Kefir dough is prepared from the ingredients according to the list.

Warm kefir is poured into a bowl. Add baking soda and mix thoroughly with a whisk until bubbles form.

Everything is thoroughly mixed. The mixture should stand warm for 15 minutes.

Flour is sifted into the delicate kefir mixture in four stages.

Continue this way until the dough turns into an elastic ball.

After the third glass, we will switch to manual kneading on the table. As a result, we have a fairly tender but elastic bun of quick kefir dough. Feel its aroma! The consistency is much softer than dumplings, but not as sticky as the yeast version. It is recommended to cool the kefir dough before using it.

For the filling, ingredients are also used from the list.

Boiled chicken eggs are grated on a coarse grater or chopped with a knife.

Chopped onions are added to the eggs.

The filling is mixed and seasoned to taste with salt.

The chilled kefir dough is divided into four parts. Flour goes to the “dust”.

After which each part is rolled into ropes and cut into miniature pieces. Fried green onion and egg pies taste best when they are medium in size.

Nuances and tips for preparing kefir dough with yeast

It is quite difficult to guess the amount of ingredients needed, even if you adhere to the recipe, so at the initial stage the dough is kneaded with a spoon and then flour is added. When the consistency becomes less liquid, you can continue kneading with your hands. First, wet your hands in vegetable oil, cold water or flour.

When working on the table, sprinkle the work surface with a small layer of flour.

To make the dough rise better and faster, it must be covered with plastic wrap and placed in a warm place.

If you use non-fast acting yeast, it must be steamed in warm water with added sugar.

Forming and preparing pies

To save time, while the dough is rising, you can start preparing the filling.

The finished dough is placed on a table sprinkled with flour. Approximately identical balls are formed from it in portions. Then the resulting ball is pressed with the palm of your hand and the filling is placed on top. An example of a classic filling for fried pies and the method of preparing it is described. Agree, homemade pies create an atmosphere of comfort, the aroma alone is worth it. And you always know what you used in cooking. • Sugar – 1 tbsp + 1 tsp.
  • Salt – 1 tsp. (0.5 tsp for sweets)

Video recipe for yeast-free dough for fried pies in a frying pan from Olga Matvey

Lush, airy pies come out when using yeast-free dough based on kefir. Another advantage of this recipe is the ability to use any filling, both sweet and fresh; whatever is in the refrigerator will go into use!

Ingredients:

  • Kefir 3.2% fat – 200 g
  • Egg – 1 piece
  • Salt, soda - 0.5 tsp each.
  • Sour cream, sunflower oil - 1 tbsp.
  • Flour – 400 g
  • Sugar - 1 tbsp.

Preparation:

  • We take kefir of maximum fat content, remove it from the refrigerator overnight in advance, it is better to use “old” one, which has the maximum amount of lactic acid bacteria due to long-term storage, then the dough will be fluffier (don’t be afraid of getting poisoned; when baking, the temperature is sufficient to disinfect the product)
  • Add sour cream, sugar, salt to it
  • You can mix in the whole egg, or just the yolk, then you get different doughs (you should try both ways, then choose the option you like), lightly beating with a fork first to avoid the appearance of pieces of unmixed baked egg white in the finished baked goods

  • Mix everything, add sunflower oil, part of the flour, soda (used instead of yeast, but the main thing is to take good quality powder, not stale, it is recommended to change it every 5-6 months)

  • Add flour, sprinkle the table with it, knead the dough with your hands

  • Grease the table with vegetable fat, knead the mass on it so as not to clog it with excess flour, stir until smooth
  • If, even when kneading, the dough sticks to greased hands, it means there is not enough flour; you should add it a teaspoon at a time until the desired consistency (this happens due to the different thickness of kefir)

  • Grease the container with oil, lay out the dough, cover with cling film, and leave to “rest” for 15-20 minutes.

  • Pour a little sunflower oil onto the table, divide the dough into small balls (volume about a tablespoon), stretch with your fingers, making the edges thinner and the middle denser
  • Place the filling in the center, pull out the edges, seal with dumplings, thus making all the pies
  • Heat the oil in a frying pan (there should be a lot of it so that the sides are well fried), place the pies seam side down, and turn them over after 1-2 minutes.

If you are a visual person and you definitely need to meticulously see the details of the process, watch the video where all the stages are demonstrated in detail.

