I baked this cake for my husband's birthday. It was not possible to bake our family's favorite Medovik, which takes me 3 hours. I found this quick recipe, cooked according to it and was pleasantly surprised. The cake is so delicious, it just melts in your mouth. Now I will definitely bake this cake more than once, both adults and children liked it. In terms of taste, it has become one of my favorites, along with Medovik.

Ingredients:

The list is given for a form with a diameter of 20-24 cm. For a larger form, increase the number of products proportionally. Products must be at room temperature.

  • eggs - 2 pcs.
  • butter - 60 gr.
  • vegetable oil - 60 ml
  • milk - 280 ml
  • vinegar 6-9% - 1 tbsp.
  • flour - 250 gr.
  • soda - 1.5 tsp
  • salt - 1/3 tsp
  • sugar - 300 gr.
  • cocoa - 50 gr.
  • vanillin - 1 gr.

For cream:

  • butter - 180 gr.
  • condensed milk - 380 gr. (1 bank)
  • thick, fat sour cream 30% - 350 gr.
  • powdered sugar - 80 gr.
  • vanillin - 0.5 gr.

For impregnation (optional):

  • water - 50 ml
  • sugar - 50 ml
  • any berries - 100 gr.

Quick cakes: cooking.

1. The dough for the cake is prepared quickly. Therefore, immediately turn on the oven to warm up to 170 degrees. Products for the test should be at room temperature, try to get eggs, milk, butter out of the refrigerator in advance (1 hour). If you cook right away (like me), then you will need to heat up a little milk and butter so that they become a little warm. You don't need to burn oil!

2. Sift all the flour at once into a deep bowl (250 gr.). It is best to use a kitchen scale for accuracy. With scales, it will be possible to more accurately observe all proportions. If there is no such assistant, use. Sift cocoa powder (50 gr.) To the flour. Take regular cocoa, without additives and sugar. And put the rest of the dry ingredients in a bowl: 300g. sugar, a bag of vanillin, a little salt, and one and a half teaspoons of soda (no need to extinguish, it is extinguished at the end).

Soda can be replaced with baking powder, then vinegar is not needed. If you make syrup for impregnation, take 50 grams of sugar. less.

3. Mix all dry ingredients until smooth.

4. Beat two eggs into the dough, put 60 gr. butter and 60 ml of odorless vegetable oil. Also pour milk (not cold, but not hot).

5. Mix all the products with a mixer. Work at low speed first so that the flour does not fly around. Next, turn the mixer on high and beat for 1-2 minutes until the dough becomes smooth and shiny.

6. Now add 1 tablespoon of vinegar and stir well.

7. Cover the baking dish with parchment and grease with a little vegetable oil.

8. Pour the dough into the mold, scroll in a circle so that it is evenly distributed and the top is even. You can only pour the dough up to half the mold, because it rises very well during baking, it becomes porous.

9. Bake the biscuit cake in an oven preheated to 170-180 degrees for 50-60 minutes. Check readiness with a wooden stick, which should come out dry. Do not open the oven door for the first 20 minutes to prevent the cake from settling.

If you want, the cake can be baked on a rectangular baking sheet. If the dough layer is small, then the biscuit will bake faster (about 30 minutes).

10. Remove the finished cake from the oven, remove it from the mold along with parchment and let cool.

11. In the meantime, prepare the cream. To do this, first beat the butter with a mixer a little. Add condensed milk to the butter and beat the cream until fluffy.

You can also make sour cream for this cake. Only sour cream should be taken fat and thick, otherwise the cream will be very liquid. If there is only 20% sour cream, you can make weighed sour cream out of it.

To do this, put the sour cream in cheesecloth, put the cheesecloth in a sieve, and put the sieve on a bowl. Place this structure in the refrigerator overnight. In the morning, sour cream will be thick, excess whey will drain. If you do this, take sour cream for 100 gr. more.

Add powdered sugar to sour cream and beat the cream with a mixer for about 2 minutes. You can’t whisk sour cream for too long, otherwise it will exfoliate.

12. When the biscuit has cooled, cut off the top of it, which will then go to the crumbs for sprinkling the cake. Using a thick thread, cut the biscuit into 3-4 cakes.

13. The finished cake is moderately moist, it can not be soaked in syrup. But you can soak if you wish. I made an impregnation with frozen berries (blackberries and currants) to add sourness to the sweet cake. For impregnation, pour water into a saucepan, put a little sugar, boil. Put the berries in boiling water and cook for 3-5 minutes.

14. Now assemble the cake. Put the first cake on the dish, soak it with a little syrup, put the berries. Also, as an option, you can grease with a thin layer of sour jam. Lubricate the cake with cream. Cover with the second cake and repeat the procedure.

15. Grease the top cake and sides with cream. Make a crumb from the cut off top (the fastest way to do this is in a blender). Sprinkle the top and sides of the cake with crumbs. You can also sprinkle part of the top with coconut flakes. In general, you can decorate to your taste: with nuts, marmalade, and sweets.

If you have time, put the cake in the refrigerator for 2 hours to soak. If this is not possible, immediately serve to the table. This is a very tasty treat!

Simple cake on condensed milk "Lick your fingers"

Delicious cakes can be baked in half an hour. Don't believe? Read this cake recipe, which will come in handy both on the festive table and on the everyday one. The number of ingredients is indicated on a small cake, so you can immediately safely double everything and bake twice.

Ingredients:

  • flour - 140 gr.
  • butter - 100 gr.
  • condensed milk - 1 can
  • eggs - 2 pcs.
  • soda - 1/2 tsp
  • cocoa - 2 tsp
  • lemon juice (or vinegar) to quench soda

For cream:

  • sour cream - 200 gr.
  • sugar - 100 gr.

Cooking.

1. Melt the butter in any convenient way, let it cool to room temperature. Put the condensed milk to the butter and stir with a whisk or mixer until smooth.

2. Beat in two eggs and stir again.

3. Sift the flour and mix again. At the end, add baking soda quenched with vinegar or lemon juice. Stir everything until smooth. If you work with a mixer, and not by hand, then the dough is kneaded very quickly, in 5 minutes.

4. Line a baking sheet with parchment paper. Pour 2/3 of the dough onto it and level with a silicone spatula over 2/3 of the baking sheet. Add cocoa to the rest of the dough and mix. Pour the chocolate batter into the space and smooth it out.

5. Place in an oven preheated to 180 degrees to bake for 10 minutes (if the baking sheet is large and the dough lay in a thin layer). If the dough layer is large, bake longer until cooked (check with a match).

6. For cream, mix fat sour cream with sugar. You can beat with a mixer, only for a short time so that the sour cream does not turn into butter, no longer than 2 minutes.

7. When the cakes have cooled, cut them into 3 equal parts. You will get 2 light cakes and one brown. Cut off the excess edges.

8. Lubricate each cake with cream and lay them on top of each other. Grease the top and sides of the cake with cream too.

9. Turn the scraps into crumbs with your hands (or with a blender for speed). Sprinkle crumbs over the cake on the side and top. And you can eat it right away. As you can see, this cake took 30 minutes to make. And it turns out very tasty, just lick your fingers!

Milk - 5 tbsp. l.

We lay the first cake and cover it with an even layer of cream, then on top of it the second cake and again the cream.
