Perhaps you can change some of the menus to your taste. However, I tried to comply with two main points: on New Year's Eve, no one should overeat and the hostess should not kill herself at the stove. Therefore, we will do most of the preparation work in the kitchen during the week, and on December 31, we will pay attention to hair, manicure, roller coasters, a trip to the main tree of the city. And only an hour before setting the table, you will spend in the kitchen. Each menu and shopping list can be downloaded in a separate file for printing, so as not to forget to take it with you to the store. In addition, the list is divided into 2 parts. The first is groceries that you can buy in advance, a week before the holiday. After all, these days there will be no crowds in stores. The second part is what you need to buy the day before the holiday. This part includes perishable food items. I deliberately do not include side dishes in the menu, because they make the night weather heavier. If you think that you cannot do without them, add it yourself. I also do not indicate fruit, vegetable, meat and cheese cuts. I also advise you to avoid fruit and vegetable salads, which will quickly flow and lose their appearance. Whether or not to add them is your decision. In the meantime, choose what you like and have a Merry New Year 2017!

Romantic New Year's Eve menu for two


The main feature of compiling such a menu for the new year is to remember that dishes are only a small part of your romance. Focus on creating a romantic setting, your appearance and your good mood. You can safely go to the salon on December 31, do your hair, manicure, walk and enjoy the anticipation of the upcoming holiday. After all, who knows, maybe today they will make you an offer?

Cooking plan:

I tried to plan the time as much as possible so that you would not worry that you would miss something and would not be distracted from the New Year's mood.

  1. A week before: We buy everything we need for the first part of the shopping list. We highlight the evening and make candy. You can safely store them in the refrigerator. Place the candies in a plastic or glass container so that they do not absorb the smell of other foods.
  2. December 30th:
    • Prepare cheese cream for canapes, dry bread. Substitute a salty cracker for the bread, if desired. Cooking 1/4 of the cheese cream recipe ingredients. 8 crackers are enough.
    • Cut the turkey fillet (chicken if desired) into two portions and beat off. Salt and pepper. We put it in a container or wrap it in cling film and send it to the refrigerator.
    • If you are using frozen shrimp, transfer them from the freezer to the refrigerator so that they defrost properly.
  3. Dec. 31:
    • Cooking turkey fillet with sauce. To serve fillet, we do this. While frying the fillets, turn on the oven and heat to 180 degrees. We transfer the fillets to a ceramic or glass baking dish, cover with foil and send to the oven. After 5 minutes, turn off the oven and the fillet will come to readiness by itself. It can stay there for 20-30 minutes. If you don't have an oven, cook according to the recipe, but cover the finished fillet on a plate with a hot lid from a frying pan. If the fillets are cold before serving, use the microwave. And only then he pours the sauce.
    • Prepare the shrimp sauce, pour in the shrimp. Chop the tomatoes. Cooking canapes. All together will take 20 minutes.
    • Cooking the turkey sauce. 10 minutes.
    • Mix the salad right before serving. 2 minutes.
    • We take out sweets.
    • We set the table, fix the hair, celebrate the new year!

Cooking plan:

For such a menu, it is better to set aside 2 hours for cooking on December 30th. In fact, there is very little to cook and most of the time it will take you slicing Olivier.

  1. December 30th.
    • Boil potatoes, eggs, breast on Olivier and eggs on fish paste.
    • Cooking a cake. We put the cake to cool, decorate and pour over yogurt tomorrow.

  2. Dec. 31.
    • Let's start by making mitlof. We will form a meatloaf, but we will not send it to the oven, but set it aside. I recommend sending it to be baked an hour before the start of the feast, so that it would be hot. 20 minutes.
    • We take out the cake, decorate with yogurt. I buy ready-made sugar figurines in the form of snowflakes or decorate as in the recipe. 15 minutes.
    • We drain the liquid from olives, mozzarella, make a snack on skewers. I recommend assigning this part to children, then you will spend 5 minutes.
    • Place the fish paste on the crackers. We decorate. 10 minutes.
    • Cooking mayonnaise, seasoning Olivier. 10 minutes.

As you can see, it will only take you an hour to cook on December 31st. If you want, you can form a mitlof in the morning, put it in the refrigerator. This will further shorten the preparation time before the holiday.