Kefir is a fertile base for baking; it makes wonderful, tasty pies. There are many variations of recipes, both with and without yeast, leaner or richer, sweet or bland - everyone will find something to their liking.

The recipe for kefir pies will come in handy if you need to quickly prepare a treat for a large company. Its advantage is that the housewife does not have to wait long for the dough to rise, because time is precious.

Although yeast dough is airy, before you start shaping it into pies, you need to tinker with it, and most importantly, have a few hours left. Of course, when guests are already on the doorstep, every minute counts, so the topic of our conversation today is a recipe for pies, which includes kefir dough.

I personally tested the recipe for kefir pies, so you can have no doubt about its taste. I recommend preparing the dough for pies and making baked goods from it with a variety of fillings, ranging from regular mashed potatoes to fruit jam.

Let's start with the first recipe

The main ingredient in the recipe is, of course, kefir! This is the topic of our conversation today!

So, let's get started and, before kneading the dough for the pies, let's prepare the ingredients:

This is: 3.5 cups of flour; 250 ml kefir; a tablespoon of sugar; 2 eggs; 10 ml vegetable oil; a teaspoon of soda; a pinch of salt

To fry pies with kefir, you will need 100 ml of vegetable oil.

Since you will prepare the dough for kefir pies in a short time, first of all make the filling. In my family, the filling, which consists of rice and minced meat, is very popular, but you can fill the pies with whatever you want.

For the filling you need: 250 g minced meat; 1/3 cup rice; one onion and one carrot

Don't forget to salt the filling and season it with pepper and aromatic herbs. Plan your time and keep in mind that it will take you at least half an hour to prepare the filling.

You need:

  1. Boil the rice in salted water and rinse it under the tap.
  2. Make a frying mixture for pies from carrots and onions, followed by adding minced meat. Keep the pan on the fire with the ingredients for several minutes until the minced meat changes its original color.
  3. Season with salt and pepper and add rice to the mixture. The filling for the pies is ready.
  4. One piece of advice: when choosing minced meat, focus on its composition; the fat content in it should be at least 25%. This is an important detail, because it affects the juiciness of the filling, which means the pies will be tastier.

Recipe for making kefir dough:

  1. Start kneading the dough for pies by beating the liquid ingredients (kefir, eggs, vegetable oil) followed by adding sugar, salt and soda.
  2. Pour the sifted flour into the dough gradually, mixing immediately with a spatula and then with your hands.
  3. To prevent the pies from turning out airy, do not make the dough too stiff, so add flour in small portions, and at the end of kneading, add it a spoonful at a time.

The quick kefir dough should not stick to your hands; this is a signal to complete the kneading process.

So, you have the base for the pies ready, now it’s time to form the baked goods:

  1. Pinch off a small piece of dough and, on a table dusted with flour, stretch the cake with your hands. There is no need to use a rolling pin; everything is done with your fingers.
  2. Place a tablespoon of filling in the center of the dough ball and seal the edges tightly. The first pie is ready, continue to do the same until you run out of all the dough and filling.
  3. To fry the pies, use a regular frying pan with hot sunflower oil.
  4. Keep the pies on the fire on each side until they are golden brown. If necessary, fry the pies by turning them on their sides.

Keep in mind that the pies will increase in volume at high temperatures, so place no more than 6 pies in a standard frying pan.

Adviсe:

  1. Even cooled pies do not lose their taste; they can be served several hours after frying.
  2. Fill the bell peppers with the remaining filling and make a delicious appetizer by simmering them in tomato sauce.
  3. Before baking kefir pies in the oven, brush their surface with beaten egg.
  4. Was the filling a little dry? Then serve the pies with vegetable or meat broth.

