You can immediately roll out the finished dough without first putting it in the refrigerator, but if you have time, you can put it in a plastic bag and put it to “rest” for half an hour in the cold.
  5. When the potato cools, you can cook the rest of the filling. Onions for this are finely chopped, previously washed and cleaned. Send it browned in a pan with two tablespoons of vegetable oil. They stir all the time so that it does not burn out. When the onion gains a light golden hue, turn off the pan, and transfer the onion to a bowl to prepare the filling. The cooled potatoes are peeled, crushed together with fried onions and butter, salt, black pepper and oregano are added to taste (it can be replaced with Provencal herbs, basil or dried dill).   1. To prepare the filling of the pie, chop thinly cabbage. Chop onions finely or in half rings. Oil is poured into the pan, heated and put onions and cabbage. Stir fried cabbage forcemeat, stirring it with a spoon, for several minutes, until it becomes soft and light beige. The fillet is washed, cut into small pieces and sent to cabbage. Five minutes later, salted cabbage and fillets, add spices to taste (for example, black pepper). Cover the cabbage with meat with a lid for two minutes, reducing the heat. The finished filling is transferred to a bowl for cooling.
  2. A baking dish is prepared and the dough is kneaded. It will be liquid. It is not necessary to make completely liquid dough. If the flour is not enough, add a little to make the dough resemble thick sour cream. Kefir is mixed with soda, set aside for several minutes. Sift the flour. Mayonnaise, a pinch of salt, eggs and flour are added to kefir. Knead the dough. Half of the dough is poured into a mold, the filling is placed on top, then the dough is again poured. Bake in the oven for about 40 minutes. Ready yogurt pie on kefir can be greased with butter, or five minutes before cooking, apply yolk mixed with a spoon of milk on its surface. Baking is served as an independent dish or to the first dishes instead of bread.

  1. Dry yeast is bred in a glass of warm milk with two teaspoons of sugar and flour. Ten or twenty minutes later, when the yeast in the milk disperses, and a small foam appears, begin to knead the dough.
  2. Milk with yeast, warm kefir, sour cream, melted, but not hot butter, an egg and salt are poured into a large cup for kneading dough. After mixing the liquid components, pour in the flour, and make a soft dough, like bread. It should not stick to hands. The dough will be suitable in a warm place for 2 hours.
  3. Beef is twisted in a meat grinder, chopped greens, a pinch of red and black ground pepper and salt are added to it.
  4. The finished yeast dough is divided into three equal parts. A circle is rolled out from each part, in the middle of which a filling is placed. The edges of the circle are stretched and pinched over the filling, three round cakes with meat filling inside are obtained. Bake cakes in the oven for twenty or twenty-five minutes at a temperature of 200 degrees. The crust on the cake will appear when it is ready.
  5. The dough from which Ossetian yeast pies are made on kefir is also suitable for other fillings. Thanks to kefir, it does not stale for a long time. Such pies can be prepared with cabbage, potatoes, mushrooms, herbs and cheese.
