Preparation:
Preheat the oven to 180 degrees. Place the beets on a baking sheet lined with foil or in a baking dish. Grease with oil and sprinkle with salt and pepper. Bake for about 1 hour or until the beets are tender (you can check for doneness with a knife).
While the beets are baking, prepare the dressing. To do this, pour orange juice into a saucepan and boil it to about 3/4 cup. Add lemon juice, remove the pan from the stove and strain the juice through a sieve. Pour the juice back into the pan, add salt and pepper.