Yeast dough for pies, recipe with kefir

Ingredients, without which it is unrealistically difficult to prepare a dish:

3 cups flour; half a glass of vegetable oil; a glass of kefir; a packet of instant yeast; a teaspoon of salt; large spoon of granulated sugar

To prepare the dough, follow my recommendations, that is:

  1. Heat 100 ml of water to a temperature of 36-37 degrees and dissolve the yeast and sugar. Leave the mixture for 20 minutes in a warm place.
  2. During this time, mix the butter and warm kefir in a bowl and after the yeast begins to “work” and form bubbles, combine both masses.
  3. Then add salt and sifted flour. Knead the dough, place it under a napkin in a warm place and leave for 15 minutes. During this time, the dough will rise and will be ready for cutting.
  4. All you have to do is form the pies. Roll the dough into a sausage, divide it into parts and roll out a flat cake from each.
  5. Place any filling in the center of each and seal the edges.
  6. Before heat treatment, baked goods made from kefir dough should increase in volume, give it 5 minutes for this.
  • If you want to fry the pies in a frying pan, use vegetable oil. Place kefir baked goods immediately with the seam down so that they do not fall apart, then turn them over and finish cooking.
  • Would you like to bake kefir pies in the oven? There is nothing simpler, just place them on a greased baking sheet and send them to cook in an oven preheated to 200 degrees for 15 minutes.
  • To give the baked goods a more appetizing look, let them stand at room temperature for 10 minutes and brush with beaten egg.

After your dish is ready, serve it to the table. The pies can be decorated with powdered sugar or painted with chocolate icing. Did you like the recipe? Then cook with me in the future.

Kefir dough pie

Another dough recipe using store-bought kefir, this time for a pie. How do you feel about the fact that to prepare dinner you don’t need to buy a lot of products, but use those left over after breakfast or lunch?

For example, kefir. It’s not always possible to drink it in a day, but the leftovers are useful for kneading dough for a pie and pampering your loved ones with it. Even inexperienced cooks can make a treat, so let’s proceed to the cooking process without fear.

You need:

600 g flour; half a liter of kefir; 2 eggs; 200 g margarine or butter (not important); 2 tablespoons sugar; a spoonful of salt and half a spoonful of baking soda

Dough preparation steps, recipe:

  1. Soften the margarine in one of the following ways: leave it for several hours at room temperature or place it in the microwave for a couple of minutes.
  2. Beat eggs with kefir, add sugar, soda and salt to the mixture.
  3. Sift the flour and also add to the eggs, stir the dough until it becomes elastic.
  4. At the end of kneading, add soft butter to the kefir dough and place the bowl in a cool place, covered with a towel.
  5. After 30 minutes, begin to form pies with the filling that you prepared in advance.

I would like to note that if you increase the amount of margarine, the dough will resemble puff pastry, and if you have margarine lovers in your family, you can use this trick. If you decide to add more eggs, then baking with kefir will be similar to yeast.

Another recipe for pies

Let's learn how to prepare one of the simplest baking options - pies stuffed with liver. This dish is good because it is universal, which means it can be served with tea or broth, or taken with you as a snack to work or school.

  • The pies are cooked in the way you prefer: in the oven or in a frying pan. I would like to note that the baked goods do not lose their taste even after they cool down. And if you like hot pies and don’t want to change your habits, then heat them in a double boiler or in the microwave.
  • Depending on what you plan to serve the pies with, choose the appropriate filling for them. In our case, it is liver with fried onions and carrots. If your family has a lot of sweet tooths, then do not deny them the pleasure of eating pastries with jam or fruit.

Having prepared the kefir dough for pies, begin to “rustle” over the filling, which consists of: half a kilogram of liver; two carrots; bulbs; salt and spices to taste.

Filling preparation process:

  1. Rinse store-bought liver under running water and remove the film from it.
  2. Cut the product into medium-sized pieces and boil.
  3. Grind the liver by grinding it in a meat grinder.
  4. Cut the onion into cubes and grate the carrots.
  5. First fry the onion in vegetable oil, then add the carrots and, stirring occasionally, keep on fire for several minutes.
  6. Season the roast with salt and pepper, then add it to the minced liver.

Forming the pies:

  1. Dust the work surface with flour, lay out the kefir dough for pies and divide it into several parts.
  2. Roll each of them into a layer approximately 2 mm thick and, using a glass, cut out round pieces on which to place a spoonful of minced liver.
  3. Slightly stretching the edges of the blanks with your fingers, form a pie and place on a greased baking sheet. The seam of the pie should be at the bottom.
  4. Instead of greasing the baking sheet, you can use parchment paper and cover the entire bottom with it.
  5. Before sending the pies to bake in a hot oven preheated to 180 degrees, apply a beaten egg to their surface.
  6. The baked goods will be ready in 40 minutes, however, ovens may differ in their technical characteristics, and it is better for you to constantly monitor the pies through the glass door.