If you have a little more time, you can bake a truffle cake. He's really amazing. Cakes for him can be prepared 3-5 days before the holiday. If you have 1-2 more guests, pick up some more New Year's salads.

Menu for a company of 8 people


If you are going to celebrate with a big company, you want to surprise your guests and not inflate your budget. Therefore, I have made a relatively budget menu. The main thing with this option is not to cook many dishes, but simply increase the amount of each. You can also ask for help with the preparation of one of the guests. Either ask to bring some of the salads or cake with you. The main emphasis in this menu is made not only on its budget, but also on the fact that on the 31st you only need to put the finishing touches. And you still only spend an hour cooking. I quite boldly suggest that you include barley salad instead of the usual Olivier in the New Year's menu for the company. And for those who do not recognize salads with mayonnaise - potato salad. It can also serve as a kind of side dish. The number of ingredients for the salad does not need to be increased, each guest will get it. but make boiled pork from a piece of meat at the rate of about 150 grams per person. For a sweet end to the evening, I suggest buying tangerines and sweets for the cake. The recipe gives you a cake for about 8 people.

Cooking plan:

  1. In 3-4 days. We bake cakes for the Pinscher cake. I draw your attention to the fact that for such a large company you need to take a double portion of the ingredients according to the recipe. We are also dealing with cakes for a mushroom cake snack.
  2. December 30th.
    • Boil vegetables for a hamsa snack and salads.
    • We cut the salads, but do not put onions in them and do not season.
    • We clean the hamsa (anchovies) and put them in a glass container with a lid. Sprinkle the hamsa lightly with oil so that it does not dry out.
    • We marinate the boiled pork.
    • Making the cake cream and finishing the Pincher cake.
    • We collect the snack cake with mushrooms.

    On this day, you will spend about 4 hours cooking. Therefore, I once again recommend that you invite helpers or entrust the preparation of some of the dishes to guests.

  3. Dec. 31. We will cook in less than an hour!
    • Put the boiled pork in the oven 2-3 hours before the meal. She will have time to cook and walk and cool a little in the oven. 10 minutes of clean time. Don't forget to put a timer on your oven or phone to turn off the oven.
    • Prepare anchovy / hamsa appetizer and cut bread to it. 20 minutes
    • We cut onions into salads, season. 15 minutes.
    • Cut the boiled pork and snack cake before serving.

Fasting and Vegetarian Menus


I have combined these two menu options into one. Those who observe Fasting may not celebrate New Year at all. But still, many celebrate it symbolically. Vegetable cabbage rolls can be prepared a couple of weeks before the holiday.

Cooking plan:

  1. A week before. Cooking vegetable cabbage rolls. We stand for 3-4 days at room temperature and put in the refrigerator. Cabbage rolls are prepared in general for about an hour or two, depending on your ability to roll stuffed cabbage rolls.
  2. In 3-4 days. Cooking lean cookies with marmalade. Let the finished cookies cool and put them in an airtight box. The total cooking time is about 1.5 hours.
  3. Dec. 31.
    • Let's start by preparing the salad. If you use attachments for a meat grinder, food processor or blender to grate vegetables, everything will take about 15 minutes. If there are no attachments - to speed up the process, ask for help to grate vegetables from your children or your husband.
    • Cooking risotto. About 40 minutes. Do not forget that this is a dish that needs to be constantly stirred.

If you prefer, replace the cookies with a lean cinnamon and almond roll. If you can eat fish on this day or you want to replace some of the recipes, look at the recipes for Lent. During the Christmas Fast 2014-2015, on December 31, you can eat fish, but on January 1 - only hot dishes with vegetable oil. Many people believe that in addition to fish, you can eat all kinds of seafood, so perhaps you can include salads with them in the New Year's menu for fasting. And recipes for salads with shrimps will come in handy, almost any can be seasoned with vegetable oil.

What will I cook for the New Year's table

Everything is simple with my New Year's menu. I will celebrate the New Year with my family - my husband, daughter, parents and our godfather. I really hope that this year he will not come by himself. As a basis for the menu, I will take the above menu for the new year for a family of 4. Just calculate the amount of mitlof so that it would be left for breakfast. For each person, I will count 200 grams of pork (raw, before processing) for New Year's Eve. + 200gram * 3 for a brunch or rather dinner on January 1st for me, husband and daughter. Plus I'll add one more salad, because adults will be 5-6 people + 12 year old daughter. What's left of the salads will also be for brunch the next day.

