in the future. It's no secret that frozen cherry pie is best made with fresh yeast.

For any pie you should use premium wheat flour. It is very important to sift it before use - this will only improve the taste of the finished dish.

There is one rule that all professional confectioners adhere to - first mix all the dry ingredients (flour, salt and sugar). And only then all other components are added to them: eggs, water, kefir or milk.

What liquid is used for pies? Some people prefer water, others prefer milk or kefir. In any case, the taste properties of the pie depend on the quality of the base: if it is water, then it must be drinkable, if it is milk, only natural.

"Drunk Cherry"

This is a fairly simple, but not quick recipe for a pie with frozen cherries in the oven. The dough requires the following ingredients:

  • Chicken eggs - 9 pieces.
  • Sugar - 185 grams.
  • Wheat flour - 135 grams.
  • Baking powder for dough - half a teaspoon.

For cream:

  • Butter - 300 grams.
  • Condensed milk - one can.

For filling:

  • Frozen cherries - two and a half cups.
  • Half a glass of any good quality alcoholic drink (rum, whiskey or cognac).

For the glaze:

  • Drinking cream of medium fat content - 200 ml.
  • Dark chocolate - 150 grams.
  • Sugar - 20 grams.
  • Butter - 25 grams.

It’s worth saying right away that you need to start preparing the pie a day before the required moment. So, first of all, you need to pour the thawed cherries with an alcoholic drink, add two tablespoons of sugar and leave it like that overnight.

Step-by-step cooking recipe

To prepare the sponge cake, you need to separate the whites and yolks. Beat the latter with a mixer until a whitish foam forms with half the amount of sugar. Place the whites in the freezer, after which they also need to be beaten with the remaining sugar until a stable foam forms.

Sift flour and add cocoa. Stir and add the beaten yolks and half the beaten whites. Mix thoroughly, then carefully fold in the remaining whites.

Pour the dough into the mold and bake the sponge cake in a preheated oven. After 40-50 minutes, remove the biscuit from the oven and let it cool at room temperature. Place butter in a bowl and mix it with condensed milk.

Place cherries in a colander to drain excess liquid. Cut off a 1.5 cm thick lid from the finished sponge cake and set it aside. Using a spoon and knife, remove the inside of the sponge cake to form a so-called dough box. It needs to be lightly soaked in the alcohol left over from the cherries.

At the same time, cut the sponge cake into cubes, soak in butter cream, mix with cherries and fill the “box”, cover with a lid and put in the refrigerator. Pie with frozen cherries is almost ready. All that remains is to whip the cream with sugar and heat them together until completely dissolved. Add chocolate there and melt it. Then remove from heat and add butter. Once the mixture becomes homogeneous, you can coat the pie with it. 2-3 hours after this, you can treat everyone to a frozen cherry pie.

Clafoutis

Yeast pie with frozen cherries is a thing of yesterday. Today you can surprise your household with an unusual dessert that resembles a casserole with a lot of berries. To prepare it you need the following ingredients:

  • Frozen cherries - 500 grams.
  • Flour - 100 grams.
  • Fresh milk - 200 ml.
  • Chicken egg - 4 pieces.
  • Sugar - 100 grams.
  • Butter.
  • Salt.

Photos of pies with frozen cherries eloquently demonstrate how appetizing such a dessert looks.

First of all, you need to transfer the berries into a deep container and put them in the refrigerator. Using a mixer, beat the eggs, sugar and a pinch of salt until the crystals are completely dissolved. After this, gradually add flour, continuing to stir the dough so that not a single lump remains. Now you can pour in the milk and stir everything thoroughly again.

Now you can turn on the oven. Remove butter and berries from the refrigerator. Grease a baking dish, place the cherries in a chaotic manner and fill it with dough. All that remains is to put the pie in the oven and bake it until completely cooked.

Puff pastry pie with frozen cherries

To begin with, it is worth considering the “lazy” cooking option - using frozen dough. Required ingredients:

  • Puff pastry - 500 grams.
  • Frozen berries - 300 grams.
  • Thick cherry jam - 4 tablespoons.
  • Powdered sugar - 1 tablespoon.
  • Potato starch - the same amount.

The recipe makes 8 servings. Cooking time - 60 minutes.

Cooking method

First of all, you need to defrost the dough. To do this, just leave it in the refrigerator or at room temperature for 40 minutes, then divide it into 3 equal parts (one of them will be used to decorate the pie). Roll out one piece of dough and line a baking dish with it, removing excess edges.

Grease the surface of the dough with thick cherry jam and lay out the berries, leaving for decoration. After this, the filling needs to be sprinkled with starch (it is best to do this using a sieve). It is needed to prevent the cake from becoming wet. The rest of the dough should be rolled out and cut into thin strips 1 cm wide. With them you need to weave a mesh on the surface of the pie. Remove the remaining pieces and wrap them in the edges of the baked goods, pinching them. Place one cherry in the empty cells. All that remains is to put the pie in the oven and serve it half an hour later, garnished with fresh mint leaves.

