Salad with tomatoes, olives and peppers– a bright representative of light, dietary summer vegetable salads. If you look closely, you will notice that in its composition it resembles the Mediterranean cuisine known to many, only it does not contain cheese. Despite the simplicity of execution, the salad turns out very tasty, with a pronounced taste and aroma.

Ingredients:

  • Lettuce leaves,
  • Basil,
  • Arugula,
  • Tomatoes – 2 pcs.,
  • Purple onion – 1 pc.,
  • Olives – 50-80 gr.,
  • Bell pepper – 1 pc.,
  • Lime – 1 pc.,
  • Olive oil – 2 tbsp. spoons,
  • Salt - on the tip of a teaspoon

Wash all vegetables and fresh herbs under running water. Dry. Place lettuce, basil and arugula in a bowl. Large lettuce leaves can be pre-torn into smaller pieces by hand.

Place canned pitted olives in a bowl with herbs.

Add thinly sliced ​​bell pepper to the salad. Fleshy pepper varieties are ideal for this salad.

Slice the tomatoes and add to the bowl with the salad.

Add the purple onion, sliced ​​into half rings.

Pour lime juice over the vegetable salad. Add some salt. Season with olive oil. You can prepare a dressing from these ingredients in a small bowl and pour it over the salad. This salad also goes well with a dressing of olive oil, honey and balsamic flavor. Stir salad with tomatoes, peppers and olives using a wooden spatula.

Ingredients:

  • 5 pieces. red bell pepper
  • 100 gr. olives, pitted
  • lemon juice and zest
  • 5 tbsp. l. olive oil
  • 2 teeth garlic
  • parsley and basil
  • salt
  • pepper

Cooking method:

1. Wash the bell peppers and dry with a towel.

2. Preheat the oven to 200 degrees.

3. Cover a baking sheet with baking paper or foil.

4. Grease the peppers with olive oil and place on a baking sheet.

5. Bake peppers for about 20 minutes oven. The skin should be slightly charred. After ten minutes, turn the peppers over and then bake for another 10 minutes.

6. Remove the finished baked peppers from the oven and place in a deep bowl with a lid. Cover the bowl with a lid and wrap it in a towel.

7. Leave the peppers in a warm place for 25-30 minutes so that the skin of the peppers comes away from the pulp better.

8. Then remove the peppers from the bowl and carefully peel off the skins.

9. Remove seeds and stem from peppers. Cut the peppers into 1.5 cm strips.

10. Remove the zest from the lemon in strips and squeeze out the juice.

11. Chop the garlic.

12. Place peppers, garlic and olives in a salad bowl. Sprinkle with lemon juice.

13. Season the salad with salt, pepper and lemon zest.

14. Mix the salad and put it in the refrigerator to marinate for 1 hour.

15. Before serving, sprinkle the salad with olive oil and garnish with green leaves.