If unexpected guests come running in, I will have fruits, sweets, something for cold cuts and cheese, pickled plums, cucumbers, tomatoes - in general, something that can be put on the table very quickly as a light snack. Because from experience - after 12 at night, guests come from the table and do not eat much. And I don't want to cook a lot.

This is the approximate amount of food that one person will eat at the New Year's table. If you do not want to calculate for each type of dish separately, focus on an average of 500 grams of food per man and 350-400 grams per woman. If there is alcohol, then we increase the number of cold snacks (I have already increased). Remember that this is night, heavy meals will create a feeling of heaviness. And instead of New Year's fun, you risk sitting in a corner on an armchair, dreaming of mezima. Count the dessert and fruit separately.

I am writing a menu for a very simple and budget table, and for beginners. This is more likely not a menu, but instructions for preparing a classic New Year's table. Of the products available in almost any region of our "immense ro".

The first day.

1. Purchase of products.

2. Pushing food into the refrigerator

3. Dough and green beans in the freezer, the rest - in the refrigerator

4. Peel the garlic (whole). Use some part for boiled pork, the rest - in the refrigerator.

5. Marinate the boiled pork. Stuff a piece of pork with garlic, making punctures with a small knife and inserting garlic cloves into these punctures. One head of garlic should be enough. Then coat a piece of meat with mustard on all sides. Transfer to a bowl or container, cover with foil, make a few holes in the foil and refrigerate.

6. Beef for salad. Cover with water, salt, cook for 45 minutes after boiling. Remove from the stove and cool without removing from the broth. When it cools down - take it out, wrap it in foil and put it in the refrigerator. Strain the broth and cook the soup on it.

7. Salmon salmon. Cut 1/5 part from the salmon. Salt it with a tablespoon of salt, sprinkle with red pepper, finely chopped dill. Cover with lemon slices. Wrap in parchment (baking paper). If there is no parchment, grease several A4 sheets with vegetable oil and wrap the fish in this oily paper. Leave for a couple of hours at room temperature, then put in the refrigerator.

8. Go through the liver. Watch carefully so that there is no bile. If you come across such a piece, it is better to cut it off, or immediately throw it away from the chicken liver. Rinse the liver well, cut into smaller pieces (if beef or pork). Transfer to a bowl, cover with cling film, make a couple of holes in the cling film and put in the refrigerator.

Second day .

1. Cook potatoes, half of what you bought. Fill with water, salt and cook until tender. Then we drain the water. Put the cooled potatoes in the refrigerator overnight. We will clean it tomorrow.

2. Cook carrots. Almost all. We leave one carrot on the pate. We cook in the same way as potatoes.

3. Cook the beets. So are potatoes and carrots. Cook all vegetables separately and be sure to salt them when cooking.

4. Bake the boiled pork. Wrap the marinated piece of meat in several layers of foil and bake for 1 hour 20 minutes at a temperature of 150 degrees in the oven. Cool the finished boiled pork without expanding and put it in the refrigerator.

5. Transfer the salted fish from the refrigerator to the freezer.

6. Prepare roulade for cold cuts. We cut the chicken on the back, you can cut out the spine. Expand the skin down. We remove the bones. We cut off the wings, chop off the bone at the leg. We also cut the legs. You should get a layer of chicken meat on the skin. If, when removing bones, you injure the skin somewhere, it is not at all scary. Beat the meat a little, salt. Stir 5-6 eggs separately with a fork and fry a thin omelet in a wide skillet. Transfer the omelet to a layer of chicken meat and roll. Wrap the roll with a cloth or gauze in two layers. Sew or tie. Put the wrapped roll in a saucepan. Fill with water so that the water covers the roll for 2-3 centimeters. Bring to a boil, then reduce heat to very low. Cook for an hour and a half. Remove the pan from the stove and leave to cool with the roll. When it cools down, take out the roll, transfer it to a bowl, pressing down on top with something heavy. You can strain the remaining broth and cook the soup - it's still a long way from the new year, don't let your family die of hunger. Do not throw out the bones from cutting the chicken, put them in the refrigerator until tomorrow.