Cheesecake

The test requires the following components:

  • 100 ml kefir.
  • The same amount of vegetable oil.
  • 330 grams of premium wheat flour.
  • 1 chicken egg.
  • 50 grams of sugar.
  • Half a teaspoon of soda.

For filling:

  • 250 grams of frozen pitted cherries;
  • 400 grams of cottage cheese;
  • 3 chicken eggs;
  • 120 grams of sugar;
  • 50 grams of potato starch.

Defrost the berries and allow excess liquid to drain. Mix eggs, vegetable oil, soda and sugar using a mixer or blender. Sift the flour through a sieve and gradually add it to the remaining ingredients, knead into a plastic and soft dough that should not stick to your hands.

Place the dough in a mold greased with vegetable oil to form low sides. Place in the refrigerator. Now you can prepare the filling. First you need to rub the cottage cheese through a sieve. Separate the whites from the yolks. Mix the latter with cottage cheese and add sugar and starch. Mix everything.

Beat the whites until stiff foam, carefully fold them into the curd mass. Pour the filling into the chilled dough and smooth it out with a spatula. Place thawed berries on the curd surface and sprinkle with powdered sugar. Place in a preheated oven for one hour. After this, check the readiness of the baked goods and cool it at room temperature.

Puff pastry pie with frozen cherries is a summer dessert that even those watching their figure will definitely enjoy.

This cherry pie is so simple that even a novice housewife can easily prepare it, and it always turns out very tasty. The beauty of the recipe is that you can use not only cherries, but also any berries or fruits, and preferably fresh ones, not frozen ones.

I recently published a recipe for shortbread. It is also prepared very simply and is also very tasty, but completely different from the one we will prepare today.

Ingredients:

  • 500 g fresh cherries
  • 180 g sugar
  • 150 g butter
  • a pinch of salt
  • 4 large eggs
  • 200 g flour
  • 1 tsp. without a heap of baking powder
  • vanillin

Preparation:

First, wash the cherries and remove the pits. If there is no special device, it is convenient and easy to do this with a regular safety pin.

Softened butter and 180 g Sahara mix with a mixer at low speed. Use the finest sugar and butter that melts easily at room temperature.

Add a pinch of salt and add the eggs one at a time, mixing well after each time.

When all the eggs were added, we got this mixture:

Sift 200 g of flour into a bowl, add a level teaspoon of baking powder and vanilla on the tip of the teaspoon. If there is no vanillin, you can add a tablespoon of vanilla sugar. Then add flour in partsinto the egg-butter mixtureand mix the dough until smooth. The consistency of the cherry pie dough is thicker than that of pancakes.

Now is the time to turn on the oven and preheat it to 180 degrees.
Take a springform pan, grease the bottom and sides with vegetable or butter and sprinkle with semolina (2 tsp) so that the finished cherry pie can be easily removed from the pan. A mold with a diameter of 24 cm is ideal, but you can take 22 cm or 26 cm, just the cooking time will change - the higher the cake, the longer it takes to cook.

Pour the dough into the mold and place the cherries on top, lightly pressing them into the dough. If juice has accumulated in the bowl with cherries, drain it; there is no need for excess liquid in the pie.

Sprinkle 1-2 tbsp on top. l. sugar depending on how sour the cherries are. Place the pan in the oven and bake for 40-45 minutes. With a mold size of 22 cm, the cake can be baked for an hour, and with a mold size of 26 cm, it can take 30-35 minutes. In general, watch for yourself. We check the readiness with a wooden stick or a thin knife - if there is no batter left on them, the cherry pie is ready.

If the pie is already sufficiently browned, but the inside is still raw, reduce the temperature to 150 degrees, then it will reach the inside and will not burn.

In general, the finished cherry pie should look something like this; during baking it will approximately double in size.

Sprinkle the completely cooled pie with powdered sugar.

You will definitely like it - tender, moderately sweet, with a pleasant cherry sourness - in a word, very tasty!

Many thrifty housewives freeze berries for the winter. Most often they are used for making compotes, but they can also be made from summer fruits as a filling for baking. Let's look at 8 simple and delicious recipes for frozen cherry pie.

Let's start with the simplest recipe - cherry pie made from puff pastry. It is easier to purchase the baking base in the store so as not to waste time preparing it.

To work you need the following products:

  • a pack of puff pastry;
  • frozen berries;
  • granulated sugar;
  • a little flour.

How to make a pie filled with frozen cherries:

  1. Defrost the dough and berries naturally.
  2. Using a hairpin or nail scissors, remove the cherry pulp from the seeds.
  3. We remove excess juice from the berries so that the filling does not leak and the pie does not burn.
  4. Roll out the puff pastry, setting a fourth of it aside.
  5. Place the base on a floured baking sheet, leaving a small margin around the edges.
  6. Fill the pie with filling, sprinkle with sugar, and fold the free edges of the dough inside.
  7. We make strips or “sausages” from the remaining base, decorate the top of the pie with a “lattice”, and then put it in the oven.

