Many people will like the cauliflower and broccoli gratin; the dish turns out tasty, healthy, with a golden brown crust. The beneficial properties of these amazing vegetables are undeniable. They help strengthen the immune system, saturate the body with vitamins and minerals, and help resist various types of cancer. Due to its low calorie content of only 25 kcal per 100 grams (if, of course, they are prepared correctly), they can be eaten during the period of weight loss, as well as by everyone who adheres to a healthy diet.

Products for cooking:

  • 500 grams
  • broccoli 300 grams
  • cream (10% non-fat) 200 grams
  • 2 eggs
  • cheese 150 grams

Calorie content of the finished dish per 100 grams. - 94 kcal. The most high-calorie cheese in this dish. If you take cheese with a low fat content, you will get a less calorie gratin.

How to make cauliflower and broccoli gratin

Just as for cooking, separate both types of cabbage into inflorescences.
Boil water in a saucepan, add salt, and first blanch the cauliflower for 5 minutes. Remove and add broccoli to the same water and cook for 3 minutes. You can boil them in different pans. To ensure that cabbage and broccoli remain the same bright color as fresh after blanching, you need to immediately transfer them from boiling water to water with ice. This “shock therapy” will allow you to maintain a bright color.
Chop large cabbage inflorescences, but not too finely. Place everything in a greased baking dish.
Mix eggs with cream and grated cheese, add a little salt and, if desired, spices.
Pour the egg cream mixture over everything and place in the oven.
I didn’t preheat the oven in advance, because... I have a ceramic mold, and to prevent it from bursting, I put it in a cold oven and then set the temperature to 180C. Cooking time is 30-40 minutes, readiness can be determined by the formation of a golden crust.

Ingredients:

  • cauliflower 400 gr.
  • broccoli 400 gr.
  • cream 10% 250 ml.
  • hard cheese 100-120 gr.
  • salt 1+1/4 teaspoon

Wash and divide broccoli and cauliflower into florets. You don't have to grind it yet. Boil in water without salt until almost done (if you use frozen broccoli and cauliflower, you don’t have to boil them).

Drain the vegetable broth, but don't pour it down the sink! It will come in handy when making creamy eggplant soup, or it can be used in other soups to give them a richer flavor. Store in the refrigerator for 3-5 days.

Place the cabbage in an even layer, pour in the sauce and place in the oven.

Bake in the oven at 180 degrees for 20-30 minutes until golden brown.

Broccoli with Parmesan and Swiss cheese is an excellent and, most importantly, very healthy addition to any Sunday family dinner. In the case, for example, with Yulia and me, it is a completely self-sufficient main dish, the calories of which last us for the whole day.

I found this recipe for broccoli gratin with cheese in a cookbook published by the Junior League of Salt Lake City (Utah, USA) in 2014 under the ironic title “A Pinch of Salt Lake.” lake" and is a play on words hidden in the very name of the lake. I only slightly adapted this recipe to our gastronomic conditions. By the way, I would like to note that the said cookbook turned out to be surprisingly entertaining - in any case, I looked through it with pleasure and found many other interesting recipes there, which I will probably return to again.

The gratin we offer you is quite a fatty, and therefore nutritious, dish, as are the rest of its culinary brothers - with potatoes, zucchini, pasta. We, of course, prepared all the mentioned gratins at different times, but it was the gratin with broccoli as the main ingredient that we liked the most.

By the way, gratin (if any of you are new to this term) is of French origin and is a widespread culinary technique in which an ingredient is baked in the oven with cheese and butter, and the obligatory brown crust on top. Gratin is an integral element of French cuisine, and this dish is traditionally served on a flat dish or in a form in which it is baked. This word itself comes from the French “gutter”, which means “scrape” or “rub”.

Preparing our broccoli gratin will not cause you much difficulty, nor will it take too much time. Swiss cheese and Parmesan are mixed with lemon juice, Dijon mustard and well-chopped green onions for the cheese top. After this, all that remains is to place the cabbage mixed with croutons on the bottom of the mold and place the cheese mixture in an even layer on top. Then put the gratin in the oven and wait until it becomes crispy brown.

  • 1 bunch of green onions (chopped well)
  • 120 grams Swiss Emmental cheese (grated)
  • 80 grams Reggiano Parmigiano (grated)
  • 230 ml mayonnaise
  • 1 tablespoon Bavarian mustard
  • 1 tablespoon freshly squeezed lemon juice
  • 200 grams of croutons from a loaf or white bread (without crust)
  • Coffee spoon of coarsely crushed pepper mixture
  • 1 tablespoon butter

Preparation:

  1. Heat the oven to 180 degrees.
  2. First, let's prepare the cheese mixture. To do this, mix mayonnaise, lemon juice, mustard, mixed peppers, green onions, Swiss cheese and Parmesan in a large bowl.
  3. Place the cabbage florets and croutons in a large bowl. Mix well.
  4. Generously grease a rectangular ceramic baking dish with butter. We place cabbage with it in it, and put our cheese mixture on top.
  5. Place the pan in the oven and bake the gratin for 30-40 minutes until the top is golden brown.
  6. Serve hot directly in the form.

I suggest making a cauliflower and broccoli gratin in the oven. The French use the beautiful word “gratin” to describe a dish baked in sauce until golden brown. A classic gratin is made from creamed potatoes, topped with grated cheese and breadcrumbs, but you can use any other vegetables.

How to make cauliflower and broccoli gratin in the oven

Break the eggs into a saucepan and beat with a mixer, adding cream in small portions.

Grate the cheese on a coarse grater and divide it into two parts.

Pour one half of the grated cheese into the pan with the eggs beaten with cream. Salt and sprinkle with ground pepper.

Using a tablespoon, stir the contents of the pan.

Take a heat-resistant dish with high sides, grease it with oil and place the cauliflower and broccoli divided into florets.

Any cabbage is suitable for making gratin - both fresh and frozen. If you have fresh vegetables, you can pre-boil them for 5 minutes in salted water. Now pour the cabbage in the mold with a sauce of eggs, grated cheese and cream.

Sprinkle the remaining grated cheese evenly over the top of the dish.

Preheat the oven to 200 degrees and place the gratin dish in it to bake for 40 minutes.

Cool the finished dish slightly and cut into portions. It can be served as a side dish for meat or cutlets, although this broccoli and cauliflower gratin would also be good as a separate dish.

Cauliflower and broccoli gratin is the same as a casserole. There is not enough time to list all the beneficial properties of cauliflower! But one thing is still worth mentioning. A huge advantage of cauliflower is that it has few calories, so you can eat it as much as you want without adding extra pounds.