7. Cook pears for dessert in advance. Peel the pears by cutting them thinly with a potato peeler. We leave the cuttings. We put pears in a saucepan. We mix 300 grams of sugar, 300 ml of water and the same amount of wine. Pour the pears with this mixture, bring to a boil and cook for 20 minutes. Remove the pan from the heat, leave the pears in the syrup to cool. When it cools down, we take it out, put it on a plate, wrap it with foil and put it in the refrigerator.

8. Wash the remaining potatoes well with a dishwashing sponge. And put it in the refrigerator.

9. Cook the eggs. 10 pieces hard boiled.

Day three. The most haymaking!

1. Peel boiled potatoes

2. Peel the beets

3. Peel carrots

4. Cooking herring under a fur coat

5. Cut vegetables and meat on Olivier. Potatoes-carrots in one bowl. Pickled cucumbers separately. Meat (sausage) separately. Cover with foil. We pierce the film in several places. We put it in the refrigerator.

6. Pour green beans with water, bring to a boil, cook for 1-2 minutes, put in a colander. Cool, put in the refrigerator under the film.

7. Chicken breasts. Cut the meat off the bone and cut it into strips. We remove the meat in a bowl under the plastic wrap in the refrigerator. Bones are separate.

8. Bones from chicken breast and bones from cutting a whole chicken, fill with water, salt and cook after boiling for 40 minutes. Then put the bones in a colander, when they cool down - carefully peel off all the leftover meat from the bottom and chop finely. This chicken meat will be used in pancake filling. And from the broth, you can cook the soup again or freeze it for hangover days.

9. Two hens, or a duck or a goose, marinate. Stir honey with a jar of mustard. We wash the bird, dry it, blotting with napkins. And we grease it well with a honey-mustard mixture outside and inside. We transfer the bird to a bowl, cover with foil. We poke holes in the foil - this should already become a habit - they shook them with a tyk-tyk-tyk knife. We put it in the refrigerator, let it marinate there.

10. Dumped. We take out the puff pastry from the freezer and leave to defrost. It thaws very quickly - in an hour. While you are doing points 12 and 13 it will already thaw out. Unfold the roll of dough. Cut out circles with a glass. Each piece of dough makes about 14-16 circles. Put them on a baking sheet and bake for exactly 8 minutes in an oven preheated to 180 degrees. Cover the ready-made ones, rather than "puff substrates" with foil and leave until tomorrow.

11. Wash the zucchini and paprika, cut into a Hatay salad, put in a bowl in the refrigerator under a plastic wrap.

12. Pate. Take out the liver. Add to it onions and carrots, cut into pieces. Season with salt and pepper. Bake in oven for 40 minutes (stir during baking). Cool it down. Add butter, 1 pack. Pass through a meat grinder 2 times. Then mix well. Divide with wet hands into 20 pieces. Roll each part into a ball and sprinkle with finely chopped herbs. Place the pate balls in the refrigerator under the plastic wrap.

13. Wash the apples.

14. Grate the head of garlic on a fine grater. Pour in vegetable oil, stir, put in the refrigerator.

15. Gherkins 3 pieces or one ordinary pickled cucumber, rub on a fine grater and put in the refrigerator.

16. Cut fresh salmon into large cubes without skin. For kebabs. Place in the refrigerator under plastic wrap.

17. Expand the boiled pork, cut, and put in stacks in the refrigerator under the plastic wrap.

18. Unfold the roulade from the fabric, cut into thin slices, wrap with plastic foil and refrigerate.

19. Peel the sausage, cut it, put it in the refrigerator under the plastic wrap.

20. Carefully examine the remains of vegetables. Maybe there will be enough of them in order to make a vinaigrette or a salad of beets with cheese, for example.

And don't forget to set the timer !!! In order not to overdry the kebabs.

9. Tar-tar. The easiest sauce option. Served with fish kebabs. Combine grated cucumbers, sour cream and mayonnaise. Add the grated garlic and finely chopped dill.

10. Marinate the potatoes in advance, but not too early. Cut the peeled potatoes into large slices, salt, add paprika, pour over with vegetable oil and stir well. Before baking, store in the refrigerator under a plastic wrap to avoid darkening.

11. Cook hatei in two pans. In one, fry the chicken fillet in strips with soy sauce. On the second, fry the zucchini with paprika (salt), pouring with lemon juice. Heart salad with green peas

- pork heart 500 gr.,

- canned green peas 1 b.,

- chicken eggs 4 pcs.,

- carrots 1 pc.,

- onion 1 pc.,

- vinegar 2 tablespoons,

- garlic 2 cloves,

- greenery,

- vegetable oil 1 tablespoon,

- mayonnaise,

- spices (sugar, salt, black pepper, bay leaf).