Attention! The cherry pie filling should be sprinkled with sugar, and not mixed with it in advance. Otherwise, this will lead to the formation of excess juice, which will leak out during baking.

Jellied pastries with berries

Pies made from batter are tasty, fluffy and tender.

For baking you will need the following ingredients:

  • 230-250 g sour cream;
  • half a pack of margarine;
  • 2 eggs;
  • 2-2.5 cups flour;
  • sugar;
  • soda (10-12 g);
  • frozen cherries.

How to cook the pie:

  1. In a deep bowl, combine the eggs with sugar and beat the mixture.
  2. When the composition becomes homogeneous, add the fermented milk product and mix again.
  3. Melt the margarine until liquid and carefully, in a thin stream, stirring continuously, introduce it into the dough.
  4. Add a pinch of soda to the mixture and start adding flour. The quantities listed in the ingredient list are approximate. The dough should be the same as for pancakes.
  5. Pour more than half of the mixture into a grease-treated dish and place pitted cherries on top.
  6. Cover the pie with the rest of the dough and set to bake.

You can pour all the dough into the mold at once and place the cherries on top. During the baking process, the berries will drown a little in the liquid composition, which will prevent them from drying out.

Cooking with kefir in a slow cooker

If you use a multicooker, the baking process will be controlled by the device, and the housewife will not have to worry about whether the cake will burn.

  • 3 eggs;
  • a glass of sugar;
  • flour, how much dough will take;

  2. Defrost the cherries, remove the pits and drain off the excess juice.
  3. Beat the eggs with sugar until the sand dissolves, then add it to the kefir-semolina mixture.
  4. Add flour until the dough is semi-liquid, then add baking soda.
  5. Pour half the amount of dough into the greased multicooker bowl, then add the cherries and cover them with the remaining mixture.
  6. Close the lid of the device and set the baking mode.

This cake can be baked quickly, literally in half an hour.

  7. Distribute the cherries over the pie, sprinkle them with powdered sugar mixed with a small amount of vanilla.
  8. We wrap the sides and put the dessert in the oven.
  9. While the delicacy is baking, beat the egg whites with 150 g of granulated sugar into a strong foam, and a quarter of an hour before the end of the process, pour it over the pie filling.

  8. We put sweetened cottage cheese in the pie, and then distribute the cherries over it.
  9. Roll out the second part of the base, cover the filling and trim off the overhanging edges.
  10. We send the container to the oven, preheating it.

To make the surface of the pie shiny and glossy, it is greased with the yolk of a raw egg.

Tsvetaevsky berry pie

It is not known why Tsvetaeva’s pie is called that way. There are many opinions and guesses on this matter. Some sources claim that in the old days there lived two sisters who treated passing travelers to such a pie, and it received its “nickname” either from their surname or from the name of the village.

The version that the delicacy has something to do with the poetess Marina Tsvetaeva does not stand up to criticism, but still exists. According to contemporaries and people who knew this lady closely, she was an exalted and completely helpless person in everyday life, who was hardly interested in cooking.

But it is not so important for us to know why this dessert received such a name. The main thing is that it is tasty and very beautiful.

For cooking you will need the following ingredients:

  • egg;
  • 2 cups sour cream;
  • one and a half glasses of sugar;
  • half a stick of butter or margarine;
  • baking powder or soda;
  • flour;
  • cherry.

Preparing Tsvetaevsky pie:

  1. Mix half the sour cream with 1/2 cup sugar, and then add softened butter or margarine.
  2. Beat the mixture, then add baking powder and flour.
  3. Knead the shortbread dough and place it in the refrigerator.
  4. Let's do the filling. To do this, mix the second glass of sour cream with the remaining sugar and egg, add a little flour and bring the mass until smooth.
  5. Defrost the cherries, separate the pulp from the seeds.
  6. Place the rolled out dough in a bowl with high sides and distribute the filling evenly.
  7. Pour the resulting mixture over the cherry berries and place the pie in the oven for an hour.

Attention! The finished dessert cannot be cut immediately, as the liquid filling will spread. You need to let it cool completely.

Open Pie

This is one of the easiest ways to bake with frozen berries.

Products needed from this list:

  • half a package of butter;
  • 2-3 eggs;
  • a glass of granulated sugar;
  • a glass of flour;
  • a packet of baking powder;
  • vanilla;
  • frozen berries.

Making an open pie:

  1. Grind the softened butter with granulated sugar.
  2. Add the eggs and beat, then add the flour, baking powder and vanilla. The mass should turn out creamy.
  3. Let the dough sit, and at this time we deal with the cherries. Defrost the berries, remove the seeds, and squeeze out excess juice.
  4. Pour the dough into a bowl with high sides, lay the berries on top, sprinkle them with powdered sugar if desired, and place them in the oven.

The dessert will be baked in approximately 55-60 minutes. It depends on the power of the oven. Perhaps baked goods will be available earlier.

Using the recipes given, you can prepare pies not only with cherries, but with any frozen or fresh berries. The main thing is to take quality products and follow the recipe.