Cooking process:

  1. Rinse the pork heart thoroughly under running water and clean it, removing all veins and blood vessels. Cut into small pieces and cook in salted water.
  2. Hard boil the eggs.
  3. In the process of cooking the heart, the first cloudy water will need to be drained, and instead of it, pour the same volume of clean water and cook the offal for 30 minutes.
  4. Cut the onion into half rings and marinate.
  5. When the heart is boiled for half an hour, drain the water again and add a new one, continue to cook for another hour until it becomes soft. 30 minutes before the end of the process, add 4-5 black peppercorns and a few bay leaves to the water.
  6. Peel the carrots, grate on a coarse grater, sauté in vegetable oil.

Meat salad with champignons and ripe pomegranate seeds

- beef or veal 200 gr.,

- champignons 150 gr.,

- 1 clove garlic,

- vegetable oil for frying,

Cooking process:

  1. Rinse the meat well, dry and chop coarsely. Then put it in a preheated pan, greased with vegetable oil, fry on both sides until tender.

  3. Transfer the cooked toasted ingredients to a paper towel to absorb any excess fat.
  4. Peel the onion, cut into half rings and pour over with boiling water.

  7. Prepare the dressing: add chopped garlic and black pepper to mayonnaise.

Buns "Funny Dogs"

- flour 450 gr. + 100 gr. for bedding,

- milk 150 ml,

- dry yeast 8 gr.,

- eggs 2 pcs.,

- butter 70 gr.,

- sugar 2 tablespoons,

- salt 1 tsp,

- yolk 1,

- sausages 2-3 pcs.,

- raisins 50 gr.

Cooking process:

  1. Sift flour and add warm milk to it, add yeast, sugar, salt, eggs, melted butter. Knead the dough and leave it in a warm place for an hour.
  2. After the time has elapsed, divide the dough into 15 small pieces, round them and let sit for 15 minutes.
  3. Cut the sausages diagonally.
  4. Roll each ball into an oval cake, make a small incision on top, and put a piece of sausage on the lower part and roll the dough so that the upper cut is on the sausage. Make cuts on the side and move them slightly to the sides - these will be “ears”.
  5. Use raisins as a peephole and nose. Brush the yeast buns with an egg. Place the baking sheet in an oven preheated to 180 degrees for 20-25 minutes.

That's all the yeast buns are ready for the new 2018.

Stuffed chicken drumsticks

- chicken drumsticks 5 pcs.,

- tomatoes 2 pcs.,

- hard cheese 5 slices,

Cooking process:

Pork medallions in oranges

- pork 500 gr.,

- vegetable oil,

- large orange 1 pc.,

- shallot,

- purified water,

- turmeric,

Cooking process:

  1. Cut the pork into 0.5 cm medallions, season with salt and pepper and place in a heated frying pan greased with vegetable oil.
  2. Fry the pork on both sides until golden brown.
  3. Add the juice from one orange and some chopped zest. Also add the shallots, cut into half rings, a couple of tablespoons of honey, a little water and sprinkle with turmeric.
  4. Cover the skillet with a lid and simmer the meat over low heat for 20 minutes. Look under the lid from time to time and stir the medallions.

"Doggy" salad with smoked chicken breast and mushrooms

- 1 smoked chicken breast,

- pickled champignons 150 gr.,

- potatoes 5-6 pcs.,

- carrots 4 pcs.,

- eggs 3-4 pcs.,

- processed cheese 1 pc.,

- mayonnaise,

- cloves, dill and a small piece of meat or sausage for decoration.

Cooking process:

  1. Pre-boil potatoes, carrots and eggs until cooked. Clean up.
  2. Finely chop the smoked chicken breast and mushrooms. Leave a couple of whole mushrooms for decoration.
  3. Grate potatoes, carrots, egg whites and yolks on a fine grater.
  4. Take a flat plate and lay out the first layer of grated potatoes, form the ears and future face of the dog. Brush the layer with mayonnaise.
  5. Top with chopped breast, egg whites, a layer of mushrooms, processed cheese and top with mayonnaise.
  6. Now it's time to lay out the carrots.
